흑마늘의 이화학적 특성 (Physicochemical Characteristics of Black Garlic (Allium sativum L.))

  • 생마늘, 찐마늘($100^{\circ}C$, 20분) 및 흑마늘의 이화학적 특성을 비교한 결과 적색도는 흑마늘에서 2.86으로 월등히 높은 값이었고, 명도와 황색도는 흑마늘에서 각각 $22.52{\pm}0.17$$3.19{\pm}0.68$로 가장 낮았다. 일반성분 중 조지방, 조단백 및 총당은 흑마늘> 찐마늘> 생마늘의 순으로 높았고, 수분의 함량은 흑마늘에서 $58.20{\pm}0.39%$로 이와 상반된 결과를 나타내었다. pH는 생마늘에서 $6.84{\pm}0.01$이었으나 찐마늘은 $6.54{\pm}0.02$, 흑마늘은 $4.36{\pm}0.06$으로 점차 산성화 되는 경향이었다. 생마늘의 total pyruvate 함량은 $188.47{\pm}3.03{\mu}mol/g$이었으며 찐마늘과 흑마늘은 각각 $77.03{\pm}0.97{\mu}mol/g$$277.85{\pm}2.57{\mu}mol/g$이었다. Total thiosulfate의 함량은 찐마늘에서 가장 낮았으며, 다음으로 생마늘 및 흑마늘 순이었다. 유리당 중 arabinose와 galactose는 흑마늘에서 각각 $1.62{\pm}0.30mg$/100 g과 $13.11{\pm}1.73mg$/100 g이었으며, 생마늘에서는 glucose, 찐마늘에서는 sucrose, 흑마늘에서는 fructose의 함량이 가장 높았다. 무기물은 칼륨의 함량이 다른 무기물에 비하여 월등히 그 함량이 높아 전체 무기물 함량의 약 76%를 차지하였다. 구성아미노산은 모든 시료에서 glutamic acid, arginine 및 aspartic acid의 함량이 다른 아미노산에 비해 월등히 높았으며, ammonia를 제외한 모든 아미노산이 생마늘에 비해 흑마늘에서 높게 정량되었다. 유리아미노산은 생마늘과 찐마늘에서는 총 15종이 검출되었으나 흑마늘에서는 taurine, L-aspartic acid, glycine, L-$\alpha$-aminoiso-n-butyric acid 및 $\gamma$-amino-n-butyric acid를 포함한 총 5종의 아미노산과 urea 및 O-phosphoethanolamine이 더 검출되었다.

남원 향토음식에 대한 관광객의 인지도 및 만족도 (Tourist Perception and Satisfaction with Native Local Foods of Namwon)

  • This study was conducted to develop the unique native local foods of Namwon and to provide basic data needed to reinvigoratethe tourist industry and local economy. Perception and satisfaction with native local foods of Namwon were surveyed in 483 tourists (246 men and 237 women 53% visiting Namwon for the first time). Of the participants, 41.2% did not stay or eat in Namwon. Most tourists visited with other family members and spent approximately 20,000 won per capita on food. Of the foods sampled for the first time, preferred foods were (in order of preference and intention to order again) Chueo-tang, Hanjeongsik, wild edible greens-jeongsik, and black pork. The degree of food satisfaction was relatively favorable (3.54${\pm}$0.08 points on a 5-point satisfaction scale), with taste being the most important factor affecting the degree of satisfaction for 92.9% of the subjects. However, willingness to revisit Namwon on the basis of the local foods was not as high as the degree of satisfaction with the foods. Insufficient information and publicity concerning Namwon local foods were cited as impediments, and suggested improvements included taste, sanitation and food-based tourism. The degree of satisfaction was higher in men than in women. Age, residence, and occupation were not related to the degree of satisfaction. But, the willingness to revisit Namwon to sample local foods was related with gender (men more willing) and occupation (public service personnel, business owners, salaried employees, professionals, and housewives more willing, in order). Women in general and housewives in particular were most critical in food assessment.

  • 'Zu Bang Moon', a book of cooking, was written in Korean in the 17th century by Mr. Hwa. Various cooking methods of traditional foods were described in this book. The kinds of cookingfoods were Wine 28, Guksu (noodle) 3, Side dish 23, Seasoning 10, and Dessert 10. The materials used in the cooking foods were cereals, vegetables, fishes, meats, etc. 9 kind of Seasonings used in cooking foods such as salt, and herbs such as black pepper. The cooking methods were different and complicated. The way of heating were also different such as to stew, to boil, to steam, to pan-boil, to frying, etc. Utensils and table wares used for processing and cooking were poor and specific. The measuring units were not accurate and unscientific. Many of special words and expressions which are not used today in cooking and processing were, reviewed.

  • After free trade, it is increasing to import crops, aquatic products, and livestock which are produce in a foreign land. But it is affect negatively to trust relationships and markets of Jeju's foods because of breaking it out that foreign productions exchange domestic. Therefore, this paper designed and implemented the Genuine Quotation system of Black pigs using UHF RFID. This system is developed for distinguishing spuriousness, then searching information of the product through EPC ONS in EPCIS to print within a screen. Moreover, this intuitional and efficient system is constructed by connecting various sensors and lights. It can be contributed income increase thorough the security for the quality authority of the agricultural & stockbreeding products with FCS, FCG Certificate and the genuine certificate of the black pig which is the one of most typical agricultural & stockbreeding products in the pure Green Province, Jeju.

홍삼가공식품의 식품유형별 및 제형별 진세노사이드 함량 비교 (Comparative Analysis of Ginsenoside Content in Processed Red Ginseng Foods Based on Food Type and Formulation)

  • 서울 시내 유통점과 온라인 쇼핑몰에서 구입한 홍삼함유식품 66건과 건강기능식품 홍삼제품 35건의 기능 성분인 진세노사이드 함량을 비교·분석하였다. 홍삼함유식품 66건 중 전통시장에서 구입한 2건은 진세노사이드가 검출되지 않았고 64건의 제품에서는 진세노사이드 함량에 대한 기준은 없지만 일일 섭취량 기준 0.55-71.56 mg을 함유하고 있었다. 건강기능식품의 홍삼제품은 진세노사이드 평균 함량이 분말형 제품을 제외하고 일일 섭취량 기준 18.23 mg으로 홍삼함유식품의 8.80 mg 보다 약 2배 정도가 많았다. 홍삼과 흑삼 비교 시 진세노사이드 함량은 홍삼 제품이 흑삼 제품보다 많거나 비슷하였으나 분말형 제품의 경우 흑삼 제품이 2배 많았다. 제형별 진세노사이드 평균 함량은 일일섭취량 기준 농축액 21.95 mg으로 가장 많고 분말 형태 12.54 mg, 스틱형 7.36 mg, 파우치형이 4.10 mg 순이었다. 흑삼제품은 고기능성으로 알려져 있으나 대부분 일반 식품으로 판매되고 있어 건강기능식품 수준의 관리와 규제가 필요할 것으로 보이며 흑삼의 규격기준 설정 이후에는 흑삼제품의 기능성분 함량 재평가가 필요할 것으로 판단된다. 스틱형이나 농축액 제품의 경우 건강기능식품뿐만 아니라 일반식품인 액상차, 홍삼음료로도 널리 판매되고 있어 식품유형 표시를 명확히 해야 할 것으로 보인다. 최근 면역력 향상을 위한 소비자의 관심 증가로 다양한 건강기능식품의 수요가 늘어나고 있다. 따라서 홍삼을 함유한 식품을 섭취 목적에 맞게 선택할 수 있도록 정확한 함량정보 제공을 위해 다양한 제품에 대한 지속적인 품질평가가 필요하다.

발효흑마늘 추출물이 흰쥐의 지질대사 및 간기능 개선에 미치는 영향 (Effects of the Fermented Black Garlic Extract on Lipid Metabolism and Hepatoprotection in Mice)

  • This study was conducted to evaluate the functionality of fermented black garlic extracts under various conditions. Black garlic powder was prepared by aging for 0~72 hours at 80℃ depending on relative humidity (RH). It showed the highest antioxidant effects among the samples; the total antioxidant activity of black garlic powders at RH 75%, 84%, and 90% for 72 hours was increased 31.9 times, 28.2 times, and 22.6 times compared with that of the fresh garlic powder, respectively. Also, the alliin content was gradually decreased. S-ally-L-cysteine and S-ethyl-cysteine levels were increased; the highest values were 495.9 ㎍/g and 1,769.7 ㎍/g after aging for 72 hours at RH 75%. Aspartate transaminase (AST) and alanine transaminase (ALT) levels were increased following high fat diet feeding, but the rise was obviously reduced by administration of black garlic extract. The total cholesterol, LDL/VLDL-cholesterol, and triglyceride contents in serum were significantly lower in methionine and choline deficient (MCD) diet treatment groups than in the positive control group. The concentration was increased following the intake of black garlic and fermented black garlic extracts. Therefore, black garlic extracts could be an ideal material as a dietary supplement in healthy functional foods to improve the effects on fatty liver.

흑삼의 화학성분 및 생리활성에 대한 최근 연구 (Recent Advances in Studies on Chemical Constituents and Biological Activities of Korean Black Ginseng(Panax ginseng C. A. Meyer))

  • We have conducted a comprehensive literature review regarding the chemical constituents and biological activities of Korean black ginseng(Panax ginseng C. A. Meyer), three to nine times-steamed and dried ginseng, which shows strong black color through Maillared browning reaction. It has been reported that some chemically deglycosylated and transformed saponins are obtained from black ginseng as artifacts produced during intensive steaming. They have been known to be ginsenosides Rg3, Rg4, Rg5, Rg6, Rh1, Rh2, Rh4, Rk1 and Rk3, quite different from those of red ginseng, among which ginsenosides Rg3, Rg5 and Rk1 are considered to be major components. And also, black ginseng has been recently found to demonstrate anticancer, recovery from learning and memory damages, hypontensive, antidiabetic, antiobesitic, tonic and antiatopic activities, together with antioxidative and exercise performance improving activities, exhibiting their effects to be a little bit stronger than those of red ginseng. These findings suggest that black ginsng might play an important role in the development of promising functional foods and drugs from the viewpoint of the chemical composition and biological activities of black ginseng with a distinction from those of white and red ginsengs. In this review, the authors will survey and evaluate further functions of black ginseng with a focus on its physicochemical properties and biological activities.

블랙 초크베리 추출물의 항산화 활성 및 아질산염 소거 활성 (Comparison of the Antioxidant Activities and Nitrite Scavenging Activity of Black Chokeberry (Aronia melanocarpa) Extracts)

  • The purpose of this study was to measure the antioxidant activity and bioactivity of black chokeberry (Aronia melanocarpa). The black chokeberry was known to contain many physiologically active substance, such as ascorbic acid, anthocyanin, quercetin. We extracted black chokeberry powder from four solvents such as chloroform:methanol(CM, 2:1, v/v), distilled water (DW), 70% ethanol, 70% methanol. After that, we determined anthocyanin, total phenol, flavonoid content, DPPH radical scavenging activity, ABTS radical scavenging activity, ferric reducing antioxidant power, reducing power and Nitrite scavenging activity of black chokeberry extracts and as results of comparing each extract. respectively. From the above results shows that antioxidant activity and bioactivity of black chokeberry extracts was the highest in 70% methanol (p<0.05). The results suggest that black chokeberry can be used as nutraceutical foods and natural antioxidant.

X-선 조사식품 4종의 유전독성학적 안전성 평가 (Genotoxicological Safety Evaluation of X-ray Irradiated Four Foods)

  • 본 연구는 방사선 조사식품에 대한 소비자들의 수용성을 증대하고, 감마선조사의 대체기술로 X-선 조사의 상용화를 확대할 목적으로 30 kGy X-선 조사식품 4종(닭고기, 전란분말, 건파, 후추)의 유전독성학적 안전성 평가를 실행하였다. Salmonella Typhimurium TA98, TA100, TA1535 및 TA1537에 대한 X-선 조사식품 4종의 복귀변이 집락 수를 조사한 결과, 대사 활성계 도입 및 부재 시 모두 시험 적용 농도인 $40{\sim}5,000{\mu}g/plate$의 범위에서 복귀변이 집락 수의 농도 의존적인 증가 혹은 감소를 보이지 않았다. 그리고 포유류 배양세포를 이용한 염색체 이상 시험에서도 X-선 조사식품 4종은 $625{\sim}5,000{\mu}g/mL$의 시험 적용 농도에서 염색체 이상 유발능이 5% 미만이어서 염색체 이상을 유발하지 않는 것으로 나타났다. 또한 설치류 망상적혈구를 이용하여 X-선 조사식품 4종의 소핵 형성 시험을 수행한 결과 시험 적용 농도인 250~2,000 mg/kg의 범위에서 소핵을 가진 망상적혈구의 출현율이 음성대조군과 유의한 차이를 나타내지 않아 소핵을 유발하지 않음을 확인하였다. 이상의 결과를 바탕으로 위해 분석 결과 30 kGy X-선 조사식품 4종(닭고기, 전란분말, 건파, 후추)은 본 시험조건에서 유전 독성이 없는 것으로 나타났다.
