현미 식이섬유를 첨가한 튀김가루의 품질 특성 (Quality Characteristics of Frying Mix added with Brown Rice Fiber)

  • In this study, frying mix was prepared containing 0.5, 1.0, 1.5 or 2.0% brown rice fiber(BRF). The samples along with a control were then compared regarding their quality characteristics, including pasting properties, spreadability, pick-up ratio, color, textural characteristics, moisture and oil contents, and sensory qualities, all to determine the optimal ratio of BRF. For the pasting properties of frying mix, the control group was evidenced by a significantly higher peak viscosity, through viscosity, and final viscosity than that observed in the BRF samples. Breakdown was the highest at the 1.0% addition level, and time to peak viscosity and pasting temperature were maximal with the 0.5% addition. There was no significant difference in setback among the experiments. Spreadability and pick-up ratio of frying batter were not significantly different among the samples. As the BRF content increased, the lightness, greenness decreased, whereas yellowness increased. The BRF samples presented significantly higher hardness of fried batter than the control group and there was no significant difference in crispiness among the samples. Moisture content of fried sweet potato decreased with increasing BRF and oil content was the maximum on the control group. In the sensory evaluation, appearance, color, flavor, savory taste, yellowishness, coating thickness, off-flavor, and oiliness were not significantly different among the fried sweet potato samples. Bindingness, crispiness, and chewiness were highest in the control samples but minimal at a addition level of 2.0%. The control group evidenced significantly higher overall acceptability than were observed in the BRF samples. In conclusion, the results demonstrated that 0.5~1.0% BRF may prove quite useful as a additive for frying mix in the preparation of fried sweet potato and may provide favorable textural and functional properties.

오디가루를 첨가한 소맥분의 유변학적 특성 (Studies on Rheological Properties of Weak Flour Containing Mulberry Powder)

  • This study was conducted to investigate the rheological properties of mulberry powder on the weak flour using color, Rapid Visco Amalyzer(RVA), farinogram, alveogram. The lightness(L value) and yellowness(b value) decreased and the redness(a value) increased with increment of mulberry powder content. On the RVA data, the weak flour with 1% of mulberry powder showed the highest initial pasting temperature and peak viscosity, while the addition of mulberry powder reduced final viscosity. On the farinogram data, the consistency of the flour containing mulberry powder was decreased with increments of mulberry powder. This meant that mulberry powder could weaken the batter. Water absorption of the samples with mulberry powder was decreased more than the control. The development time of flour with mulberry powder was also decreased more than control, but the differences were not significant. The stability of the flour with adding mulberry powder was decreased. The Pmax value of the flour was decreased significantly by adding mulberry powder. Extensibility and swelling index were both increased, but there were no significant differences.

Physico-chemical Properties of Chicken Meat Emulsion Systems with Dietary Fiber Extracted from Makgeolli Lees

  • Makgeolli lees is a jigaemi by product produced by makgeolli brew processing. Jigaemi has high fiber content and therefore can potentially be used in the development of foods rich in dietary fiber. The effects of makgeolli lees fibers on the composition and physico-chemical properties of chicken emulsion systems were studied. The moisture and ash contents, yellowness, and viscosity of chicken meat emulsion systems with makgeolli lees fiber were all higher than those of control. Moreover, chicken batters supplemented with makgeolli lees fiber were characterized by lower cooking loss and better emulsion stability. Chicken emulsion systems with makgeolli lees fiber also had improved emulsion stability and emulsion viscosity, and the best results were obtained with meat batter containing 2% makgeolli lees fiber.

  • 본 연구는 미강 추출 식이섬유 혼합물을 첨가하였을 경우 돈육 유화물의 이화학적 품질 특성을 조사하여 미강을 이용한 기능성 육제품의 활용성에 대한 연구를 실시하였다. 돈육 유화물의 일반성분은 첨가되는 미강 추출 식이섬유 함량이 높을수록 수분함량이 낮아지고 단백질, 지방, 회분함량은 증가하였으며, 식이섬유 첨가량이 적정 수준 이상 되면 수분함량이 낮아지고, 단백질과 회분함량이 높아졌다. pH는 가열 전과 가열 후 모두 처리구들이 대조구와 비교하여 높은 pH를 나타내었고, 가열 후 pH가 가열 전 pH보다 높게 나타났다. 색도는 가열 전 돈육 유화물의 명도와 적색도는 대조구와 비교하여 미강 추출 식이섬유를 첨가한 처리구들이 유의적으로 낮았으며, 황색도는 대조구가 처리구들보다 낮은 값을 나타내었다. 가열 후 돈육 유화물의 명도는 대조구가 미강 추출 식이섬유를 첨가한 처리구들과 비교하여 높은 값을 나타내었고, 황색도는 대조구가 처리구들보다 낮은 값을 나타내었다. 가열감량과 유화안정성도 수분리와 유분리 모두 대조구와 비교하여 모든 처리구에서 유의적으로 낮았으며, 점도도 미강 추출 식이섬유 6% 첨가구가 유의적으로 높은 것으로 나타났다. 경도, 응집성, 검성, 씹음성은 대조구와 비교하여 미강 추출 식이섬유 첨가구가 유의적으로 높게 나타났다. 따라서, 미강 추출 식이섬유 혼합물을 첨가하였을 때 이화학적 품질 특성이 우수한 결과를 보여, 최근 건강에 대한 높은 관심을 반영한 웰빙 식품에 활용한다면 현대인들이 선호할 것으로 기대된다.

무청 분말이 첨가된 스폰지케이크의 품질 특성 (Quality Characteristics of Sponge Cakes with Radish Leaf Powder)

  • This study was conducted to investigate the physical, textural and sensory properties of sponge cake prepared with different amounts of radish leaf powder. The specific gravity and viscosity of cake batter and cooking loss of cake increased with an increasing amount of radish leaf powder, whereas specific loaf volume and moisture content of cake decreased. Lightness, redness and yellowness of crust and crumb decreased with increasing radish leaf powder content. Measurements using a texture analyzer showed that hardness, chewiness, gumminess, adhesiveness and fracturability of sponge cake tended to increase in proportion to the amount of radish leaf powder in the formula. In the sensory evaluation, sponge cake prepared with 5% radish leaf powder was similar to the control in terms of moistness, softness, chewiness and springiness. These results suggest that adding 5% radish leaf powder is the best substitution ratio for sponge cake.

Quality Characteristics of Sponge Cake Supplemented with Soy Protein Concentrate

  • The quality parameters of sponge cake supplemented with soy protein concentrate (SPC) were evaluated. The addition of SPC to wheat flour increased the protein content and alkaline water retention value, but decreased the sedimentation value. Protein content had a positive correlation with the alkaline water retention value, and a negative correlation with the sedintentation value. The higher the concentration of SPC, the higher the RVA pasting temperature and the lower the viscosity. Increasing the level of SPC in flour led to a decrease in mixogram peak time, whereas peak height, width at peak, and width at 8 min progressively increased. As the amount of SPC increased in the formulation, the pH and specific gravity of cake batter increased, whereas the volume and specific volume of sponge cake decreased. The total isoflavones content in SPC increased after heat treatment. The hardness, gumminess, and chewiness increased progressively in accordance with increasing level of SPC.

코코넛 추출물 첨가량에 따른 와플의 품질특성 (Quality Characteristics of Waffles Containing Added Coconut Extract)

  • This study examined the quality characteristics of waffles made with coconut extract. Waffles were prepared with the substitution of 25, 50, 75, 100, and 125% of coconut extract. The viscosity of the batter tended to increase with increasing ratio of coconut extract, whereas the spreadability measures were not changed significantly. The baking loss rates tended to increase with increasing ratio of coconut extract while the moisture contents were not changed significantly. The L-value and b-value decreased but the a-value increased. TPA showed that the hardness, springiness, chewiness, cohesiveness, and gumminess tend to increase with increasing amount of coconut extract while the resilience was not changed significantly. The results of the sensory evaluation showed that waffles made with 100% coconut extract were the most preferable in appearance, flavor, taste, texture, and overall acceptability.

소맥분조리에 관한 연구 - Butter 분량에 따른 Choux Puffs 형성에 대하여 - (A Study on Flour Cooking - Dependence of Choux Puff Swelling on Butter Contents -)

  • 1. Pasts containing 10, 12.5, 15, 17.5 and 20g of butter respectively with identical contents of flor(16.25g) and egg(50g) were prepared. 2. For the five batter samples described above, following tests were conducted. a) Hardness and adhesiveness determination by texturometry b) Light microscopic observation d) Sensory Test 3. Significant differences of hardness, adhesiveness, and viscosity among the five samples were not recognized; but 1% significant difference in volumns were recognized. The best swelling was observed for the 17.5g butter sample; those of 15g and 12.5g butter samples were identical, while those of 10g and 20g showed the lowest swelling. Generally, stirring at 60~7$0^{\circ}C$ gave the best homogenity The degree of emulsification influenced the swelling. Not only large but also small amount of butter gave undestirable swelling. Sensory test for the 15g butter sample also gave best result.

코코넛 파우더를 첨가한 와플의 품질 특성 (Quality Characteristics of Waffle added with Coconut Powder)

  • This study investigated the quality characteristics of waffles added with coconut powder. Coconut powder was substituted into waffles at 0, 5, 10, 15, 20, and 25% weight amounts based on the total weight of wheat flour. The viscosity of batter tended to increase as the ratio of coconut powder increased whereas the measures of spreadability were not significantly changed. Baking loss rates tended to increase as the ratio of coconut powder increased while moisture contents were not significantly changed. The L-value and b-values decreased gradually while a-value increased. Among the textural characteristics hardness, springiness, chewiness, and gumminess tended to increase in proportion to the amount of coconut powder while cohesiveness and resilience were not significantly changed. The results of the sensory evaluation show that waffles made with 20% coconut powder were the most preferable in appearance, flavor, taste, texture, and overall acceptability.

Effects of Edible Seaweed on Physicochemical and Sensory Characteristics of Reduced-salt Frankfurters

  • The effects of sea tangle, sea mustard, hijiki, and glasswort were investigated based on the proximate composition, salinity, cooking loss, emulsion stability, pH, color, texture profile analysis, apparent viscosity, and sensory characteristics of reduced-salt (NaCl) meat batter and frankfurters. The moisture content, salinity, lightness of the meat batter and frankfurter, hardness, gumminess, and chewiness of the reduced-salt frankfurters with sea weeds were lower than the control without seaweed (p<0.05). The protein content, springiness, and cohesiveness of the reduced-salt frankfurters were not significantly different among the treatments (p>0.05). The moisture content, salinity, cooking loss, lightness, redness, hardness, gumminess, and chewiness of treatments with sea tangle and with sea mustard were lower than the control (p<0.05). Among the sensory traits, color was highest in the control (p<0.05). The flavor was also highest in the control. The treatments with sea tangle and with sea mustard samples had high tenderness, juiciness, and overall acceptability scores similar to the control (p<0.05). The results of this study show that the combination of low-salt and seaweed in the formulation successfully improved reduced-salt frankfurters, improving sensory characteristics to levels similar to the regular salt control (1.5%).
