This study was done to see effects of feeding a 77% polished or brown rice diet with corn oil, rice bran oil or butter on the lipid metabolism in weanling rats. The results are summarized as follows : 1) Food consumptions, body weight gains and tissue weights were not different among experimental groups. 2) Weights of daily fecal output and daily fecal excretions of total lipids, cholesterols, nitrogen and glucose were higher in brown rice groups than in polished rice groups. 3) Polished rice - rice bran oil group had the highest concentrations of total lipids and cholesterols in serum 4) Polished rice groups tended to have higher serum lipid and cholesterol concentrations than brown rice groups.
This study investigated the changes in the nutraceutical lipid components of brown rice oil after germination. Four different high-yielding cultivars (Dasan1, Segyejinmi, Hanareum1 and Hanareum2) of Korean brown rice were selected and brown rice oil was extracted from each cultivar before and after germination. Free fatty acid, squalene, policosanols, and isomers of phytosterol were analyzed using GC, and isomers of tocols (tocopherol and tocotrienol) and ${\gamma}$-oryzanol were quantified using HPLC from both brown rice oil (BRO) and germinated brown rice oil (GBRO). The contents of phytosterol isomers, campesterol, stigmasterol, and ${\beta}$-sitosterol were increased by 8.3%, 31.6%, 3.3% in GBRO, respectively. Furthermore, the squalene content showed the highest increase of up to 2.4 fold in GBRO compared to BRO. In addition, linoleic and linolenic acid composition increased whereas oleic and palmitic acid decreased in the GRBO. However, the contents of tocols (tocopherol and tocotrienol) in GBRO were lower than those in BRO, and there was no significant difference in policosanol and ${\gamma}$-oryzanol between GBRO and BRO. These results suggest that GBRO has the potential as a healthy and functional source due to its lipid profile on improved lipid metabolism.
건강식품으로 각광받고 있는 현미유는 palmitic acid, linolenic acid, linoleic acid, oleic acid, stearic acid, tocopherol, squalene 등을 포함하고 있다. 본 연구에서는 국내산 현미겨로부터 초입계 이산화탄소를 이용하여 현미유를 추출하고, GC-MSD를 이용하여 조성을 분석하였다. 현미유의 추출량은 추출공정의 조작온도와 압력에 의존하였으며, 초임계 이산화탄소의 환산밀도에 따라 추출된 기름내 지방산의 조성이 변화되었다. 또한 70~80%의 기름이 4시간 정도의 조작시간내에 추출됨이 확인되었다. 특히 용매추출공정과 초임계유체 추출공정을 비교한 결과 초임계유체 추출공정에서 추출된 기름의 조성에서만 squalene이 포함되어 있음이 확인되었다.
보통 막걸리 제조시 증자미를 사용하고 있는데 이 경우 주질과 술맛, 저장성 등이 만족할 만한 수준은 아니다. 본 연구에서는 증자미 대신 영양가, 맛, 기능성 등이 우수한 발아현미를 이용하여 2단담금으로 제조하여 발효상태를 검토하였다. 그 결과 2단담금에 발아현미를 사용했을 경우에는 증자미에 비해서 알코올은 느리게 생성되었고 환원당도 생성속도가 느리고 함량도 낮은 것으로 나타났다. 또 당도는 느리게 일정한 속도로 증가하였다. pH는 무증자 발아현미의 경우가 증자미의 경우보다 높게 나타났으며 산도는 pH변화와 비슷한 경향을 나타내었다. 효모증식은 무증자 발아현미의 경우가 증자미의 경우보다 다소 낮게 나타났으며 mash의 온도는 발효 3일이후 모두 일정한 온도를 유지하였다. Fusel oil은 무증자 발아현미의 막걸리가 증자미의 막걸리 보다 적게 검출되었으며 아미노산 함량은 풍부한 것으로 나타났다. 관능검사에서 무증자 발아현미로 제조한 막걸리의 맛이 증자미로 제조한 것보다 약 1.3배정도, 신선한 청량감은 약 1.5배 정도 좋은 것으로 나타났으나 향기, 색깔 등은 큰 차이를 보이지 않았다. 전체적인 기호도는 무증자로 제조한 막걸리가 증자미의 경우보다 약 1.3배 더 높은 것으로 나타나 무증자 발아현미로 제조한 막걸리의 품질 제고(提高)가 가능함을 보여 주었다.
The rice bran oil contained in brown rice is composed of highly valued ingredient. Improving the content of unsaturated fatty acids in rice seed, such as oleic acid, linoleic acid, and ${\alpha}$-linolenic acid, would provide more benefit to human health. Fatty acid content is quantitative trait controlled by multiple genes. We have utilized high-density SNP data from highly advanced breeding populations to identify QTLs for fatty acid contents in brown rice. Here, we identified 51 major QTLs (M-QTLs) and 25 epistatic QTLs (EpQTLs) related to eleven fatty acid contents. Eight and four M-QTLs were pleiotropically associated with the content of different fatty acids in MT-RILs and DT-RILs, respectively. Total effect of M-QTLs for palmitic acid (16:0), oleic acid (18:1), and linoleic acid (18:2), could explain phenotypic variations of 36.7%, 63.7%, and 41% in MT-RILs, respectively. Alpha-linolenic acid which is important for a human's health could be explained phenotypic variation of 15.7% by six M-QTLs. These QTLs identified in this study can be used to improve nutritious content in rice breeding programs.

The degree of milling is an important factor in terms of the nutritional value and the economic return of the milled rice. This study was to investigate the changes in compositions of the oils obtained from rice with different degree of milling. The content of total tocols in rice significantly (p<0.05) decreased, as degree of milling increased. The relative % of -tocopherol in brown rice had lower than those in milled rices whereas the relative % of -tocotrienol, and -tocotrienol in brown rice higher than those in milled rices. -Oryzanol content significantly (P<0.05) decreased from 198.5 mg/kg rice for brown rice (0% milling) to 65.5 125.0 mg/kg rice for rice samples with 5.6, 8.0, and 9.6 % milling. -Sitosterol was most abundant sterol representing 50 % - 56% of the total sterol content in all analyzed samples. The content of total sterol as well as each sterol isomers in rice significantly (P<0.05) decreased, as degree of milling increased. A similar trend was observed in changes of octacosanol and squalene.
This study was conducted to evaluate emulsion mapping between emulsion stability and cooking yields, apparent viscosity, and hardness of reduced-fat pork emulsion systems. The reduced-fat emulsion systems were supplemented with different lipid types and brown rice bran fiber (BRF) concentrations. Compared to the control with 30% back fat, lower emulsion stability and higher cooking yield of meat emulsion systems were observed in T1 (30% back fat+1% BRF), T2 (30% back fat+2% BRF), T3 (30% back fat+3% BRF), T4 (30% back fat+6% BRF), and T15 (10% back fat+10% canola oil+2% BRF). Lower emulsion stability and higher apparent viscosity were observed in T1, T2, T3, T4, and T8 (20% back fat+3% BRF) compared to the control. Lower emulsion stability and higher hardness was detected in all treatments compared with the control, except T5 (20% back fat), T10 (10% back fat+10% canola oil+2% BRF), T11 (10% back fat+10% olive oil+2% BRF), T12 (10% back fat+10% grape seed oil+2% BRF), and T13 (10% back fat+10% soybean oil+2% BRF). This approach has been found particularly useful for highlighting differences among the emulsified properties in emulsion meat products. Thus, the results obtained with emulsion mapping are useful in making emulsified meat products of desired quality characteristics, partially replacing pork back fat with a mix of 10% back fat, 10% canola oil and 2% BRF was most similar to the control with 30% pork back fat.
Rice(Oryza stiva L.) is a major cereal food providing nourishment to over half of the world's populations and was considered only as a source of energy. However, The recent many researches have been made to suggest that rice may relate to prevention chronic disease and health-promoting properties such as postprandial glucose response, hypocholesterolemic effect and blood pressure-lowering effect. There has been numerous observation supporting that rice has hypocholesterolemic effect. Rice, rice bran, rice bran oil and unsaponifiable matter of rice bran oil reduced plasma cholesterol in rat, hamster as well as human. Components of rice showing hypocholesterolemic effect include dietary fiber(hemicellulose, phytic acid). protein, ${\gamma}$-oryzanol, $\beta$-sitosterol, and tocotrienols. Crapo et al has been studied that the effect of various of starchy foods on the postprandial blood glucose and insulin responses in healthy and diabetic humans. The results showed that rice had lower blood glucose and insulin responses compared to potato, bread and dextrose. The different physical forms in the same starch also produce the different postprandial glucose and insulin responses. In recent years, several studies have shown that some components of rice have potent antioxidant activity against Fe$^{2+}$ -ascorbate induced lipid peroxidation in rat liver microsomal membranes. Cell culture and animal studies have shown that some components of rice have inhibitory effect on the growth and proliferation of several types of human cancer cell. It was also reported that the methanol extract of brown rice has antimutagenic activity against various mutagens. In addition, the pepsine hydrolysate from rice protein is reported to inhibit angiotensin converting enzyme activity. GABA (${\gamma}$ - aminobutyric acid) and GABA enriched rice germ is also effective for lowering blood pressure and triglyceride levels.s.
방사성 표식화합물인 ${\gamma}$-(U-$^{14}$ C)-BHC를 폿트 재배한 수도에 시용한 후 식물체에서의 분포 및 도정, 착유 과정중의 행방을 추적하여 다음과 같은 결과를 얻었다. $^{14}$ C-방사능은 식물체에 흡수되어 각부위에 딘리 분포되었고 볏짚과 곡립에 이행된 방사능은 2.8%이었으며 그중 9.4%만이 현미에 이행되었다. 현미로 이행된 $^{14}$ C-방사능은 도정과정에서 쌀겨 : 백미에 12:88의 비율로. 용매에 의한 착유과정에서 기름 : 착유박에 37:63의 비율로 분배되었다. 수도체로 이행된 $^{14}$ C-잔류분은 모체인 r-BHC와 대사산물인 pentachlorocyclohexene, trichloro-benzene 및 친수성 분해산물임이 밝혀졌고 이들 성분의 비율은 볏짚과 현미에서 각각 달리 나타났다.
국내에서 생산되는 현미겨는 약 8.4~14.7 wt %의 지질을 포함하고 있으나 지방산의 양이나 조성은 현미겨의 형태, 토질 상태, 도정과 같은 전처리나 정미도에 영향을 받는다. 현미겨에 포함되어 있는 지질은 보통 palmitic acid, linolenic acid, linoleic acid, oleic acid, stearic acid, tocopherol, squalene 등과 같은 지방산으로 나눌 수 있다. 본 연구에서는 초임계유체를 이용하여 현미겨에서 squalene을 함유한 지방산을 추출하였으며, 각각의 공정에 ethanol을 첨가하여 초임계유체 추출을 시행하였다. 추출물은 GC-MSD로 분석을 하였고, 추출된 현미유의 양은 공정 온도, 압력에 따라 달랐으며, 조성은 초임계 이산화탄소의 환산밀도 (${\rho}_{\gamma}$ reduced density)에 영향을 받았다. 4시간의 공정시간에 약 70~80%의 현미유가 추출되었으며, ethanol을 첨가한 초임계유체 추출은 일반 초임계유체 추출에 비해 추출시간이 단축되며 동시에 추출량이 증가됨을 알 수 있었다. 또한 용매추출 공정에서 검출되지 않았던 squalene이 초임계유체 추출과 ethanol올 첨가한 초임계유체 추출에서 추출됨이 확인되었다.
