  • In order to reduce the obesity incidence, the development of sugarless, low calorie foods and ingredients are required, so normally quality substantially sugarless or fat free food composition comprising a flavoring amount of a low calorie sweeteners such as sugar alcohol, oligosaccharide and natural high sweeteners including stevia, aspartam, sucralose for food processing because of the malady of livelihood habit cause by the obesity. In as much as common sugar is high in calories and its sweetening effect can be obtained with relatively low calorie artificial sweeteners such as stevia, aspartame many products have been offered which are sugar-free, the sweetening effect being obtained with and artificial sweetener.

어린이 기호식품의 인공감미료 함량 모니터링 (Monitoring of Food Additives as an Artificial Sweetener on Favorite Foods of Children)

  • 전국 초등학교 주변의 문구점 등 소매점을 대상으로 15개 지역에서 총 17회에서 걸쳐 604건의 시료를 수거하여 국내 유통중인 어린이 식품의 인공감미료 사용현황을 조사하였다. 원신지별로 국산이 308건으로 51.0%, 중국산이 211건으로 34.9%, 인도네시아산이 26건으로 4.3%, 기타국가가 59건으로 9.8%이 수거되었으며 모니터링결과 75건의 시료에서 인공감미료가 검출되어 12.4%의 검출율을 나타내었다. 국가별 검출율은 국산이 38건으로 12.3%, 중국산이 25건을 h11.8%, 인도네시아산이 9건으로 34.6%로 나타났으며, 각 인공감미료별 검출률은 아스파탐이 47건으로 7.8%, 아세설팜칼륨이 18건으로 3.0%, 삭카린나트륨이 11건으로 1.8%, 사이클라메이트가 16건으로 2.6%이었다. 검출농도는 아스파탐이 21~4,988 mg/kg (평균 818 mg/kg), 아세설팜칼륨이 24~1,136 mg/kg (평균 192 mg/kg), 삭카린나트륨이 5~326 mg/kg (평균 91 mg/kg), 사이클라메이트가 8~4.680 mg/kg (평균 926 mg/kg)의 함유량을 보였으며 식품별 검출건수는 캔디류가 3건, 건과류가 8건, 초콜릿류가 2건, 건포류가 2건, 서류가공품이 2건인 것으로 나타났다. 초등학생의 평균체중 36.9kg 및 건과류 및 캔디류의 일일섭취량 15.6g을 적용하여 일일추정섭취량(EDI)과 일일허용섭취량(ADI)의 비 EDI/ADI(%)를 산출하였을 때, 아스파탐 0.86%, 아세설팜칼륨 0.54%, 삭카린나트륨 0.77%, 사이클라메이트는 3.56%를 나타내었다.

식품의 안전성 및 식품첨가물에 대한 소비자 인식에 관한 연구 (A Study on the Consumer Recognition of Food Safety and Food Additives)

  • This study was to investigate consumer recognition of food safety and food additives. The results of this study are as follows: 1. When shopping for food, the food safety was rated as foremost concern for the respondents and the details checked most often were manufacture date, packing condition and axpiration date, respectively. When asked their opinion about harmful factors in relation to food safety, the most important consideration was food additives. The highest rating for credibility regarding the sources of information on food was given to scientists in university and institute, lowest one was given to food manufacturer. 2. Government regulation on the use of food additives was known to exist, but control of the uses of food additive was considered inadequate by 60% of the respondents. These results showed significant differences for age (p<0.05), for education level (p<.01) and for income (p<.05) respectively. 3. 47.9% of the respondents indicated that they were willing to purchase the additive free foods, although it was expensive. More than 70% made an effort to eat food with less food additive and were concerned about possible effects of food additives on health, showing significant differences for age (p<0.05), for education level (p<0.05) and for income (p<0.05). 4. Labeling for food additive found on food package was shown to be unsatisfactory, showing significant difference only for income (p<0.05) and more information about food was needed by over 91.3% of the respondents, showing significant difference for education level (p<0.05). 5. Although approximately 80% of the respondents were concerned about artificial preservative, artificial flavor, artificial color and artificial sweetener, the concern about artificial preservative was the highest. Primary causes that respondents felt fear toward food additives were the unknown harms and cancer, and primary sources that respondents got information on food were televison and radio, respectively. From these results, it was shown that consumer considered food safety important and they felt a great deal of concern about food additives.

식용 감미료 사카린과 에이스셜팜 칼륨의 식물 성장 저해 연구 (Study of Plant Growth Inhibition with Edible Sweetener Saccharin and Acesulfame Potassium)

  • 시판 중인 식용 감미료 5종류는 자당을 대체할 수 있는 물질이기에 다이어트 제품으로 사용된다. 동물과 인체에 끼치는 영향에 관한 연구에서 동물세포의 특징 실험으로 배출 중심 연구를 하여 안정성을 입증해왔고 적은 양의 축적은 무시해왔다. 반면에 식물은 외부 물질을 흡수하여 분해하거나 축적하는 물질대사 작용을 하기에 식물체를 사용하여 분해 가능성과 축적 가능성의 효과를 연구할 수 있다. 발아된 보리와 콩나물을 사용하여 시판 중인 사카린과에이스셜팜 칼륨(에이스 K)의 식물 체내에서 물질대사 영향을 조사하였다. 발아된 보리와 콩나물 성장에서 사카린과 에이스 K 는 식물 성장에 대한 저해 효과를 잎, 줄기, 뿌리에서 저 농도에서부터 모든 기관에서 공통으로 나타났다. 또 시간이 지남에 따라 사멸하는 증상이 명확하게 나타나는 것을 관찰할 수 있어서 식물 체내에 축적된다고 볼 수 있다. 축적된 양이 증가함에 따라 독성효과가 증가하여 식물이 물질대사를 하지 못하는 상태에 이르러 잎 끝부분부터 검정으로 변색하여지고 사멸상태에 이른다. 축적된 인공감미료를 제거하기 위해서 증류수에서 배양하여 회생 가능성을 시도하였지만 분해되지 않는 물질로 작용하고, 독성을 피하지 못하고 사멸된다. 이것은 사카린과 에이스 K는 세포 내에서 배출하지 못한다. 독성효과가 계속 되어서 성장을 억제하고 결국에는 세포를 사멸하게 한다고 사료된다.

어린이 기호 유가공품 인공감미료 함량 조사 (Survey of artificial sweetener contents as food additives in children's preferred dairy products)

  • In this study, monitoring of food additives as an artificial sweeteners on favorite dairy products of children, which are deal at supermarket, was performed. We analyzed aspartame, acesulfame-K, sodium saccharin, and sucralose from total 206 dairy products which are fermented milk, ice-creams and others. Aspartame was detected from 3 cases of fermented milk. Sucralose was detected from 10 cases of processed milk and 2 cases of fermented milk. The detected concentration was followed [average (minimum~maximum)]: aspartame 34.6 mg/kg (2.9~97.9 mg/kg), sucralose 29.8 mg/kg (5.5~67.7 mg/kg). The level of intakes of detected sweeteners were evaluated by comparisons with the acceptable daily intake (ADI) data established by the joint FAO/WHO expert committee on food additives. The estimated daily intake (EDI) of aspartame and sucralose per day were 0.37 mg/day, 0.20~0.32 mg/day. The intake levels were 0.05~0.8%, which were all within safe levels.

Accurate Quantification of Saccharin Using Isotope Dilution Liquid Chromatography Mass Spectrometry (ID-LC/MS)

  • Saccharin is a commonly used artificial sweetener in foodstuffs. However, for its carcinogenic dispute, it has been regulated by government bodies. In this study, isotope dilution mass spectrometry (ID-MS) was introduced for the accurate quantification of saccharin. To employ ID-LC/MS, we obtained its isotope analogue, $^{13}C_1$-sodium saccharin, by customized synthesis. Samples were spiked with $^{13}C_1$-sodium saccharin and analyzed with LC/MS in negative mode. Chromatographic conditions were optimized for the adequate chromatographic retention and separation of saccharin with a $C_{18}$ column. MS was operated with electrospray ionization by the selected ion monitoring (SIM) mode of $[M-H]^-$ for saccharin (m/z 182) and $[M-Na]^-$ for its isotope analogue (m/z 183). To validate the ID-LC/MS method for accurate measurement, we prepared a batch of a candidate material by sortifying quasi-tea-drinks with saccharin and analyzed samples gravimetrically fortified in various levels of concentration. The repeatability and reproducibility of this method was tested by analyzing the reference material. Result show that ID-LC/MS is a reliable method for the quantitative analysis of saccharin.

삭카린의 안전성과 각국의 관리 현황 (Safety of Saccharin and Its Current Status of Regulation in the World)

  • Saccharin was reported to cause urinary bladder cancer in male rats when fed at high doses in a two-generation study, which led to a ban on the use of saccharin in Canada. However, no carcinogenic effect has been observed in other animal experiments conducted with mice, hamsters, or monkeys. Furthermore, numerous epidemiological studies have indicated that there was no relationship between saccharin consumption and the risk of bladder cancer in the human population. Sodium saccharin produces urothelial bladder tumors in rats by the formation of a urinary calcium phosphatecontaining precipitate, which is not relevant to humans because of critical interspecies difference in urine composition. Consequently, in 1999 IARC (International Agency for Research on Cancer) concluded that saccharin and its salts cannot be classified as to their carcinogenicity in humans. In 2010, the EPA (Environmental Protection Agency) of the United States removed saccharin from its list of hazardous substances. It is expected that the use of saccharin in foods might be expanded because saccharin is currently considered safe.

The Role of Narrative Transportation in Web Series as Branded Entertainment

  • The dynamics of communications powered by the Internet, specifically from the increased use of social media, has led marketers to find creative channels to engage with the customers. One of the recent channels, "branded entertainment", is becoming familiar as an advertising strategy in which the content presented is a marketing tool for the advertising of certain brands. The current study examined the case of a branded-entertainment channel and the mechanism of the advertising instrument that leads to purchase intention. The specific purpose of this research is to investigate whether there is evidence of the role of narrative transportation and the fantasy proneness leading towards purchase of the brand advertised. To arrive at the conclusion, the study using web series sponsored by an artificial sweetener brand and employs a quantitative survey to question the audience. The findings contribute toward the understanding of how consumers respond to branded entertainment via video-sharing platforms. It is indicated that the stories presented in the web series can stimulate the audience to fantasize. Thus, the advertising message conveyed through narrative persuasion can form a favorable attitude toward the brand, which leads to intention to purchase. Practical elements are identified along with limitations and future research suggestions.

  • Nature applied flavanoids, glucosinolates and peptides for a great variety of functions. Flavanoids and glucosinolates are rich source of antioxidants, generally present in colored fruits and vegetables. Quercetin and its glucosides areone of the best examples of flavonol used in daily diet. Whereas peptides can act as antimicrobial, chemical messenger, neurotransmitter etc that regulating various life processes. Aspartame, a dipeptide is used as artificial sweetener and oxytocin for medical purposes, gained importance in everyday life. So, flavanoids, glucosinolates, peptides and their derivatives continue to hold the attention of synthetic chemists, agriculturists and biologists. Apart from a variety of naturally occurring bioactive metabolites, we are aiming to extract, separate and synthesize new analogs of promising natural drug candidates.

Various Types and Manufacturing Techniques of Nano and Micro Capsules for Nanofood

  • Nano and micro capsulation (NM capsulation) involve the incorporation for nanofood materials, enzymes, cells or other materials in small capsules. Since Kim D. M. (2001) showed that a new type of food called firstly the name of nanofood, which means nanotechnology for food, and the encapsulated materials can be protected from moisture, heat or other extreme conditions, thus enhancing their stability and maintaining viability applications for this nanofood technique have increased in the food. NM capsules for nanofood is also utilized to mask odours or tastes. Various techniques are employed to form the capsules, including spray drying, spray chilling or spray cooling, extrusion coating, fluidized bed coating, liposome entrapment, coacervation, inclusion complexation, centrifugal extrusion and rotational suspension separation. Each of these techniques is discussed in this review. A wide variety of nanofood is NM capsulated - flavouring agents, acids, bases, artificial sweeteners, colourants, preservatives, leavening agents, antioxidants, agents with undesirable flavours, odours and nutrients, among others. The use of NM capsulation for sweeteners such as aspartame and flavors in chewing gum is well known. Fats, starches, dextrins, alginates, protein and lipid materials can be employed as encapsulating materials. Various methods exist to release the ingredients from the capsules. Release can be site-specific, stage-specific or signaled by changes in pH, temperature, irradiation or osmotic shock. NM capsulation for the nanofood, the most common method is by solvent-activated release. The addition of water to dry beverages or cake mixes is an example. Liposomes have been applied in cheese-making, and its use in the preparation of nanofood emulsions such as spreads, margarine and mayonnaise is a developing area. Most recent developments include the NM capsulation for nanofood in the areas of controlled release, carrier materials, preparation methods and sweetener immobilization. New markets are being developed and current research is underway to reduce the high production costs and lack of food-grade materials.
