감자 전분의 첨가가 냉동 반죽에 미치는 영향 (The Effect of Addition of Potato Starch on the Frozen Dough)

  • 본 연구에서는 전분을 냉동반죽에 첨가한 효과에 대해 알아보았다. 냉동생지의 물리적 특성은 farino-graph. extensograph, amylograph를 통해 측정되었다. 측정된 결과는 전분이 첨가된 냉동반죽이 대조구에 비해 더욱 안정함을 알 수 있었다. 반죽의 물리적, 화학적 특성은 냉동보관기간에 따라서 측정되었는데 전분을 첨가한 반죽이 대조구에 비해 물리적, 화학적 변화가 작음을 보여주었다. 이는 전분이 냉동반죽의 냉동보관중 제품열화를 방지함을 의미한다. 이로부터 전분은 냉동보관중 냉동반죽의 효모활성력과 글루텐 망상구조를 냉동장애로부터 보호한다고 생각된다. 이 실험을 통하여 여러 전분 중에 특히 감자전분의 첨가가 냉동반죽의 안정성을 향상시키는데 효과가 있음을 알 수 있었다.

스피루리나를 첨가한 식빵의 품질 특성 (Quality Characteristics of Pan Bread with Spirulina Powder)

  • This study was conducted to investigate the quality characteristics of bread prepared with spirulina powder (0, 0.4, 0.8, and 1.2%). The volume and specific volume of bread decreased with increasing spirulina powder content. The pH of the bread with 1.2% spirulina powder was the highest. Content of phycocyanin increased with addition of spirulina powder. For color values, increasing spirulina powder content resulted in decreased lightness, redness, and yellowness in the crust. Amylogram showed that spirulina addition increased initial gelatinization temperature, decreased breakdown, and lowered the setback and consistency, which prevented retrogradation. Moreover, the hardness of spirulina bread decreased as spirulina addition increased. Further, springiness, cohesiveness, gumminess, chewiness. and resilience of bread with 0.8% spirulina powder were the lowest. Sensory results showed that the scores of overall preference and buying intention in the bread with 0.8% spirulina were the highest among the control and other groups.

벼품종 ″Pokhareli Mashino′에서 유래된 Opaque형질의 배유특성 (Characteristics of Opaque Endosperm Originated from a Rice Cultivar ′Pokhareli Mashino′)

  • 수도 품질다양화를 위한 품종육종에 이용하고자 India 품종 Pokhareli Mashino에서 발견된 저 amlose opaque형질에 대한 배유의 이화학적 특성을 조사하였다. 얻어진 결과를 요약하면 다음과 같다. 1. Opaque 특성을 가진 계통 CB 243은 쌀의 외관적 특성은 찰벼와 같았으나 요드용액에 대한 반응은 자청색으로 메벼와 같았다. 2. Opaque쌀의 전분형태는 찰·메벼와 차이가 없이 다각형입자이었으나 전분입의 크기는 타 품종에 비하여 현저히 작았다. 3. Opaque 쌀 전분입의 결정구조는 A형을 나타냈다. 4. Opaque쌀의 총 단백질함량은 13.06%로서 다른 품종들에 비해 약 50%정도 높았으나 아미노산 조성비율은 차이가 없었다. 5. Opaque쌀의 알카리 붕괴도는 1.7% KOH 용액에서 1.8정도로 다른 품종에 비해 매우 낮았다. 6. Opaque쌀의 전체 수분흡수량과 흡수속도는 찰과 고 amylose계통에 비하여 적고 늦었으며 메벼 통일과 비슷하였다. 7. Opaque쌀의 amylogram 특성은 호화 개시시간이 36분, 최고점도 980BU,최저점도 500BU, Steback - 260BU, Consistency 200BU로 찰과 메의 중간값을 보였다.

유화제 첨가 떡의 텍스처와 관능적 묘사 특성 (The Texture and Descriptive Sensory Characteristics of a Korean Rice Cake(Karedduk) with Added Emulsifier)

  • The texture and descriptive sensory characteristics of a Korean rice cake(Karedduk) with added emulsifier were investigated after 2 and 24 hrs of storage at $5^{\circ}C$. The emulsifier, SP, was added at 0, 0.1, 0.5 and 1% levels to the dry rice flour. In the amylogram, the peak viscosity(P), hot paste viscosity(H) and cold paste viscosity(C) of the rice flour with added emulsifier were higher than those of the control. The texture property analysis by a Texture Analyzer revealed that the springiness, cohesiveness and adhesiveness of the Korean rice cake(Karedduk) with added emulsifier were similar to those of the control, while chewiness, gumminess and hardness were lower compared to the control. Also, the hardness by sensory characteristics was significantly different as compared to the control. Lastly, adding emulsifier to the Korean rice cake(Karedduk) was effective at retarding retrogradation.

당류 및 유지류 첨가가 밥의 특성에 미치는 영향 (Effects of Adding Sugars and Lipids on Characteristics of Cooked Rice)

  • To investigate the effect of adding sugars and lipids on characteristics of cooked rice, the solubility, swelling power, blue value, amylogram and sensory evaluation characteristics of cooked rices with 0.5, 1.0, 1.5, 2.0% level of sugars and lipids additives were measured. The solubility, swelling power and blue value of cooked rice with sugars were increased as the more sugars were added. Those parameters of the cooked rice with isomalto oligosaccharide were higher than sucrose. The solubility decreased as the more lipids were added. The swelling power decreased as the more lipids were added. As the result of amylograph analysis, addition of isomalto oligosaccharide accelerates the gelatinization and retards the retrogradation. In sensory evaluation, the cooked rice with 0.5% level of sucrose and isomalto oligosaccharide were showed better acceptability than the others. In conclusion, the additions of sugars and lipids affect characteristics of cooked rice. Especially, the cooked rice with 0.5% isomalto oligosaccharide was showed the best physiochemical and sensory properties.

밤가루 첨가가 밀가루 반죽의 물성과 제빵 적성에 미치는 영향 (Effect of Chestnut Flour on the Rheology of Dough and Processing Adaptability of White Pan Bread)

  • 밤가루를 밀가루에 0%, 10%, 20%, 30% 대체한 복합분에 대하여 반죽의 물리적 특성 및 제빵 특성을 검토하고 밤가루 첨가가 빵의 기호도에 미치는 영향에 대해 조사하였다. 반죽의 물리적 특성 중 farinogram 측정 결과 밤가루의 첨가량이 증가함에 따라 반죽시간은 짧아졌으나 반죽의 안정도와 내구성이 약화되었다. Amylogram에서 호화온도는 대조군에 비해 다소 증가하는 경향을 보인반면 최고점도는 감소하였다. 반죽팽창도 측정결과 밤가루가 20%이상 첨가된 반죽은 변화가 없었으며, 제빵 후 빵의 부피가 작고 비용적도 낮았다. 밤가루 첨가에 따른 식빵의 품질평가결과 밤가루를 10% 첨가하여 제조한 식빵이 20%, 30% 첨가한 식빵에 비해 경도가 낮았으며, 내상 또한 비교적 작고 균일하였다. 밤가루 첨가시 10%이내가 좋을 것으로 사료된다.

  • A study was carried our to investigate the characteristics of physico-chemical components palatability of cooked rice accoring to different transplanting time. The treatments were consisted of five transplanting time, from May 5 to July 5 at 15 -day intervals, and six cultivars ; two early-maturing, two mid-maturing and two late-maturing cultivars which are clearly identified by evaluation of cumulative temperature and growth duration from seeding to heading of rice plants. In gelatinization characteristics of rice grain, alkali digestion value was low in the earlier transplanting regardlessof maturing types. Initial pasting temeprature maximum viscosity and breakdown as amylogram charcteristics were high at the transplanting of June 5. The palatability of cookedrice was evaluated that early-maturing cultivars were much better in early transplanting than in late transplanting . The optimum transplanting time for palatibility was the periods from May 5 to 20 in early maturing varieties, May 20 to June 5 in mid-maturing and June 5 to June 20 in late-maturing ones at Honam district in Korea.

인삼전분의 이화학적 특성 (Physical and Chemical Characteristics of Punux Ginseng Starch)

  • Starch was isolated from 4-year-old and 6-year-old ginseng roots and its physical and chemical characteristics were studied. The results obtained were summarized as follows. 1. The shape of ginseng starch granules was polygonal and rounded with its granule size ranging from 2.0 to 7.5$\mu$. The swelling power of 4-year-old ginseng starch was much greater than that of 6-year old ginseng starch. Gelatinization pattern showed that 6-year-old ginseng starch gelatinized rapidly at $65^{\circ}C$, whereas 4-year-old starch continued to gelatinize, without having a definite gelatinization temperature as temperature increased 3. Amylogram of ginseng starch showed that gelatinization initiated at 61$^{\circ}C$ and was completed at 88$^{\circ}C$ with its viscosity reaching at 810 B.U. 4. The amylose contents were 32% and 9% for 4-year-old and 6-year-old ginseng starch, respectively. 5. X-ray diffraction analyses indicated that there were some structural differences between 4-year-old and 6-year-old ginseng starch.

품종을 달리하여 제조한 인절미의 텍스쳐 및 노화도 특성 (Texture and Retrogradation Characteristics of Injeulmi Made by Different Varieties of Waxy Rice)

  • The textural properties and retrogradation of injeulmi(Korean traditional waxy rice cake) made from various waxy cultivars were examined to compare the varietal difference. Injeulmi made from Shinsun chalbyeo and Whasunchalbyeo were exhibited relatively soft texture, while Taichung Sen Glu I and Yuk donongrimna were shown high adhesivness. Intermediate or long grain rice such as Yukdonongrimna, Hangangchalbyeo and Taichung Sen Glu I had a tendency to be rapidly retrogradatated as compared with short grain rice, Shinsunchalbyeo and Whasunchalbyeo. Amylogram characteristics of these intermediate or long grain rice cultivars were shown high value in consistency and low value in setback. Studies per formed by various cookery procedure demonstrated that injeulmi made from cooked waxy rice was softer and delaying retrogradation than made from waxy rice flour.
