  • A pot experiment was conducted to study the effect of application rate of anaerobically digested pig slurry on the growth of Chinese cabbage and the outflow characteristics of N and P from leaching and runoff in the upland. Anaerobically digested pig slurry(ADPS) was applied rates of 0, 6, 12, and $18L\;pot^{-1}$, and Chinese cabbages were grown for 50 days. Dry matter yield of Chinese cabbage increased significantly at the rates of 6 and $12L\;pot^{-1}$, but decreased at the rate of $18L\;pot^{-1}$ due probably to the high salinity. The EC(1:5) of the soil receiving $18L\;pot^{-1}$ of anaerobically digested pig slurry was $0.28dS\;m^{-1}$, which was significantly higher than those receiving 6 and $12L\;pot^{-1}$ of anaerobically digested pig slurry. For the leachate and runoff, N and P concentration increased with the application rate of ADPS. Therefore, considering the dual goal of optimum crop growth and minimal discharge of non-point pollution sources to water system, this study suggests that a testing of a site-specific proper application rate of liquid pig slurry including ADPS is prerequisite to achieving optimum agricultural productivity while minimizing water quality degradatio.

  • Binary trans-activation (pOp/LhG4) system is one of the regulatory systems of transgene expression. The target gene expression is achieved by crossing the reporter plants with an activator in this system. In this study, we used the features of this system in Chinese cabbage as a way to protect genetic resources and new varieties. To establish pOp/LhG4 system in Chinese cabbage, we designed an activator (35SLhG41300), and reporter constructs (pOpGUSBart) and co-transformed using Agrobacterium. The transgenic plants were selected by antibiotics and the functional activity of pOp/LhG4 system was confirmed by GUS expression. To induce the tissue-specific function, we constructed pOp/LhG4 system (795LhGBart) using female tissue specific promoter (ProAt1g26795) of Arabidopsis. Co-transformed transgenic plants clearly showed tissue specific expression in Arabidopsis. The results suggest the possibility of the system's application of $F_1$ generation can be restricted by expressing the target gene to protect a new variety and genetic resource in Chinese cabbages.

  • When Kimchi is cooked, it is very import to find an appropriate level for the salt content of the cabbage to makes the best tasting Kimchi. Therefore, in this article, attempts were made to find the best salted cabbage condition using difference salt solution concentration, temperatures and fermentation periods. In the experiments with the difference of the salt solutions, 10 and 15%, the salted cabbages were packed in polyethylene bags, and incubated at 10, 15, 20 and 25$^{\circ}C$ for 0, 2, 4, 6, 8, 10, 12, 14, 16 and 20 hrs. As a result, the best tasting Kimchi, in terms of texture characteristic, were found with storage times of 10 and 6-8 hrs, with salt solution concentrations of 10 and 15%, respectively, both of these at 25$^{\circ}C$. The best conditions, in terms of the kimchi taste characteristics, where 6-10 hrs, with the salt solution concentrations of 10 & 15%. With storage conditions of 10 hrs and a salt solution concentraction of 10%, and 6-8 hrs and a salt solution concentration of 15%, both at 25$^{\circ}C$, the texture characteristics were fresh. clear and coot. Also, the points of the appropriate salt content differ with temperature. Therefore, the appropriate conditions for the salting time, storage temperature and salt solution concentrations will make the best tasting, most nutritious Kimchi, in the least time and most economically.

  • The effect of potash applied with different sources of nitrogen was experimented in pot soil culture on chinese cabbage (Brassica Pekinensis Rupr, Var. Fall 1984: Sammi Garak, Spring 1985: Jungang Summer lab.) in the fall, 1984 and in the spring, 1985. Results obtained are as follows; 1. Ammonium nitrate increased the yield of chinese cabbage more than urea did, and the effect of yield increase by ammonium nitrate was greater in the fall cultivation than in the spring. 2. The yield of chinese cabbage was positively correlated with the contents of K in the first (May 17, 1985) and second (June 9, 1985) thined cabbages (dry matter). It was also positively correlated with $NO_3-N$ content of the first thined cabbage and with K/Ca+Mg m.e, ratio of outer leaves of the harvested (June 27, 1985) cabbage, but negatively affected with Mg content of the outer leaves. 3. Correlations between K and $NO_3-N$ contained in the dry matter of first and second thined, and inner leaves of the harvested cabbage were learnt to be $r;0.9998^{**}$, r;0.4439, and $r;-0.7135^*$ respectively. The higher $NO_3-N$ content in the inner leaves of harvested cabbage was observed at K omitted ammonium nitrate plot where K was deficient, Ca and Mg contents were low. 4. The nutrient absorption and growth of chinese cabbage may take the following process. Nitrate nitrogen increases vegetative growth of the plant with enhanced K uptake and movement in to inner leaves and followed by replacement of Ca uptake and finally Mg uptake and its movement in to inner leaves.

  • This study was conducted to evaluate the effects of green manures and complemental fertilization with oil cake or liquid fertilizer on growth and nitrogen use efficiency of Chinese cabbage cultivated in organi systems. Field experiments were carried out at the National Institute of Agricultural Science in Suwon, South Korea from 2012 to 2014. Two green manure crops, Crotalaria and Hairy vetch, was cultivated in summer and in winter, respectively. The application methods of the green manure consisted of three tillage systems (overall tillage, partial tillage and no tillage). Oil cake and liquid fertilizer were used as complemental fertilizer. The results showed that when used as covering material in the upland soil without tillage, green manure fertilization was more effective in increasing growth and yield of Chinese cabbage than when incorporated into soil. It was possible to grow and harvest Chinese cabbage in the spring season by the application of hairy vetch as winter green manure. The higher yield of Chinese cabbage with green manure application was caused by the lower incidence rate of soft rot and tip-burn. The yield of the Chines cabbage that received green manure applications over two consecutive seasons followed by the supplemental fertilization with oil cake was similar to that of the conventional chemical fertilization. Following a single season green manure application in summer, however, the yield of cabbage was only about 70% of the conventional treatment. Green manure cultivation with additional liquid fertilization produced a yield similar to the conventional fertilization treatment, soil inorganic nitrogen concentration remained stable and the nitrogen use efficiency increased in the green manure applied soil. In conclusion, the organic cultivation of Chinese cabbage in the autumn season could be outperformed in the upland soil receiving two seasons (winter and summer) of green manure fertilization followed by the supplemental fertilization with liquid fertilizer.

  • Commercial direct refrigerators have good energy efficiency, but are difficult to use for supercooled storage due to their large temperature deviation. Placing insulators and conductors inside the refrigerator could reduce these temperature deviations to within 0.3 degrees, allowing for the supercooled storage. The supercooled storage of salted Chinese cabbages during ten weeks was progressed to compare the other low temperature storages. The nucleation temperatures of salted Chinese cabbage were around -2.5℃ and the freezing points were around -0.4℃, so -2℃ was selected for the supercooled storage. The growth rate of lactic acid bacteria and yeast at -2℃ storage was lower than that at 2℃ storage. The reducing sugar was maintained higher due to the growth rate of lactic acid bacteria. The supercooled storage had an effect of delaying the fermentation of the salted Chinese cabbage, which may have the effect of delaying the fermentation of kimchi. This enhancement method of the direct refrigerator was effective for the supercooled storage and would be promising for commercial use.

  • This study investigate growth responses of Chinese cabbage and nitrogen use efficiency (NUE) to application of fermented organic fertilizer produced from domestic organic resources for developing alternative materials instead of imported castor oil meal. Two types of fermented fertilizers (Fermented Organic Fertilizer A (OFA) and Fermented Organic Fertilizer B (OFB)) were produced by mixing distillers dried grains 30%, sesame cake 30%, rice bran 20% and fish meal 20% under different fermentation conditions. Treatment consisted of OFA is fermented for 21 days on plastic greenhouse, OFB is fermented for 5 days on 40℃, and MOF (Mixed Organic Fertilizer) is a fertilizer made with castor bean as the main ingredient. OFA, OFB and MOF were applied at the rate of 320 kg N/ha. Chinese cabbages were cultivated from Aug. to Nov. in 2022. Growth and yield of Chinese cabbage were no significant differences among all treatments except control (non-fertilized, NF). However, NUE of Chinese cabbage was higher the fermented fertilizer treatment (OFB: 81.4%, OFA: 79.1%) than the MOF (65.3%). It was observed that urease activity in the fermented fertilizer treatment was significantly higher than the MOF. This result confirmed that fermented fertilizers have similar effect on growth and yield with the MOF and could improve the NUE of crop.

  • This thesis, which involves honest life stories of members of the ìtraditionalî Korean generation that lived through the turbulent times of the first half of the twentieth century, assesses the meaning and import of Korean cuisine during an individual Korean's lifetime, as well as the relevant properties of the culinary culture of the traditional generation and how those properties continue to influence the present generation of Koreans. Thus, traditional Korean culinary culture was subdivided into the following four aspects, each of which were exemplified by representative examples. The first of these is slow-food dietary life, which is exemplified by fermented foods. The development of side dishes (panchan) based on fermentation - kimchi, different types of soy and bean paste, salted seafoods, dishes of dried radish or cucumber slices seasoned with soy sauce, and so on - made the quantitative and qualitative supplementation of food possible for traditional Koreans. The second of these aspects, referred to as friendly dietary life, is exemplified by self-sufficiently produced foods. The system of many species and small production suitable with the season made it possible to produce food from sustainable ecological systems and to maintain locally grown food-cultures, each of which was distinguished from others by a local specialty product. The third aspect of the traditional Korean culinary culture involves the same use of medicinal roots and plant materials for foodstuff, and this is exemplified by the use of foods to cure and prevent diseases. The notion, for example, that 'boiled rice is an invigorant' is characteristic of the notion that diet can function in a preventative medical context, and other similar Korean notions illustrate the importance, also, of the curative properties of food. The fourth and final aspect of traditional Korean culinary culture identified herein is creative dietary life, which can be viewed essentially as a Korean adaptation to the turbulence of life during the early $20^{th}$ century in Korea. This trend is exemplified by many Korean foods that were created in response to foreign influences, such as onions, cabbages, curry, etc. which found their place in overall Korean culture through the age of Japanese settlement, as well as the Korean war.

  • Continuous monocropping of Chinese cabbage in Gangwon highland increased gravel and sand contents due to surface soil erosion. Nutrient leaching and Chinese cabbage growth were investigated with different treatments of gravel contents and nitrogen application levels by using $0.5m^2$ Wagner pots. Gravel contents were 0, 10, 30, 50, 70, and 90%(w/w), nitrogen application levels were 60, 120, and 240 kg/ha, and manure compost application rate was 15 ton per hectare, respectively. Wagner pots were filled with loamy sand soil mixed with 5 cm-sized gravels. Fresh weight of Chinese cabbage was decreased as gravel contents in soil increased, and particularly severely decreased at 240 kg-N/ha. Yields of Chinese cabbage were remarkably decreased at the rate of 60 kg-N/ha with 30% gravel content and 120 kg-N/ha with 50% gravel content. Most of Chinese cabbages were severely wilted by heavy N application at the rate of 240 kg-N/ha in the middle of growth stages regardless of gravel contents, while about 50% of Chinese cabbage showed wilting symptom in the treatment of more than 50% of gravel contents and 120 kg-N/ha. N content in leachate increased as gravel content and N application increased. The relationship between gravel content and N contents showed linear regression: N in leachate = 0.014(gravel content) -0.039 (r = 0.961). Particularly, $NH_4-N$ contents in leachates with more than 30% gravel content and 240 kg-N/ha ranged from $139{\sim}339mg/L$. Chinese cabbage growth in loamy sand soil containing 30%, and 50% gravel contents could be adversely affected by N application at the rate of 240, and 120 kg-N/ha, respectively.
