Effect of Broussonetia papyrifera L. silage on blood biochemical parameters, growth performance, meat amino acids and fatty acids compositions in beef cattle

  • Objective: The study was conducted to investigate the effects of Broussonetia papyrifera L. (B. papyrifera) silage on growth performance, serum biochemical parameters, meat quality, and meat amino acids and fatty acids compositions in beef cattle. Methods: Sixty-four male Angus beef cattle were assigned to 4 groups with 4 pens in each group and 4 beef cattle in each pen, and fed with the total mixed ration supplemented with 0%, 5%, 10%, or 15% B. papyrifera silage for 100 days (control group, 5% group, 10% group and 15% group) separately. Results: Beef cattle had significantly higher final body weight (BW) in 15% group, higher average daily gain (ADG) and dry matter intake (DMI) in 5% group, 10% group and 15% group, and higher feed conversion ratio (FCR) in 10% group and 15% group. Significantly higher blood superoxide dismutase (SOD) concentration was noted in 15% group, higher blood total antioxidant capacity (TAC) in 10% group and 15% group, lower 8-hydroxydeoxyguanosine (8-OHdG) and malondialdehyde (MDA) in 15% group. Meat had lower pH in 15% group, higher Commission International DeI'Eclairage (CIE) L in 5% group, 10% group, and 15% group, and lower drip loss in 15% group. Greater concentration of meat polyunsaturated fatty acids (PUFA) was observed in 10% group and 15% group, and docosahexaenoic acid (DHA) in 15% group. Conclusion: Diet with 15% B. papyrifera silage could improve performance and increase final BW, ADG, DMI, and FCR, enhance the antioxidant functions by decreasing blood 8-OHdG and MDA and increasing blood SOD and TAC, improve the meat quality by lowing pH and drip loss and increasing CIE L, increase the meat PUFA and DHA concentration. Polyphenols and flavonoids might be the main components responsible for the antioxidant activity and anti-biohydrogenation in the B. papyrifera silage. And B. papyrifera silage could be used as a new feedstuff in beef cattle nutrition.

비육전 방목 및 옥내사육한 한우육의 품질 비교 (Quality Comparison of Beef from Outdoor-Reared before Finishing and Indoor-Reared Hanwoo)

  • 본 연구는 비육기 이전에 초지에서 방목한 한우육과 옥내에서 비육한 한우육의 품질을 비교하고자 실시하였다. 방목사육구는 $28{\pm}4$개월령 암소 5두를 7개월 동안(4월-11월)방목한 다음 다시 6개월 동안 옥내에서 비육하였으며, 옥내사육구는 6개월령 거세우 10두를 24개월 동안 옥내에서 비육하였다. 시료로 등심(M. longissimus)부위를 채취하여 $4{\pm}0.2^{\circ}C$에서 7일 동안 저장하였다. 도체성적은 방목우의 도체중, 지육율, 배최장근단면적 및 육질등급이 옥내사육우보다 낮았으나(p<0.05), 조직감 및 성숙도는 방목우가 높았다(p<0.05). 조지방 및 n-6 지방산, n-6/n-3은 방목우가 낮았으나(p<0.05), n-3 지방산, 포화지방산은 방목우가 높았다(p<0.05). pH 및 보수력은 방목우가 낮았으며(p<0.05), 전자코에 의한 향기패턴은 두 처리구들간에 뚜렷한 차이를 보였다. 저장중 품질은 방목우의 지방 및 육색소 산화안정성이 낮았으며, 옥내사육 우보다 어둡고 덜 붉은 육색을 나타내었다.

저온 유통 용기에 따른 소고기의 저장 중 품질평가 (Quality characteristics of fresh beef during storage using cold chain containers)

  • 개발한 수배송용기[TEPP-1(250 L), TEPP-2(50 L)]와 기존의 사용되고 있는 스티로폼(EPS) 박스에 소고기를 저장하면서 저장 중 품질특성을 조사하였다. 잠열재, 용기내부, 샘플중심의 온도변화 측정에서 저장기간 동안 수배송용기 TEPP-1가 설정온도 $5^{\circ}C$로 온도유지가 잘 되는 것으로 측정되었고, pH변화 또한 유의적으로 큰 변화 없이 유지하는 경향을 보였다. 소고기 구매에 영향을 주는 색변화는 TEPP-1에 저장 시 가장 적었고, VBN은 저장 7일에 8.39 mg%로 유의적으로 가장 적은 증가율을 나타내었고, TBA역시 TEPP-2보다 적게 증가하는 것으로 측정되었다. 육즙 손실은 저장 7일에 TEPP-1은 0.87%로 큰 변화가 발생하지 않은 반면 TEPP-2는 1.78% 육즙 손실을 나타내었고, 미생물의 변화는 저장 4일까지 두 수 배송용기의 유의적 차이는 없었으나 저장 7일에 TEPP-1 6.65 log CFU/mL, TEPP-2는 7.62 log CFU/mL로 증식하여 유의적 차이를 나타내었다. 기호도 조사 또한 저장 7일째 TEPP-1은 대부분의 항목에서 6.5점 이상의 평가를 받았지만 TEPP-2는 3점 이하의 평가를 받아 소고기가 부패되어 상품성이 상실된 것으로 판단되었다. EPS 박스는 저장 3일 이후 더 이상 실험이 불가능하였고, 모든 분석항목에서 TEPP-1(250 L) 수 배송용기가 TEPP-2(50 L)보다 소고기 신선도 유지에 효과적인 것으로 측정되었고, 저장 7일까지 소고기의 신선도 유지가 가능한 것으로 판단된다.

Farm to abattoir conditions, animal factors and their subsequent effects on cattle behavioural responses and beef quality - A review

  • The current review seeks to highlight the concerns that have been raised on pre-slaughter stress, contributing factors and its consequent effects on cattle behavioural responses and the quality of beef; inter-linking the activities involved from birth to slaughter. Such information is crucial in light of the consumer concerns on overall animal welfare, quality of meat and food security. Slaughter animals are exposed to different conditions during production and transportation to abattoirs on a daily basis. However; the majority of studies that have been done previously singled out different environments in the meat production chain, while conclusions have been made that the welfare of slaughter animals and the quality of meat harvested from them is dependent on the whole chain. Behaviour is a critical component used to evaluate the animals' wellbeing and it has been reported to have an effect on product quality. Apart from the influence of on-farm, transportation and abattoir conditions, the genetic background of the animal also affects how it perceives and responds to certain encounters. Stress activates the animals' hypothalamic-pituitary-adrenal activity, triggering release of various stress hormones such as catecholamines and cortisol, thus glycogen depletion prior slaughter, elevated ultimate pH and poor muscle-meat conversion. Pre-slaughter stress sometimes results to cattle attaining bruises, resulting to the affected parts of the carcass being trimmed and condemned for human consumption, downgrading of the carcass and thus profit losses.

Meat Quality Traits of Longissimus dorsi Muscle from Carcasses of Hanwoo Steers at Different Yield Grades

  • The strategy for increasing the palatability of Hanwoo beef through fattening could lead to a decline in yield grade. The aim of this study was to examine the meat quality traits of Longissimus dorsi (LD) muscle from carcasses of Hanwoo steers at different yield grades. A total of 246 Hanwoo steers was divided into the following yield grades: A (n=77), B (n=76) and C (n=93). Meat quality traits, including proximate composition, cholesterol content, nucleotide content, dipeptide content, creatine and creatinine, free amino acid content, fatty acid composition, instrumental meat color, pH, water holding capacity, drip loss, cooking loss, and sensory qualities of the LD muscle from the 3 yield grades of Hanwoo carcasses were measured. The decline in yield grade from A to C resulted in an increase in crude fat and cholesterol content as well as a decrease in inosine 5'-monophosphate and aspartic acid in the LD muscle (p<0.05). In terms of fatty acid composition, the LD muscle from yield grade A had higher SFA and PUFA and lower MUFA content than that from yield grade C (p<0.05). However, the ratio of PUFA/SFA and n-6/n-3 did not differ among LD muscles from the 3 yield grades. There were no significant differences among other meat quality traits in relation to the yield grade. In conclusion, we suggest that the changes of substances related with health and flavor can be considered in order to obtain better quality Hanwoo beef.

Meat Quality Traits of Longissimus Muscle of Hanwoo Steers as a Function of Interaction between Slaughter Endpoint and Chiller Ageing

  • Carcass characteristics and meat quality traits as a function of endpoint months of slaughter age (26 vs 32 mon) and chiller ageing (1 vs 10 d) were evaluated for m. longissmus of 26 Hanwoo steers fed with commercial diets including whole crop barley silage. Totally twenty six Hanwoo steers for 6 mon of age that were fed until 26 mon of age constituted the short term-fed group and fed until 32 mon of age constituted long-term fed group. Carcasses were chilled for 24 h and were graded. Strip loin samples were divided into two age groups (1 d and 10 d). Long-term feeding increased carcass weight, rib-eye area, yield grade, marbling score, firmness and quality grade of the meat. The feeding for 32 mon produced tender, juicy meat (p<0.01) with lower cooking loss and higher rating score (p<0.05) than short term feeding, while other quality traits were not influenced by the length of feeding. Intramuscular fat content and oxidative stability (TBARS value) were significantly (p<0.05) higher in beef from long-term feeding however the length of feeding did not alter the fatty acid composition. Chiller aging reduced instrumental tenderness (WBSF value), improved color, sensory tenderness, acceptability and rating of beef. The results of the present study mirrors that Hanwoo steers until 32 mon of age overall improved carcass traits and palatability compared to that for 26 mon. However, from the viewpoints of economical and environmental aspects, cost of the additional feeding for 6 mon for value-adding of eating quality was relatively high and the effects in turn were limited.

Genome-wide association studies on collagen contents trait for meat quality in Hanwoo

  • Beef consumers valued meat quality traits such as texture, tenderness, juiciness, flavor, and meat color that determining consumers' purchasing decision. Most research on meat quality has focused on marbling, a key characteristic related to meat eating quality. However, other important traits such as meat texture, tenderness, and color have not much studied in cattle. Among these traits, meat tenderness and texture of cattle are among the most important factors affecting quality evaluation of consumers. Collagen is the main component of connective tissues.It greatly affects meat tenderness. The objective of this study was to determine significant variants and candidate genes associated with collagen contents trait (total collagen) through genome-wide association studies (GWAS). Phenotypic and genomic data from 135 Hanwoo were used. The BLUPF90 family program and GRAMMAR method for GWAS were applied in this study. A total of 73 potential single nucleotide polymorphisms (SNPs) showed significant associations with collagen content. They were located in or near 108 candidate genes. TMEM135 and ME3 genes were identified to have the most significant SNPs associated with collagen contents trait. Data indicated that these genes were related to collagen. Biological processes and pathways for the prediction of biological functions of candidate genes were confirmed. We found that candidate genes were involved in positive regulation of CREB transcription factor activity and actin cytoskeleton related to tenderness and texture of beef. Three genes (CRTC3, MYO1C and MYLK4) belonging to these biological functions were related to tenderness. These results provide a basis for improving genomic characteristics of Hanwoo for the production of tender beef. Furthermore, they could be used they could be used as an index to select desired traits for consumers.

냉장한 제주흑우육, 한우육 및 호주산 수입우육의 품질 특성 비교 (Comparison of Quality Characteristics among Chilled Loins Obtained from Jeju Black Cattle, Hanwoo and Imported Australian Beef)

  • 냉장한 제주흑우육, 한우육 및 호주산 수입우육의 품질 특성을 비교하였다. 영양적 특성에서, 제주흑우육의 수분은 65.91%, 조단백질은 17.39%로 가장 낮고 조지방은 15.89%, 조회분은 0.79%로 가장 높게 나타났으며, 조회분은 유의적 차이를 보이고 나머지는 모두 시료 간에 유의적 차이가 없었다. 제주흑우육은 철과 아연 함량이 각각 29.85 및 48.13 ppm으로 한우육보다 낮았으나 유의적 차이가 아니고 호주산 우육보다 많게 나타났으며(p<0.05), 칼슘, 인, 나트륨 및 구리의 함량은 시료 간 유의적 차이가 없는 것으로 분석되었다. 제주흑우육은 아미노산 총량과 필수 아미노산 함량이 각각 16.81 및 9.08%로 다른 시료에 비해 가장 낮았으나 시료 간에 유의적 차이가 나타나지 않았으며, 총아미노산에 대한 필수아미노산의 비율은 54.01%로 가장 높게 나타났다. 제주흑우육은 포화지방산 총량(43.25%), stearic acid(13.51%), linoleic acid(2.39%) 및 필수지방산(2.47%) 함량이 가장 낮은 반면 불포화지방산 총량(56.69%), 단가불포화지방산인 oleic acid 함량(47.80%) 및 MUFA/SFA 비율이 높게 나타나서 호주산 우육에 비해 유의적 차이가 있었다. PUFA/SFA 비율은 시료 간에 유의적 차이가 없었다. 물리화학적 특성에서, 제주흑우육은 적색도($a^*$)가 높고 융점이 가장 낮게 나타났으며(p<0.05), 명도($L^*$)와 황색도($b^*$), pH, 보수력, 가열 감량 및 전단력은 시료 간에 유의적 차이가 없었다. 관능평가 결과에서, 제주흑우육은 생육의 향, 가열육 향 및 기호도가 가장 우수하여 호주산 우육에 비교하면 유의성이 인정되었다(p<0.05). 그러나 가열육의 맛, 다즙성 및 연도는 시료 간에 유의적 차이가 나타나지 않았다.

저장온도에 따른 쇠고기 근원섬유의 형태적, 효소적 성질 변화 (Changes in Morphologic and Enzymatic Properties of Beef Myofibrillar Protein by Storage Tmeperature)

  • 쇠고기의 사태, 갈비 및 등심부위를 8$^{\circ}C$에 저장하면서 육질의 변화를 검토하기 위해 전단력가, 근원섬유의 소편화, actomyosin의 추출성 및 ATPase 활성을 측정하였다. 사태 및 등심부위의 전단력가는 저장 6일째 현저하게 낮아졌고, 갈비부위는 저장기간 동안 현저한 차이가 없었다. 저장초기 부위별 전단력가는 갈비, 등심 및 사태부위의 순으로 현저한 차이가 있었으나 저장기간이 경과하면서 갈비 및 등심부위는 비슷하였다. 근원 섬유 소편화도의 경우 사태부위는 저장 6일째 현저한 증가를 보였지만 갈비와 등심부위는 저장기간동안 계속 증가하였다. 근원섬유의 소편화율도 소편화도와 비슷한 양상이었으며, 갈비와 등심부위는 사태부위와 다른 변화를 보였다. Actomyosin의 추출성은 저장초기 갈비, 등심 및 사태부위의 순으로 높게 나타났으며 3일째 모든 부위가 증가하다가 등심부위는 저장 6일째 감소하였다. Acomyosin의 Mg2+-ATPase 활성의 경우, 사태부위는 저장 3일째 증가하다가 6일째 저장 0일의 수준으로 회복되었고, 갈비 및 등심부위는 비슷한 변화를 나타내었지만 0일째는 등심부위가 갈비부위보다 높게 나타났다. 그리고 사태부위의 Ca2+-ATPase 활성도 저장 3일째 증가하다가 6일째 감소하였으며, 갈비부위는 저장 중 변화가 없었고, 등심부위는 저장기간 동안 완만하게 감소하였다.

소고기 육색 등급 자동 판정을 위한 기계시각 시스템의 칼라 보정 및 정량화 (Quantization and Calibration of Color Information From Machine Vision System for Beef Color Grading)

  • This study was conducted to evaluate beef using a color machine vision system. The machine vision system has an advantage to measure larger area than a colorimeter and also could measure other quality factors like distribution of fats. However, the machine vision measurement is affected by system components. To measure the beef color with the machine vision system, the effect of color balancing control was tested and calibration model was developed. Neural network for color calibration which learned reference color patches showed a high correlation with colorimeter in L*a*b* coordinates and had an adaptability at various measurement environments. The trained network showed a very high correlation with the colorimeter when measuring beef color.
