Hepatopotective Effects of Black Rice on Superoxide Anion Radicals in HepG2 Cells

  • Cyanidin 3-glucoside (C3G) isolated from black rice was investigated for hepatoprotective effects in HepG2 cells under oxidative stress. When an increase in the production of reactive oxygen species (ROS) was induced by gramoxone, cell viability was drastically decreased by 42%. However, in the presence of C3G, no hepatocytic damage was observed in HepG2 cells treated with gramoxone. C3G was found to manifest a stronger scavenging effect (91%) on superoxide anion radical ($O_2\;^{.-}$) than any of the other natural and synthetic antioxidants. Results suggest that C3G from black rice possesses hepatoprotective effects in vitro, which may be, at least in part, due to $O_2\;^{.-}$ scavenging.

원료삼 크기와 형태가 흑삼의 품질에 미치는 영향 (Effects of Fresh Ginseng Size and Shape on Quality of Black Ginseng)

  • 흑삼은 고기능성 신규 인삼제품으로 높은 관심의 대상이 되고 있지만, 흑삼제조와 관련된 기초 연구는 아직 미미한 실정이다. 본 연구에서는 원료삼의 외형적 특성이 흑삼제품의 품질에 미치는 영향을 살펴보기 위하여 동일지역, 동일시기에 수확된 5년근 수삼을 시중에서 구입한 후, 크기별(중, 대, 특대) 또는 형태별(직삼, 난발삼)로 분류하고, 흑삼 제조시의 수율과 당류, 폴리페놀 및 진세노사이드 등 주요 이화학적 성분 및 항산화 활성을 비교하였다. 원료삼의 크기별 이화학적 특성을 살펴본 결과, 흑삼의 산성다당체, 흑삼특이 미량 진세노사이드인 Rk3, Rh4, Rg5, Rk1의 함량은 크기등급 L에서 다소 높았으나, 전체적으로 원료삼의 크기에 따른 흑삼의 이화학적 특성은 유의적인 차이는 없었다. 원료삼의 형태에 따른 흑삼의 이화학적 특성 분석결과에서는 난발삼의 산성다당체, 흑삼 특이 미량 진세노사이드인 Rk3, Rh4, Rg5, Rk1의 함량이 직삼보다 다소 높은 경향을 나타내었으나, 폴리페놀 함량과 항산화 활성은 형태에 따른 유의적인 차이가 없었다. 전반적으로 흑삼 제조 시 원료삼의 크기는 흑삼품질에 큰 영향을 미치지 않는 것으로 판단되었으나, 원료삼의 형태는 주요 활성성분인 산성다당체, 진세노사이드 함량에 다소 영향을 미치는 것으로 판단되었다. 본 연구결과는 고품질 흑삼제조를 위한 기초자료로 활용 가능할 것이라 기대된다.

Comparison between the antioxidant properties of environment-friendly agro-produce and processed food

  • This study was conducted to investigate the effects of environment-friendly materials on garlic cultivation, and the methods for processing garlic at proper ripening stage to increase its antioxidant properties and market value. The functional properties of garlic and processed black garlic were analyzed in vitro and ex vivo. The ethanol extracts of garlic and black garlic were used in the antioxidant, linoleic acid autooxidation, lipid oxidation and RAW264.7 indicator cell using NO induced activity analyses. Also, toxicity tests by RBL-2H3 and RAW264.7 indicator cell using MTT assay were compared. Obesity inhibition test of garlic and black garlic were also studied.

Maternal Effects of Japanese Shorthorn Cows on the Growth of Embryo-transferred Japanese Black Calves in a Cow-calf Grazing System

  • The growth performance of embryo-transferred Japanese Black calves that were born from, and suckled by, Japanese Shorthorn cows in a cow-calf grazing system (BS-group, n = 5) was compared to that of Japanese Black calves from Japanese Black cows in a cowshed (BB-group, n = 5). The daily weight gain from birth to 1 month was higher in the BS-group than in the BB-group (p<0.01), and the same trend (p<0.05) was observed at 2 and 3 months of age. This resulted in body weight that was significantly higher for the BS-group between 1 and 3 months of age than what was observed for the BB-group (p<0.05). Heart girth was significantly greater in the BS-group than in the BB-group throughout the experimental period (p<0.01), and chest depth and withers height in the BS-group were significantly greater from 2 to 4 months of age (p<0.05) and at 4 months of age only (p<0.05). No difference in body length (p>0.05) was observed between the groups. These results suggest that the maternal effect of Japanese Shorthorn cows was positive for embryo-transferred Japanese Black calf growth during the early suckling stage. As Japanese Black calves are traded at a high price on the Japanese market, we conclude that this proposed production system is likely to improve the profitability of herd management in upland Japan.

전자코를 이용한 검정현미의 산지판별 (Application of Electronic Nose in Discrimination of the Habitat for Black Rice)

  • 검정현미에 내포한 특이한 향기성분을 토대로 수입산 또는 국내산인지의 여부를 전자코로 분석하였다. 주성분 분석 결과 전반적으로 수입산과 국내산의 판별이 뚜렷하게 구별 가능하였다. 또한 인공신경망 분석 프로그램을 이용하여 학습시켜 원산지를 모르는 시료를 분석한 결과 국내산 검정현미가 수입산인지 국내산인지를 구별할 수 있었다. E-Nose 5000을 이용한 결과는 69종의 국내산 검정현미를 국내산으로 판별한 경우가 64종으로 92.75%이었고, 13종의 수입산 검정현미를 수입산으로 판별한 경우는 11종으로 92.31%의 높을 확률로 metal oxide sensor로만 구성된 전자코의 판별정도보다 더 정확하게 구별할 수 있었다.

흑삼농축액을 이용한 흑삼두부 제조 및 품질 특성 (Preparation and Characterization of Black Ginseng Tofu)

  • This study was performed to process Tofu as an hypolipidemic food using black ginseng. Before processing we performed the ameliorating effect of black ginseng on the serum levels of triglyceride and total cholesterol in diabetic mice (db/db mice). As a result, the diabetic mice, whose diet was supplemented with black ginseng has a reduced level of serum lipid total cholesterol ($124.58{\pm}10.59mg/dL$) compared to non-supplemented diabetic mice, The supplemented mice exhibited a significant decrease (p<0.05) in serum lipid triglycerides ($80.32{\pm}35.40mg/dL$), which provided the efficacy of black ginseng in reducing hyperlipemia, thus indirectly proving the prevention and treatment of obesity. Then we processed Tofu as a hypolipidemic food using 0~8% black ginseng extract. We evaluated the quality characteristic after producing black ginseng Tofu. For color value, as the addition level of color increases, the value of L (lightness) decreased and a (redness), b (yellowness) increased. With increase in black ginseng concentrate additional level increases, the hardness, gumminess, and chewiness values increased (p<0.05), but the springiness and cohesiveness showed no significant differences. In case of sensory evaluation, Tofu with the addition of 2% black ginseng concentrate (BGT2) showed the highest preference overall. To sum up, black ginseng demonstrated pharmacological effects in treating diabetic complications like hyperlipidemia and reducing body deposit fat.

식품색에 대한 대학생의 기호도에 관한 조사연구 (Examination into Favorable Taste of College Students on Food Colors)

  • This study was conducted to examine the favorable taste of food color for one month of November 1991 With 200 college students consisting 100 male and 100 female students. The color to examine the favorable food was based on Munsell color standard of ten colors such as F. Birren seven colors (red, orange, yellow, yellowish green, green, blue and violet), brown, pink and black. And then, the data of this study was analysed by using frequency(%), mean values, standard deviation, t-test, Chi-square, Spearman correction with SAS Package on the basis of 100% collection and reliable coefficient alpha= .775. The result of this study is summarized as follows. 1. It was shown that the male college students (59%) showed remarkable interest in the food color higher than that of female college students (92%), and that 85% of male students and 97% of female students considered that the food color has an effect on appetite. In addition, the food name having an effect of the food color on appetite appeared in such order as carrot (13.0%), apple (10.9%), spinach (7.0%), cucumber (6.0%) and red pepper (5.6%). The important factor in choosing the favorable food was the taste for both male and female college students, while the male and female students considered the food color as the 4th, respectively, and the 3rd important factor in choosing the favorable food. 2. The favorable food color appeared in order such as orange, red, yellow, yellowish green, green, blue, violet, pink, black and brown colors for the male college students, and in order such as red, orange, yellow, green, yellowish green, brown, violet, black, pink and blue. Also, there was difference between the male and female college students in such colors as brown, yellowish green, blue and pink. It was also shown that there was no relation between the male and female college students in examining the order of favorable food colors and general colors when selecting null hypothesis (ASE: .405). The food name associated with the color was apple for red color, orange for orange color, coffee for brown color, banana for yellow color, lettuce for yellowish green color, spinach for green color, mackerel for blue color, eggplant for violet color, sausage for pink color and bean for black color 3. The favorable color combination of both male and female college students showed red with green, orange with yellow, yellow with green, green with yellow, pink with violet and black with black. In addition, the favorable combination of the male college students indicated brown with black, yellowish green with orange, blue with red and violet with yellow while the female college students did brown with yellow, yellowish green with green, blue with yellow and violet with pink. The favorable combination color showing difference between the male and female college students included orange, brown, violet, pink and black colors. 4. The relation between the food color and terms of favorable taste showed that “light and mild color” is yellow, that “untasty color” is black, that “sourish and puckery color” is orange, that “bitter color” is violet, that “hot color” is red, and that “fresh color” is green which were answered by both male and female college students. However, the male and female college students considered yellow, respectively, and orange as “tasty color”, and black and yellow, respectively, as “sweet color”. Then, the taste term showing difference between male and female college students included “light”, “mild”, “sourish”, “tasty” and “sweet”. Based on the above result of this study, it is apparent that there is a close relation between the food color and appetite while being difference between the general color and taste. In addition to this fact, there is also some differences between male and female college students in the taste of food color.

거두와 적두전분의 이화학적 특성 및 Gel 특성에 관한 연구 (A Comparison Study on Physicochemical Properties of Two Small Red Bean ( Black and Red ) Starches and Gels)

  • This study has been carried out in order to investigate the physicochemical properties of two small red bean starches. Some of rheological properties of the starch gels were also studied by experiments of various starch concentrations. Water binding capacity of black bean starch was 172.3% and that of red bean starch was 199.0%. Black bean starch had lower swelling power than red bean starch, but the solubility of the black bean starch was higher. When the temperature increased from 60$^{\circ}C$ to 70$^{\circ}C$, the transmittance of two starches rapidly increased. The gelatinized temperature in DSC for black bean was 66.2$^{\circ}C$ and that for red bean was 66.0$^{\circ}C$. Black bean and red bean starches had the blue vlaues of 0.55 and 0.56 and the alkali numbers of 4.40 and 4.13. The molecular weight of amylose was 40,000 and 33,611. The amylose contents of two starches were same at 52%. Brabender Amylographs of two small red bean starch pastes showed C pattern, which is stable. The results of compression test pointed out that TPA parameters varied with the change of storage time, and black bean starch gels had the higher TPA value. The retrogradation study by glucoamylase digestion method revealed that red bean starch gels were more easily retrogradated than black bean. X-ray diffraction patterns of two small red bean starches were A pattern, and diffraction peaks disappeared with gelatinization of starches.

흑미가루 복합분의 이화학적 특성과 스펀지 케이크 품질특성 (Quality Characteristics of Sponge Cakes Containing Various Levels of Black Rice Flour)

  • 흑미가루 첨가비율(5-30%)에 따른 복합분의 이화학적 특성, 호화특성, mixograph 특성 및 스펀지 케이크의 제조적성을 측정하고, 이들 특성 간의 상관관계를 구명하고자 일련의 실험을 실시하였다. 흑미 가루 첨가량이 증가함에 따라서 alkaline water retention capacity, Pelshenke value, sedimentation value는 증가하였으나 water holding capacity는 감소하는 경향을 보였다. Mixograph peak time, height, width at peak와 Rapid Visco Analyser peak, minimum viscosity도 감소하였다. 스펀지 케이크 반죽의 pH와 비중은 증가하였지만 케이크의 부피는 감소하는 경향을 보였으며, 케이크의 경도는 증가하였다.

흑마늘 분말을 첨가한 스펀지케이크의 품질 특성 (Quality Characteristics of Sponge Cake with Black Garlic Powder Added)

  • 생마늘에 비해 마늘의 자극적인 맛과 냄새가 없는 흑마늘의 분말을 첨가한 스펀지케이크를 제조하여 반죽 비중, 케이크의 pH, 높이 및 비용적, 수분함량, 텍스처, 색도, 관능특성을 조사하였다. 케이크는 밀가루 무게 100%를 기준으로 흑마늘 분말을 각각 0, 2, 4, 6 및 8%로 첨가 후 계란의 흰자와 노른자를 같이 기포하는 방법으로 제조하였다. 반죽의 비중은 대조구의 경우 0.43$\pm$0.01인데 비해, 8% 첨가구는 0.50$\pm$0.01로 흑마늘의 첨가량이 많아질수록 높아졌다. 케이크의 pH는 흑마늘의 첨가량이 많아질수록 낮아졌고($8.52\pm0.05\sim7.67\pm0.04$), 높이($5.78\pm0.03\sim5.10\pm0.05$ cm)와 비용적($4.78\pm0.06\sim3.97\pm0.01$ cc/g)도 낮아졌다. 케이크의 수분함량 또한 흑마늘의 첨가량이 많아질수록 낮아졌다($24.40\pm0.43\sim21.46\pm0.23%$). 케이크의 내부 색깔을 보면 L값과 b값은 흑마늘의 첨가량이 많아질수록 감소하였고, a값은 증가하였다. 케이크의 껍질 색깔의 L값은 흑마늘의 첨가량이 많아질수록 감소하였고, a값과 b값은 감소하는 경향을 나타내었지만 큰 차이를 보이지 않았다. 텍스처는 경도, 검성, 씹힘성은 흑마늘의 첨가량이 많아질수록 증가하였고 탄력성은 감소한 반면, 부착성과 응집성은 유의적인 차이를 보이지 않았다. 9점 채점법으로 실시한 관능검사에서 색과 텍스처에서는 유의적인 차이를 보이지 않았고, 향과 맛은 6%(7.07$\pm$1.22, 6.93$\pm$1.10) 첨가구에서 높은 값을 보였으며 전반적인 기호도는 4%(7.40$\pm$0.74)와 6%(6.73$\pm$0.88) 첨가구에서 높은 값을 보였다. 생마늘에 비해 마늘의 자극적인 맛과 냄새가 없는 흑마늘을 첨가한 스펀지케이크의 품질 특성결과를 고려할 때 적정 첨가량은 4%라고 판단된다.
