The Status of Serum Lipids and Antioxidant Vitamins in Female Patients with Cerebrovascular Disease (여성 뇌혈관질환자의 혈청지질과 항산화비타민 상태에 관한 연구)

  • This study was conducted of investigate the antioxidant vitamins and serum lipids status of 23 healthy female subjects and 22 female patients suffering from cerebrovascular disease hospitalized at any of three of general hospitals in Taegu. The systolic blood pressure of patients suffering from cerebrovascular disease(151.4$\pm$30.2mmHg) was significantly higher than healthy controls(129.7$\pm$17.8mmHg). The frequency of drinking alcohol and smoking in patients was also higher. Analysis of patient and control dietary intakes revealed that all subjects were consuming the minimed recommended energy-nutrient levels. HDL-cholesterol(26.15 vs 37.74mg/dl), serum vitamin E(12.69 vs 17.74mg/l) and vitamin C(65.59 vs 152.50ug/dl) levels were significantly lower, but triglyceride(221.01 vs 87.30 mg/dl) and total-cholesterol / HDL-cholesterol levels(5.98 vs 4.89)were significantly higher in the patient group. According to the results of this study, it is expercted that refraining from smoking and drinking alcohol, cultivating healthy living habits which can decrease stress, and maintaining suitable levels of serum antioxidant vitamins can prevent the occurrence of cerebrovascular disease.

Evaluation of Menus Using Antioxidant-Rich Foods at a Congregate Meal Program for the Korean Elderly (항산화식품을 이용한 노인 급식 식단 작성 및 만족도 평가 -서울 일부 60세 이상 성인 및 노인을 대상으로-)

  • The purpose of this study was to plan a 5-day menu using antioxidant-rich foods (vitamin A. vitamin C, vitamin E, phytochemicals) for a congregate meal program for the elderly and to evaluate the satisfaction of menus. The elderly participated in the congregate meal program at Guro Elderly Welfare Facility during October, 2003 (120 persons / day). The elderly liked yungyangbab, cooked rice with sweet potato and pumpkin, soybean paste soup with chinese cabbage, pan-fried cuttlefish patty with chopped soybean sprout, pan-fried beef patty with tofu and ginseng, fresh vegetable salad and most of desserts. The leftovers of menus were negatively correlated with satisfaction of menus. The 5-day menu contained over 1/3 of KDRIs (Dietary Reference Intakes for Koreans) except fiber calcium, vitamin K and vitamin E. In conclusion, menus using antioxidant-rich foods for a congregate meal program for the elderly will improve nutrient intakes and satisfaction of the meal program. It may help to prevent chronic diseases and improve healthy lives of the Korean elderly.

Effect of Vegetable Juice Supplementation on Serum Lipid Profile and Antioxidant Activity in College Women (채소주스 보충을 통한 여대생의 혈청 지질 및 항산화능 개선 효과)

  • The aim of this study was to assess the effect of 6-week vegetable juice supplementation (360 ml/day) on serum lipid profiles and antioxidant activity in college women. Twenty women (mean age: 21) with normal life style and dietary pattern and who are free of any specific diseases were recruited among the student in S women's university. The subjects consumed vegetable juice to take part in an uncontrolled clinical trial for a 6-week intervention period. While there was no difference in the concentration of total cholesterol and HDL-cholesterol, serum concentrations of TG and HDL/LDL ratio were significantly reduced by $22\%$ (p = 0.013) and $6\%$ (p =0.007) respectively. Significant decrease in manlondialdehyde (p = 0.000) was accompanied by an increase in the activity of serum antioxidant enzymes, such as GSHPx (p = 0.000), SOD (p=0.007). It was also found that total antioxidant status was improved by $5.4\%$ (p=0.009). Serum parameters were all changed without affecting body mass index, waist and hip circumferences, or nutrient intakes after six week of supplementation. This study demonstrated that the supplementation regular meals with vegetable juice can favorably affect serum lipid profiles and antioxidant systems, and hence could contribute to reduce the risks of chronic diseases in college women.

The Effects of Smoking on Antioxidative Enzyme Activities in Male Adolescents (흡연이 남자 청소년들의 일부 항산화 관련 효소체계에 미치는 영향)

  • Smoking can increase oxidative stress and thereby change the antioxidant defense system in the body. To investigate the relationship between male adolescent smoking and antioxidant status, we surveyed the eating habits and dietary intake of 82 smokers and 44 nonsmokers recruited from a male technical high school. In addition, antioxidant enzyme activity and lipid peroxide values were determined in both the plasma and the erythrocytes. Although the frequency of food intake was not significantly different, most nutrient intake was unexpectedly higher in smokers than in nonsmokers. In comparison with the Korean RDA, especially the average intake of Ca, Fe and vitamin $B_2$ didn t reach 75% of the Korean RDA in either smokers or nonsmokers. An analysis of antioxidant enzyme activity showed that plasma catalase. superoxide dismutase (SOD), glutathione peroxidase (GSH-px), erythrocyte catalase and GSH-px activities showed no significant difference between smokers and nonsmokers. However, the erythrocyte SOD activity of smokers (1.57 unit/mgHb) was significantly lower than that of nonsmokers (2.00 unit/mg Hb). In addition, the plasma ceruloplasmin concentration of smokers (28.68 mg/$d\ell$) was significantly higher than that of nonsmokers (26.30 mg/$d\ell$), whereas the specific ceruloplasmin ferroxidase activity of smokers (0.31 unit/mg) was lower than that of nonsmokers (0.35 unit/mg). The plasma and erythrocyte thlobarbituric acid reactive substance (TBARS) of smokers (2.57 $\mu$mol/L, 0.32 $\mu$mol/gHb) were also significantly higher than those of nonsmokers (2.25 $\mu$mol/L, 0.27 $\mu$mol/gHb). The overall data indicate that adolescent smoking might decrease the antioxidant capacity of the body, in part, by lowering the erythrocyte SOD activity and the specific ceruloplasmin ferroxidase activity.

Algae-based antioxidant containing selenium yeast (Economase®) enhanced the growth performance, oxidative stability, and meat quality of broiler chickens

  • Objective: An experiment was conducted to determine the effect of algae-based antioxidant containing Se yeast (EconomasE®) on the growth performance, visceral organ weight, meat quality, and oxidative stability of broiler chickens. Methods: Nine hundred sixty, day-old male broiler chickens (Cobb, 43.97±0.55 g) were divided into three dietary treatments and allocated into 12 deep litter pens in a completely randomized design giving 4 replicate cages for each treatment. Three dietary treatments were: i) control (CON, basal diet with sufficient nutrient), ii) vitamin E (VitE, basal diet supplemented with 100 IU VitE), and iii) Algae-based antioxidant containing Se yeast (EcoE, basal diet supplemented with 0.2% algae-based antioxidant containing Se yeast: EconomasE®). Maize soybean meal based basal diets were formulated to meet or exceed the nutrition requirement for broiler chickens. Chickens were fed ad-libitum experimental diets during the 42 days experiment period. On days 21 and 42, body weight and feed intake were measured to calculate the feed conversion ratio of the chickens. Intestine and visceral organs were measured together with meat quality and oxidative stability on days 14 and 42. Results: Chickens fed with EcoE showed improved (p<0.05) growth performance, meat quality, and higher (p<0.05) oxidative stability compared to the chicken fed on CON. Moreover, broiler chickens fed with EcoE showed similar (p<0.05) growth performance with better (p<0.05) meat quality and higher oxidative stability compared to the broiler chickens fed VitE (p<0.05). Conclusion: The algae-based antioxidant containing Se yeast can be supplemented into commercial broiler diets as a substitution of VitE while maintaining growth performance with enhancing meat quality and oxidative stability of the broiler chickens.

The Comparison of Health and Nutrient Intakes between Male Smokers and Non-Smokers (남성 성인의 흡연 유무에 따른 건강관심도 및 영양소 섭취 상태에 관한 연구)

  • This study examines the effects of smoking on the health and nutrient intake of male adults. The subjects recruited are divided into two groups according to non-smokers (n=64), and smokers (n=50). The results show that the non-smokers are significantly more interested in health and maintain more frequency of weekly exercise as compared to the smokers. Smokers reported that the main reason for failures in quitting attempts was a lack of willingness (62.0%). 44.0% of smoker would be interested in attending a smoking cessation program if they had the opportunities to do so. The non-smoker is considered healthy, and ate a regular diet, and low in fat-rich foods compared to the smokers. The non-smokers and smokers consume lower intakes of vitamin $B_2$, folic acid, and calcium (Ca). On the other hand, intakes of phosphorus, and sodium are the highest among all groups. In the case of smokers, increased intakes of antioxidant-rich fruits and vegetables should be encouraged, and the nutrition education for low-salt-type foods is also recommended.

Review for Selenium-fortified Functional Products of Livestock (셀레늄 강화 기능성 축산물에 관한 고찰)

  • Selenium(Se) is an essential trace element in the human body. Main function of this element is a catalytic part of antioxidant enzymes that protect cells against the attacks of free radicals that are produced during normal metabolism of the body. Se is also essential for normal function of the immune system and thyroid gland. It also appears to be a key nutrient in counteracting the development of virulence and inhibiting HIV(human immunodeficiency virus) progression to AIDS. It is also required for sperm motility and reduces the depression. Therefore, it is very meaningful that livestock producers generate Se-fortified animal products, such as Se-egg, Se-milk, Se-pork, Se-chicken and Se-beef from the point of producers as well as human heath. However, regulation on Se usage and Se-fortified food/feed is far from being clear in Korea even though Se should be carefully monitored because of its toxicity. Thus, one has to be aware of Se properties when designing Se-fortified animal products.

Comparisons of food intake between breast cancer patients and controls in Korean women

  • The purpose of this study was to compare food intakes between Korean breast cancer patients and a healthy control group. We compared the intake of nutrients of 117 food items between Korean breast cancer patients (n=97) and age matched healthy controls (n=97). Nutrient intake was estimated using a quantitative food frequency questionnaire. The mean caloric intake of breast cancer patients and healthy controls was not significantly different. Breast cancer patients consumed significantly less fat and antioxidant nutrients such as vitamin A, retinol, ${\beta}-carotene$, vitamin C and vitamin E when compared to the control subjects. Among the food items, the intake of eggs (p<0.01), legumes (p<0.05), vegetables (p<0.05), seasonings (p<0.001), and oils and fats (p<0.01) in breast cancer patients was significantly lower than that in the controls. These results suggest that Korean breast cancer patients consumed less amount of soy and vegetables, which are rich source of antioxidant nutrients and phytosterols. Thus, dietary guidance to increase intake of these foods may be beneficial in the prevention of breast cancer.

Effect of Turmeric Extracts on Nutritional and Antioxidant Properties of Germinated Korean Brown Rice

  • Brown rice is more nutritious than the commonly consumed white rice, however, the former is not widely accepted because of its coarse texture and difficulty in cooking. Germination is an easy technique to minimize the drawback of normal brown rice. The objective of this study was to investigate the effect of three different concentrations (1, 3, and 5% w/v) of turmeric extracts on the nutrient and antioxidant activities of germinated brown rice (GBR). The b (yellowness) values of the turmeric-treated GBR were significantly higher than that of the untreated control. Lower concentration (1%) slightly increased (3395.5 mg/kg) but higher concentrations (3 and 5%) reduced (1735.8 - 2393.7 mg/kg) the total mineral content in GBR, as compared to the control (3377.4 mg/kg). The amount of essential, non-essential, and total amino acids, including GABA, were increased with the concentration of turmeric extracts. The amount of essential amino acids was increased by 58.3, 71.5, and 88.3% with the application of 1, 3, and 5% extracts, respectively. The antioxidant potential of GBR was also enhanced with turmeric treatment. Overall results indicated that 1 or 3% turmeric treatment could be appropriate to enhance the nutritional and functional value of GBR.

Fruit Quality, Antioxidant Capacity and Nutrients between Organic and Conventional kiwifruit in Korea

  • Organic kiwifruits were smaller fruit size but had higher magnesium and dry matter content than conventional, meanwhile, fruit soluble solid content was similar to conventional. There were no significant difference in polyphenol contents and antioxidative capacity between organic and conventional although there were considerable variations among sample orchards. Several minerals were also similar levels in both systems.
