배추와 양배추 추출물의 생리활성 물질 및 암세포 증식 억제효과 분석 (Determination of Bioactive Compounds and Anti-cancer Effect from Extracts of Korean Cabbage and Cabbage)

  • 본 연구에서는 배추와 양배추 에탄올 추출물의 총 폴리페놀 함량 및 총 플라보노이드 함량을 측정하고, glucosinolates 함량을 HPLC로 분석하였다. 또한, MTT assay를 통한 암세포 증식 억제 활성을 측정하였다. 배추와 양배추 에탄올 추출물의 항산화물질로 알려진 총 폴리페놀 함량은 각각 308.48 및 344.75 ${\mu}g$ GAE/g dry weight으로 나타났으며, 총 플라보노이드 함량은 각각 5.33 및 5.95 ${\mu}g$ QE/g dry weight으로 나타났다. 배추 추출물에서는 progoitrin, glucoalyssin, gluconapin, glucobrassicanapin, glucobrassicin, 4-methoxyglucobrassicin의 총 6개 glucosinolates를 확인하였다. 양배추 추출물에서는 glucoraphanin, sinigrin, glucobrassicin 및 4-methoxyglucobrassicin의 총 4개 glucosinolates를 확인하였다. 배추와 양배추 에탄올 추출물이 AGS 인체 위암세포주, HepG2 인체 간암세포주, LNCaP 인체 전립선암 세포주 증식에 미치는 영향을 MTT assay를 통해 알아보았다. 배추와 양배추 추출물의 농도가 증가함에 따라 농도 의존적으로 암세포 증식 억제 효능이 증가하였다. 또한, 배추와 양배추 추출물을 암세포에 처리하고 배양하는 시간이 24시간에서 48시간으로 길어질수록 암세포 성장 억제 효능도 증가하였다. 배추와 양배추의 추출과정 중에 생성된 glucosinolate 가수분해 산물과 폴리페놀, 플라보노이드 등의 생리활성 물질들이 암세포 성장 억제에 직접적인 영향을 주었을 것으로 사료된다. 한국인들이 자주 섭취하고 있는 배추와 양배추에는 주요 생리활성 물질인 글루코시놀레이트뿐 아니라 폴리페놀, 플라보노이드가 함유되어 있으며, 이들 추출물들은 암세포 증식 억제 효능이 있음을 보여주었다.

Recovery of nitrogen by struvite precipitation from swine wastewater for cultivating Chinese cabbage

  • This study assessed the fertilizing value of struvite deposit recovered from swine wastewater in cultivating Chinese cabbage. Struvite deposit was compared with commercial fertilizers: complex, organic and compost to evaluate the fertilizing effect of struvite deposit. Laboratory pot test obviously presented that the struvite deposit more facilitated the growth of Chinese cabbage than organic and compost fertilizers even though complex fertilizer was the most effective in growing Chinese cabbage. It was revealed that the growth rate of Chinese cabbage was simultaneously controlled by phosphorus (P) and potassium (K). Also, the nutrients such as nitrogen (N), P, K, calcium (Ca) and magnesium (Mg) were abundantly observed in the vegetable tissue of struvite pot. Specifically, P was the most abundant component in the vegetable tissue of struvite pot. Meanwhile, the utilization of struvite as a fertilizer led to the lower accumulation of chromium ($Cr^{6+}$) than other pots, except for compost fertilizer pots, and no detection of cadmium (Cd), arsenic (As) and nickel (Ni) in the Chinese cabbage. The experimental results proved that the optimum struvite dosage for the cultivation of Chinese cabbage was 2.0 g struvite/kg soil. On the basis of these findings, it was concluded that the struvite deposits recovered from swine wastewater were effective as a multi-nutrient fertilizer for Chinese cabbage cultivation.

양배추 분말을 첨가한 시폰케이크의 품질 특성 (Quality Characteristics of Chiffon Cake with Cabbage Powder)

  • Cabbage is a biennial plant that is native to the shores of the Mediterranean. It contains dietary fiber, minerals, vitamin A, vitamin C, and anticarcinogenic phytochemicals. For the test, cabbage powder was added (5%, 10%, 20%, and 30%) to flour. The addition of cabbage powder significantly increased the specific gravity and viscosity of the batter and pH of both the batter and chiffon cake. The moisture in the chiffon cake increased due to the addition of cabbage powder. Also, the lightness of the cake significantly increased, whereas the redness and yellowness decreased as the amount of cabbage powder increased. The lightness and redness of crumbs from C0 were higher than other samples as each 59.48, -3.17, respectively. Except for the resilience, the hardness, gumminess, fracturability, and adhesiveness showed similar values in the C0, C5, and C10. In terms of consumer perception, the color, softness, flavor and overall consumer preference for the control chiffon cake were higher than C5, C10, C20, and C30. Nonetheless, for those that contain cabbage powder, C5 and C10 had relatively higher consumer preferences than C20 and C30. As a result, the optimum amount of cabbage powder for the chiffon cake would be from 5~10%.

국산 및 수입산 배추김치의 품질 특성 연구 (Evaluation of the Quality Characteristics Chinese Cabbage from Two Geographic Origins during Fermentation of Kimchi)

  • This study was investigated for quality characteristics of cabbage from two geographic origins during fermentation of kimchi at $4^{\circ}C$ for 50 days. The pH of kimchi made from cabbage of domestic and imported was decreased with increased fermentation period, while total acidity was increased with increased fermentation period In two samples, the best pH was when it became the 10th of the fermentation period. All fermentation period, vitamin C content is gradually increasing, decreasing after the maximum value. And 40 day fermentation period expect that kimchi made using domestic cabbage, kimchi made using imported cabbage had a higher content of vitamin C contents. Hardness and chewiness of two samples decreased during fermentation. Change of hardness was lowed kimchi made using domestic cabbage. The results of sensory evaluation, texture and overall acceptability were higher in both the kimchi made using domestic cabbage.

Molecular Characterization of a thiJ-like Gene in Chinese Cabbage

  • A cDNA clone for a salicylic acid-induced gene in Chinese cabbage (Brassica rapa subsp. pekinensis) was isolated and characterized. The cabbage gene encoding a protein of 392 amino acids contained a tandem array of two thiJ-like sequences. ThiJ is a thiamin biosynthesis enzyme that catalyzes the phosphorylation of hydroxymethylpyrimidine (HMP) to HMP monophosphate. Although the cabbage gene shows a similarity to bacterial thiJ genes, it also shares a similarity with the human DJ-1, a multifunctional protein that is involved in transcription regulation, male fertility, and parkinsonism. The cabbage thiJ-like gene is strongly induced by salicylic acid and a nonhost pathogen, Pseudomonas syringae pv. tomato, which elicits a hypersensitive response in Chinese cabbage. Treatment of the cabbage leaves with BTH, methyl jasmonate, or ethephon showed that the cabbage thiJ-like gene expression is also strongly induced by BTH, but not by methyl jasmonate or ethylene. This indicates that the cabbage gene is activated via a salicylic acid-dependent signaling pathway. Examination of the tissue-specific expression revealed that the induction of the cabbage gene expression by BTH occurs in the leaf, stem, and floral tissues but not in the root.

김치유래 Lactic acid bacteria에 의한 양배추 즙의 발효특성 (Characteristics of Cabbage Juice Fermented by Lactic Acid Bacteria from Kimchi)

  • The objective of this study was to determine the quality characteristics of cabbage juice fermented by lactic acid bacteria from Kimchi (Leuconostoc mesenteroides, Lactobacillus sakei SL1103, Lactobacillus plantarum LS5, and mixed starter). Cabbage juice was inoculated with lactic acid bacteria and fermented at 30 for 72 hrs. Changes in lactic acid bacteria number, pH, titratable acidity, Brix, and color during fermentation were analyzed. After fermentation for 24 hrs, cabbage juice fermented by mixed starter showed the highest number of lactic acid bacteria (9.45 log CFU/mL). The pH of all cabbage juice also decreased to 3.88~4.19 sharply, while cabbage juice fermented by Lac. sakei SL1103 showed the highest Brix ($8.38^{\circ}Bx$). Cabbage juice fermented by mixed starter showed the highest L value (56.83). In the sensory evaluation, cabbage juice fermented by a mixed starter (Leu. mesenteroides, Lac. sakei SL1103, and Lac. plantarum LS5) showed the highest preferences in taste, flavor, and overall acceptability. Therefore, cabbage juice fermented by mixed starter (Leu. mesenteroides, Lac. sakei SL1103 and Lac. plantarum LS5) has the highest potential for the development of fermented cabbage juice as an excellent bioactive functional food.

Estimation of Chinese Cabbage Growth by RapidEye Imagery and Field Investigation Data

  • Chinese cabbage is one of the most important vegetables in Korea and a target crop for market stabilization as well. Remote sensing has long been used as a tool to extract plant growth, cultivated area and yield information for many crops, but little research has been conducted on Chinese cabbage. This study refers to the derivation of simple Chinese cabbage growth prediction equation by using RapidEye derived vegetation index. Daesan-myeon area in Gochang-gun, Jeollabuk-do, Korea is one of main producing district of Chinese cabbage. RapidEye multi-spectral imagery was taken on the Daesan-myeon five times from early September to late October during the Chinese cabbage growing season. Meanwhile, field reflectance spectra and five plant growth parameters, including plant height (P.H.), plant diameter (P.D.), leaf height (L.H.), leaf length (L.L.) and leaf number (L.N.), were measured for about 20 plants (ten plants per plot) for each ground survey. The normalized difference vegetation index (NDVI) for each of the 20 plants was measured using an active plant growth sensor (Crop $Circle^{TM}$) at the same time. The results of correlation analysis between the vegetation indices and Chinese cabbage growth data showed that NDVI was the most suited for monitoring the L.H. (r=0.958~0.978), L.L. (r=0.950~0.971), P.H. (r=0.887~0.982), P.D. (r=0.855~0.932) and L.N. (r=0.718~0.968). Retrieval equations were developed for estimating Chinese cabbage growth parameters using NDVI. These results obtained using the NDVI is effective provided a basis for establishing retrieval algorithm for the biophysical properties of Chinese cabbage. These results will also be useful in determining the RapidEye multi-spectral imagery necessary to estimate parameters of Chinese cabbage.

Chipped cabbage was packed into cylinder and pressed by piston up to the predetermined pressure on Instron-1000. The rates of dewatering were affected domintantly by the applied pressure, but not significantly by the packed amount of cabbage in the cylinder. The pressure effect was increased very abruptly at first, but the increase rate was very low at high pressure greater than 20 MPa, showing great deviation from linear dependence of flow rate on pressure in Darcy's Law. Therefore, water expression from cabbage was not Newtonian flow of water through cell wall. In fact, the squeezed water contained a lot of solid particles, showing destruction of cell wall. The content of solid particles in expressed water was only slightly lower than the dry matter content of fresh chinese cabbage, determined by drying oven method.

It appeared that compression and dewatering of vegetable wastes in the low pressure. under 20 MPa, is more desirable for later treatment of the dewater. More researches are needed in order to develop a treatment method for the solid particles in the expressed water before an expeller treatment system can be applied to vegetable wastes.

  • Salt tolerances of Chinese cabbage and cabbage were observed by means of the sand culture and field experiment. The point of 50% yield reduction of Chinese Cabbage was 1% of salt concentration in sand culture. The Na absorption in the salty upland conditions was increased but the absorption of Ca, Mg were interrupted as the salt concentration was raised and there were no differences in the absorption of N and P. The Si absorption was increased at low salty conditions, but the salt concentration was raised, the absorption was interrupted drastically. The cabbage was more stronger salt tolerance than Chinese cabbage, and it was possible to prevent the salt damage significantly by planting on sloping beds instead of planting on the double-row beds in field condition.
