The poultry farmers of rural area in Bangladesh usually prefer raising cockerel to broiler due to availability, low price of chicks, requirement of less space and feed, and high price of meat and the farmers believe that the cockerels are less susceptible to diseases in comparison to broilers. This study was carried out to observe the pathology of diseased cockerel in 3 farms of rural area in Bangladesh. A total of 974 birds were examined and the diagnoses of different disease/conditions were based on the history, clinical signs, characteristic gross, tissue alterations, clinical pathology and isolation and identification of the pathogenic organisms. The diseases in this study included infectious bursal disease, yolk sac infection, vitamin E deficiency, coccidiosis, and other diseases. The proportionate mortality rate were $7.29\%,\;0.62\%,\;0.72\%,\;0.21\%\;and\;0.10\%$, respectively, which indicated that most of the fatal causes of death were due to infectious bursal disease. Age group of 2-8 week old were the most susceptible to this disease and E coli was suggested as a cause of yolk sac infection. The data also suggested that the coccidiosis in rural areas of Bangladesh has decreased due to awareness of the farmers and routine use of coccidiostates.
A study was investigated the effects of the probiotic mixture (PM) contained Lactobacillus plantarum (L. plantarum) SY-99 $2.4{\times}10^9CFU/kg$ and Bacillus subtilis (B. subtilis) SJ-61 $2.2{\times}10^9CFU/kg$ on growth performance and fecal microflora counts of broiler chickens. Referred to the previous studies, a total of 160 one-day-old male broiler chicken (Ross 308) were randomly assigned to four experimental groups, which were a basal diet alone (control) and supplemented with PM 0.1 g/kg feed (T1), PM 0.2 g/kg feed (T2), and PM 0.4 g/kg feed (T3). After 28 days of administration, the average daily feed intake of T1 and T3 was significantly different compared to that of control (p<0.05). In addition, the feed conversion ratio of T2 and T3 was significantly improved compared to that of control (p<0.05). On the 28th day after administration, all treatment groups were significantly increased fecal lactic acid bacteria (LAB) counts and decreased fecal Enterobacteriaceae (ENT) counts compared to T1 (p<0.05). The results of this study indicated that the combination of L. plantarum and B. subtilis strains in the range of 0.2-0.4 g/kg feed could be used for the improvement of growth performance and fecal microflora in broiler chickens.
To investigate the influence of multi-probiotic, fermented ginseng byproduct and fermented sulfone on the performance, intestinal microflora and immunity of broiler, a five weeks trial was conducted with 340, 1-d-old $Ross{\times}Ross$ broiler. All broilers were divided into five different groups having 68 birds in each treatment, and they were assigned as control, antibiotic avilamycin (AB), multi-probiotic (MP), fermented sulfone (FS) and fermented ginseng byproduct (FGB). Each artificial or naturally derived probiotic was inoculated 0.1% level with the basal diet, and all diets were provided to birds for five weeks. Weight gain and feed intake were measured weekly basis, and blood, spleen and feces were collectedand used for the physiological properties of broiler chickens. All performances and cholesterol profiles were not significantly differed but numerically lower level of neutral fat and LDL was found in multi-probiotics and FGB treatments respectively. The salmonella spp and E. coli numbers in the ileum were high in control in relation to those of other treatments and were significantly decreased in antibiotics treatments (p<0.05). In addition, Lactobacillus spp. showed significantly higher proliferation in MP as compared to that of others (p<0.05). Fecal ammonia and $CO_2$ gas emission was significantly decreased in MP, FGB and FS, respectively (p<0.05), but significantly increased proliferation of spleen was determined in MP group in comparison of other treatments (p<0.05). Therefore, the results indicates that multi-probiotics would be valuable feed additives to improve the salmonella, E. coli and Lactobacillus proliferation, and manure gas emission of broiler chickens, but further study related to the production of manure gas emission of MP is necessary.
The purpose of this study was to prepare low-molecular weight collagen using a commercial proteolytic enzyme (Protamex) from collagen extracted from feet of Korean native chicken and to investigate the quality characteristics of this collagen. The collagen content of Korean native chicken feet was 13.9 g/100 g, which was higher than the 6.21 g/100 g of general broilers. It was found that the content of low molecular weight collagen increased as the concentration of proteolytic enzymes and reaction time increased. In particular, reaction with 1% Protamex for 7 h resulted in 55.6% of low molecular weight (1,000-5,000 Da) collagen content, and the average molecular weight was 5,390 Da. Regarding the texture of the enzyme-treated collagen, the collagen with high molecular weight peptides decomposed into low molecular weight peptides, and the gel type could not be formed, whereas the sol type was maintained.
Phytate induced excessive mineral excretion through poultry litter leads to poor performance and environmental pollution. Exogenous microbial phytase supplementation to poultry diets reduce the environmental excretion of nutrient and improve bird's performance. However, excessive dietary sodium (Na) level may hinder the phytase-mediated phytate hydrolysis and negate the beneficial effects of phytase. Therefore, this experiment was conducted to investigate the effects of different concentration dietary Na on phytase activity and subsequent impact on broiler performance, bone mineralisation and nutrient utilisation. In this study, six experimental diets, consisting of three different levels of Na (1.5, 2.5, or 3.5 g/kg) and two levels of microbial phytase (0 or 500 U/kg) were formulated by using $3{\times}2$ factorial design. The six experimental diets were offered to 360 day-old Ross 306 male chicks for 35 days, where, each experimental diet consisted of 6 replicates groups with 10 birds. Along with growth performance, nutrient utilization, intestinal enzyme activity, dry matter (DM) content of litter and mineral status in bone were analysed. Dietary Na and phytase had no effect on bode weight gain and feed intake. Birds on the low Na diet showed higher (p < 0.05) feed conversion ratio (FCR) than the mid-Na diets. High dietary Na adversely affected (p < 0.001) excreta DM content. Phytase supplementation to the high-Na diet increased (p < 0.01) the litter ammonia content. High dietary Na with phytase supplementation improved ($Na{\times}phytase$, p < 0.05) the AME value and ileal digestibility of Ca and Mg. The total tract retention of Ca, P, and Mg was reduced with high Na diet, which was counteracted by phytase supplementation ($Na{\times}phytase$, p < 0.001). The diets containing mid-level of Na improved (p < 0.001) the function of Na-K-ATPase and Mg-ATPase in the jejunum. The overall results indicate that high dietary Na did not affect phytase activity but influenced the nutrient utilization of birds, which was not reflected in bird overall performance.

Objective: An experiment was conducted to evaluate the effects of dietary glutamine (Gln) and arginine (Arg) supplementation on performance, intestinal morphology and ascites mortality in broilers. Methods: A total of 675 day old chicks were randomly allocated to 9 experimental groups in a $3{\times}3$ factorial arrangement based on a completely randomized design with 5 replicates of 15 chicks. Three levels of dietary Gln (0%, 0.5%, and 1%) and Arg (100%, 130%, and 160% of Ross recommendation) supplementation were used in ascites inducing condition ($15^{\circ}C{\pm}1^{\circ}C$) from 7 to 42 days of age. Results: Dietary supplementation of Gln increased body weight gain during grower, finisher and total periods (p<0.05) and increased feed intake during total period. Ascites mortality was decreased by Gln supplementation (p<0.05). Gln supplementation increased the villus height (VH) and crypt depth (CD) in duodenum and jejunum (p<0.05). Arg supplementation decreased CD in duodenum and jejunum, and increased ileum villus width (VW) and also VH/CD ratio in duodenum and jejunum (p<0.05). Both Gln and Arg increased the goblet cell number (GCN) in duodenum whereas Gln supplementation decreased GCN in jejunum and ileum (p<0.05). The $Gln{\times}Arg$ interaction were observed for right ventricle (RV)/total ventricular (TV) ratio, VH, VW, CD, VH/CD. Conclusion: It was concluded that dietary 0.5% Gln alone or along with 130% Arg of Ross requirement, improve the intestinal morphology and performance and hence decrease the ascites mortality in broiler chickens with cold induced ascites.
The concentrations of functional compounds and micronutrients of chicken breast from native chickens were compared with those from broiler. Totally 200 male chicks from a commercial native chicken (HH) and three newly bred native chicken strains (2A, 2C, and 2D) were reared for about 2 kg of final live weight up to 12 wk. After slaughtered, antioxidant dipeptides, reducing sugar, free amino acids, vitamins, and minerals of the breast muscles were analyzed with those from broilers with similar live weight. Mostly native chicken strains had higher contents of carnosine, anserine, and reducing sugar than the broiler. Especially HH implied the highest values of carnosine and anserine, and 2C did the highest of reducing sugar (p<0.05). Vitamin A contents between native chickens and broiler were not significantly different (p>0.05). The contents of ${\alpha}-tocopherol$ were significantly higher in 2C than those of HH or broiler (p<0.05). Native chicken strains contained lower cholesterol levels than the broiler. Broiler had higher contents of P, Mg, and Na than native chickens (p<0.05), but it had lower content of Cu than HH or 2A. The savory free amino acids including glutamic acid was highest in 2A than the other native chickens and broiler (p<0.05). This study confirms that certain new strains of native chickens be a good source in terms of functional compounds and micronutrients which can be attractive health promoting nutritional quality factors.
This experiment was conducted to evaluate the effect of supplementing enzyme cocktail on growth performance, digestibility of nutrients, and monosaccharide concentration in ileum and ceca of broiler chickens fed wheat-based diets. A total of 600 male broilers (42.26 ± 1.76 g, 0 day old) were used for 35 days of feeding trial consisting of 2 phases (starter phase from d 0 to 21 and finisher phase from d 21 to 35). Four dietary treatments were prepared based on wheat diets containing four levels of enzyme cocktail supplementation at 0, 0.2, 0.3, and 20 g/kg. Overall, dietary enzyme cocktail supplementation decreased feed conversion ratio (linear p = 0.007; quadratic p = 0.013) and improved (linear p < 0.05) the apparent ileal digestibility of dry matter (DM), crude protein, and soluble and insoluble non-starch polysaccharides. The apparent total tract digestibility of DM and gross energy were increased (linear p < 0.01) with increasing supplementation levels of the dietary enzyme cocktail. The concentrations of arabinose, xylose, mannose, and glucose in ileal digesta were linearly increased (p < 0.01) with increasing enzyme cocktail supplementation levels. In addition, the quadratic effect was observed (quadratic p = 0.046) in mannose concentration of ileal digesta. The concentration of arabinose, xylose, mannose, and galactose in cecal digesta was increased (linear p < 0.05) with increasing dietary enzyme cocktail supplementation levels. The supplementation of enzyme cocktail efficiently increased the utilization of nutrients in broiler and there was no adverse effects of high dosage supplementation level.

This study aimed to enhance the quality of broiler breast meat by adding pig skin collagen to feed. A total of 50 Ross 308 broilers were classified according to the following feeding regime for two weeks: basal diet (NC), basal diet+0.1% fish collagen (PC), basal diet+0.1% pig skin collagen (T1), basal diet+0.5% pig skin collagen (T2), and basal diet+1.0% pig skin collagen (T3). The moisture content was the highest in the PC group, and the protein content was the lowest in the T1 group (p<0.05). The fat content was higher in the T1 and PC groups, whereas the ash content was higher in the T3 group (p<0.05). Drip loss was the highest in the NC group and the lowest in the T2 group (p<0.05). Lightness was low in groups T2 and T3, redness was low in groups T2 and PC, and yellowness was low in groups T1, T2, and PC (p<0.05). The collagen content of the chicken breast was the highest in the T3 group, and that of the skin was the highest in the T1 group (p<0.05). The texture characteristics of springiness, cohesiveness, chewiness, and hardness were the highest in the T3 group (p<0.05). In conclusion, the supplementation of a broiler diet with pig skin collagen was found to increase the collagen content of the breast meat, indicating the improved quality of the broiler breast meat.

Objective: This study was conducted to investigate the effects of adding oregano (Origanum syriacum L.) and germander (Teucrium polium L.) to poultry diets individually and/or in combination: i) on cooked chicken meat quality and storage stability, ii) to compare this effect with those of the synthetic antioxidant butylated hydroxyanisole (BHA) and with the normal basic diet (Control: without supplements). Methods: Broilers (140 birds) were raised for 21 days and then equally divided into five different treatment groups of 28 birds each. The dietary treatments were as follows: i) control; ii) germander (GER, 1.5%); iii) oregano (ORE, 2.5%); iv) combination of GER and ORE (CM, 1.5%, and 2.5%); v) BHA (0.02%). Meat patties from the five treatments were prepared, cooked, and stored at 4℃ prior to analysis. During storage, samples were measured for thiobarbituric acid-reactive substances (TBARS) and total carbonyl levels at 0, 4, and 7 days. In addition, cooked thigh meat was prepared separately to evaluate cooking loss and sensory attributes. Results: The CM dietary treatment showed the highest antioxidant effect, with decreasing TBARS values (breast and thigh meat) throughout the storage time (4 to 7 days). Furthermore, ORE showed a higher antioxidant effect, decreasing the rancidity development (TBARS values), compared to the GER during the storage period (days 0 to 7). The anti-carbonyl effect of the CM supplement was the highest among all treatments from day 0 to 7. Generally, the antioxidant effect of GER was lower compared to that of ORE and BHA alone. The CM treatment most significantly decreased off-odor and rancidity development, with the lowest oxidation odor scores. Conclusion: The results indicate that the combination of oregano and germander in the diet of boilers improves meat quality and prolongs shelf life.
