Effects of Dietary Bamboo Charcoal on the Carcass Characteristics and Meat Quality of Fattening Pigs

  • The purpose of this study was to investage the effects of dietary bamboo charcoal on the carcass characteristics and meat quality of fattening pigs. Fifty four crossed pigs of $61.0{\pm}1.0$ kg body weight (BW) were grouped and housed in 6 animals (3 barrows and 3 gilts) per pen and 3 replications per treatment. The basal diet (C) was supplied with 0.3% bamboo charcoal as treatment 1 (T1) and 0.6 % as treatment 2 (T2). The pigs were fed that experimental diet for 42 days, thereafter 10 longissimus dorsi (LD) per treatment were randomly collected at the time the pigs reached an average weight of $110.0{\pm}5.0$ kg. The carcass weight, backfat thickness, and the carcass grade were better (p<0.05) in the pigs fed bamboo charcoal than in C. The crude fat concentration of LD was higher (p<0.05) in T1 than in C. While the composition of stearic acid and arachidonic acid was lower (p<0.05) in treatments than in C, the composition of oleic acid and linoleic acid of treatments was higher (p<0.05) than C. The physico-chemical characteristics, such as meat color and amino acid composition of LD were not affected (p>0.05) by the supplemented bamboo charcoal. In conclusion, dietary supplementation with bamboo charcoal improved the carcass grade and fatty acids composition of pork meat from fattening pigs, where the composition of unsaturated fatty acids was increased, but that of saturated fatty acids was decreased.

Effects of Various Salts on Physicochemical Properties and Sensory Characteristics of Cured Meat

  • This study was carried out to investigate the effects of refined, solar, and bamboo salt on the physico-chemical properties and sensory characteristics of cured pork loin. Moisture, protein, fat, and ash content, lightness, yellowness, cooking yield, and color, juiciness, and tenderness of sensory properties on curing pork loin exhibited no significant differences regardless of the nature of salts. The pH of raw and cooked cured pork loin with added bamboo salt was higher that of other salt treatments. However, the cooking loss, and Warner-Bratzler shear force of cured pork loin with added refined salt was lower than those of solar and bamboo salt pork loins cured. The flavor and overall acceptability scores of treatments with refined salt was higher than those of solar and bamboo salt treatments. The unique flavor of bamboo salt can render it as a functional material for marinating meat products. In addition, the results of this study reveal potential use of bamboo salt in meat curing.

The Physical, Mechanical, and Sound Absorption Properties of Sandwich Particleboard (SPb)

  • While the utilization of wood as a raw material in related industries has been increasing with the population increasing, the availability of wood from natural forests has continued to decline. An alternative to this situation is the manufacture of particleboard from non-wood lignocellulose materials through the modification of sandwich particleboard (SPb) using bamboo strands as reinforcement. In this study, strandsof belangke bamboo (Gigantochloa pruriens W) and tali bamboo (Gigantochloa apus) were utilized. The non-wood particles included sugar palm fibers, cornstalk, and sugarcane bagasse. The board was made in a three-layer composition of the face, back, and core in a ratio of 1: 2: 1. The binder used was 8% isocyanate resin. The sheet was pressed at a temperature of 160℃ for 5 min under a pressure of 3.0 N/㎟. Testing included physical and mechanical properties based on the JIS A 5908 (2003) standard, while acoustic testing was based on ISO 11654 (1997) standards. The results showed that using bamboo strands as reinforcement has an effect on the mechanical and physical properties of SPb. Almost all the types of boards met the JIS A 5908 (2003) standards, with the exception of thickness swelling (TS) and internal bond (IB) parameters. Based on the thickness swelling parameter, the C-type board exhibited the best properties. Overall, the B-type board thatused a belangke bamboo strand for the surface and sugarcane bagasse as the core underwent the best treatment. Based on the acoustical parameter, boards using a tali bamboo strand for the surface and sugar palm fiber as the core (E-type board) exhibited good sound absorption properties.

Effect of Vascular Bundles and Fiber Sheaths in Nodes and Internodes of Gigantochloa apus Bamboo Strips on Tensile Strength

  • Bamboo culm is in the form of a tube/pipe, composed of internodes which are bounded by a partition/diaphragm (node). Anatomically, bamboo is composed of vascular bundles and parenchyma ground tissue. One of the constituents of vascular bundles is fibers that are grouped to form a fiber sheath. The anatomical structure of the nodes and internodes is thought to influence the strength of bamboo strips, including tensile strength. This study aimed to determine the characteristics of vascular bundles (distribution and fiber percentage) and their effects on the density and tensile strength of Gigantochloa apus bamboo strips with and without nodes. The bamboo culms were divided into three parts (outer, middle, and inner) along the radial direction. The results showed that the distribution of vascular bundles and percentage of fiber sheaths decreased significantly from the outer to the inner layer. This also had a significantly decreased density and tensile strength. Furthermore, the number of vascular bundles (in the transverse plane) was greater in the internodes than in the nodes. Anatomically, the orientation of the vascular bundles at irregular nodes is observed in the radial and tangential planes, where the direction is not only in the axial direction, but also in the radial and tangential directions. This caused the tensile strength of the G. apus bamboo strips to be lower at the nodes than at the internodes.

조릿대는 왜 평생 한 번 대규모로 꽃을 피우고 죽는가? -조릿대 개화지의 외적 환경인자 분석 및 그 생활사 전략- (Why Does Draft Bamboo Bloom Once in a Lifetime on a Large Scale and then Die? -Analysis of External Environmental Factors of Draft Bamboo Flowering Area and Its Life Strategy-)

  • 본 연구는 전남 광양시 백운산의 조릿대 개화지에서 외적 환경인자가 개화원인으로 작용하는가를 조사했다. 이를 토대로 조릿대의 개화원인, 개화양식 및 생활사 전략을 고찰했다. 조릿대 개화지와 비개화지 사이의 토양 물리적 조건 광량 차이는 없었다. 2014~17년 사이에 조릿대가 개화했던 한국과 일본 개화지의 강수량 기온은 평년치(과거 30년)와 다른 특이점을 찾을 수 없었다. 또한 대면적으로 조릿대가 꽃을 피운 후에 대부분 죽었으나 일부 조릿대 간이 다시 발생하기도 하고 일부는 죽지 않았다. 즉, 조릿대는 외적 환경인자와 상관없이 일제히 개화했으며, 대부분의 조릿대 간은 죽지만 일부는 살아남았다. 이는 조릿대 개화원인은 외적 환경인자 영향보다 생물시계에 따라 주기적으로 발현하는 특정 유전자(일명, 유전자 시계)로 촉발된다고 본다. 한편, 멀리 떨어져 있는 조릿대 개체와 동조해 꽃을 대규모로 피우며, 소규모 단독으로 여러 번 개화하기도 한다. 이것은 평생 한 번 개화하는 조릿대의 유성번식 실패 리스크를 분산하기 위한 일종의 보험시스템이라고 판단된다. 열대성 대나무 조릿대류가 온대로 분포를 넓히면서 환경의 불확실성 증가에 따른 유성번식의 최적화를 위해 장주기 단개화성이 강화된 것으로 추정된다.

삼천포 수역 죽방렴의 어구구조와 해수유동 특성 (Characteristics of Current Patterns and Structure of Bamboo Weir in Samchunpo Water Area)

  • In order to examine the directional suitability of the axis direction of the fishing gear against the current, the experiments were carried out at the bamboo weir in Samchunpo water area from January, 2000 to September, 2001 The results of the study are as follows: In the experimental fishing gear constructed in the "V" shape, the range between two reference piles located at the entrance was 2.5m. The direction of bamboo weir′s axis was 355.5$^{\circ}$ The length of the left wing and those from the reference pile to the starting point of a curve were 106.0m, 7.5m, respectively. The length of the right wing and those from the reference pile to the starting point of a curve were 79.0m, 10.0m, respectively. Depths around the left and right stone wall that drove the steel pile were 5.0~6.5m and 6.5~9.5m, respectively. Also, depths on the bamboo weir′s axis and around the sack were 7.0~8.0m and about 8.0m, respectively. The maximum height of stone walls at the point of the left wing, the right wing and around the sack on the bamboo weir\` axis were 3.0m, 4.7m and 4.0m, respectively, Widths of stone walls at the point of both of the wings and around the sack on the bamboo weir\`s axis were 10.0~l4.0m, 22.0~25.0m, respectively. The averaging current direction on ebb tide was measured two times and it was 169.2$^{\circ}$ but the direction had about a 6.3$^{\circ}$ difference from the bamboo weirs axis. The maximum current speed appeared two to three hours later from the time of high tide and the current speed over 80.0cm/s lasted during about two Hours on the ebb tide In the case of a straight type wing In the bamboo weir, the eddy out of the left wing was comparatively big and the current on the right side from the bamboo weir′s axis had a tendency in turning to the right wing side. But in the case of a curve type wing, the eddy and tendency reduced significantly. It was thought that the experimental fishing gear was set suitably from the result of this simulation.

대나무 분말 첨가가 돼지생산성, 도체특성, 혈액성상, 돈분의 가스발생량 및 미생균 균총에 미치는 영향 (Effects of Bamboo Powder Supplementation on Growth Performance, Blood Metabolites and Carcass Characteristics of Fattening Pigs and Gas Emission and Microbial Populations in Pig Manure)

  • In this study, we investigated the effects of dietary supplementation (n = 40 pigs/treatment) with bamboo powder (0, 1, 2 and 3%) for 38 days. We evaluated growth performance, blood metabolites, and carcass characteristics of fattening pigs and gas emission and microbial populations in pig manure, to obtain data on pork producers for environmental management. We obtained the following results. First, supplementation with increasing amounts of bamboo powder had a significant (P < 0.05) effect on feed intake, feed efficiency, and glucose contents (except for initial and final body weight, weight gain, carcass characteristics, and blood urea nitrogen). In terms of blood metabolites, glucose and blood urea nitrogen tended to decrease with increasing amounts of bamboo powder. Second, the amounts of ammonia, methane, amine, hydrogen sulfide, and acetic acid were reduced by increasing amounts of bamboo powder when compared with the controls (P < 0.05). However, there were no significant differences in pH, propionic acid, iso-butyric acid, butyric acid, iso-valeric acid, and valeric acid among all treatments. The lowest gas emission was observed when 3% bamboo powder was used. Third, supplementation with increasing amounts of bamboo powder tended (P < 0.05) to increase the total number of bacteria, Lactobacillus spp., and yeast, but E. coli, Salmonella spp., and Shigella spp. were not detected in any treatment. In conclusion, the results of this study suggest that supplementation with bamboo powder was effective in reducing gas emission and inhibiting pathogen populations in pig manure by lowering the pH of the manure.

국내산 대나무 3종의 해부학적 특성 (Anatomical Characteristics of Three Korean Bamboo Species)

  • 본 연구에서는 주요 바이오매스 자원의 하나인 대나무의 효율적 활용을 위한 기초자료를 수집하기 위하여, 국내산 대나무 3종(맹종죽, 솜대 및 왕대)의 해부학적 특성을 광학현미경 및 주사전자현미경으로 비교 분석하였다. 또한 X선 회절법에 의해 셀룰로오스의 결정특성을 분석하였다. 횡단면 관찰 결과, 3종 모두 유관속 I형으로 종간 동일한 형태를 보였다. 또한 횡단면의 내측부에서 외측부로 갈수록 유관속의 출현빈도가 더 높았고, 유관속을 둘러싸고 있는 유관속초의 비율도 커졌다. 구성세포 치수 측정 결과, 섬유길이는 모든 종에서 외측부의 값이 내측부의 값보다 컸으며, 내측부와 외측부 모두 왕대의 섬유길이가 가장 길었다. 섬유길이의 유의성 검정 결과 3종 모두 내측부와 외측부간에 유의성이 나타났다. 횡단면에서 측정한 도관 직경 및 유세포 직경은 맹종죽의 값이 가장 컸으며, 방사 및 접선단면에서 측정한 유세포 길이 및 폭은 맹종죽과 왕대가 유사한 값을 나타냈고, 솜대가 가장 작았다. 셀룰로오스의 결정특성 분석 결과 상대결정화도 및 결정 폭은 외측부가 내측부에 비해 다소 높았으며, 왕대의 상대결정화도 및 결정 폭이 다른 2종에 비해 다소 높았다.

현장 시험시공을 통한 대나무 쏘일네일링공법의 적용성에 관한 연구 (A Study on the Application of Bamboo Soil Nailing System through Experimental Construction)

  • 본 연구에서는 대나무 쏘일네일링공법(Bamboo Soil Nailing System)을 개발하고, 이를 검증하기 위한 현장 시험시공 및 실내시험을 실시하였다. 대나무의 공학적 특성 시험과 현장계측 및 현장 인발시험 등을 수행하여 제안된 공법의 실용화를 위한 적용성을 분석하였다. 시험시공의 적정성 판단을 위해 실험조건을 반영한 수치해석을 통해 현장시험 계측결과와 비교 검증을 수행하였다. 현장계측 및 유한요소해석결과, 정량적 수치에서 차이를 보였지만 발생변위의 형태와 쏘일네일링공법간의 발생 변위량 차이가 크지 않다는 점에서 일치하는 결과를 나타내었다. 본 연구결과를 토대로 비교적 높지 않은 굴착지반에서 대나무 쏘일네일링공법의 적용성을 검증하였으며, 설계 예를 통해 대나무의 직경 변화에 따라 소요의 안전율을 만족하는 대나무 쏘일네일링의 설계 및 시공이 가능할 것으로 판단되었다.

죽염 자리젓의 품질 특성 및 정미성분 (The Quality Characteristics and Taste Compounds of Fermented Fish, Jari-Jeot with Bamboo Salt)

  • 젓갈은 전통적인 수산 발효 식품으로 각광을 받고 있으나 높은 염 함량을 보이므로 본 연구에서는 근래에 문제시 되고 있는 염을 대체하기 위한 방법의 일환으로 일반 염 대신 죽염을 첨가한 자리젓을 제조하고, 그 이화학적 성분 및 미생물수의 변화에 대한 연구를 수행하였다. 자리젓 숙성 후 저장기간 동안의 생균수의 변화를 측정한 결과, 죽염을 사용한 자리젓 시료가 일반염 사용 시료에 비하여 미생물 수가 적은 결과로부터 미생물의 생육은 일반염과 비교하여 죽염에 의해 더욱 억제됨을 알 수 있었다. 저장기간 중의 pH의 변화는 일반염이나 죽염을 사용한 경우 모두 점진적으로 상승하는 경향을 보였다. 색차계로 측정한 L, a 그리고 b값은 저장기간 중 일반염, 죽염 공히 지속적으로 큰 변화 없이 진행되었으며, 일반염과 죽염을 사용한 자리젓의 염도를 측정한 결과 저장기간 중 큰 변화는 발견되지 않았다. 자리젓의 염 종류와 염도의 차이에 따른 수분함량을 측정한 결과, 염의 농도가 감소함에 따라 수분의 함량이 높아졌으며, 또한 죽염 25% 첨가구를 제외하고는 죽염을 사용한 시료의 경우가 수분함량이 약간 적었다. 핵산관련물질의 정량실험에 있어서는 일반염, 죽염 공히 다른 ATP분해 산물과 비교하여 hypoxanthine의 축적이 숙성기간 중에 더욱 진행되었다. 일반염과 죽염 첨가 자리젓의 유리아미노산 분석을 수행한 결과, lysine, glutamic acid, proline, alanine, leucine, isoleucine, arginine 및 histidine이 많아 총 유리아미노산의 69~74%를 차지하였으나 taurine은 극미량 검출되었다.
