Preference of Elementary School Students Compared by Dietitians' Perception in School Lunch Program (학교급식 음료 선호도에 대한 초등학생과 영양사의 인식 비교)

  • The purpose of this study was to investigate the difference between students' beverage preference and dietitians' perception in elementary school lunch program. This study was conducted in three phases: (1) questionnaire development and survey administration to elementary school students (2) survey administration to dietitians who were in charge of the elementary school food service, and (3) comparison of beverage preferences between elementary school students and dietitians. In phase I, 703 elementary school students in Seoul were surveyed from July 11 to July 19. In Phase II, 100 school food service dietitians in Seoul participated by mail survey from September 15 to October 30, 2006. Based on the results, elementary school students tended to show a neutral milk preference (mean=3.04), whereas dietitians perceived that elementary school students had lower milk preference (mean=2.67). Also dietitians perceived higher yogurt preference (mean=4.27) than the real elementary school students' preference (mean=4.02). T-test results showed the gender difference on milk and yogurt preference. Male students had higher milk preference (t=4.912, p<0.001) and yogurt preference (t=3.621, p<0.001) than female students. Elementary school students showed high fruit juice preference (mean=4.34); however, dietitians perceived lower fruit juice preference of students (mean=3.92). There was no gender difference on fruit juice preference. Though elementary school students had higher fruit juice preference, the frequency of fruit juice served in school lunch was quite low. Over half of the dietitians reported that they served fruit juice less than once a semester. The results of this study indicated the existence of distinctive difference between students' fruit juice preference and school lunch menu offerings.

Effect of Analysis in the by Taste and Quality freeze-Dried Kimchi Powder by Adding of Sausage (동결김치분말을 첨가한 소시지의 맛과 품질에 미치는 영향)

  • Both baked sausage with freeze-dried Kimchi powder(FDKP) and unbaked sausage with FDKP were compared for the analysis. The results are as follows. First, general scores for baked sausage FDKP were higher than those of unbaked sausage with FDKP. Second, baked sausage with freeze-dried Kimchi powder showed scores in color(7.15), taste(7.10), softness(6.00), and overall(7.15) for 3% FKP preference the most. Third, unbaked sausage with FDKP showed scores in color(6.65) for 9% FDKP preference the most. Color is preferred with both 3%(6.45) and 6%(6.45) FDKP. Fourth, softness(5.70) is preferred with the control group. Fifth, taste(6.45), overall(6.25), and hotness(6.85) were preferred with 3% FDKP. Therefore, baked and unbaked sausages with 3-6% FDKP were judged the most commodities.

  • More sales of food and beverage coupons have been made using SNS on social commerce recently. If one buys coupons on social commerce, he/she can enjoy products at a lower price; however, there are drawbacks that one must consider such as location, service hours, and discount rate. Thus, this paper suggests a system that recommends food and beverage coupons on social commerce for users that considers a user's personal context of location, time, and purchase history. In order to reflect a user's context awareness and continuous preference, this paper suggests a method based on the Bayesian network. In order to reflect personalized weighting on the standard of coupon selection to match a user's preference, a measurement and classification of weighting preferences is performed on the basis of AHP. 20 experiments in one month involving 12 students were carried out to verify the effectiveness of the system, resulting in an 80% satisfaction level.

A Study on Perception of Alcoholic Beverage among Women and Development of Anti-Oxidant Beer Natural Ingredients (국내 성인 여성의 음주 인식과 형태 및 천연 소재를 활용한 항산화 맥주 개발에 관한 연구)

  • For the study, 366 copies of questionnaire were distributed among and collected from Korean women in their 20s to 60s between April and May 2016. To investigate the utility of anti-oxidant beers that contain extracts of natural substance respectively, the anti-oxidantive activity were measured and preference for anti-oxidant craft beers was surveyed among the subjects. The result suggested that the subjects had positive perception toward drinking, Korean adult women highly prefer beer among different types of alcoholic beverage, and the form of drinking changed according to the stamina, mood, situation, place, and company. Also, natural substance extracts showed high levels of antioxidant effects and, in the survey on preference for craft beers, the aronia group scored higher than other groups. The findings in this study suggest, for Korean adult women, beer with anti-oxidant ingredients can be beneficial for skin and overall health. Also, the findings can be used as basic data related to drinking among adult women and development of anti-oxidant beer. The Journal of Digital Policy & Management. Study on Level of Novelty Seeking Need and Oversea Travel Motivators (신기성 욕구수준에 따른 해외여행동기 차이에 관한 연구)

  • Travel motivations appear particularly useful in describing those individuals who visit a specific travel attraction versus those who do not visit the attraction. Novelty seeking is an important motivator for traveling today. In this study four factors and three groups resulting from a cluster analysis were tested in determination for 13 preference and 21 motivators. The major finding of this study are as follows: Prior consideration in oversea travel for people is to expect to contact new culture and exotic environment. In the selection of oversea travel with the level of novelty seeking traits, rhere is meaningfull diffrences. In the novelty seeking levels of leisure activities remarkable difference appeared in the selective degree variables and the examination of the gap. In the selection of oversea with the novelty seeking level it displayed meaningful differences in the 10 items. In a travel in accordance with levels of novelty seeking- which is divided into groups high, medial, and, low level of novelty seeking groups- four elements of their levels demonstrated meaningful differences, such as adventure seeking type, out-of-ordinary life type, fun seeking type and free travel type. In order words, the means of high-concerned group, medial, and ldw-concerned group showed remarkable differemndes.

An Investigation of Brand Image and its Influence on Customers′ Perception of Fast-food Restaurants (브랜드 이미지가 패스트푸드 점포의 고객관리에 미치는 영향)

  • This study was to investigate brand image and its influence on customers perception of fast-food restaurants. A total of 25 brand image attributes were selected on the basis of the literature review and were asked to indicate respondents' perceptions of their image targeting for fast-food restaurants such as Lotteria, McDonald, KFC, and Popeyes. A on-site survey method was applied to collect data. Out of 300 distributed survey questionnaire, a total of 271 useful sample were collected and analyzed in SPSS 10.0. From the factor analysis with 25 brand image attributes, five underline dimensions were identified and named such as interior factor, store factor, atmosphere factor, service factor, and product factor. Then, T-test and ANOVA were conducted to investigate any differences between/among the groups based on those five brand image factors. The results provided that in terms of gender, age, preference for fast food, food cluster, and four different brand, customers differently perceived restaurant brand image. It is hoped that this information may help for restaurant managers and marketers to understand customers' restaurant perception and choice behavior in order to launch appropriate marketing strategies.

  • The family life cycle is a useful indicator of consumer behavior, as well as the family life cycle concept utilizes a combination of demographic and socioeconomic variables that best explains the changes in the construct of the family. The family decision-making research has frequently examined role relationship between husband and wife across stages and sub-decisions. The objective of this research is to measure children and parents' perceptions of the influence of the decision-making process for a family dining-out experience, and to determined the customers' choice behavior of restaurants according to isolated factors underlying the important attributes of the restaurants, and finally authors applied a market segmentation approach by capturing customers' preference of restaurant attributes in family dining-out situation and to investigated influence of the family decision making for family dining out in family life cycle. For practitioner, marketing implications are provided and recommendations for future research are also discussed.

  • Recently, Cruise travel Industry becomes a major market in the SIT tour. this perspective, the primary purpose of this study was to investigate relationship between influencing factors of the Selection Attributes of Cruise Tour. This research aims to provide information to establish customer-oriented marketing strategies in developing by cruise tour. The current study examined related literature finding out the number of the factors to meet future users preference and expectations. Based on examined factors, the study investigated the same dimensions in Korea future cruise industry. The data collected outgoing tourists of travel service company. The Survey instrument consisted of asking respondents a number of questions regarding their intention, preferences, and expectations toward future cruise travel. The result of study showed that a certain number of factors were statistically significant on the future users cruise travel intention. It shows that there was significant difference related to the using purpose and the usage attitude. It can be conducted from the results that respondents expected a certain number of factors when the cruise travel launched in korea.

Intake Behavior Regarding Beverages according to Dietary Lifestyles of University Students (대학생의 식생활 라이프스타일에 따른 음료 섭취 실태 분석)

  • The purpose of this study was to categorize dietary lifestyles and analyze intake behavior regarding beverages according to lifestyles of 276 university students in Yeungnam region. Frequency analysis, factor analysis, cluster analysis, reliability analysis, one-way analysis of variance, and ${\chi}^2$ tests were conducted using SPSS V.21.0. In the factor analysis, dietary lifestyles were categorized into one of five factors: health-seeking type, popularity-seeking type, safety-seeking type, economy-seeking type and convenience-seeking type. According to cluster analysis, respondents were divided into four groups: convenience-seeking group, wellbeing-seeking group, popularity-seeking group, and indifference group. Chi-square tests showed that there were significant differences in gender, grade, dwelling status, and monthly allowance according to the four dietary lifestyle groups. The level of dietary habits and percentage of correct answers related to beverages of the wellbeing-seeking group were highest among the four groups. The frequency of beverage intake was significantly different for carbonated drinks, milk and dairy products, and sport drinks according to dietary lifestyle groups. In addition, for beverage preference, there were significant differences in carbonated drinks, sport drinks, tea and functional drinks according to dietary lifestyle groups.

Improvement Strategy According to the Change of Hotel Environment

  • This study is to develop a strategy to prepare an improvement strategy according to the environmental change of the hotel. Currently, domestic hotels are implementing marketing through food and beverage as a countermeasure against the sales decrease, and in order to develop effective marketing plan, 5 Force Model environmental analysis and STP analysis are analyzed. 5 Force Model Environmental Analysis showed that domestic hotels are facing various difficulties such as the expansion of accommodation sharing system, the decrease of Chinese tourists due to the THAAD problem, the increase of hotels, the introduction of PMS, the increase of minimum wage, the introduction of 52 hours work week, and the increase in product preference As an STP response strategy to correspond these difficulties, it is necessary to develop products for the main customers of the hotel food and beverage, such as those in the 20s-30s, the workers, smartphones and SNS users. And also hotels should seek ways to lower price of the product to the level desired by the user to compete against substitutes. In conclusion we suggest that hotels are committed to fulfilling their role by meeting guest safety and COVID-19 compliance requirements, but a focus on immediate cleanliness and quarantine against infectious diseases, like Airbnb, will enable greater growth.
