타우린을 첨가한 제과제빵의 베이킹 특성과 섭취가 혈중 알코올 농도에 미치는 영향 (Baking Characteristics of Taurine Supplemented Bread and Cookies and Its Effect on Blood Alcohol Concentrations)

  • This study investigated the characteristics of baking bread and cookies supplemented with taurine and the effect of taurine addition on BAC(blood alcohol concentrations) and UAC(urine alcohol concentrations). Healthy male college students were divided into two groups, the control and the taurine group. Bread was baked with the addition of 0, 2, 4 and 6% taurine and baked with the addition 0, 3 and 6% taurine. The bread containing 2% taurine showed the fastest fermentation among the 4 groups. Fermentation and oven-spring of breads baked with a taurine concentration greater than 4% of taurine disturbed. In some areas of the sensory test, the taurine supplemented bread had higher scores than the control bread. We served 6 g of taurine supplemented cookies with 1,000 $m{\ell}$ of beer to 8 students in the taurine group. After 2 hours of drinking beer, the BAC and UAC of the taurine group were found to be lower than the control group. But no difference was found in the alcohol excretion of their urine. From this study we concluded that the taurine has an effect on the detoxication of alcohol, which reduces the BAC.

Influence of preserved brewing yeast strains on fermentation behavior and flocculation capacity

  • Preservation methods on the physiological and brewing technical characters in bottom and top brewing yeast strains were investigated. The preserved yeasts were reactivated after 24 months storage and grown up to stationary phase. The samples of filter paper storage indicated a higher cell growth and viability during propagation than those of nitrogen and lyophilization storage independent on propagation temperature. In addition, the filter paper storage demonstrated a faster absorption of free amino nitrogen and a highest level of higher aliphatic alcohols production during propagation than other preservation methods, which can be attributed to intensive cell growth during propagation. Moreover, the filter paper storage showed a faster accumulation for glycogen and trehalose during propagation, whereas, in particular, lyophilization storage noted a longer adaptation time regarding synthesis of glycogen and trehalose with delayed cell growth. In beer analysis, the filter paper storage formed an increased higher aliphatic alcohols than control. In conclusion, the preservation of filter paper affected positively on yeast growth, viability and beer quality independent on propagation temperature. In addition, in this study, it was obtained that the HICF and Helm-test can be involved as rapid methods for determination of flocculation capacity.

Effects of lactobacillus fermented brewer's yeast by-products on growth performance, innate immunity and antibacterial activity in Carp, Cyprinus carpio

  • This study was conducted to find out the effect of yeast by-products discarded after beer production as feed additives for carp (Cyprinus carpio). After producing feed by adding high-temperature dried beer yeast by-products (HD), freeze-dried beer yeast by-products (FD), and freeze-dried fermented beer yeast by-products (FF) after lactobacilli fermentation, innate immunity indicators, survival rates, and challenge experiments were evaluated. Both ACH50 and lysozyme activity were significantly increased (p<0.05) in the experimental group of FF 0.2% and 0.5% compared to the control group from day 7 to day 21. In addition, phagocyte activity was significantly increased (p<0.05) in the group of FF 0.5% compared to the control group at all time points. Both IL-1β and TNF-α expression levels increased significantly in the FD and FF groups on day 21 compared to the control group (p<0.05). In addition, the FF 0.5% group showed significantly higher expression levels (p<0.05) at all time points. Similarly, IL-10 expression increased significantly (p<0.05) in FF 0.2% and 0.5% groups at all time points. SOD gene expression was significantly increased in FD 0.5% and all FF groups on day 14 and 21 (p<0.05). The results of a 10-day challenge experiment using Edwardsiella piscicida (E. piscicida) showed a higher relative survival rate than the control group at all concentrations that fed FD and FF. In summary, it is estimated that 0.5% FF can effectively improve the innate immunity, growth rate, and antibacterial properties of carp rather than using discarded beer yeast supernatant alone as a functional feed additive.

Rare Mating에 의한 양초효모에서의 glucoamylase 발현 균주 HCS 선별 및 특성 (Characterization of Brewing Yeast Expressing Glucoamylase Selected by Rare Mating.)

  • S. cerevisiae HBC52와 S, diataticus K114 의 rare mating 에 의해 개발된 HCS 균주들은 크기가 약 $13\mu\textrm{m}$ karyotype 분석결과 K114 균주에만 있는 약 1150kb 분자량을 가지는 염색체 band를 유지하였으며 전분을 분해하여 halo 를 형성하였다. Glucoamylase 활성은 약 2.7~3.4 unti/ml 를 가진 균주임이 밝혀졌으며 당 발효실험과 응집성 실험을 수행한 결과 HBC52 균주와 유사한 당 발효특성을 보이고 응집성 특성도 약응집성의 floculation type으로 비슷하였다. 그리고 HCS 균주의 포자형성과 피막형성 유무 실험에서는 양조효모인 HBC52 균주와 같이 포자가 형성되지 않았으며, 피막도 형성되지않았다. 균주들의 최종당도 실험은 HBC52균주가 약 68%의 발효수준을 나타냈고, HCS 균주들은 이 보다 높은 76~78%의 수준을 보였따. 즉 HBC52 균주가 최종당도($ 2.00^{\circ}$P)를 보인 반면 HCS 균주들은 ($0.7~0.93^{\circ}$P)를 보이는 결괄르 나타내어 맥주양조에서 low carbohydrate beer를 생산할 수있음이 확인되었다.

쌀가루 혼합맥주의 양조특성 및 조건 설정연구 (Brewing Characteristics and Condition Setting of Beer Using Rice Flour)

  • 본 연구는 2017년 8월부터 2018년 5월까지 수행되었으며 쌀맥주에 적합한 쌀의 첨가비율과 담금공정 및 맥주 타입을 선정하기 위한 기초자료를 확보하고자 쌀 첨가 비율 및 맥주 타입을 달리하여 맥주를 제조하고 품질특성을 비교 분석하였다. 쌀과 맥아의 비율을 0:100(S0), 20:80(S1), 40:60(S2), 60:40(S3), 80:20(S4)로 구분하여 액화, 당화 등 담금 공정상의 특성을 확인하였으며, 담금 시 승온방식과 자비방식에 대한 특성 비교와, 맥주 타입별(라거, 에일, 밀맥주)로 효모(하면 및 상면효모)를 달리 사용하여 특성을 연구하였다. 담금 시 특성을 파악한 결과, 쌀 첨가비율을 달리하여도 정상적인 담금시간을 보였으며 요오드 테스트도 정상으로 확인되었고, 1차 맥즙의 당도가 $21.0{\sim}21.6^{\circ}Brix$로 정상적인 당화가 이루어졌다. 담금방식은 3단 자비 방식에서 맥즙의 농도, 색도 및 향미가 가장 높게 나타났다. 맥주의 발효기간 중 당도, pH, 효모 수는 쌀과 맥아의 비율이나 효모 종류에 따른 차이가 크지 않았으며 발효도는 정상적인 범주에 든 것으로 나타났다. 고급알코올과 에스터 역시 쌀과 맥아의 비율과는 큰 상관이 없으며 밀맥주가 다소 높은 것으로 나타났다. 쌀 비율이 높을수록 색도(EBC)는 현저히 감소하였고, 고미가(BU)도 감소하였으며 기호도가 낮아졌다. 특히 쌀비율이 맥아비율보다 높을 때 기호도는 많이 떨어졌다. 본 연구의 결과를 기초로 쌀비율을 맥아비율보다 적게 하고 자비방식을 이용하여 맥즙의 향미를 증진시키고, 추후 맥주 타입별로 특수맥아의 활용과 다양한 홉을 사용하여 향미를 보완한다면 고품질의 경쟁력 있는 쌀맥주를 제조하는데 도움이 될 수 있으리라 판단된다.

Application of Saccharomyces rouxii for the Production of Non-alcoholic Beer

  • Successive application of Saccharomyces cerevisiae DSM 70424 and Saccharomyces rouxii DSM 2535 or DSM 2531 in the production of non-alcoholic beer was investigated. The aim of the study was to consider the impact of the 2 mentioned strains of S. rouxii on the reduction of alcohol content in wort fermented at 12 or $24^{\circ}C$ for 96 hr, applying periodic aeration. The 2 S. rouxii strains were added at the $48^{th}$ hr of fermentation after thermal inactivation of S. cerevisiae cells. The greatest alcohol decrease rate was observed for the treatment containing S. rouxii DSM 2535-fermented at $24^{\circ}C$ (from 1.56 to 0.36%). The concentration of acetaldehyde, diacetyl, and 2,3-pentandione, that have a key role in appearance of 'wort' and 'buttery' off flavors, were significantly lower in S. rouxii-containing treatments fermented at $24^{\circ}C$. S. rouxii-containing treatment fermented at $24^{\circ}C$ showed slightly lower overall flavor acceptability compared to S. cerevisiae-containing treatment fermented at the same temperature. Such score was improved for the products obtained at $12^{\circ}C$.

Manipulation of Rumen Fermentation by Yeast: The Effects of Dried Beer Yeast on the In vitro Degradability of Forages and Methane Production

  • The effects of the addition of yeast on in vitro roughage degradability and methane production were investigated in order to clarify the effects of yeast on the rumen microbes and to establish methods of rumen manipulation. Three roughages (whole crop corn, rice straw and Italian ryegrass) were incubated for 3, 6, 12 and 24 h with or without dried beer yeast following the method described by Tilley and Terry. Using the same method, these roughages were incubated with or without yeast extract, albumin or purified DNA. In vitro methane production was measured with or without dried beer yeast at 12 and 24 h. The degradability of yeast was found to be 57 and 80% at 12 and 24 h, respectively. The rate of degradation of fraction b was 6.16%/h. There was a significant increase in roughage degradability at 6 h (p<0.05), 12 h (p<0.05) and 24 h (p<0.01) by dried yeast addition. The degradability of all three roughages was higher in the samples treated with yeast extract than in the no addition samples except in the case of rice straw incubated for 12 h. Nevertheless, the magnitude of increment was smaller with the addition of yeast extract than without the addition of yeast. With the addition of purified DNA, there were significant increases in roughage degradability at 6 h (p<0.01), 12 h (p<0.01) and 24 h (p<0.05); however, higher degradability values were detected in the samples to which albumin was added, particularly at 6 h. If the degradability values of the no addition samples with those of samples containing yeast, yeast extract, DNA and albumin were compared, the largest difference was found in the samples to which yeast was added, although it is worth noting that higher values were observed in the yeast extract samples than in the DNA or albumin samples, with the exception of the case of rice straw incubated for 24 h. Methane production was significantly increased at both 12 and 24 h incubation. The increment of roughage degradation and methane production brought about by the addition of dried beer yeast to the samples was thought to be due to the activation of rumen microbes. Water soluble fraction of yeast also seemed to play a role in ruminal microbe activation. The increment of degradability is thought to be partially due to the addition of crude protein or nucleic acid but it is expected that other factors play a greater role. And those factors may responsible for the different effects of individual yeast on ruminal microbes.

Increased Production of γ-Aminobutyric Acid from Brewer's Spent Grain through Bacillus Fermentation

  • Brewer's spent grain (BSG) is a waste product of the beer industry, and γ-aminobutyric acid (GABA) is a physiologically active substance important for brain and neuron physiology. In this study, we used the bacterial strains Bacillus velezensis DMB06 and B. licheniformis 0DA23-1, respectively, to ferment BSG and produce GABA. The GABA biosynthesis pathways were identified through genomic analysis of the genomes of both strains. We then inoculated the strains into BSG to determine changes in pH, acidity, reducing sugar content, amino-type nitrogen content, and GABA production, which was approximately doubled in BSG inoculated with Bacillus compared to that in uninoculated BSG; however, no significant difference was observed in GABA production between the two bacterial strains. These results provide the experimental basis for expanding the use of BSG by demonstrating the potential gain in increasing GABA production from a waste resource.

  • 본 연구에서는 바이오에탄올 가격 경쟁력 확보를 위하여 옥수수 및 사탕수수와 같은 식량자원이 아닌 맥주 제조 후 발생되는 폐기물로부터 바이오에탄올을 제조함으로써 기존의 바이오에탄올의 원료로 사용되는 작물의 수급의 불안정 및 곡물가격의 상승에 의한 원료의 가격상승 등에 따른 높은 생산단가에 대한 문제점을 해결할 수 있을 것으로 기대하며, 맥주발효 폐효모액을 이용한 바이오에탄올 제조 특성을 살펴보기 위하여 1일 30톤의 바이오에탄올 제조 공정 해석을 수행하였다.

Exposure Assessment of Ethyl Carbamate in Alcoholic Beverages

  • Ethyl carbamate, a by-product produced naturally during fermentation and contained in fermented foods and beverages, is a carcinogen. Thus, due to the high consumption of alcoholic beverages in Korea, the ethyl carbamate concentrations in popular alcoholic beverages were determined, and the daily intake of ethyl carbamate through alcoholic beverages was estimated. The major Korean alcoholic beverages, Soju, beer, and Takju, with the highest market share were sampled and their ethyl carbamate concentrations determined by GC/MS/SIM. The ranges of ethyl carbamate contained in Soju, beer, and Takju was 0.83-10.07, 0.45-0.77, and 0.40-0.93 ppb, respectively. These results and data on the average daily intake of alcoholic beverages were then used to calculate the average and maximum estimated daily intakes (EDI) of ethyl carbamate through alcoholic beverages. As a result, a relatively high EDI of ethyl carbamate through alcoholic beverages was found for Korean males over 30 years old, indicating the need to reduce the ethyl carbamate content in alcoholic beverages.
