Effects of Forage Sources on Rumen Fermentation Characteristics, Performance, and Microbial Protein Synthesis in Midlactation Cows

  • Eight multiparous Holstein cows ($632{\pm}12$ kg BW; $135{\pm}16$ DIM) were used in a replicated $4{\times}4$ Latin square design to evaluate the effects of forage sources on rumen fermentation characteristics, performance, and microbial protein (MCP) synthesis. The forage portion of the diets contained alfalfa hay (AH), oat hay (OH), Leymus chinensis (LC), or rice straw (RS) as the primary source of fiber. Diets were isonitrogenous and isocaloric, and cows were fed four corn silages based total mixed rations with equivalent nonfiber carbohydrate (NFC) and forage neutral detergent fiber (NDF). Dry matter intake was not affected by the source of dietary forages, ranging from 18.83 to 19.20 kg/d, consequently, milk yield was similar among diets. Because of the numerical differences in milk fat and milk protein concentrations, 4% FCM and ECM yields were unchanged (p>0.05). Mean rumen pH, NH3-N content, and concentrations of volatile fatty acids in the rumen fluid were not affected by the treatments (p>0.05). Dietary treatments did not affect the total tract apparent digestibility of dry matter, organic matter, and crude protein (p>0.05); however, digestibility of NDF and acid detergent fiber in RS diet was higher compared with AH, OH, and LC diets (p<0.05). Total purine derivative excretion was higher in cows fed AH, OH, and LC diets compared with those fed RS diet (p<0.05), consequently, estimated MCP synthesis was 124.35 g/d higher in cows fed AH diet compared with those fed RS diet (p<0.05). The results indicated that cows fed AH, OH, LC, and RS diets with an equivalent forage NDF and NFC have no unfavourable effect on the ruminal fermentation and productive parameters.

Development of Anti - obesity Dietary Supplement Decreasing Nutrient Absorption by Digestive Enzyme Inhibition in Gut (장내 소화 효소 활성 저해를 통한 섭취 영양소의 흡수 억제와 이를 이용한 비만 개선용 식이조성물의 개발)

  • In this study, we found a new food additive as an natural herbal extracts against lipid digestion enzymes for the regulation of fatty acid absorption and weight control. The Water extracts of Platycodon grandiflorum and Solanum melongena. inhibited lipase activity and decresed serum total cholesterol and triglyceride concentration in mouse fed lipid emulsion. Twenty three volunteers were subjected to the intake of the herbal extracts plus the egg yolk IgY that inhibit carbohydrate digestion enzymes in gut for 50 days. In average, the treated subjects appeared to lose 1.96 kg of body weight and 3.4 kg of body fat mass during the treated period. Furthermore, Panniculus adiposus and breech size were significantly decreased during the experimental period. Above results suggested that the administration of the dietary additives composed of natural herbal extract and egg yolk IgY improve the obesity by the decrement of body weight and body fat mass.

A Study on the Relationship between Nutritional Status and Select Blood Parameters in Premenopausal and Postmenopausal Women (폐경 전.후 여성의 식습관과 영양 섭취 상태 및 일부 혈액지표와의 관계 연구)

  • This study was performed to investigate dietary habits, and to evaluate the relationship between nutritional status and certain blood parameters in premenopausal and postmenopausal women living in Daejeon. Adult Korean females(n=110) that had visited the Health Promotion Center of Eulji University Hospital were analyzed. We examined blood parameters, body composition, and life style factors such as food habits and physical activity in pre- and post-menopausal women. The collected data were then analyzed to evaluate the various items. Overall, there were no differences between the pre- and post-menopausal women for food habit score, or for intakes of energy, protein, Int, iron, vitamin A, vitamin $B_1$, vitamin $B_2$, niacin, vitamin C, and calcium. However, carbohydrate intake was significantly higher in the postmenopausal women than in the premenopausal women. The Dietary Reference Intakes for Koreans(KDRIs), in terms of energy, fat, calcium, vitamin A and vitamin $B_1$, were less than 100% in both the premenopausal women and postmenopausal women. All intakes of protein, iron, vitamin $B_2$, niacin, and vitamin C satisfied the KDRIs in both groups. Finally, the postmenopausal women had higher serum fasting blood glucose, total cholesterol, LDL-cholesterol and alkaline phosphatase levels than the premenopausal women.

Utilization of Steam-treated Oil Palm Fronds in Growing Saanen Goats: II. Supplementation with Energy and Urea

  • The objective of this study was to evaluate the effect of protein and energy on goats fed oil palm fronds (OPF) as roughages. Twenty-four male Saanen goats aged between 7 and 8 months and weighing $23.4{\pm}1.6kg$ were used in a $2{\times}3$ factorial design. Factors were three levels of urea (3%, 4% or 5%) and two levels of energy (low energy (LE) or high energy (HE)). On average, all parameters measured, including dry matter intake (DMI), nutrient digestibility, digestible nutrient intakes, ruminal ammonia-N ($NH_3$-N), ruminal total volatile fatty acid (total VFA) and individual VFA concentrations (mM/L), microbial N supply, P/E ratio and N retention were higher for HE compared to LE diets. Significant (p<0.05) interactions were found between levels of urea and energy for nonstructural carbohydrate (NSC) and energy (DE) digestibilities, ruminal $NH_3$-N and total VFA concentrations. HE diets had higher N absorption and retention than LE diets. Interactions between urea and energy for plasma urea nitrogen (PUN), heat production (HP), and urine and faeces N excretion were significantly lower (p<0.05) for the HE diets than those recorded for the LE diets. The results indicated that supplementation of energy enhanced utilization of urea and resulted in higher animal performance as a consequence of improved ruminal fermentation, microbial yield and N balance. However, the optimal level of urea supplementation remained at 3% in the HE diet.

Nutrient Intakes of First Generation Korean-American in Hawaii

  • To evaluate nutrient intakes of the first generation Korean -Americans in Hawaii, a dietary survey was conducted using a food frquency questionaire which included 139 food items most often consumed among Korean foods and American foods. The questionnaire surveyed 157 first generation Korean-Americans living in Hawaii. The 66.7~81.1% of first generation Korean-Americans in Hawaii were of healthy weight. The mean percentages of calories obtained from their dietary analyses were 61% carbohydrate, 23% fat and 16% protein. The calorie distribution of their diet appeared to be similiar between older women and older men, however it was seen that men consumed a higher percent of calories from fat than women among younger subjects. The mean dietary intakes for first generation Korean-Americans exceeded recommended intakes for protein, thiamin, niacin , vitamin A, vitamin C, folacin , phosphorus and iron , but the intakes of energy, riboflavin, vitamin B6 ,vitamin E, calcium and zinc were lower than the recommended dietary allowance for Americans. Compared with other groups based on age and gender , younger men had significantly(p<0.05) higher intakes of riboflavin, phosohrous, iron and zinc, and lower intake of folacin. Older subjects consumed significantly (p<0.05) less protein, riboflavin, vitamin B6 and zinc than did younger subjects, and most of the first generation Korean-Americans in Hawaii consumed adequate levels of saturated fatty acid . The ratio , however, of polyunsaturated fatty acid to saturated fatty acid in the diet of younger men was about 0.61, much lower than the recommeded ration of 1.0 and also was significantly (p<0.05) lower than that of other subjects. Moreover, cholesterol intakes of younger men were close th the maximum recommeded level of 300mg/day.

Dietary Behaviors and Status of Nutrient Intakes by the Obesity Levels of Housewives in Daegu (대구지역 주부들의 비만정도에 따른 식행동 특성과 영양섭취 실태 평가)

  • This study was intended to collect the baseline information on dietary behavior of adults to develop nutrition education program in the context of healthy weights at community level. Nutrient intakes of 128 housewives were assessed by 24 hour recall method. Also food habits, nutrition knowledge and attitude were investigated by self-administered questionnaires. Subjects were divided to under-weight, normal-weight, over-weight groups by body mass index (BMI). Most under-weight groups evaluated as their current body images were normal. $41\%$ of normal-weight groups judged as their current body images were obese. Energy and fat intakes of over-weight group were significantly higher than that of under-weight and normal weight groups (p<0.05). However, carbohydrate and protein intakes showed no significant differences among the three groups. It appeared that active attitude toward change in nutrition attitude of normal weight group was significantly higher than that of under-weight group (p<0.05). There were no significant differences of food habit score, nutrition knowledge, and obesity habit scores among the three groups. The frequency of eating-out showed significant difference among three groups (p<0.05). Food habit scores were positively related to health-concerned attitude (r=0.174), convenience-concerned attitude (r=0.229) and food enjoyed attitude (0.213) and negatively related to obesity habit score (r=-0.206). Also, positive correlation of body fat mass with frequency of eatingout (r=0.213), instant food (r=0.227) and amount of meal (r=0.187) existed (p<0.05). We concluded that nutrition education programs for housewives should include specific strategies to modify unsound food behaviors and inappropriate perception of body image for a healthy weight.

Changes of Obesity Index, Serum Lipid Profiles and Nutrient Intakes in Obese Children after the Weight Control Program of Nutrition Education (체중조절 프로그램을 통한 비만 아동의 비만도, 혈중지질 및 영양소섭취량의 변화)

  • The purpose of this study was to evaluate the effect of a weight control program on anthropometric values, serum lipid profiles and nutrient intakes. The subjects of this study were 38 obese children (boy : 17, girl : 21) with obesity index over 120%. The weight control program for obese children included nutritional education (50 min) and exercise (50 min) for 10 weeks. The nutrition intakes of the children were surveyed before and after the weight control program by 24hr recall test. The BMI, R$\ddot{o}$hrer Index, Obesity Index, WHR (Waist - Hip ratio) and body fat(%) were significantly decreased after completion of the weight control program. The total cholesterol and HDL-cholesterol of subjects were significantly increased after the weight control program. Distribution of serum lipid profiles was slightly changed. The energy intakes were significantly decreased (p < 0.001). from 1760.8 kcal to 1435.2 kcal. In addition, the intakes of P, Zn, retinol, vitamin $B_1$, vitamin $B_2$, vitamin E and niacin were significantly decreased. while intakes of vitamin C and folate were increased. Calcium and folic acid were upper 25% of subjects, under EAR(Estimated Average Requirements) intake before the weight control program. The distribution of energy intakes was significantly changed into positive status; fat percentage was decreased 26.3% to 22.1% (p < 0.01). Carbohydrate was increased 58.6% to 61.2% (p < 0.05). Meal distribution of energy intakes was changed; calorie percentage from lunch significantly increased from 32.2% to 38.3%. Calorie percentage from snack significantly decreased from 17.7% to 13.5%. In conclusion, weight control program for 10 weeks is effective in obesity index and nutrient intakes although serum lipid values were a little changed.

Nutritional Evaluation of the School Lunch Program : The Nutritent Density and Nutrients that affect the Cost of a Meal (학교급식식단의 영양평가 : 식단의 영양밀도 및 식단가에 영향을 미치는 영양소 연구)

  • To provide approprate nutrition informatios and guidelines for the healthy school lunch program(SLP) menus, the nutritional quality of the SLP and the nutrients that affect the food cost of SLP were evaluated after analysis of recipes and food price lists of 776 menus collected from 10 elementary SLP schools in Seoul and Kyunggi province in Korea in the year of 1995. Index of nutritional quality of SLP menus were good enough, showing over 1.0 in all nutrients except vitamin A(0.86) in kyunggi province. The percent of calories from carbohydrates, protein and fat was 52%, 16% and 32%, while the polyunsaturated fatty acid/monousaturate fatty acid/saturated fatty acid(P/M/S) ratio was 1.0/0.95/1.15. On the other hand, the nutrient-cost evaluation showed that the most expersive nutrient for the RDA(Recommended Dietary Allowance) standard of SLP was origined from the cost of energy and vitamin A. In Pertary correlation analyses, the cost of SLP meals was positively asociated with energy(r=0.244, p<0.001), protein(r=0.306, p<0.001) and carbohydrate(r=0.159, p<0.001) in diet, while the most important predictor of the cost of SLP meal provides sufficient nutrients with enough calories, but fat level is somewhat higher than the suggested value from Dietary Guidelines for Koreans. These data also suggest that meals which could offer enough vitamin A might be included in SLP menus and the cost of a SLP meal can be reduced when choosing the cheap protein source food.

A Study on Dietary Atherogenesity, Energy Balance and Activity Level of College Students (대학생들의 지방 섭취 형태와 에너지 균형 및 활동도에 관한 연구)

  • The purpose of this study was to investigate selected nutrient intakes, dietary atherogenesity, energy balance and activity level of college students. One hundred and thirty onoe students (61 males and 70 females) made their three-day dietary records and one-day activity records along with one-day dietary records. BMI of the surveyed students was 22.33 for males and 20.28 for females. Average calorie intakes of male and female students was respectively 2166.20kcal and 1793.60kcal. Females had slightly higher fiber intakes than males in terms of fiber g/1000kcal. Carbohydrate, protein and fat ratios in energy composition of males and females were respectively 56.62 : 15.33 : 24.70 and 57.64 : 16.49 : 25.79. Average cholesterol intakes of male and female students were 295.66mg and 259mg respectively. The male showed higher saturated fat intake. and had higher atherogenic indices of diets such as cholesterol index(CI) and cholesterol-saturated fat index(CSI) than the female. Males spent an average of 1039.00 kcal/day compared to females of 687.93 kcal/day for all physical activities. Most students participated in light (100% of males and females) and moderate (33% of males and 3% of females) activities level. Few students spent time at severe and very severe activity level. Seventeen of the 131 students were in positive energy balance whereas 83% were in negative balance. Both genders with positive energy balance tended towards smaller weight and BMI, and larger food intakes than those with negative energy balance. Students with positive energy balance had higher saturated fat intakes and dietary atherogenic scores of CI and CSI than the counterparts with negative energy balance. Males with positive energy balance had decreased physical activity and daily energy expenditure whereas increased food and saturated fat intakes. Females with positive energy balance had singificantly increased food, saturated fat and sugar intakes.

Development and evaluation of a dish-based semiquantitative food frequency questionnaire for Korean adolescents

  • BACKGROUND/OBJECTIVES: The purpose of this study was to develop a dish-based semiquantitative food frequency questionnaire (FFQ) for Korean adolescents and evaluate its reproducibility and validity. SUBJECTS/METHODS: Based on 24-hour dietary recall data from the 4th Korean National Health and Nutrition Examination Survey (KNHANES), we developed a FFQ with 71 items. From a quota sample of 160 adolescents recruited using gender and age group as stratification variables, 153 participated in the complete data collection process. The FFQ was administered to each subject twice, at an interval of 3-4 weeks, to evaluate the test-retest reliability. The validity of the FFQ was assessed relative to 8-day food record data. RESULTS: The study findings demonstrated the FFQ's satisfactory reproducibility. Spearman correlation coefficients ranged from 0.64(for ${\beta}-carotene$) to 0.81(for protein). From cross-classification analyses, the proportion of subjects in the same intake quartile was highest for protein (65.4%) and lowest for vitamin A(47.1%). With regard to validity analysis, Spearman correlation coefficients ranged from 0.27(for vitamin A and fiber) to 0.90 (for energy). The proportions of subjects in the opposite categories between the first FFQ and the 8-day food record data were generally low within the range from 0.74% (for energy and carbohydrate) to 13.2% (for ${\beta}-carotene$). CONCLUSIONS: In conclusion, the dish-based semiquantitative FFQ developed in this study can be useful for grouping Korean adolescents according to major macro- and micronutrient intakes with reasonable reproducibility and validity.
