Effects of Dietary Education on Low-sodium Diet Adaptation (식생활교육이 저나트륨식 적응에 미치는 영향)

  • Korean style DASH (Dietary Approaches to Stop Hypertension) and a dietary education program for sodium reduction were developed. Reduced sodium diets (15 and 30% reductions) were developed from general diets for 3 consecutive weeks from Monday through Saturday. Subjects (19 total) were classified into two groups according to dietary education. Experimental period was from June 24 to July 23, 2012. Total sum of adaptation scores for low sodium diets significantly increased in the group that underwent dietary education compared to that without (p<0.05). After the experiment, both groups showed significantly increased values in terms of food group balance, sodium-related nutrition knowledge, attitude, and practice by paired t-test. Especially, group that underwent dietary education showed significantly higher values for attitudes by ANCOVA pre-test as a variation (p<0.01). For the results of the nutrient intake survey, group that underwent dietary education showed significantly increased values for dietary fiber (p<0.01), vitamin A (p<0.001), vitamin K (p<0.001), vitamin C (p<0.01), Folic acid (p<0.001), vitamin B12 (p<0.01), calcium (p<0.01), iron (p<0.05), and zinc (p<0.05) and significantly decreased values for sodium (p<0.05) and chloride (p<0.005). Subjects adapted to reduced sodium diets showed apparent improvements in sodium-related knowledge, attitude, practice and intake of nutrient, and these improvements were even higher in the group that underwent dietary education compared to that without. Thus, adaptation to low sodium diet combined with dietary education can improve dietary habits.

  • Among milk proteins, caseins are not subjected to chemical changes during heat treatment of milk; however, whey proteins are partially denatured following heat treatment. The degree of whey protein denaturation by heat treatment is decreased in the order of high temperature short time (HTST) > low temperature long time (LTLT) > direct-ultra-high temperature (UHT) > indirect-UHT. As a result of heat treatment, several changes, including variations in milk nitrogen, interactions between beta-lactoglobulin and k-casein, variations in calcium sulfate and casein micelle size, and delay of milk coagulation by chymosin action, were observed. Lysine, an important essential amino acid found in milk, was partially inactivated during heat treatment. Therefore, the available amount of lysine decreased slightly (1~4% decrease) after heat treatment, However, the influence of heat treatment on the nutritional value of milk was negligible. Nutritional value and nitrogen balance did not differ significantly between UHT and LTLT in milk. In conclusion, our results showed that heat treatment of milk did not alter protein quality. Whey proteins denatured to a limited extent during the heat treatment process, and the nutritional value and protein quality were unaffected by heat treatment.

A Comparative Analysis of the Metabolic and Coagulative Profiles in Patients with Idiopathic Scoliosis, Congenital Scoliosis and Healthy Controls: A Case-Control Study

  • Study Design: Single-center, observational, case-control study. Purpose: Comparison and analysis of the metabolic and coagulative profiles in patients with idiopathic scoliosis, patients with congenital scoliosis, and healthy controls. Overview of Literature: Serum melatonin deficiency has been a controversial topic in the etiopathogenesis of scoliosis. Low bone mineral density, low vitamin D3 levels, and high parathyroid hormone levels are common metabolic abnormalities associated with scoliosis that may be responsible for its pathogenesis. In addition to metabolic defects, several studies have shown coagulation defects that either persist from the preoperative period or occur during surgery and usually lead to more than the expected amount of blood loss in patients undergoing deformity correction for scoliosis. Methods: The study population (n=73) was classified into those having congenital scoliosis (n=31), those with idiopathic scoliosis (n=30), and healthy controls (n=12). After detailed clinicoradiological evaluation of all the subjects, 10-mL blood samples were collected, measured, and analyzed for various metabolic and coagulation parameters. Results: The mean serum melatonin levels in patients with idiopathic scoliosis were significantly lower than those in the healthy controls. Although the mean serum melatonin level in the congenital group was also low, the difference was not statistically significant. Serum alkaline phosphatase and parathyroid hormone levels were higher in the scoliosis groups, whereas the vitamin D level was lower. No differences were observed in the coagulation profiles of the different groups. Conclusions: Low serum melatonin levels associated with scoliosis can be a cause or an effect of scoliosis. Moreover, low bone mineral density, high bone turn over, and negative calcium balance appear to play an important role in the progression, if not the onset, of the deformity.

Production Increase of Milk in Dairy Cow by Metabolic Profile Test (대사판정시험을 이용한 젖소의 우유증산)

  • This study examined metabolic profiles of 1349 Holstein cows from 91 commercial herds. Thirteen parameters which are consisted of twelve blood components and body condition score were examined and their mean values. standard deviations and standard limits, which are 80% confidential limits, in each lactational stage were reported. The variations of each parameter affected by season, individual milk yield, adjusted corrected milk yield of herd. and lactation number were also reported. A model of metabolic profile test applicable to this country where the average number of cows in a herd is small as to be fifteen is designed. Metabolic profiles as reflected in each parameter were discussed in relation to adequacy of dietary intake for production, milk production, reproductive performance, and diseases, and the possible measure to improve productivity of dairy cows were proposed. Much of the variation in parameters was due to differences between herds, and less to differences between seasons, differences between individual milk yield, and differences between lactational stages. As the average herd size in this country is small, it is believed that all the cows in a herd must be sampled, and the individual result of each parameter was compared with the standard limit for each lactational stage, and the percentage of cows which are outside the standard limits in a herd was calculated to use as a criteria for evaluation of the herd. Data outside the 99% confidential limits were to be deleted at first, but when the trends of the data outside the 99% confidential limits are same as the trends of the data within 99% confidential limits, the deleted data must be reviewed again, otherwise some important informations would be missed. The mean concentration of blood urea nitrogen in this study was much higher than that was reported in England, U.S.A. and Japan, and it was similar to the upper limits reported in England, U.S.A. and Japan. So it was thought that the concentration of blood urea nitrogen is improper as a criteria for protein intake. The increase of serum total protein cocentration beyond standard limits was due to increase of serum globulin concentration in most of the cows. The correlation coefficient between serum and protein and serum globulin concentration was 0.83. Serum globulin concentration was negatively related to adjusted corrected milk of herd. Serum albumin, calcium and magnessium concentrations were negatively related to adjusted corrected milk of herd, which indicate that high-producing individual or high-producing herd have not taken sufficient protein/amino acids, calcium and magnessium. Packed cell volume was negatively related to adjusted corrected milk of the herd, and the trend was same In each lactational stage. The correlation coefficient between serum and packed cell volume was 0.16 and the correlation was very weak. Blood glucose concentration was lowest in early lactational stage, which indicates negative energy balance in early lactational stage. Blood glucose concentration was negatively related to adjusted corrected milk of herd from peak to late lactational stage, which indicates negative energy balance during the period in high-producing individuals or high-producing herds. Correlation coefficient between serum aspartate aminotransferase activity and serum ${\gamma}$-glutamyltransferase activity was 0.41, and this indicates that serum ${\gamma}$-glutamyltransferase should be included as a parameter of metabolic profile test to evaluate liver function. Body condition score of dairy cows in this country was lower than that of Japan in every lactational stages, and the magnitude of increase in body condition score during middle and late lactational stages was small. Metabolic profile can not be evaluated with solely nutritional intake. When an individual or large percentage of cows in a herd have adnormal values In parameters of metabolic profile test, veterinary clinician and nutritionist should cooperate so as to diagnose diseases and to calculate the e of no운ents simultaneously.

Analysis of Contents of Food Intake of Middle School Home Economics Textbook and Food Intake Trends of Middle School Students in Korea Using 2007~2015 Korea National Health and Nutrition Examination Survey for Exploring Education Direction of Food Intake (중학생의 식품 섭취 교육방향 탐색을 위한 가정 교과서 및 2007~2015 국민건강영양조사의 식품 섭취 변화 추이 분석)

  • This study was performed to analyze the contents of food intake in middle school Home Economics textbook and the trends of food intake of middle school students in Korea to figure out the education direction of food intake. The contents of food intake were analyzed in major three kinds of middle school Home Economics textbook according to 2015 curriculum and the trends of food and nutrient intake were analyzed in 2,543 subjects aged 13 to 15 years using 2007~2015 Korea National Health and Nutrition Examination survey by logistic regression analysis or Pearson correlation coefficient. As a result, contents of food intake of textbook included food source of nutrient, food group name, necessity of eating diverse foods, recommended daily eating frequency of food group and menu planning according to meal composition guideline, however food intake trends were not included. Consumption of grains and grain products was increased until 2007 to 2010 year and was decreased after 2011 year(p=0.0012). Sugars and sweets, beverages and alcohols, and fish and shellfish consumption were increased during 2007~2015 year(p<0.0001). Carbohydrate, fat, vitamin A, thiamin and iron intakes were increased(p=0.0052), and energy ratio by carbohydrate was decreased(p=0.0009) and energy ratio by fat was increased(p<0.0001) during 2007~2015 year. Mean ratios of nutrient intake compared to the dietary reference intakes for Koreans were very low in dietary fiber(19-27%) and calcium(46-56%), but was higher in sodium(221-289%)(p<0.0001) regardless of year. There was a significant positive correlation between most food group intakes except sugars and sweets, bean and bean products, nuts and seeds, seaweeds, and beverages and alcohols and energy, protein, dietary fiber, vitamin A, riboflavin, calcium and iron intakes(p=0.0375). In the above, during the period from 2007 to 2015 year, intakes of sugars and sweets, beverages and alcohols, and fish and shellfish were increased, and intakes of dietary fiber and calcium were low and energy ratio by fat was increased, thus these trends are concerned to threaten nutritional balance and health of subjects. Therefore, Home Economics textbook of middle school needs to include food intake trends of adolescents with basic concepts to help them maintain balanced diet in the rapid change of food intake patterns for maintaining optimal nutrition and health.

A Nutrition Survey of the Rural Elderly in Hwaseung' Kyeonggi Province (일부농촌지역(一部農材地域) 노인(老人)들의 영양상태(營養狀態)에 관(關)한 연구(硏究))

  • A survey was carried out to determine the nutritional status of rural elderly. Determination was made on 50 persons, aged 60 years and over, in the rural area of Paltan-myeon, Hwaseong-kun, Kyeonggi province from June 1 to August 20, 1980. Grains provided 82$\sim$85% of total energy input most nutrient intake was from vegetable foods. Daily energy intake was not sufficient as 77.2$\sim$89.8% of RDA. The energy input percentage of carbohydrate: fat: protein was 79 : 10 : 11. showing higher dependance on carbohydrate. The protein intake only met 53.7$\sim$65.3% % of RDA. The contribution of animal proteins to total protein was only 12.2$\sim$12.4%, far below the recommended allowance. Both calcium and iron was insufficiently ingested as 40.6$\sim$55.7% and 72.0$\sim$92.0% of RDA, respectively. The intake of vitamin A and ascorbic acid almost reached RDA whereas the intake of thimin, riboflavin and niacin was not sufficient as 63.0$\sim$97.0%, 51.0$\sim$58.5% and 59.1$\sim$83.9% of RDA, respectively. 32% of the subjects were higher blood pressure than 160/95 mmHg proven to be hypertension. The correlation coefficients between clinical sign score, index of appetite, balance of meal and nutrient intake were significant. (P<0.05)

Effect of Dietary Protein Levels on the Performance, Nutrient Balances, Metabolic Profile and Thyroid Hormones of Crossbred Calves

  • An experiment was conducted to study the effect of different dietary protein levels on the performance, nutrient balances, blood biochemical parameters and thyroid hormones of crossbred calves. Thirty crossbred (Bos taurus${\times}$Bos indicus) calves aged 3-5 months were divided into 3 equal groups of 10 each and fed graded levels of crude protein, namely 100 (NP), 75 (LP) and 125 (HP) percent of the Kearl recommendations for 105 d. The calves had access to ad libitum oat hay as the basal roughage. A metabolism trial of 6 d duration was conducted at 90 d of the study. Blood collection and its analysis for various hematological and biochemical parameters as well as thyroid hormones was done both during the pre- and post-experimental periods. The fortnightly body weight changes and the net gain did not differ significantly due to dietary variation. The average daily gain was $367{\pm}21.6$, $347{\pm}22.9$ and $337{\pm}26.4g$ in calves fed NP, LP and HP diets, respectively. Averaged across the feeding trial, oat hay intake was higher (p<0.05) in NP animals than HP or LP fed groups. The dry matter (DM) intake showed no significant difference between the 3 groups but the DM digestibility was higher (p<0.05) in the HP fed animals. The digestibility of crude protein, organic matter, crude fiber and nitrogen-free extract was significantly higher (p<0.05) on HP diets compared to LP or NP diets. The calves on all 3 diets were in positive nitrogen (N) balance, however the N retention was higher (p<0.05) in HP than in LP fed calves. The intake and retention of calcium and phosphorus were similar between the treatments. The blood biochemical profile revealed no significant influence of the dietary treatments on hemoglobin, packed cell volume as well as serum levels of glucose, total protein, albumin, globulin, Ca, P, and alkaline phosphatase. Serum levels of the circulating thyroid hormones ($T_3$ and $T_4$) tended to be lower (p>0.05) on feeding of the LP diet besides showing an increasing trend with the advancement of age. Considering the similar performance and metabolic profile, it could be concluded that crossbred calves can be satisfactorily reared on 25% lower protein level as recommended by Kearl for developing countries, which would not only economize the cost of production but also help to reduce environmental pollution attributable to livestock production.

Effects of Guisinhwan on the Ovariectomized Rat Model of Postmenopausal Osteoporosis (귀신환이 난소적출 백서의 골다공증에 미치는 영향)

  • Aging is characterized by an age-dependent reduction in bone density. Pronounced bone loss by postmenopausal estrogen deficiency induces a bad effect on dynamic balance of bone metabolism. When the bone density is reduced to the level below the fracture threshold, the risk for fracture is greatly increased. The purpose of this study is to examine what are the effects of the Guisinhwan(GSH : 歸腎丸) on the ovariectomized rat model of postmenopausal osteoporosis. The results of the experiment are as follows: Body weight in control group showed significant increase in comparison with sham, but that in GSH-treated showed no change in comparison with control. The level of serum albumin in control group showed significant decrease in comparison with sham. That in GSH-treated was slightly decreased in comparison with control. The level of serum ALP activity in control group showed significant increase in comparison with sham, but that in GSH-treated was significantly decreased in comparison with control. The level of serum phosphorous, calcium, GOT, GPT, T3 did not significant change among the three groups. The level of serum estrogen in control group showed slightly decreased in comparison with sham, but that in GSH-treated showed no change in comparison with control. The level of serum T4 in control group showed significant increase in comparison with sham, but that in GSH-treated was significantly decreased in comparison with control. Trabecular bone area as well as trabecular thickness in control group showed significant decrease In comparison with sham. Those in GSH-treated showed significant increase in comparison with control. Trabecular number did not significant change among the three groups. Trabecular separation only in GSH-treated showed significant decrease in comparison with control. Osteoclast number in control group showed significant increase in comparison with sham. That in GSH-treated showed significant decrease in comparison with control. Oseoblast surface in control group showed significant increase in comparison with sham, but that in GSH-treated showed no change in comparison with control. According to the above these results, GSH has shown to be capable of preventing and curing osteoporosis caused by old-aged and postmenopause.

Effect of By-Product Gypsum Fertilizer on Methane Gas Emissions and Rice Productivity in Paddy Field

  • Rice cultivation in paddy field affects the global balance of methane ($CH_4$) as a key greenhouse gas. To evaluate a potential use of by-product gypsum fertilizer (BGF) in reducing $CH_4$ emission from paddy soil, $CH_4$ fluxes from a paddy soil applied with BGF different levels (0, 2, 4 and $8Mg\;ha^{-1}$) were investigated by closed-chamber method during rice cultivation period. $CH_4$ flux significantly decreased (p<0.05) with increasing level of BGF application. $8Mg\;ha^{-1}$ of BGF addition in soil reduced $CH_4$ flux by 60.6% compared to control. Decreased soil redox potential (Eh) resulted in increasing $CH_4$ emission through a $CO_2$ reduction reaction. The concentrations of dissolved calcium (Ca) and sulfate ion (${SO_4}^{2-}$) in soil pore water were significantly increased as the application rate of BGF increased and showed negatively correlations with $CH_4$ flux. Decreased $CH_4$ flux with BGF application implied that ${SO_4}^{2-}$ ion led to decreases in electron availability for methanogen and precipitation reaction of Ca ion with inorganic carbon including carbonate and bicarbonate as a source of $CH_4$ formation under anoxic condition. BGF application also increased rice grain yield by 16% at $8Mg\;ha^{-1}$ of BGF addition. Therefore, our results suggest that BGF application can be a good soil management practice to reduce $CH_4$ emission from paddy soil and to increase rice yield.
