Objective : For the purpose of developing Korean herbalogy of the plants to Violaceae in Korea, the literatures of the successive generations have been thoroughly investigated to prepare this article. Methods : The examined herbalogical books and research paper which published at home and abroad. Results : 1. Violaceae plants (raised in Korea) are devided into 1 classes with 57 species. Among them, 14 species in 1 classes were found serviceable, which indicates 32 % of all Violaceae plants. 2. The herb is main medicinal part if medicinal plants in the Violaceae, which is used in 14 species. 3. According to the nature and flavor of medicinal plants in the Violaceae, they were classified into cold 8 species, and cool 7; bitter taste 8; acrid taste and little bitter taste 6 in the order. 4. According to the meridian propism of medicinal plants in the Violaceae, they were classified into liver meridian 6 species, heart meridian 3 species in the order. 5. According to the properties and principal curative action, they were classified into drugs for clearing heat, removing toxins 12 species; drugs for alleviate edema 7, and drugs for arresting bleeding 6 in the order. 6. There were no toxic species in the Violaceae family. Conclusion : There were totaled to 1 genera and 57 species in Violaceae in Korea and among them medicinal plants are 1genera, 14 species, some 32% in total.
Volatile flavor compounds in Korean salt fermented shrimp on the market were analyzed by vacuum simultaneous distillation solvent extraction/gas chromatography/mass spectrometry/olfac tometry(V SDE/GC/MS/O) and aroma extract dilution anlaysis(AEDA). A total of 32 volatile com pounds were detected by GC/O analysis. Of these, 18 were positively identified, and composed of S containing compounds(5), aldehydes(4), ketones(3), N containing compounds(3), ester(1), alcohol(1) and aromatic hydrocarbon(1). Predominant odorants(Log3FD$\geq$4) in salt fermented shrimp were 2,3 butanedione(sour/buttery), 1 octen 3 one(earthy/mushroom like), dimethyl trisulfide(cooked cabbage /soy sauce like) and 2 acetylthiazole(grainy/nutty). Predominant free amino acids were aspartic acid, glutamic acid(sour and umami taste), arginine, methionine(bitter) and lysine(sweet and bitter) in evaluation of taste value.
1989년 11월부터 1990년 1월 사이에 전남 가막만에서 채취한 양식 굴 및 이를 원료로 제조된 훈제 기름담금 통조림, 보일드 통조림에서 강한 쓴맛이 나타나 품질상 문제가 발생하였는바, 본 연구에서는 이러한 쓴맛의 원인 물질을 규명하고저 시도하였다. 이들 시료의 아세톤 추출액을 액-액 분배, 알루미나, 규산 및 ODS 등의 각종 칼럼을 이용하여 정제한 결과, 5개의 쓴맛성분을 분리하였으며, 이들은 질량분석(FAB-MS)으로 부터 분자량이 각각, OY-22 : 837, OY-23 : 851, OY-24 : 821, OY-25, OY-26 : 835 이었으며, proton NMR spectrum 및 각종 기기분석 결과, 6-7개의 아미노산으로 이루어진 환상 peptide로 추정되었다. 또한, 아미노산 분석으로부터 OY-24에서는 Val, Leu 이, OY-25에서는 Leu, Ile이, OY-26에서는 Leu, Leu이 각각 확인되었으며, 나머지는 이상 아미노산으로 생각되었다. 이들 성분들은 마우스에 대하여 급성독성은 없었으며 $(100{\mu}g/20g\;mice,\;I.p.)$, Asp. niger E. coli, Bac. subtilis 에 대하여는 항균성도 없었다$(10{\mu}g/disk).$ 현재, 각종 생리활성 및 정확한 구조를 검토 중에 있다.

Mammals have 3 pairs of major salivary glands i.e., the parotid, submandibular, and sublingual glands. Saliva secretion of these glands is modulated by taste perception. Salivary glands are composed mainly of acinar and ductal cells. Primary saliva is secreted by acinar cells and modified during ductal flow. Recently, of the murine 35 bitter taste receptors, Tas2r108 was expressed at highest levels in the submandibular gland by qPCR. Further, Tas2r108-transfected cells respond to a range of bitter compounds, such as denatonium, quinine, colchicine, diphenidol, caffeine and dapson. The objective of the present study was to characterize the expression of Tas2r108 mRNA in acinar and/or ductal cells of the submandibular gland using in situ hybridization (ISH). Male 42-60 days old DBA2 mice were used in the study. Messenger RNAs were extracted from the submandibular gland for generating digoxigenin (DIG) labeled-cRNA probes. These probes were transcribed in anti-sense and sense orientation using T7 RNA polymerase. Dot blot hybridization was performed using DIG labeled-cRNA probes, in order to estimate integrity and optimal diluting concentration of these probes. Subsequently, ISH was performed on murine submandibular gland to detect Tas2r108 mRNA. Dot blot hybridization data demonstrated that Tas2r108 DIG labeled-cRNA anti-sense probes specifically detected Tas2r108 cDNA. ISH results showed that the anti-sense probes labeled acinar and ductal cells in the submandibular gland, whereas no staining was visible in sense controls. Interestingly, the Tas2r108 expression levels were higher in acinar than ductal cells. These results suggested that Tas2r108 might be more associated with primary saliva secretion than with ductal modification of saliva composition.
Marsh calm(Corbicular elatior)with a short-term storage in raw and a law-rate of utilization has been increasing the needs to develop new marsh calm processing products for a temporary mass treatment and long-term distribution, Therefore the processing conditions of marsh calm beverage using proteolytic enzyme hydrolysis were investigated. A partial hydrolysis at 6$0^{\circ}C$ for 1 hour after adding 3% Alcalase as more effective than a hot water extraction to develop taste compounds from the marsh calm. The result of ommission test showed that nucleotides and their related compounds were contributed in the taste of the marsh calm hydrolysates rather than free amino acids. The taste of the hydrolysates was produced by association with these compounds rather than only one compound s the hydrolystes taste differently for the control when one of these compound was omitted. The hydrolysates were fractionated to molecular weight below 500 dalton to eliminate bitter taste and to improve it flavor from the hydrolysates, 0.05% bay leaf was more effective to improve the odor than other herbs.
A new cyclic peptide (six-membered amino acid), gamakamide-E (L-Leu-L-Met (SO)-L-Me-Phe-L-Leu-D-Lys-L-Phe), was isolated as a strongly bitter tasting compound from cultured oysters, Crassostrea gigas. The molecular formula of $C_{43}H_{61}N_7O_8S$ was deduced from high resolution fast atom bombardment mass spectrometry (HR FAB-MS) ($[M+H]^+$ m/z 836.4356 ${\Delta}$= -2.4 mmu). Its unique structure including a hydantoin structure was firstly elucidated by nuclear magnetic resonance (NMR) analysis. Stereochemistries of constituent amino acids were determined by chiral high performanced liquid chromatography analysis of natural and synthesized peptides.
재래식 된장의 여러 성분 중 어떤 성분들이 된장의 풍미에 기여하며, 어떤 성분조성이 재래식 된장의 맛을 내는데 최적인지를 알기 위하여 본 연구를 수행하였다. 재래식 된장(40표본)의 맛 성분을 분석하고 그 분석 결과와 관능검사 성적으로 주성분 분석 과 아울러 중회귀분석을 실시하였다. 감미, 지미, 염미, 고미, 산미들이 재래식 된장의 독특한 맛을 내는 구성성분들이었으며 맛에 대한 기여율은 각각 25.97%, 17.84%, 8.58 %, 7.79및 3.12%이었다.
Recognition thresholds for NaCl, sucrose, citric acid, and caffeine, as well as the pleasant concentration of NaCl were assessed in 176 males and 312 females aged 50-88 years. Furthermore, relationships among taste sensitivities, taste preferences, and lifestyles were examined. The taste solutions were presented one after the other in ascending order using the sip-and-spit method. For the recognition thresholds of the 4 basic tastes, women perceived significantly lower concentrations than the men. However, the pleasant concentration of NaCl did not show a gender difference. Sensitivities for the 4 basic tastes did not decrease with age in the men, but they did significantly decrease with age for the women, especially for those above 70 years. For men, regular exercise was positively correlated with sensitivities for sour taste and bitter taste, and physical activity was negatively correlated with the pleasant concentrations of NaCl. For women, who had more physical activity, sensitivities for sweet taste and sour taste were lower compared to the others. This study indicates that the sensitivities for 4 basic tastes in water diminished with age, but pleasant salt concentration did not change with age. Further research on pleasant NaCl concentration is required to determine factors affecting salt preference, in order to decrease salt intake in the elderly.
Taste receptor cells respond to gustatory stimuli using a complex arrangement of receptor molecules, signaling cascades and ion channels. When stimulated, these cells produce action potentials that result in the release of neurotransmitter onto an afferent nerve fiber that in turn relays the identity and intensity of the gustatory stimuli to tie brain. A variety of mechanisms are used in transducing the four primary tastes. Direct interaction of the stimuli with ion channels appears to be of particular importance in transducing stimuli reported as salty or sour, whereas tile second messenger systems cyclic AMP and inositol trisphosphate are important in transducing bitter and sweet stimuli. In addition to the four basic tastes, specific mechanisms exist for the amino acid glutamate, which is sometimes termed the fifth primary taste. The emerging picture is that not only do individual taste qualities use more than one mechanism, but multiple pathways are available for individual tastants as well.

The prescribed medicines were most nonpoisonous ones, but some of them were poisonous. 4. The medicines with Han seong(寒性) were most popularly prescribed. The ones with On seong(溫性), Pung seong(平性), Youl seong(熱性), Yang seong(凉性) follows 5. The most popularly prescribed medicine was sweet taste(甘味). The nest ones were pungent taste(辛味), bitter taste(苦味), sour taste(酸味), salty taste(鹹味). 6. The most popularly prescribed medicine was Chung Youl(淸熱) medicines.
