Effect of Hanwoo Diets Containing Linseed on Plasma Cholesterol Levels of Humans to Beef Consumption and Change in n-6/n-3 Fatty Acid of Loin Fat (아마씨앗 첨가 한우사료가 등심 지방의 n-6/n-3 변화 및 이를 섭취한 사람의 혈중 콜레스테롤 함량에 미치는 영향)

  • The purpose of this study was to evaluate the effect on lowering blood LDL-C in an adult human, by taking n-6/n-3 balanced Hanwoo beef and reducing n-6/n-3 in loin of Hanwoo beef. The randomized complete block design was used to conduct an experiment with a total of 20 castrated Hanwoo cattles, which were divided into two groups. Each group had 10 cattles, and the control group consisted of absence of linseed, while n-3 treatment group (n-3 group) had linseed. The results showed that n-6/n-3 in loin and blood was decreased to under 4:1 in n-3 group, while oleic acid as an monounsaturated fatty acid was increased by 52.79% compared to the control group. In above 70% of the clinical subjects who ate the balanced Hanwoo beef, the blood triglyceride, total cholesterol, and LDL-C were decreased by 25.35, 5.22, and 17.59%. However, in the subjects who ate the imported beef, and not the common Hanwoo beef, the same parameters were increased by 9.05, 8.21, and 21.70%, respectively. When the balanced Hanwoo beef were eaten, HDL-C were increased by 6.07% but the imported beef and common Hanwoo beef had those values decreased by 14.46 and 11.46%, respectively. The blood glucose was decreased by 6.42 and 11.82% in the subjects who ate balanced Hanwoo beef and common Hanwoo beef, respectively but the subjects who ate the imported beef had an increase by 15.19%.

A study on the Dining-out preference and behavior of consumers for the chilled meat consumption strategy in Seoul-Kyunggi Area (냉장육 소비전력을 위한 소비자 외식 기호도 연구 -서울, 경기지역을 중심으로-)

  • This study was conducted to investigate the consumers' Dining-out preference and behavior for the chilled meat consumption strategy . A total of 328 persons in Seoul, Kyunggi areas were selected by stratified random sampling method and were responded to this study questionnaire which was composed of six parts with 65 statements about chilled meat consumption. 1. The frequency of Dining-out is characterized that 'once a month' is the highest pattern of consumers(46.3%) : In that cases, the married people showed 'once a month'(52.7%) and 'once biweekly'(23.3%), but the unmarried people showed the more frequent pattern as 'once a week'(27.3%) and 'twice a week'(27.3%). And the frequency of Dining-out in relation with the education level revealed that 'the graduate people' are the highest (37.5%). 2. Generally the first food for the Dining-out is 'Kalbi'(26.2%), and the others were 'pork grilling','chilled meat grilling','fish sasimi','chinese foods','pizza' etc.... But there were some variation in relation with incomes and housing types: For the agriculture/physical labor class, they prefers the 'pork griling'(25.0%), the office work class prefers the 'Kalbi' For the house-owner group, they prefers the 'Kalbi', but the house-renting/lodging group, they prefer the 'chinese food' or 'pork grilling' etc.... 3. In choosing the Dining-out place,'quality of food'(54.3%) and 'hygiene'(21.0%) were rated as the first important factor. 4.'Soups', 'Noodles' and 'Cooked rice in casserole' were chosen as good lunch menu : for male, they prefer the 'Soups', but females prefer 'Cooked rice in casserole'. 5. People with commercials/services(44.7%) and agriculture/physical labor(50.0%) ate their lunch in private restaurant, but peoples in the office work(57.0%)/public service personnel(70.4%) and industry use refectory; and it showed significant difference. 6. Consumers prefer the chilled meat as a Dining-out menu, but they didn't recognize the difference between chilled meat and frozen meat 7. For Dining-out menu, many people proper the beef, but the price of beef was so high than pork, agriculture/physical labor class choose the pork grilling instead of beef : commercials/services/office worker prefer the beef chilled meat . 8. The first admirable cooking method for chilled meat is direct radiation grilling with charcoal and many of consumers prefer tender, marbling, some chewy and juicy, flavor, soft as a quality of meat but physical labor class prefer the some tough and chewy texture.

Effects of $\gamma$-Irradiated Beef Feeding on Preneoplastic Hepatic Lesion, Cytochrome P450 System and Microsome Glucose 6-Phosphatase Activity in Rat Hepatocarcinogenesis (실험적 간 발암모델에서 감마선 조사 쇠고기 섭취가 전암성병변의 생성, 약물대사 효소계 및 소포체 막 안정성에 미치는 영향)

  • This study was done to investigate effects of ${\gamma}$ irradiated beef feeding on the formation of gluta thione S transferase placental form positive(GST P+) foci, lipid peroxidation, cytochrome P450 system and microsomal glucose 6 phosphate activity in diethylnitrosamine(DEN) initiated rat hepatocarci nogenesis. Weaning Sprague Dawley male rats were fed the diet containing ${\gamma}$ irradiatied ground beef at the dose of 0, 3, 5kGy as a 20% of protein source for 8 weeks. One week after feeding, rats were intraperitoneally injected twice with a dose of DEN(50mg/kg BW). As a promoter, 0.05% phenobarbital was fed in drinking water from one week after DEN treatment until the end of experiment. At the end of 8th week, rats were sacrificed and hepatic GST P+ foci, microsomal malondialdehyde(MDA) and conjugated diene contents were determined. In addition, cytochrome P450 content and the activities of NADPH cytochrome P450 reductase and glucose 6 phosphatase were also measured. There was no significant effect by gamma irradiation on microsomal MDA content, conjugated diene, cytochrome P450 content and activities of NADPH cytochrome P450 reductase and glucose 6 phosphatase. However with DEN treatment, microsomal MDA content and conjugated diene contents were significantly changed. Cytochrome P450 content was also significantly increased while microsomal glucose 6 phophatase activity was significantly decreased with DEN treatment. However activity of NADPH cytochrome P450 reductase was not affected. An interesting finding in this study was that the number and area of hepatic GST P+ foci of the rats fed gamma irradiated beef were significantly(p<0.05) lower than those of the control. Such a lowering effect on GST P+ foci formation was highest at the dose of 3kGy than others. Overall results suggest that the consumption of low dose of gamma irradiated beef does not affect the formation of lipid peroxide, cytochrome P450 system and membrane stability.

Dietary rambutan peel powder as a rumen modifier in beef cattle

  • Objective: The experiment was conducted to study the effect of rambutan (Nephelium lappaceum) fruit peel powder (RP) on feed consumption, digestibility of nutrients, ruminal fermentation dynamics and microbial population in Thai breed cattle. Methods: Four, 2-year old (250±15 kg) beef bull crossbreds (75% Brahman×25% local breed) were allotted to experimental treatments using a 4×4 Latin square design. Four dietary supplementation treatments were imposed; non-supplementation (control, T1); supplementation of RP fed at 2% of dry matter intake (DMI) (low, T2); supplementation of RP fed at 4% of DMI (medium, T3) and supplementation of RP fed at 6% of DMI (high, T4). All cattle were given a concentrate supplement at 1% of body weight while Napier grass was provided as a free choice. Results: The findings revealed that RP supplementation did not negatively affect (p>0.05) DMI of Napier grass, while RP intake and total DMI were the greatest in the RP supplementation at 4% and 6% DMI. Nevertheless, the nutrients (dry matter, organic matter, crude protein, neutral detergent fiber, and acid detergent fiber) digestibilities were not changed in the RP supplementation groups. Rumen fermentation parameters especially those of total volatile fatty acids, acetate and butyrate were not significantly changed. However, the propionate concentration was remarkably increased (p<0.05) in the RP supplementation. Notably, the ratio of acetate to propionate, the number of protozoa, as well as the methane estimation were significantly reduced in the RP supplemented groups (4% and 6% of DMI), while the counts of bacteria was not altered. Conclusion: Supplementation of RP (4% of DMI) improved rumen propionate production, reduced protozoal population and methane estimation (p<0.05) without a negative effect on feed consumption and nutrients total tract digestibilities in beef cattle. Using dietary rambutan fruit peel powder has potential promise as a rumen regulator.

IDENTIFICATION OF THE PREFERENCE PATTERNS OF DIFFERENT BREEDS OF SHEEP FOR CONSUMPTION IN SAUDI ARABIA

  • Mutton was the meat of choice among the Saudi Arabian citizens in Riyadh Metropolitan area, 1986-1987, followed by chicken, camel meat, fish and beef. The desirable taste of mutton that represented 68% of the total respondents was the main reason for its preference to other meats. The study also showed that Najdi sheep, which is the predominant local breed, enjoy a priority in its meat consumption among the other indigenous and exogenous breeds of sheep in the central region of the Kingdom. A loyalty to the Najdi sheep was witnessed even when the unit price was assumed to be doubled. Purchasing Najdi sheep for non-family consumption had dropped, although still ranked first among the breeds of sheep readily available in the local markets. The results also showed that, 41% of the sample individuals purchased at least one sheep per family per month, and more consumption of mutton took place during the winter months than during the summer.

The Perception and the Consumption Behavior for the Meats in Koreans (한국인의 육류음식에 관한 의식구조 및 이용행동)

  • This study was undertaken to investigate the perception and the consumption behavior for the meats in Koreans. The subjects were 491 Koreans including the ones residing in New Zealand. Most of subjects answered the meats are used for supper time. The frequency of the meats intake was affected by education and monthly income level. 69.2% of the subjects had positive response such as increased stamina and fulled stomach for psychological state after the meats intake. The use of meats recently revealed that 48% of the subjects have decreased its consumption. The main reasons diminished the use of meats were for the good health and economic state. Women were found to avoid the meats fat to a greater degree than men. The kinds of the meat used frequently were beef, pork and chicken. The younger tended to higher the frequency of the processed meats intake than the older. According to 3 level of BMI of the subjects, there were significant differences in the amount of the meat intake and perception for necessity of the meat. This study showed that the higher the preference for meat, the education and the monthly income level, the more the meat intake frequency. There were not significant differences between Koreans residing in domestic and New Zealand except the dog meat in the perception and consumption of the meat.

A Study on the Characteristics of Purchasing Propensity by Preferences Quality Grade of Hanwoo Beef (한우고기 육질등급 선호도에 따른 구매성향 특성 분석연구)

  • Beef consumption trends are changing according to consumer needs and preferences. This study was conducted to collect the fundamental information by investigating the consumer's preference and purchase propensity of beef(Hanwoo beef) for improvement of Korean beef grading system. Consumers were recruited from Seoul, Gyeonggi-do, and 5 metropolitan cities, and surveyed from July 24 ~ August 14, 2017. The data obtained from 362 consumers were finally selected for the verification process. Results from the Hierarchical Regression Analysis reveal that the increased purchasing frequency is positively correlated with the following factors, in the consumer group showing preference in the Quality Grade (QG) of beef: marbling type 1QG, fat color 1+QG, and income, grade opinion, marbling contents and type 1++QG. Conversely, no factor affected the increased purchasing frequency in the consumer group having no preferred QG for beef (p>0.05). Our study determined significant differences in the factors affecting increased purchase frequency of beef among the different groups, classified depending on their preferred QG. The grading system is important since it directly correlates with profit for livestock farmers and the industry. We therefore propose that the grading criteria need to be revised reasonably but scientifically, considering various opinions of the producers and consumers.

Utilization of Oil Palm Frond - Based Diets for Beef and Dairy Production in Malaysia

  • Oil palm fronds (OPF) are one of the main by-products of the oil palm industry in Malaysia. It contains about 38.5 % crude fibre with ME values of about 5.65 MJ/kg dry matter. OPF has great potential to be utilized as a roughage source or as a component in a complete feed for ruminant animals. This paper briefly reviews the availability of OPF in Malaysia and its importance in the local beef and dairy industry. About 26 million metric tonnes of OPF are produced on dry matter basis annually during pruning and replanting operations in the plantations. The nutritive value of OPF and studies to improve its feeding value is highlighted. The optimum level of inclusion for ruminant feeding is 30 % and improvement to intake and digestibility can be further enhanced with addition of other oil-palm by-products. Performances of beef and dairy cattle fed fresh OPF or as silage, pellets and cubes are shown. Good quality OPF silage can be produced without using any additive and the significant improvement on the rate of growth and milk yield were shown. With good formulations, OPF based diets can allow live weight gains of between 600-850 g/day and for local crossbred dairy animals, milk yield of about 11.1 to 20.3 liter/day can be obtained. Pellet based on ground OPF seemed to be less well utilized for ruminant feeding due to its smaller particle size. OPF based cubes which have longer particle size is more suitable for beef and dairy cattle. Long-term feeding of OPF based feeds have been shown to produce good quality carcasses, and the meat is safe for consumption.

Effects of Perilla Oil and Tuna Oil on Lipid Metabolism and Eicosanoids Production in Rats (들기름과 참치유의 섭취가 흰쥐의 지방대사에 Eicosanoids 생성에 미치는 영향)

  • This study planned to compare the effects of source and amount of dietary n-3 fatty acid, tuna oil and perilla oil, on lipid metabolism and eicosanoids production in Spargue-Dawley strain male rats. Weaning rats were fed 5 different experimantal diets for 4 weeks. (S : beef tallow 50%+sesame oil 50%, T1 : beef tallow 50%+sesame oil 40%+tuna oil 10%, T2 : beef tallow 50%+sesame oil 25%+tuna oil 25%, P1 : beef tallow 50%+sesame oil 40%+perilla oil 10%, P2 : beef tallow 50%+sesame oil 25%+perilla oil 25%) Food intake was higher in T2 group than in other groups, but body weight gain and food efficiency tate were not different among groups. Plasma total lipid and triglyceride were significantly lower in groups fed perilla oil as much as groups fed tuna oil than in S. But tuna oil reduced plasma cholesterol level more than perilla oil. Liver total lipid per unit, cholesterol and triglyceride were not affected by dietary fat sources. Peroxisomal $\beta$-oxidation was higher in T1 and T2 than in P1 and P2. Activities of glucose 6 phosphate dehydrogenase and malic enzyme were lower in T1 and T2 than in group fed sesame oil only. Plasma TXB2 was affected by n-3 fatty acid consumption, and it was lower in perilla oil groups as much as tuna oil groups than in S. But 6-keto PGF1$\alpha$ was not different among experimental groups. The results of this study indicated that tuna oil and perilla oil both decreased plasma lipids, however, the mechanism may be different. And tuna oil and perilla oil had a similar effects on eicosanoids production.

Effects of Spicy Soup with Red Pepper on Body Temperature, Blood Pressure, Appetite and Energy Intake (고추를 첨가한 매운국이 체온, 혈압, 식욕 및 섭취열량에 미치는 영향)

  • We examined the effects of 5 g red pepper powder in soup preload given at breakfast on food intake, blood pressure, body core temperature, hunger, fullness and thirst scores in 29 female collage students. All subjects received two kind of soup preloads in random order. After ingesting a soup, subjects ate other food items as a breakfast ad libitum. Two soups were of the same composition and volume but differed only in 5 g red pepper. So one soup designated as "beef-vegetable" and the other soup designated as "red pepper". Red pepper soup consumption significantly enhanced energy and macronutrient intake by 17%. The hunger scores after test meals were inversely correlated with energy and nutrient intake in beef-vegetable meal. However, the postprandial hunger scores were not correlated with energy and nutrient intakes in red pepper meal. The fullness scores at 90 min after the red pepper meal were inversely correlated with energy and nutrient intake whereas the fullness scores after beef-vegetable meal were not correlated with energy and nutrient intake. These results suggest that hot red pepper ingestion may desensitize some gastrointestinal vagal afferents and disturb feeling of hunger and fullness. The postprandial changes of body temperatures in red pepper meal were higher for a longer time in comparison with those in beef-vegetable meal. For the red pepper meal there frequently were higher correlations between blood pressures and anthropometric measurements, compared to those in beef-vegetable meal. These results might be explained partly by the enhancing effects of capsaicin on thermogenesis and sympathetic nervous system activity. It is concluded that the ingestion of spicy soup with red pepper can increase appetite, energy and nutrient intakes in Korean females, and this effect might be related to disturbed feeling of hunger and fullness.hunger and fullness.
