  • Liquid detergent based on sodium lauryl ethoxy sulfate (SLES) as main ingredient sometimes met gelling film on the surface when it is opened in the air. It was assumed because of the change of phase diagram of micelle by concentration change of surfactant, major ingredient of detergent when the water of detergent is evaporated. SLES showed strong hexagonal liquid crystal (LC) in 30~60 wt%, and lamellar LC over 60 wt%. In this research surface gelling formation of liquid detergent which is based on SLES as main ingredient was because of water evaporation. As water of detergent was evaporated, concentration of surfactant became higher. It was checked that surface gelling was LC of mixed surfactant system. Conclusionally we applied alpha olefin sulfonate (AOS) having good solubility, Sodium secondary alkane sulfonate (SAS) preventing hexagonal LC and hydrotrope sodium xylene sulfonate (SXS) and PEG1500 in order to prevent gelling film in SLES based liquid detergent. Like this, improved formula 4 and 5 can prevent the formation of gelling film on the surface of liquid detergent when it is opened in the air.

  • Cefuroxime axetil, a broad spectrum antibiotic, has been known to form a gelatinous mass in contact with aqueous media, which could lead to poor dissolution. Therefore, this study was conducted for removing the gelling phenomenon and thereby obtaining a favorable dissolution profile. We have found that the addition of poly (methacrylic acid, methyl methacrylate) could not only inhibit the tendency of cefuroxime axetil to form a gel but also showed the good dissolution profile compared to the formula without poly (methacrylic acid, methyl methacrylate). • Arthritis may be broadly classified as degenerative - related to defects in cartilage and other joint constituents, often age-associated - or inflammatory disease. Inflammatory arthritis called as rheumatoid arthritis (RA) is a chronic inflammatory arthropathy and characterized by a destructive arthritis. RA encompasses infectious arthritis, arthritis caused by intra-articular deposits of crystalline material (gout), syndromes associated with genetic defects (familial Mediterranean fever), and the immune-mediated inflammatory arthropathy. Degenerative arthritis called as osteoarthritis (OA), which is most frequently occurring, causes degenerative figures of knee, waist and knuckle, and accompanies severe pain around the cartilage. Also, it may cause morning stiffness, gelling effect, tenderness, bone swelling, crepitus, and motion disorders.

  • Previously, agar obtained from Gelidum sp. has a small molecular weight and has the disadvantage of inherent viscosity properties and poor functionality as a dietary fiber. In order to improve aforementioned disadvantages, agar having a fluidity that can be added to food at a higher concentration that a powder agar having a gelling property at low concertation was manufactured. In addition, the anti-inflammatory activity of agar hydrolysates was evaluated to confirm their potential as a functional material. As a result, agar hydrolysates significantly reduced NO levels secreted by LPS-activated macrophages and inhibited the expression of iNOS and COX-2, which are inflammatory mediators that regulates NO secretion in macrophages. Furthermore, in in vivo zebrafish embryos model results demonstrated significant reduction of LPS induced NO production after the treatment of agar hydrolysate hydrolyzed for 360 min. In addition, ROS production and cell death by stresses were also reduced in LPS-exposed embryos after the treatment of agar hydrolysis product hydrolyzed for 360 min. Taken together, agar hydrolysate hydrolyzed for 360 min can be easily added into food due to their fluidity and used as a food ingredient that inhibits inflammation due to their anti-inflammatory property.

  • Effects of plant growth regulators and anti-oxidants for rapid multiplication of Cymbidium kanran were investigated. The best gelling agent was 2.5 g/1 gelrite which needed less quantity (about 28%) and half price than 9 g/1 chemi-cal agar. Undefined edible agar was only a little bit worse than chemical agar in growth, but the price was half as much as the latter. The higher concentration of BA and NAA, the deeper browning of medium that prevented from performing its functions of plant growth regulators. Polyvinylpyrrolidone (M.W. 40,000) was the most effective anti-oxidant other than ascorbic acid, aspartic acid, and rutin in protecting the browning of medium, enhancing the effect of plant growth regulators, and thus prolonging the subculture cycle. Vigorous seedlings were obtained by 0.1∼1.0 mg/1 BA,0.1 mg/1 NAA and 1 g/1 polyvinylpyrrolidone treatments. Therefore, the best result for growth and econo-mic aspects in rhizome culture of Cymbidium kanran were obtained by using MS basal medium with 2.5 g/1 gelrite, 1 g/1 polyvinylpyrrolidone, 0.1∼1.0 mg/1 BA and 0.1 mg/1 NAA.

  • Theanine, the major amino acid and a sweet umami component of green tea, has anti-stress effects in humans. From green tea, theanine was extracted at 80℃ for 2 h using a low temperature, high pressure extractor, and caffeine was removed using an HP-20 column with 80% ethanol. Theanine extracts were applied to produce functional jelly using three kinds of gelling agents (I, II, and III) or various concentrations of theanine extracts (10-50%). Theanine jelly was characterized with respect to its physical properties, product stability, and physiological function. Gelling agent III (tamarind gum, xanthan gum, and locust bean gum=2:3:5, w/w/w) and S3 (35% theanine extracts) jelly exhibited the optimum textural properties with lower hardness and high springiness. Among theanine jellies, S3 exhibited optimum product stability, high 1,1-diphenyl-2-picrylhydrazyl (DPPH) scavenging, and acetylcholinesterase inhibitory activity. These results indicate that the anine extracts could be used as a neuroprotective source in the food industry.
