Quality Characteristics of Tomato Sauce Prepared by Addition of Fresh Basil (Basil의 첨가량을 달리한 Tomato Sauce의 품질 특성)

  • The purpose of this study was to investigate the effects of basil on the quality characteristics of tomato sauce, which is used widely in Western cuisine. The highest pH of 4.29 was observed in the tomato sauce with 4% fresh basil added, while the tomato sauce with 0% fresh basil exhibited the lowest pH of 4.20. The pH of the tomato sauce gradually increased with the addition of fresh basil. The analysis of color differences in the tomato sauce indicated that redness(avalue) decreased with the addition of basil;, whereas consistency and spreadability increased with the increasing amounts of the fresh basil. The sensory evaluation was performed with scoring tests for color, flavor, taste, after taste, viscosity, and overall acceptability by 15 professional panelsists. The tomato sauce with 2% basil showed the best score in the sensory evaluation, except for vicosity. From the above results, the data suggest that an addition of 2% fresh basil to tomato sauce is recommended for commercial use.

  • Basil (Ocimum spp.) is a popular herb grown worldwide. During the past fifteen years, a downy mildew pathogen has caused considerable damage to basil cultivations. In August 2017, downy mildew disease symptoms were found on Basil Tree (or long foot Basil Tree), which was developed by the grafting of two basil varieties and is a continuous harvest plant with a woody trunk. The present study reports the occurrence of downy mildew disease in basil Tree and identifies the causal pathogen, as Peronospora belbahrii.

  • The purpose of study was to determine the organoleptic characteristics of homemade basil-pasta made in various compounding ratio according to central composite design. The optimum mixing condition for basil-pasta was optimized by response surface methodology. The texture, including color, flavor, elasticity and overall quality, was measured as sensory evaluation. The optimum mixing rates of durum wheat semolina, basil and egg were 73.97g, 5.95g and 36.17g for color, 53.14g, 4.52g and 35.85g for flavor, 48.75g, 2.95g and 36.85g for elasticity. The organoleptic overall quality of basil-pasta showed the maximum score in the mixing condition of 55.52 g durum wheat semolina, 4.55g basil paste and 35.51g egg.

Effects of Basil Extract and Iron Addition on the Lipid Autoxidation of Soybean Oil-in-Water Emulsion with High Oil Content (고지방 물속 콩기름 에멀션의 지방질 자동 산화에서의 바질 추출물과 철 첨가 효과)

  • Purpose: Lipid autoxidation of a soybean oil-in-water emulsion with high oil content was studied under after basil extract and/or iron addition. Methods: The emulsion consisted of tocopherol-stripped soybean oil (40 g), citrate buffer (60 g, pH 4.0), and/or $FeSO_4$ (0.5 mg) with 75% ethanol extract (200 mg/kg) of basil (Ocimum basilicum). Lipid oxidation was evaluated using headspace oxygen content, hydroperoxide contents, and p-anisidne values of the emulsion. Polyphenol compound retention in the emulsion during oxidation was determined spectrophotometrically. Results: Addition of basil extract significantly (p<0.05) decreased reduced hydroperoxide contents of the emulsion, and iron significantly (p<0.05) increased anisidine values and decreased oxygen contents. Co-addition of basil extract and iron showed significantly (p<0.05) lower reduced hydroperoxide contents in the emulsion than compared to those of the emulsion with added iron and the control emulsion without basil extract nor or iron. During the emulsion oxidation, polyphenol compounds in the emulsion with added basil extract were degraded, but more slowlywhich was slowed degraded in the presence of iron. Conclusion: The iIron increased the lipid oxidation through hydroperoxide decomposition, and basil extract showed antioxidant activity through radical-scavenging and iron-chelation. Polyphenol degradation was decelerated by iron addition, which suggested suggests iron chelation may be more preferred topreferentially activated over radical scavenging in the antioxidant action by of basil extract in the oil-in-water emulsion with high oil content.

Effects of Basil and Majoram Essential Oils with or without Ascorbic Acid on Color and Oxidative and Microbial Stability of Beef Patties

  • Fresh ground beef was mixed with ascorbic acid, basil essential oil, majoram essential oil, or each essential oil combined with ascorbic acid and stored at 1 $\pm$ 1$^{\circ}C$ for 7 days. Color, lipid oxidation (TBARS formation), aerobic bacterial counts and pH were determined. Basil and majoram essential oils were effective in inhibiting color deterioration, lipid oxidation and bacterial growth. The combined addition of basil and ascorbic acid showed the highest protection against color fading, followed by majoram + ascorbic acid, and ascorbic acid alone. Basil and majoram essential oils were most effective in delaying TBARS formation (p < ().01). Ascorbic acid did not exert an antioxidative effect and even exhibited a pro-oxidant effect. The pH values of all samples increased slightly, but no significant differences were observed, either among treatments or throughout the storage time (p > 0.05).

A Study on Quality Characteristics of Demi-glace Sauce with Added Fresh Basil (바질을 첨가한 데미글라스 소스의 품질 특성에 관한 연구)

  • This study investigated the quality characteristics of demi-glace sauce that is used widely in western cuisine depending on adding volume of basil which has a specific aroma, taste and some functional ability. Analysis of color differences of demi-glace sauce was showed that a-value of demi-glace sauce decreased with adding basil, whereas viscosity of the demi-glace sauce was decreased. There were no significant differences in color, aroma, taste, appearance, viscosity, feel in mouse and general acceptability with sex and age of subjects. Demi-glace sauce with 2% basil showed best score in sensory evaluation. From theabove results, our data suggest that addition of 2% basil to demi-glace sauce is recommend for commercial use.

Measurement of Antioxidation Substances in Basil (바질의 항산화 물질 측정에 관한 연구)

  • Basil is known to contain six types of polyphenols that engage in physiological activation; protocateuic acid, caffeic acid, chlorogenic acid, courmaric acid, rosmarinic acid and quercetin. In this study, the antioxidants in eight types of basil were evaluated. Specifically, the antioxidative activation of basil was evaluated based on the relationship between active oxygen scavenging (DPPH radical-scavenging), which was used as an index showing the content and functionality of the polyphenol compounds in basil, and $Fe^{2+}$/ascorbate (FTC) and 2-thiobarbituric acid (TBA). The total polyphenol content of the different types basil occurred in the following order: Dark-opal> Lettuce> Bush> Greek> Lemon> Sweet> Geno> Holy. The highest content Dark-opal was 173.3 mg, which was about three times greater than the lowest content Holy, which was 49.85 mg. In addition, DPPH radical-scavenging by Dark-opal 51%, which was the highest scavenging activity occurred in the folling order: Dark-opal> Lettuce> Bush> Greek> Lemon> Sweet> Geno> Holy. The antioxidative activation values measured using the FTC and TBA were the same as the value obtained using the DPPH method. Finally, the level of antioxidative activation measured using FTC, TBA and DPPH methods showed that the higher the content of polyphenol substance was, the stronger the antioxidative activation became.

Genetic Characteristics and Anthocyanin Content of Basil(Ocimum basilicum L.)

  • Basil(Ocimum basilicum L.) is an annual herb that grows wild in hot and humid regions such as tropical Asia and Africa. This study was carried out for resource discovery, propagation, and DB construction of aromatic plants. In order to evaluate the genetic characteristics, 28 kinds of basil seeds were supplied from the Center for Genetic Resources. For basil characteristics, planting date, plant height, growth shape, leaf length, leaf shape, petiole color, petiole, stem color, flower color, after harvest, Ml length including roots, flower length, stem thickness and biological weight were measured. For anthocyanin analysis, only basil with purple color was selected, anthocyanins were extracted with 60% ethanol containing 1% citric acid, a standard quantitative curve was prepared with cyanidin-3-glucoside, and absorbance was measured at 525 nm. Basil planting started around June 16, and the flowering period lasted for a total of 18 days from July 19 to August 5. On August 6, when flowering was completed, morphological characteristics including flower color were measured at the site by an object. The measured basil plant length was 26.6-59.6 cm, leaf length 2.0-7.9 cm, leaf width 0.7-5.2 cm, and petiole 1.3-3.9 cm. The growth pattern of basil was generally straight, medium in shape. The color of the leaves was observed evenly by mixed green, purple, purple and green, and the recesses in the shape of the leaf were also conspicuously observed. A total of three basil flower colors were observed: white, light pink(149P 10P/84), and purple(37V 2.5RP 4/12). During the second growth survey after harvest, the total length including the basil roots is 26.7-52.0 cm, the flower length is 8.2-29.3cm, the stem thickness is 7.1-15.9mm, the number of stem nodes is 3-12 nodes, and the total weight of the basil was measured to be about 218-1540 g. There are a total of 16 types of basil expressed in purple, and the anthocyanin content was measured to be 73.74 ~ 380.72 mg/100g.

A Comparison of the Manufacturing and Quality Characteristics of Gluten-free Noodles using Guar Gum and Basil (Ocimum basilicum L.) Seed Gum (구아검 및 바질검 첨가 Gluten-free 생면의 제조 및 품질 특성 비교)

  • This study was investigated quality characteristics of gluten-free noodles added guar gum and basil seed gum (BSG). Gluten-free noodles were prepared using corn flour and corn starch and added 1% and 2% of guar gum and basil seed gum. Water binding capacity was measured by centrifuge, and moisture content was obtained by moisture analyzer. Color of noodles was measured from the midsection of noodles. Water absorption of noodles was calculated by weight of uncooked and cooked noodles. pH of noodles was measured by pH meter. Texture and tensile strength were obtained by rheometer. SPSS 12.0 program was used for significant differences by Duncan's multiple range test. Water binding capacity of noodles was the highest in 2% basil seed gum but 1% guar gum was the lowest. Moisture content was not different in uncooked noodles, but 1% guar had the highest moisture content in cooked noodles. Water absorption of noodles was high in basil seed gum group. pH of noodles was more increased in guar gum additions than basil seed gum additions. For hardness, control had the lowest as 16.09 N, but 2% guar gum showed the highest as 28.40 N. Tensile strength of noodles was increased by adding gums. These results suggested that 1% basil seed gum could be good materials for manufacturing gluten-free noodles in order to improve quality characteristics.

Occurrence of Fusarium Wilt in Basil Caused by Fusarium oxysporum in Korea

  • Wilt symptoms were observed in basil (Ocimum basilicum) plants grown in a vinyl greenhouse located in Gokseong, Korea, during crop disease surveys conducted in August 2022. The symptoms appeared as wilting of the plants and brown to dark brown longitudinal streaks on the stems at or above the soil line. The disease incidence among the plants in the vinyl greenhouse was 5-20%. Six isolates of Fusarium sp. were obtained from stem lesions and identified as Fusarium oxysporum species complex based on their morphological characteristics. Among the isolates, two were used for phylogenetic analysis and pathogenicity test. Phylogenetic analysis revealed that these isolates belonged to F. oxysporum. Pathogenicity of the isolates was confirmed through artificial inoculation test. The symptoms induced by the isolates were similar to those observed in basil plants in the investigated vinyl greenhouse. This is the first report of F. oxysporum causing Fusarium wilt in basil in Korea.
