  • The nutritional status of pre-school children is important for both physical growth and functional development. This study investigated the anthropometric, nutrient intakes and dietary quality of the pre-school children living in Asan for planning nutritional education program. The dietary intakes were measured by 2-day 24 hr recall recorded by children's mothers and the anthropometric data were collected by measuring children's weights, heights, and percent body fat at Asan Public Health Center. The children were 161 boys and 129 girls aged 5 and 6 years. When children's nutritional status was determined by their anthropometric status (underweight, normal weight and overweight) determined by z-score (normal range between -1.00 and 1.00), only 1.4% of the children belonged to underweight group while 55.7% and 42.9% belonged to normal and overweight groups, respectively. Significantly higher number of children belonged to overweight group for 5 year-olds. No differences were observed in nutrient intakes, nutrient adequacy ratio (NAR) and index of nutritional quality (INQ) values among nutritional status groups. Intakes of the most nutrients were adequate, but NAR and INQ of calcium and zinc were low. When nutrient intakes, NAR and INQ were compared by sex or age, all nutrient intakes were appropriate except calcium and zinc intakes of 6 year-olds. Nutrient intakes of 5 years were higher than those of 6 years. The mean of nutrient adequacy ratio (MAR) was 0.85 and mean INQ was 1.51 for all participants. The nutritional management program for pre-school children in Asan would be directed differently by age groups and education material should contain contents educating to consume moderate amount of food for 5 year-olds and to increase intake of foods with mineral nutrients such as calcium and zinc for 6 year-olds.

  • This study was performed to assess the effect of one year's of meal service for home-staying urban elderly with low incole on their nutritional status. One hundred and eighty three subjects, who had already completed the first nutritional survey, were assigned to two group : meal served(served) and non-meal served(non-served). A meal containing approximately on half of the RDA for energy, protein, calcium and iron was served as lunch everyday to served group. After on year of meal service, follow-up-nutritional survey was done and changes of parameters were analyzed with paired t-test. Served female showed signficantly increased intake of riboflavin and calcium, while non-served female showed significantly decreased intake of calcium. Serum total protein, serum albumin and serum cholesterol were significantly increased in female regardless of meal service. Served remale was observed with significantly elevated LDL-cholesterol, whereas non-served female showed singnificantly lowered HDL-cholesterol. Significantly decreased serum iron, serum transferrin saturaion and significantly increased TIBC were observed for female regardless of meal service. But the proportion of anemic elderly according to Hb or serum iron was decreased more in served group. Female showed significantly increased serum zinc and copper regardless of meal service, whereas only served male showed significantly increased serum copper.

  • This study investigated the factors associated with HINT-8 (Korean health-related quality of life instrument with eight items), including health habits, hand grip strength, chronic disease, chewing function, mental health, and nutrient intake. In this study, the health-related quality of life (HRQoL; HINT-8) was assessed using the data from the 2019 Korea National Health and Nutrition Examination Survey (KNHANES VIII) among Koreans aged over 65, with HINT-8 being evaluated based on the general characteristics. Of the participants from KNHANES VIII, 1,455 subjects were analyzed using SPSS statistics complex samples (Windows ver. 27.0). The HINT-8 score was significantly lower in females and in those aged 75 years or older, lowest educational level, lowest income level, and single households. Logistic regression analysis, adjusted for the general characteristics, revealed a significant association between a lower HINT-8 group and various factors: low aerobic physical activity (OR=1.71, 95% CI=1.25~2.35), low hand grip strength (OR=1.34, 95% CI=1.02~1.78), chewing difficulties (OR=2.17, 95% CI=1.62~2.92), poor self-rated health status (OR=6.11, 95% CI=4.42~8.45), stressful mental status (OR=3.57, 95% CI=2.27~5.63) and poor calcium status (OR=1.45, 95% CI=1.11~1.88). On the other hand, this study could not reveal a significant association between a lower HINT-8 group and factors such as smoking, drinking, chronic disease, and nutrient intake status, except for calcium intake. This study suggests that HINT-8 is associated with aerobic physical activity, hand grip strength, chewing function, mental health, and calcium intake, but not with smoking, drinking, chronic disease, and nutrient intake.

  • BACKGROUND/OBJECTIVES: Vitamin D and zinc are recognized for their roles in immune-modulation, and their deficiencies are suggested to be important risk factors for childhood infections. This study, therefore, undertook to assess the occurrence of infections in rural Indian schoolchildren, subsequent to daily supplementation with vitamin D-calcium or zinc for 6 months. SUBJECTS/METHODS: This was a randomized, double-blind, placebo-controlled trial in apparently healthy 6-12 year-old rural Indian children, recruited to 3 study arms: vitamin D arm (1,000 IU D3 - 500 mg calcium, n = 135), zinc arm (10 mg, n = 150) and placebo arm (n = 150). The infection status was assessed using a validated questionnaire, and the biochemical parameters of serum 25(OH)D and serum zinc were measured by ELISA and colorimetry, respectively. The primary outcome variable was occurrence of infections (upper respiratory and total infections). RESULTS: Serum 25(OH)D concentration in the vitamin D arm improved significantly by 34%, from 59.7 ± 10.9 nmol/L to 80 ± 23.3 nmol/L (P < 0.0001), but no improvement was observed for serum zinc concentration. While there was significant increase in the percentage of children reporting no or mild upper respiratory tract infections (URTI) and total infections (TI) in all three groups, improvements in the supplemented groups were similar to the placebo group. However, the vitamin D arm reported lower URTI and TI status in the vitamin D sufficient versus insufficient children. Also, URTI and TI status were found to be significantly (P < 0.0001) lower in children with improved 25(OH)D versus unchanged 25(OH)D. CONCLUSIONS: Vitamin D-calcium supplementation helped to improve the vitamin D status but exerts no effect on the occurrence of infections when compared to the placebo group. Improvement in the serum 25(OH)D concentrations and attainment of vitamin D sufficiency may exert a beneficial effect on the infection status and needs to be investigated further. To evaluate the efficacy of zinc supplementation, higher dosages need to be administered in future studies.

  • The purpose of this study was to investigate the effect of manganese (Mn) supplementation on bone status and calcium balance in ovariectomized rats according to the calcium intake levels. Total of 50 Sprague Dawley female rats (6 weeks) were divided into 5 groups and bred for 12 weeks: sham operated control group (SACa), OVX Ca deficiency group (OLCa) with Ca deficiency diet (0.1% Ca modified AIN-93N diet), OVX Ca deficiency & Mn supplement group (OLCaMn), OVX adequate Ca group (OACa; 0.5% Ca AIN-93N diet) and OVX adequate Ca & Mn supplement group (OACaMn). BMD (bone mineral density) of the femur was increased by Mn supplementation in OVX adequate Ca group. However, BMDs of spine, femur and tibia were lowered in OLCa compared to the OLCaMn group. Bone strength of tibia in OLCaMn group was significantly lower than OLCa group. Serum ALP (alkaline phosphatase) and CTx (C-telopeptide of collagen cross-links) levels were significantly higher in ovariectomized rats than those in the sham group, but they were not changed by Mn supplementation. Ca retention rate and Ca absorption rate did not differ among the experimental groups. Urinary Ca excretion was increased by Mn supplementation in Ca deficiency rats. In summary, Mn supplementation resulted in positive effects on bone mineral density ovariectomized rats with which intake adequate Ca. However, Mn supplementation on Ca deficiency ovariectomized rats resulted in decrement of BMO and bone strength by increasing Ca excretion. Therefore, it is encouraged to consider calcium intake levels in supplementation of manganese in order to prevent postmenopausal osteoporosis and to keep bone healthy. • This study was conducted to investigate whether there is a difference in calcium intake between elementary school students who are participating in the school milk program and those who are not. The study samples consisted of 240 milk program participants and 120 non-participants in the fifth and the sixth grades at a school located in Cheong-ju. The survey questionnaire included questions related to general status, drinking milk at school, and intake of milk and dairy products at home. An FFQ (food frequency questionnaire) was composed of 30 calcium-supplying foods, which surveyed the normal intake amount at one time and the frequency per month. The average daily intake of calcium by the participants (1052.3 mg) was higher than that of the non-participants (772.5 mg) by 279.8 mg, and the major consumed food item contributing to the difference was milk. The major sources of dietary calcium were 'milk' for the participants and 'ice cream' for the non-participants. In a question asking the reasons for participation in the program, 48.8% of the participants answered 'benefits to health', and the primary reason why the nonparticipants did not drink milk at school was 'stomach pain' (55.0%). Among the participants, 80.4% said they 'are drinking milk at home', which was in contrast to only 50.8% of the non-participants. And 48.7% the participants said they drank 'more than 1 cup' of milk at home, and 47.5% of the non-participants said they drank 'less than 1 cup'.

  • Recently it is reported that RBC membrane fluidity decreases and RBC calcium levels increase with age. The aim of this study was to analyze changes in lipid and calcium metabolism with age, and to seek relationship of diet and metabolism. With clinically normal Korean adults(male 60, female 63), this study was carried out in three phases : 1) to analyze fatty acid percentage of RBC membrane, 2) to analyze calcium levels of RBC with age, and 3) to compare the effects of dietary fatty acid intake on blood fatty acid profiles. The results are as follows : The P/S ratio of RBC membrane fatty acid decreased with age. The RBC calcium content increased according to age, with women having a higher level than men. The higher intake groups of linolenic acid(C18:3) has statistically higher serum linolenic acid levels. But dietary effects of membrane fatty acid were not found. Therefore, the further research to seek the possible relationship of diet and membrane fatty acid should be continued.

  • This study was conducted to investigate the status of calcium intake and serum calcium level in perimenopausal women. The age distribution of the subjects was 49-55 years. Daily nutrient intake and dietary sources of calcium were analyzed by a convenient method and a food frequency questionnaire. At the same time, fasting blood samples were collected and serum calcium concentration was measured. The BMD of subjects was measured by Dual Energy X-ray Absorptiometry (DEXA). Fifty percent of the subjects under 50 years of age ($\leq$49 yr group) and 66.9% of the subjects from 50 years and up ($\geq$50 yr group) were classified as osteopenia or osteoporosis. Intake of energy (p<0.001), protein (p<0.05), fat (p<0.05), calcium (p<0.01) was significantly different between $\leq$49 yr group and $\geq$50 yr group. Mean daily intake of calcium was much lower than the Korean RDA : 94.9% in $\leq$49 yr group and 87.4% in $\geq$50 yr group. The average concentration of total calcium in serum was within the normal range in $\leq$49 yr group. Serum calcium concentrations were significantly (p<0.05) different between $\leq$49 yr group and $\geq$50 yr group. It was noteworthy that serum calcium concentration was positively related to the intake of protein, fat and calcium. Lettuce, sea mustard, bean-curd, anchovy, radish and perilla leaf was included among the major sources of dietary calcium. Further investigation is necessary to make sure of the relations between BMD and serum calcium level and calcium intake.

  • Several studies revealed that low calcium intake is related to high prevalence of cardiovascular diseases such as hypertension. The prevalence of hypertension is high in Koreans along with their low dietary calcium consumption. Thus, the aim of this study was to evaluate the status of calcium intake between the hypertension and normotension groups and to investigate the correlation between dietary calcium intake and blood pressure, blood lipid parameters, and blood/urine oxidative stress indices. A total of 166 adult subjects participated in this study and were assigned to one of two study groups: a hypertension group (n = 83) who had 140 mmHg or higher in systolic blood pressure (SBP) or 90 mmHg or higher in diastolic blood pressure (DBP), and an age- and sex-matched normotension group (n = 83, 120 mmHg or less SBP and 80 mmHg or less DBP). The hypertension group consumed 360.5 mg calcium per day, which was lower than that of the normotension group (429.9 mg) but not showing significant difference. In the hypertension group, DBP had a significant negative correlation with plant calcium (P < 0.01) after adjusting for age, gender, body mass index (BMI), and energy intake. In the normotension group, total calcium and animal calcium intake were significantly and positively correlated with serum triglycerides. No significant relationship was found between calcium intake and blood/urine oxidative stress indices in both groups. Overall, these data suggest reconsideration of food sources for calcium consumption in management of the blood pressure or blood lipid profiles in both hypertensive and normotensive subjects.

  • Purpose: This study was to determine the effects of calcium intake on bone mineral density (BMD) in pre and post menopause women and to provide basic data for enhancing bone health of middle aged women. Methods: A total of 700 middle-aged women living in Seoul and Geonggi Province were interviewed during the period from June 2003 through January 2004 to investigate their social. demographic and physiological characteristics, health and daily activity performance, and their dietary patterns, and bone mineral density was measured. The survey of dietary intake was 24 hour recalls, and the individual calcium intake was calculated using food frequency. Data of 618 subjects was used for the analysis. Of the calcium intake levels, BMD values of the subjects of 20% of high level. 60% of middle level and 20% of low level were analyzed and compared. Results: The level of calcium intake according to general characteristics of the subjects was significantly related to age (p=0.001), education levels (p=.003) and marital status (p=.001). The BMD of the lumbar vertebrae and femur of the subjects taking a high level of calcium showed significantly higher than that of the subjects taking a middle level and low level of calcium. Femoral T-score was also significantly higher in subjects taking a high level of calcium than that of those taking a middle level and lower levels of calcium. Lumber spine T-score was higher in the high level group than that of the middle level group. Conclusion: The study revealed that women taking a high level of calcium had better bone health. Therefore. calcium intake is extremely important in daily dietary intake so that the intake of calcium-rich foods is highly recommended.
