The Changes on Ascorbic Acid and Glycoalkaloid Contents of Eggplant by Parts and Cooking Methods (부위 및 조리방법에 따른 가지의 Glycoalkaloid와 Ascorbic Acid 함량 변화)

  • This study was carried out to identify the change of glycoalkaloid contents and ascorbic acid in eggplant by parts and cooking methods. Content of glycoalkaloid by part of eggplant was the most in step part(A) as $31.1{\mu}g$ but it was shown that (A) and (C) contained more solamargine($6.9{\mu}g$) than solasonine, while (B) contained more solasonine($18.4{\mu}g$) than solamargine($6.9{\mu}g$). By cooking method, content of solamargine in eggplant varied; steaming ($6.2{\mu}g$), boiling ($7.0{\mu}g$), sauteing ($2.5{\mu}g$), microwave ($2.0{\mu}g$). Control group had $11.4{\mu}g$ solamargine and it contained solamargine most among them when boiled. Content of solasonine was in order of control ($4.88{\mu}g$)>steaming($3.40{\mu}g$)>microwave($1.2{\mu}g$)>boiling($0.6{\mu}g$)>sauteing(n.d.), and steaming showed the highest figure. As for content of ascorbic acid by part of eggplant, stem part had the most. That is, content of ascorbic acid decreased as from stem part under. Content of ascorbic acid of eggplant decreased greatly by cooking manipulation like other vegetables did, and the remaining amount showed control> sauteing> microwave> boiling> steaming in order.

A Development and Validation of Cosmetic Container Based on L-Ascorbic Acid Oxidation Property (L-Ascorbic Acid의 산화특성에 따른 화장품 용기 개발 및 유효성 분석)

  • L-ascorbic acid, the representative antioxidants, has a great effect on skin whitening, collagen synthesis, and anti-aging, but has low oxidative stability during storage. Therefore, in this study, thermal and oxidation properties of L-ascorbic acid under various storage conditions (powder, aqueous phase, changes of temperature, UV-irradiation, and inflow of external air etc.) were investigated. And the storage stability of ingredient was validated in the double-spaced pouch by analysing oxidation properties under each storage conditions (powder phase and blended with essence). In oder to analyze the thermal properties, TGA, DSC, and FT-IR analysis were carried out and UV-visible spectrophotometer & redox titration were used in parallel for oxidation property analyses. From the result of experiment, L-ascorbic acid was oxidized fast when it contained lots of metallic ion, hydroxy ion in aqueous solution under high temperature, UV-irradiation & inflow external air, whereas it was not oxidized for a long time when it was stored as pure powder although it has same condition as heating up, UV-irradiation & inflow external air. Based on this result, retention period of cosmetics which is using L-ascorbic acid, less stable material in oxidation can be innovatively increased when using double-spaced pouch that is designed and produced for separating storage of active ingredients.

Differential Functions of Caffeine and Ascorbic Acid in $\gamma-Irradiated$ Male Mice

  • Radioprotection is of practical importance for the normal tissues of tumor patients subject to radiotherapy, people with planned or accidental exposure to radiation, and the public and radiation workers. Since oxygen enhances radiation - induced biological damage, antioxidants should be related with the function as a radioprotectors. Ascorbic acid or caffeine is an essential component and antioxidant in the diet of humans and a small range of other mammals. The present study investigates functional radioprotection of caffeine and ascorbic acid against gamma radiation in irradiated C57BL/6N mice. Eight-week-old male C57BL/6N mice were irradiated with 6.5 Gy. A caffeine treated group was administered with $80mg\;kg^{-1}$ body weight by intraperitoneal injection, a single treatment 1 hr before irradiation. Ascorbic acid was administered $330\;mg\;L^{-1}$ in drinking water through all the experimental period. According to time schedules, animals were sacrificed by cervical dislocation. And the samples were collected 2 weeks after whole- body gamma irradiation. The caffeine treated group showed lower decrement of body and organ weights than the other experimental groups. The qualitative analysis of circulating testosterone in serum was performed by means of radioimmunoassay (RIA). The normal level of circulating testosterone was maintained by the treatment of caffeine and ascorbic acid. The change of weight of body and organ and the appearance of seminiferous tubules were improved by an effect of caffeine or ascorbic acid against irradiation. Taken together, caffeine and ascorbic acid protects impairment of spermatogenesis against gamma radiation and may act as a radio-protector.

Effect of Uniconazole and Free Radical Scavenger Treatments on Reduction of $SO_2$ Injury in Platanus occidentalis (Uniconazole 및 Free Radical Scavenger처리가 양버즘나무의 $SO_2$ 피해경감에 미치는 효과)

  • The objective of this research was to increase phytoprotective effects by combined treatment of uniconazole and free radical scavengers such as ascorbic acid or sodium benzoate on $SO_2$ injury in P. occidentalis. The plant injury, chlorophyll content and enzyme activity of superoxide dismutase(SOD) and peroxidase(POD) affected by combined treatment were also investigated. The phytoprotective role of uniconazole was nullified by spray of Diethyldithiocarbamate(DDTC) resulting in the decrease of SOD and POD activities. Free radical scavengers, sodium benzoate and ascorbic acid, did not affect SOD and POD activity, but significantly inhibited the development of visible injury, degradation of chlorophyll, and SOD and POD activity in leaves exposed to $SO_2$. The spray of ascorbic acid decreased plant susceptibility to $SO_2$ induced by DDTC application. These results indicate that uniconazole application increase SOD activity that play a role of antioxidant in plant body, but sodium benzoate and ascorbic acid do not affect enzyme activities of SOD or POD.

  • Kinetics of ascorbic acid and browning that may use on the optimization of food dehydration were evaluated. Banana was chosen for this as the representative test material. We have described the destruction of ascorbic acid and browning as first and zero order reactions. The temperature dependence between two reactions were conducted with Arrhenius equation. Finally we have operated SPSS computer programs reapeatedly that we found very dose value of the parameter between result of ascorbic acid and browning. The attained Kinetic models were well prepared for the value of result experiments and the models may use on optimization for dehydration progress. Destruction rate of ascorbic acid and browning rate were low at initiation of progress, increased to show maximum at the low moisture on mid-progress and then decreased gradually. Freeze drying showed the most constant quality of product in this case.

  • The objective of this study was to investigate the effect of browning inhibitor and vacuum packaging on minimally processed sweet pumpkin. The browning inhibitor were lo/e of ascorbic acid, citric acid, NaCl, MgCl$_2$and their combination. For the minimal processing, sweet pumpkin was sliced and strip-cut followed by dipping in the solution of browning inhibitor. Effective browning inhibitors fer slice sweet pumpkin were ascorbic acid, NaCl and MgC1$_2$, and those fer thin strip were combination and ascorbic acid. The hardness of minimally processed sweet-pumpkin repeated increasing and decreasing and decreased in the final of storage. However the change pattern of hardness was different according to cutting method. Magnesium chloride treatment was generally high grade on sensory characteristics. Sweet pumpkin treated with citric acid was distinguished on carbon dioxide generation and oxygen exhaustion.

Analysis Growth Performance and Ascorbic Acid Contents of Allium victorialis var. platyphyllum, Ligularia fischeri, and L. stenocephala Under Changing Light Intensity (광도 변화에 따른 산마늘, 곰취, 곤달비의 생장 및 Ascorbic acid 함량분석)

  • The present study was conducted to investigate growth performance and ascorbic acid contents of Allium victorialis var. platyphyllum, Ligularia fischeri, and L. stenocephala growing under four different light intensity regimes (full sun, and 64~73%, 35~42%, 9~16% of full sun). The leaf area and total biomass of Allium victorialis var. platyphyllum were highest in 35~42% of the full sun. However, the leaf area and total biomass were highest in 64~73% of the full sun in Ligularia fischeri, and L. stenocephala. The leaf thickness decreased with increasing shading in all three wild vegetables. The growth of root comparing to that of shoot decreased as shading increased, and as the result, the ratio of shoot biomass to root biomass increased. Ascorbic acid contents were higher in Allium victorialis var. platyphyllum than in Ligularia fischeri and L. stenocephala. Allium victorialis var. platyphyllum showed the highest contents of ascorbic acid in 35~42% of full sun. Whereas Ligularia fischeri and L. stenocephala showed the highest in 64~73% of full sun.

Coencapsulation of L-Ascorbic Acid and α-Tocopherol in Ethosomes and Their Properties (친수성 L-ascorbic acid와 소수성 α-tocopherol을 모두 포집하는 ethosome의 특성)

  • Coencapsulation of hydrophilic L-ascorbic acid and hydrophobic ${\alpha}$-tocopherol in ethosome vesicles was attempted and their properties were investigated in this study. The size of vesicles decreased with increasing concentration of L-ascorbic acid solution encapsulated in ethosome. The vesicle size and encapsulation efficiency of ethosomes increased slightly when ${\alpha}$-tocopherol was added into the HPC-forming liquid crystalline membrane of ethosome. However, the vesicle size increased highly and the encapsulation efficiency decreased abruptly at mixing ratios above 25 wt% due to the formation of an imperfect liquid crystalline structure within a vesicle membrane. It was observed that antioxidant activity was maintained for 5 weeks at $40^{\circ}C$ when L-ascorbic acid and ${\alpha}$-tocopherol were coencapsulated in ethosome. The L-ascorbic acid in ethosome was stable compared to that in aqueous solution under UV radiation.

Studies on Ascorbic Acid contents in Persimmon leaves tea by different cooking methods. (조리방법에 따른 감나무잎차의 Ascorbic Acid 함량에 관하여)

  • The purpose of this experiment was to find out the contained quantity of ascorbic acid form persimmon tea. They were different according to the month when the persimmon leaves were picked, the way of cooking and the length of time spent after cooking. The results of experiment can be summarized as follows : 1. About the same contained quantities of ascorbic acid were obtained among the persimmon leaves picked in September and October, and small contained quatities of it were obtained among the persimmon leaves picked in November. Therefore it can be concluded that the persimmon leaves picked in September and October are better than the leaves picked in November for permision tea. 2. According to the way of cooking the contained quantity of ascorbic acid were different. When green leaves were washed and boiled for 1 monute and dried in the shade for 48 hours, the largest contained quantity of ascorbic acid were obtained. When they were steamed in the steam box for 1 minute and 30 seconds and dried in shade for 48 hours medium contained quantity of ascorbic acid were obtained . The contained quantity of ascorbic acid were decreased when green leaves were dried without boiling when green leaves were dried without boiling or when branches of leaves were taken away by hand and dried. 3. The contained quantity of ascobic acid were also different according to the length of time spent after cooking. After 15 minutes from cooking it began to increase and after 150 minutes it reached the highest degree. After this time it began to decrease. 4. the best fragrance, taste and color of the Persimmn Tea are found out, after steaming in the steaming box for one minute and half second and after drying in the shade for fourty-eight hours.

Antioxidant and Anti-inflammatory activity of Silvetia siliquosa extract (Silvetia siliquosa 추출물의 항산화 및 항염효과)

  • In this study, the antioxidant and anti-inflammatory properties of Silvetia siliquosa extracts were identified. Antioxidant experiments included polyphenol concentration measurements, flavonoid concentration measurements, DPPH experiments, ABTS experiment NO experiments, and FRAP experiments. For polyphenols, 54.85 ± 2.79 mg/g was shown. Flavonoids showed 18.70 ± 5.26 mg/g. The DPPH experiment showed an antioxidant function of 3.950 mg ascorbic acid/g extract, the ABTS experiment showed an antioxidant function of 7.418 mg ascorbic acid/g extract, and the NO experiment showed an antioxidant function of 6.056 mg ascorbic acid/g extract. In FRAP, 1 mg of the moxibustion extract showed a reduction of 3.633 ± 0.280 ㎍ of ascorbic acid. In the meantime, cell experiments showed cytotoxicity and anti-inflammatory functions against inflammation induced by LPS. In cytotoxicity experiments, Silvetia siliquosa extracts showed a cell survival rate of more than 80% at all concentrations, and an inflammatory inhibition of 26.94±0.52% at a concentration of 100 ㎍/mL. These results indicate that Silvetia siliquosa extract is available as an anti-inflammatory cosmetic material.
