Application of AutoFom III equipment for prediction of primal and commercial cut weight of Korean pig carcasses

  • Objective: This study was conducted to enable on-line prediction of primal and commercial cut weights in Korean slaughter pigs by AutoFom III, which non-invasively scans pig carcasses early after slaughter using ultrasonic sensors. Methods: A total of 162 Landrace, Yorkshire, and Duroc (LYD) pigs and 154 LYD pigs representing the yearly Korean slaughter distribution were included in the calibration and validation dataset, respectively. Partial least squares (PLS) models were developed for prediction of the weight of deboned shoulder blade, shoulder picnic, belly, loin, and ham. In addition, AutoFom III's ability to predict the weight of the commercial cuts of spare rib, jowl, false lean, back rib, diaphragm, and tenderloin was investigated. Each cut was manually prepared by local butchers and then recorded. Results: The cross-validated prediction accuracy ($R^2cv$) of the calibration models for deboned shoulder blade, shoulder picnic, loin, belly, and ham ranged from 0.77 to 0.86. The $R^2cv$ for tenderloin, spare rib, diaphragm, false lean, jowl, and back rib ranged from 0.34 to 0.62. Because the $R^2cv$ of the latter commercial cuts were less than 0.65, AutoFom III was less accurate for the prediction of those cuts. The root mean squares error of cross validation calibration (RMSECV) model was comparable to the root mean squares error of prediction (RMSEP), although the RMSECV was numerically higher than RMSEP for the deboned shoulder blade and belly. Conclusion: AutoFom III predicts the weight of deboned shoulder blade, shoulder picnic, loin, belly, and ham with high accuracy, and is a suitable process analytical tool for sorting pork primals in Korea. However, AutoFom III's prediction of smaller commercial Korean cuts is less accurate, which may be attributed to the lack of anatomical reference points and the lack of a good correlation between the scanned area of the carcass and those traits.

  • 1. The Jung-Sa(正邪) of the Excessive Liver-Symptoms belongs to the eleven symptoms, there are blue face, blue thin fingernail, anger, fancy of larg body, dizziness, eye flame, Bell's palsy, hard swelling pain at braest, side pain going on the belly from the side, side pain and movement at the left side. 2. The Mi-Sa(微邪) of the Excessive Liver-Symptoms belongs to the four symptoms, there are meat in eye, edema in cheek, lack of appetite and diarrhea. 3. The Juk-Sa(賊邪) of the Excessive Liver-Symptoms belongs to the only one symptom, this is nosebleeding. 4. The Hu-Sa(虛邪) of the Excessive Liver-Symptoms belongs to the three symptoms, there are scrotum constraction, strain in belly and constipation. 5. The Sil-Sa(實邪) of the Excessive Liver-Symptoms belongs to the twenty eight symptoms, there are red eye, raised eyes(兩眼上?), spitting blood, sternocostal turgid pain, turgidity in belly, drooping testis, vomiting water acid, sickening, belching, confusion, impatience, frequent forgetfulness, headache, giddness, eye pain, deaf, ringing in the ear, feeling inverse, drying mouth, stuffiness sensation in the chest, chest pain, stuffiness sensation in the belly, bellyache, quadriplegia, spasm of extremities, tremor, alternate spells of fever and chills, high fever and strain in muscle. 6. Those symptoms, Red corner of the eye, red face, swelling on the forehead, stiff-neck and back strong, opisthotonos, constracture of the limbs, vomiting yellow bitter water, speech impediment, epilepsy, depression, strong tongue, different thing in throat, fullness and distention of the gastric region, feeling sick and tenesmus, have no connected with the Excessive Liver-Symptoms(肝實證) 7. The Excessive Liver-Symptoms(肝實證) is connected with the ganjabyoung(肝自病) and Hwa(火) which the pathology is, than because Mock(木) is excessive and Mock-Saeng-Hwa(木生火), the ganjabyoung(肝自病) and Sil-Sa(實邪) are many. 8. There are the sixteen symptoms with the exception of The Excessive Liver-Symptoms(肝實證), because supposed that the scholars in medicine included the union syndroms(合病), the combine syndroms(兼病) and the analysis of symptoms(辨證) in The Analysis of Five Visceral Symptoms. 9. During consideration of the symptoms at the above statements, where are many causes by Gan-Pung(肝風), there is difficult of distinction between the excessive Liver-Symptoms(肝實證) and C.V.A(Cerebral Vascular Attack). Because than NaeKyung(內經) distinguished between the excessive Liver-Symptoms(肝實證) and C.V.A., the future medical specialists connected with the excessive Liver-Symptoms(肝實證) and C.V.A.. 10. An appearance of Sang-Hwa(相火) that the liver possessed is divided into an appearance of Hwa(火), there will be making a study att the more necessary. 11. The cuases of each syndroms are consist of the origins of syndroms, its pathology and the positions where the syndroms appeared, I consider that is the various ways how judge the syndroms except the Five Pathogenic Factors(五邪). 12. If more than study will be achieved in all, the new definition will be standed about the Excessive and Deficient Five Visceral Syndroms(五臟虛實證), I consider this will be the foundation data that study the Oriental Medicine and the important data that is a judgement standard of clininc.

베이컨 육에 있어서 고추 Capsaicin 및 Oleoresin의 항산화 작용에 관한 연구 (Studies on the Antioxidant Activity of Capsaicin and Oleoresin from Red Pepper in Grounded Bacon Belly Meat)

  • 본 실험에서는 국내에서 널리 사용되어지고 있는 고추의 매운 성분인 캡사이신 및 올레오신을 세절시킨 베이컨 육에 첨가하여 그 저장성효과를 TBA가 및 최근에 개발된 형광 발광 검출기가 부착된 CL-HPLC법을 이용한 과산화물가를 측정하였다. 세절 베이컨 육에 있어서의 TBA가는 캡사이신 0.02% 첨가구, 올레오레신 0.02% 첨가군이 기존에 사용해 온 에리 솔빈산 0.02% 첨가수준보다 항산화 효과가 더 크게 나타났다. CL-HPLC로 검출한 hydroperoxide의 생성은 에리솔빈산 첨가구가 대조군에 비해 효과가 더 크게 나타났으나, 에리솔빈산 0.01% 및 0.02%간의 첨가수준에 따른 차이 보이지 않았다. 캡사이신 0.01% 첨가구는 에리솔빈산 0.02% 첨가효과와 거의 같은 효과를 나타냈으며, 5주째에 있어서는 캡사이신 0.02% 첨가구가 캡사이신 0.01% 첨가구에 비해 항산화효과가 유의하게(p<0.05) 더 높게 나타났다. CL-HPLC를 이용해 세절 베이컨에 대한 과산화물가를 책정한 결과, 올레오레신 0.02% 첨가구는 에리솔빈산 0.02% 및 캡사이신 0.01% 첨가수준의 효과와 거의 비슷한 효과를 나타 냈으며, 올레오레신 0.02% 첨가구는 캡사이신 0.02% 첨가수준과 거의 필적할 정도의 항산화 효과를 나타냈다. CL-HPLC는 항상화 효과 측정에 도입할 수 있는 방법임을 확인하였다.

Genetic and phenotypic relationships of live body measurement traits and carcass traits in crossbred pigs of Korea

  • This study presents the estimates of heritabilities of body measurement traits and carcass traits, and genetic and phenotypic correlations of those traits for crossbred pigs in Korea. Body and ultrasound (A mode: Piglog 105) measurements in 221 pigs including body weight, length, height and width, three back fat thickness at the points of 4th, 14th rib and chine bone, eye muscle area and lean meat percent were collected at the ages of 70, 145 and 180 days and then slaughtered to measure carcass weight, back fat, belly, collar butt, spare rib, picnic shoulder, hind leg, loin, tenderloin, lean meat yield and intramuscular rough fat content in loin. Genetic analysis was done using a multi-trait animal model. Heritabilties of the body measurements were ranged from 0.331 to 0.559 and three measurements of back fat thickness were also high as range varying from 0.402 to 0.475 for the ages of 145 and 180 days. However, eye muscle area was moderate (0.296) at the age of 180 days. Heritabilities of retail cut yields were also high as ranged from 0.387 to 0.474 and of IMF content in loin was 0.499. Heritabilities of the cut percent traits were ranged from 0.249 to 0.488. Important positive genetic and phenotypic correlations were noted for all carcass yield traits (0.298 to 0.875 and 0.432 to 0.922, respectively). IMF showed low negative genetic correlations with carcass yield traits, such as carcass weight, picnic shoulder, hind leg, loin, tenderloin and lean meat yield whereas low positive genetic correlations with back fat, belly, collar butt and spare rib. Loin, tenderloin and lean meat percent showed negative genetic correlations with carcass weight, back fat thickness, collar butt, spare rib and picnic shoulder percent. The four body measurements at the ages of 70, 145 and 180 days had positive genetic correlations with belly, shoulder butt, spare rib, picnic shoulder and hind leg percent, but negative genetic correlations were shown with loin and tenderloin percent except body measurements at 70 days. The results suggest that carcass yield are negatively correlated with intramuscular fat content, which is a major factor deciding pork quality and the yield of loin and tenderloin are not increased as much as increase in body size. However, the proportions of belly and collar butt are increased with the body size. In conclusion, selection strategy should be designed according to the preference on composition of carcass in each country.

학령전기 남아의 상반신 체형 - 만 7 ~ 8세 남아를 대상으로 - (Somatometric Characteristics of Elementary School Boys at the Ages 7 to 8 and Classification Thereby)

  • The purposes of this study were to classify somatotype was obtained from the factor scores of the upper half of bodies and analyze the Somatometric characteristics. The sample group (hereinafter referred to as "1st age group") was drawn from bays at the ages 7 to 8 living in Pusan and Kyungsangnam-do. Data from each boy comprised 36 anthropometric measurements and 7 photographic measurements. The study reached following conclusions. 1. According to the analysis to draw Somatometric factors by the 1st age group, seven indicative factors were obtained from measurements of the upper half of bodies. The most significant factor "sectional size" and the second most significant factor "longitudinal size" characterized most aspects of body shape of boys at the ages 7 to 8. 2. According to the analysis of Somatometric characteristics by the upper half of bodies, the 1st age group was categorized into three types : Boys in type 1 had highest stature, biggest frame, broadest shoulders, most protruded chest and shoulder blades and flattest belly : boys in type 2 had shortest stature, smallest frame, sloping shoulders and most protruded belly boys in type 3 had quite high stature and his other measurements were close to the averages of this age group.he averages of this age group.

  • Generator is the main equipment of a power plant that generates electric power. The line frequency is 60Hz, since that is operated at 3600rpm in fossil power plant. Therefore, the specific frequency 120Hz by the electromagnetic excitation force is generated inherently. If the looseness of stator at generator happens, abnormal sound that has 120Hz and the harmonic frequency is emitted from generator frame. In that case, binding of end-winding or re-wedging is needed for the reduction of sound level. In case of severe level of sound, belly band can be additionally installed at core. In this paper, the characteristics of generator sound is described and modal data is analyzed after installation of belly band.

  • SpaceX사는 Falcon 9으로 발사체 비용을 혁신적으로 낮추었으며 로켓의 1단 재사용을 실용화하였다. 현재는 완전 재사용이 가능하고 탑재량이 가장 큰 Starship 시스템을 개발 중이며 이로 인해 더욱 저렴한 비용의 발사와 임무의 다양화가 가능하다. 이를 위해 최초로 메탄 연료를 사용하는 전유동 다단 연소 싸이클을 사용하는 Raptor 엔진을 완성하였다. 그리고 완전 재사용을 위해 스테인리스강 탱크, 하강 중 배면낙하 및 역추진과 같은 거의 사용되지 않는 기술들을 함께 적용하여 다수의 시제기를 제작 및 시험하고 있다. 여기서는 Starship 시스템의 제원, 임무, 설계 특징에 대해 알아보았다. 또한 Raptor 엔진과 매우 빠르게 제작된 초기 13 기의 Starship 시제기 개발 과정에 대해서도 알아보았다.

Analysis of the electrical properties of pork to discriminate between fresh and frozen/ thawed pork

  • The thawing process is usually essential for imported pork because this product is typically distributed frozen. Consumers prefer fresh pork because discoloration, nutrient spills, and microbial contamination are high during the thawing process. The illegal act of selling frozen pork by disguising it as fresh pork through various methods can occur for the benefit of the difference in the sales price. However, there is some difficulty in securing systematic and objective data, as sensory tests are generally performed on imported pork. In the experiment conducted here, the electrical conductivity and dielectric properties of pork neck and pork belly products were measured. The amounts of change before and after freezing were compared through a statistical analysis, and a new method for determining frozen meat was proposed based on the analysis results. The weight was reduced compared to that before freezing due to the outflow of drips from the thawing process, but there was no difference in the drip loss level due to the thawing method. Vacuum packaging was found to lead to more drip loss than regular packaging, but the difference was not statistically significant. Frozen pork neck meat can be determined by measuring the electrical conductivity in the lean parts and the dielectric characteristic in the fatty parts. Frozen pork belly is determined by measuring the dielectric constant of the part closest to the outer fat layer.

쌀의 완전미 비율 증가가 식미에 미치는 영향 (Effect of Head Rice Ratio on Rice Palatability)

  • 불완전미가 식미에 미치는 영향을 알아보기 위하여 현미외 관별로 백미 품위를 구분하고 각각의 불완전미를 완전미와 혼입하여 근적외분광광도계를 이용하여 식미치를 검토한 결과는 다음과 같다. 가. 수확한 현미의 정상립은 $75.7\%$였으며, 불완전렵은 변색립이 $11.0\%$, 청미가 $8.0\%$, 그리고 사미가 $5.3\%$였다. 나. 정상립 현미에서 도정된 백미는 완전미가 $64.7\%$였으며, 동할미가 $25.3\%$, 심복백미가 $10\%$였으며, 변색립 현미는 정상립에서 도정된 백미외관과 큰 차이가 없는 것으로 나타났다. 청미는 완전미가 $36\%$, 심복백이 $64\%$였으며, 사미는 심복백미가 $25.3\%$, 유백미가 $74.7\%$였다. 다. 백미 품위에 따른 식미관련 특성 검정 결과, 동할미의 점도는 정상미와 차이가 없었으나 심복백미의 점도는 정상립 보다 약간 낮았고 유백미의 경우는 정상립의 $60\%$ 수준으로 감소하였다. 단백질 함량은 심복백미와 유백미가 정상립보다 다소 높게 나타났다. 라. 기계적 식미치는 불완전립 모두 정상립 보다 현저히 낮게 나타났다. 불완전미 중 유백미와 심복백미는 완전미에 $1\%$만 함유되어도 완전미 대비 약 $5\%$의 식미가 감소되었으며, $5\%$ 함유되었을 경우에는 완전미 식미에 비하여 유백미는 $20\%$, 심복백미는 $12\%$의 식미치가 감소되었다. 그러나 동할미의 경우는 $5\%$까지는 식미치에 크게 영향이 없었다. 오히려 잔디의 밀도가 감소되는 경향을 보였다. 초장의 경우 복비의 무처리시 거의 잔디의 초장이 신장하지 않았으며, 오히려 감소하는 경향을 보였다. 반면, 잔디의 피해지역에 복비를 처리할 경우 잔디의 빠른 생장이 이루어졌다. 신초 건물중은 복비 처리전 8월 6일에 비하여 11월 6일에 이스트밸리 LD지역의 무처리구가 $1.2\%$감소하였지만 처리구는 $50\%$정도가 증가하였다. 지산의 시험 결과도 이스트밸리와 유사하였다. 신초와 뿌리의 비율(S/R)은 처리구의 경우 뿌리보다 신초의 건물중이 더 증가하였지만, 무처리구의 경우 뿌리와 신초의 생장율이 거의 비슷하였다. 포복경과 지하경의 건물중을 합한 R&S의 건물중을 조사한 결과, 이스트밸리의 경우 복비를 처리하기 전 8월6일에 무처리구인 LD지역이 처리구인 LD지역에 비하여 $5.5\%$정도가 적었지만 복비를 처리한 후엔 오히려 처리구의 LD지역이 $48\%$로 증가하였다. 지산의 결과 역시 이스트밸리와 유사하였다. 4. 이상의 결과들로 알 수 있는 것은 수목 근부에 생장하고 있는 잔디의 피해 요인들은 여러 가지가 있지만, 골프장내 수목의 밀생 지역이 아닌 경우에는 광에 의한 피해보다는 오히려 양분과 수분의 경쟁에 의한 피해 발생 비율이 크다. 따라서 이들 잔디의 피해 지역에 복비를 처리함으로서 무처리 지역에 비하여 상당히 많은 효과를 보았기 때문에 수목 근부에서 생장하는 잔디의 집중관리 체계로 보다 효율적인 코스관리에 도움이 될 수 있을 것으로 기대된다.ting이 관찰되는데, 진성기업의 Stainless Steel은 가늘고 긴 압흔이 있으며 비교적 매끄러운 표면을 보이고, Unitek사의 경우 압흔과 함께 pitting 이 관찰되며, Ormco Stainless Steel의 경우 불규칙한 pitting이 다

비육돈의 출하체중 증가로 인한 도체등급 저하가 도체의 품질 특성, 등심 및 삼겹살의 이화학적 특성과 관능 품질 특성에 미치는 영향 (Effects of the Decreased Carcass Grade of Finishing Pigs due to Increasing Market Weight on Carcass Quality Traits and Physicochemical and Sensory Quality Characteristics of the Loin and Belly)

  • 본 연구는 과중량으로 인해 강등된 도체등급이 등심과 삼겹살의 육질 특성에 미치는 영향을 조사하기 위해 수행되었다. 85~150 kg 범위의 500두 출하돈의 도체로부터 평균 크기의 $1^+A$ 등급 도체 7개, A 등급 도체의 상한중량(95 kg)에 근접한 1A 등급 도체 7개, B 등급 도체의 상한중량(99 kg)에 근접한 1B 등급 도체 12개 및 100 kg 이상의 2C 등급 도체 각각 12개를 본 연구의 공시도체로 선발하였다. 근내지방도는 $1^+A$ 등급 도체가 다른 세 등급 도체보다 높았지만 근육과 지방의 색깔 및 조직감 관련 특성은 네 개의 도체등급간 차이가 없었다. 등심의 색깔, pH, 화학적 조성 및 조직감 관련 품질 특성은 도체등급 저하로 인해 단지 최소 수준만 변하였다. 등심 및 삼겹살 신선육에 대한 관능검사에서 이취는 도체등급의 영향을 받지 않았고, 수분삼출도는 $1^+A$ 등급 도체가 가장 낮았으며, 색깔과 근내지방도는 도체등급의 영향을 받지 않거나 최소한의 영향을 받았다. 그러나 이들 부위 신선육의 기호도는 도체등급간 차이가 없었다. 등심과 삼겹살 가열육에서는 맛과 기호도가 비록 구배는 낮았지만 도체등급이 저하될수록 저하되는 경향을 보였고 적어도 $1^+A$와 2C 등급간에는 유의적인 차이가 있었다. 결론적으로 과중량으로 인해 등급이 저하된 돼지 도체는 육질 또한 약간 저하되었는데 이는 즉 돼지 도체의 규격등급이 어느 정도는 육질도 반영함을 시사한다.
