The ability of exercise and buckwheat diet to modify plasma glucose and cholesterol levels in streptozotocin-induced diabetic rats has been studied. Diabetic rats were fed corn starch as a control diet or buckwheat as an experimental diet for 4 weeks. One group of rats were exercise-trained to swim for 60 min/day, 6 days a week. Plasma glucose levels of sedentary rats both on the control diet and on the buckwheat diet were significantly increased from 367.0$\pm$33.6 mg/dl to 545.0$\pm$38.7 mg/dl and from 380.3$\pm$18.9 mg/dl to 540.5$\pm$36.6 mg/dl, respectively. However, this large increase of plasma glucose was not seen in exercised rats on the buckwheat diet (from 345.0$\pm$25.6 mg/dl to 391.4$\pm$34.7 mg/dl). The total plasma cholesterol level was not affected by either diet or exercise. The HDL-cholesterol level tends to increase due to the buckwheat diet or an exercise, but not with a significant increase. Our results suggest that the buckwheat diet is beneficial in lowering the plasma glucose level only when diabetic rats ar exercised.
An experiment was performed to determine if buckwheat intake would improve insulin sensitivity in in normal healthy ras and steptozoticin-induced diabetic Sprague-Dauley rats. For four weeks, rats were fed either corn starch as a cotnrol diet or buckwheat as an experimental diet. As a result, the insulin sensitivity and plasma glucose levels in normal rats were not significantly affected by buckwheat fedding. The insulin sensitivity was lower in diabetic rats than in normal rats(p<0.05). Buckwheat tends to decrease the final plasma glucose level and increase insulin sensitivity in diabetic rats, but there was no sifnificant difference. Another five-week experiment was conducted to determine protein digestibility and protein utility in normal healty rats ad streptozotocin-induced diabetic rats on a control diet or buckwheat diet. The diet composition in this experiment was the same as the preceeding experiment. In the cotnrol diet groups, the protein digestibility in diabetic rats was significantly lower than that in normal rats(p<0.05). Buckwheat reduced protein digestibility in both normal and disbetic rats(p<0.05). Interestingly, in buckwheat diet groups, protei digestibility in diabetic rats was similar to that in normal rats. Protein utility was significantly lower indiabetic rats than in normal rats. This phenomenon was observed as early as the first week of the feeding period. However, protein utility was not sifnificanlty altered in both normal and diabetic rats by buckwheat feeding. It follows that decreased protein digestibility and utility in diabetic rts are not further aggravated by buckwheat feeding, suggesting that buckwheat can be a feasible supplement food for the diabetic therapeutic diet.
We have studied the effects of buckwheat diet on serum glucose and lipid metabolism in 9 NIDDM volunteers during 2 weeks. The subjects were given dietary counseling in their own homes at 2-3 day intervals throughout experimental periods and the dietary intake were determined by interview and record methods. The intake of calorie, carbohydrate, protein and fat during the buckwheat diet period were not significantly different compared with control diet and body weight was maintained within 1-2kg. The mean total glycohemoglobin, fructosamine, total cholesterol and LDL-cholesterol levels at the end of buckwheat diet were significantly lower than the end of control diet (P<0.05). Fasting serum glucose, insulin and HDL-chloesterol levels were slightly decreased. The mean triglyceride level was increased but it was not significant. These results indicate that buckwheat diet is an effective therapeutic regimen for the control of metabolic derangements in diabetes mellitus.
The present study was undertaken to evaluate the effects of 50% buckwheat diet on the body weight, organ weight, urine albumin, urine glucose, plasma glucose and plasma lipid in normal rats and diabetic rats treated with streptozotocin(STZ). The food intake, body weight, the level of urine glucose in diabetic buckwheat groups were not significantly different with diabetic control group. The level of urine albumin was lower in raw and steam buckwheat group than in the diabetic control group. Compared to the normal control group, liver and kidney weights were heavier in the diabetic groups. Pancreas weight was heavier diabetic buckwheat groups than in normal and diabetic control groups. Fasting plasma glucose level of diabetic buckwheat groups significantly decreased by 18-37% compared with the diabetic control group. Plasma triglyceride level of diabetic buckwheat groups significantly decreased by 34-50% compared with the diabetic control group. Plasma total cholesterol level of diabetic buckwheat groups decreased by 15-27% compared with the diabetic control group. The level of HDL-cholesterol was not affected by buckwheat diet. These results indicate that buckwheat is an effective therapeutic regimen for the control of metabolic derangements in diabetics.

To investigate possible effects of buckwheat on blood glucose level and blood pressure, Sprague-Dawley rats were divided into two groups and fed either AIN-76 diet or modified AIN-76 diet with buckwheat flour for 4 weeks. At the end of experiment, determinations of blood pressure and blood glucose level(glucose tolerance test) were performed. In order to determine insulin levels in both fasted and glucose loaded serum, the animals in both groups were subdivided into two groups. Blood pressure was slightly decreased in the group fed buckwheat( 6mmHg) but not significantly. Glucose tolerance curve of the animal fed buckwheat flour showed clearly different pattern from that of the control group with decreasing tendency. Mobilization of serum insulin was 1.5 times faster in buckwheat group than in control group 1 hour after glucose loading. Further research is needed to find what substance(s) in buckwheat do this role.

Wistar Strain male rats were divided into four different diet groups and the control group was fed on seven percent casein diet (C), the second with a mixture of 80% of rice and 20% of buckwheat (RW), the third with rice only (R), and the fourth with a mixture of rice and buckwheat of equal nitrogen level (RWS). Each diet group consisted of six rats was fed for three weeks by the adlibitum feeding method. The results of the experiment, i, e, the growth gain and change in the level of branch-amino acids in the plasma determined by the micro-bioassay method were as follows. 1. The group C showed the largest growth gain and the rest did in the order of RW group, R group, and RWS group. 2. It was shown that rats fed on diet of higher protein score tend to have higher level of free branch-amino acids in the plasma. 3. Thus, the protein score may be estimated based on the level of the free branch-amino acids in the plasma.
To investigate the efficacy of extract of Tartary buckwheat (F. tataricum Gaertn.) in high fat diet (HFD) in mice, the F. tataricum Gaertn. extract (FTE) was orally administered to mice with a HFD at 300 mg/kg/day for 4 weeks. Our results show that FTE significantly inhibited fat accumulation. Moreover, FTE markedly reduced the final body weight with a decrease in epididymal adipose tissue mass and adipocyte size compared with the untreated HFD-induced group. Additionally, FTE ameliorated serum total cholesterol, triglyceride, and low-density lipoprotein cholesterol levels. The results show that Tartary buckwheat possesses hypocholesterolemic effect through downregulating lipid metabolism. Further studies are required in this area to strengthen the anti-obesity effects of FTE with active component, and it can be used a pro-drug instead of whole extract.
This study was carried out to investigate the effects of rutin from buckwheat vegetable on rats fed with hypercholesterolemic diets. Sprague-Dawley male rats were fed the diets providing various level of buckwheat vegetable for five weeks. Body weight increased during the experimental period. Body weight gain decreased by addition of cholesterol group (C-C). Rutin feeding group (T-l) and buckwheat vegetable feeding group (T-2, T-3, and T-4) showed the reduction of weight gain. Total cholesterol level decreased whereas HDL-cholesterol level increased with the increasing amount of buckwheat vegetable added. The value of thiobarbituric acid in serum decreased with increasing buckwheat vegetable added. The histopathological changes of the kidney were different among the experimental groups. Kidney of the rats fed with cholesterol added diet showed severe calcification.

The following is the result of feeding ad libitum the Wistar strain rats (male) divided into 4 groups-(a) casein group, (b) rice diet group, (c) diet group with a mixture of 80% rice and 20% buckwheat and (d) diet group of equal nitrogen levels of rice and buckwheat. Compared with the control group, the diet group given a mixture of 80% rice and 20% buckwheat put on weight slower, but quiker than the rest two. Particulariy after 10 days it was found to gain greater weight. Therefore, the discovery is that as proved by theory such a mixed food with a proportion of 20% buckwheat and 80% rice can improve the protein score even in the experiment of feeding animals.

This study was undertaken in order to elucidate the effects of raw, roast and steamed buckwheat on fecal protein, Pancreas weight, the activities of $\alpha-amylase,$ chymotrypsin and lipase 91 the pancreas, and $\alpha-amylase,$ chymotrypsin and trypsin activities of the feces in streptozotocin-induced diabetic rats. Fecal proteins of raw, roast and steamed buckwheat diabetic groups were increased up to 99%, 91%, 103%, respectively compared to those of the diabetic control group. Feeding of buckwheat diet increased pancreas weight, especially raw buckwheat diabetic group(p<0.05). Pancreatic chymo-trypsin activity was decreased in buckwheat diabetic groups compared to diabetic control group, wheres any significant difference was observed in $\alpha-amylase$ and lipase activities. Fecal chymotrypsin activi-ty was significantly increased in all buckwheat diabetic groups. Fecal trypsin activity was increased in roast buckwheat diabetic groups compared to diabetic control group and fecal $\alpha-amylase$ activity in buckwheat diabetic group was not significantly different. These results suggest that feeding of buckwheat diet enhances the impaired exocrine pancreatic function of diabetic rat.
