Effects of Nutrition Education on Nutrition Knowledge , Food Attitude , Food Habits, Food Preference and Plate Waste of Elementary School Children Served by the National School Lunch Program (급식학교에서의 영양교육이 아동의 영양지식, 식생활태도, 식습관, 식품 기호도 및 잔식량에 미치는 영향)

  • This stusy was designed to develop nutrition education program for the primary school children served by the national school lunch program and to evaluate ist educational effects. Subjects consisted of 61 elementary school children(30 in the control group and 31 in the treatment group) in the 5th grade. Only the treatment group participated in a twelve-week nutrition education program. To evaluate the effects of the nutrition education program, the control and treatment groups were given a pretest and posttest for nutrition knowledge, food attitude, food habits, food preference and plate wastes before and after nutrition education. The results obtained are summerized as follows ; the nutrition knowledge test score (30.4) of the treatment group was significantly higher than that (17.4) of the control group after nutrition education . However, there was no significant difference between the two groups in food attitude test scores after nutrition education. We also did not find any difference induced by nutrition education or the food preferences of the treatment group. After nutrition education , the amount of plate waste of some menus were significantly decreased in the treatment group, but the amount of plate waste of the control group was not significantly changed. However, there was no significant difference in the post test scores above food habits between two groups. It was concluded that a twelve-week nutrition education program can improve nutrition knowledge and decrease plate waste but is not enough to change food attitude , food preference and food habits. It can besard that the two components of foodservice are nutritional foodservice and nutrition education. Foodservice management alone without nutrition education is hardly enough to improve the nutritional status of school children. The result of this study indicate that applying the nutrition education program to elementary school children who are served by the national lunch program can maximize the effects of the national school lunch program.

Evaluation of Dietary Habits and Nutrition Quotient Scores according to Leftover Food during School Meal Service among Middle School Students in Gyeonggi (경기지역 중학생의 학교급식 잔반량에 따른 식생활 및 영양지수 평가)

  • This study examined the dietary habits and nutrition quotient (NQ) scores according to leftover food during school meal services among middle school students in the Gyeonggi region. A survey on the dietary habits was conducted among 405 male and female middle school students located in Seongnam City, Gyeonggi Province. The amount of leftover food in the school meals was surveyed using the visual method through a questionnaire over two days. The survey was conducted from July 8, 2019, to July 12, 2019. After calculating the average total leftovers of each student over the two days, they were categorized into the following three groups: the top third was the large leftover group. The middle third was the medium leftover group, and the lower third was the small leftover group. The characteristics of the groups that had leftovers were analyzed. Female, normal-weight, and underweight students accounted for a greater proportion of the large leftover group than male, overweight, and obese students. The rates of selective eating and compliance with new food intake were significantly lower in the large leftover group than in the small leftover group. A comparison of the nutrition quotient for the adolescent (NQ-A) scores of each group revealed significantly lower scores of the large leftover group for all factors (balance, moderation, food diversity, practice, and environment) than the small leftover group. Therefore, there are statistically significant differences in the dietary habits, nutritional quality, and eating behaviors of middle school students that are associated with the amount of leftover food during school meals.

  • The purpose of this study is to analyze the conspicuous consumption propensity of middle schoolers and to develop effective consumer education programs which help improve consumer socialization. Empirical data were collected by using a questionnaire for 500 middle schoolers who reside in the city of Daegu. The results of this study are as follows: First, significant differences in materialistic propensity can be found. It results from the difference in parents' educational background, amount of monthly pocket money, influence of mass media and friends, and the consumer education hosted by schools. Second, significant differences in the conspicuous consumption propensity can be found. It comes from the difference in materialistic propensity and control of purchasing behaviors. Third, the variables affecting the middle schoolers' propensity of conspicuous consumption include influence of mass media and friends, control of purchasing behaviors, influence of materialistic propensity, amount of monthly pocket money, and mother's educational background. Lastly, this study helps develop consumer education programs for the teenagers. The program should use statistics data, Internet, presentation materials, putting higher priority on experience activities, survey, analysis, discussion, and presentation rather than theoretical education.

Survey on Foodservice Satisfaction and Dietary Education needs for Improvement of School Foodservice in Middle School Students in Seoul (서울지역 일부 중학생의 학교급식 개선을 위한 급식만족도와 식생활교육 요구도 조사)

  • Objectives: This study was conducted to examine the satisfaction of school cafeterias among the surveyed group at two middle schools located in Seoul. Methods: 574 out of 600 middle school students in Seoul (95.7%) completed the study. Results: Satisfaction rate of school meals was significantly higher among girls (73.2%) compared to boys (45.1%). The reasons for satisfaction factors of school meals were with the taste of school meals (55.1%), menu (19.3%), nutrition (14.2%), and food hygiene safety (7.0%). Students who had a double-income family, well-educated mother and higher happiness in their life reported a higher satisfaction with school meals. Both boys and girls who consumed milk frequently showed significantly higher satisfaction with school meals. Factors that were related to satisfaction of school meals were food temperature, the amount of food (especially among boys). Variety in the menu and food distribution speed were less related to the satisfaction of meals. In the case of girls, waiting time, food distribution speed were more important to them while the kindness of school staff was a less important factor. Improvements that were needed to increase the satisfaction for the school lunch meals, from the most important to least important were as follows: variety of meals (36.6%), food distribution speed waiting time (24.6%), taste of food (15.7%), amount of food (7.7%), hygienic management (5.1%), food quality (4.7%), kindness (3.0%), temperature of the food (2.8%). Students preferred to broadcast on campus and cooking practice for the dietary education. Conclusions: To improve school meal satisfaction, it is necessary for food distribution facilities to make improvements with regard to variety of meals and reduced waiting time.

The Consumption Changes of a Fish and Vegetable according to Indirect Nutrition Education and Cooking Methods (간접적 영양교육과 조리법이 생선 및 채소 섭취량 변화에 미치는 영향)

  • This study was targeted at 91 students living in a boys' high school dormitory and centered on the how the consumption of fish and vegetables changed after students were educated according to nutrition education and cooking methods. First of all, the primary investigation of the leftover amount in the beginning of the semester was conducted five times for five days from March 21st to 25th, 2011. The secondary investigation was conducted with the same diet for five days as well from December 1st to 7th. Then the tertiary investigation was performed eight times from December 12th to 30th, after cooking method changes. There was a difference of the total leftover food amount between the first grade and the second grade during the beginning of the semester, but after the nutrition education there was no difference of the leftover food amount. In particular, leavings of vegetables and fish both significantly decreased in the first grade, after the nutrition education to encourage students to eat fish and vegetables. However, there was no difference in the leftover food amount of the second-grade students who received the education before, between the beginning and the end of the semester. When cooking fish the way students preferred, they had fried fish fillets the most, followed by roasted fish fillets, roasted bone-in fish, and braised fish. There were significant differences. Regarding vegetable, students ate salad the most, followed by Geotjeori and blanch, and there were significant differences.

Analysis of the Relation between Biological Classification Ability and Cortisol-hormonal Change of Middle School Students

  • The purpose of this study is to investigate the relation between the classification ability quotient and cortisol-hormonal change of middle school students. Thirty-three students, second graders in middle school, performed the classification task that can be an indicator of students' classification ability. And then amount of the secreted hormone was analyzed during task performance. The study results were as follows: First, the classification methods of students mostly utilized visual, qualitative. Their classification patterns for each subject were static, partial, and non-comparative. Second, the amount of stress-hormone was secreted from students during the experiment decreased in overall after the free classification. It seemed that student-centered activity relieved stress. Third, the classification ability quotient turned out to be significantly correlated to the stress hormone, which means that there was a close relationship between classification ability and stress level. It was also considered that stress had a positive effect on the improvement of classification ability. This study provided physiologically more accurate information on the stress increased in the learning process than other conventional studies based on reports or interviews. Finally, researchers could recognize the effect of stress in the cognitive activity and the need to find an appropriate level of stress in learning processes.

Expenditure for Education of Two children (자녀의 학교 급별 교육비지출 : 두 자녀 가정을 중심으로)

  • The purposes of this study were to identify education expenditure and to analyze contributing factors to total education expenditure for two children among married couples. For these purposes, total sample of 1,256 married couples those having two children of both pre-school aged and school aged were selected, and total sample was divided into four groups by first child's school aged; those were pre-school aged(375), elementary school aged(385), middle & high school aged(248) & college aged(248). Statistics used for the analysis were frequencies, means, percentile, and tobit and OLS analysis. The results were as follows. First, the households those having the first child of pre-school aged didn't spent for public education expenditure, while public education xpenditure of school aged increased continuously. The households having the first child of high school aged spent the most private education expenditure among four groups, however, total education expenditure of the households having the first child in college aged spent the most education expenditure were household head's age, family size, home ownership and financial asset amount, and elementary school-aged's factors were household head's age, education level, home ownership and total household income. Also, household head's education level, wife's expectation of future economy, residence, total household income had significant effects on total education expenditure in middle and high school-aged, and household head's job, home ownership, contact with neighborhood, residence and Engel's coefficient were significant variables in college aged.

Large amount of graduates with the BS, MS or PhD degree are welcomed local or abroad for the rapid development of advanced power industry in China.

  • The purposes of this study are to analyze the elementary school science textbooks (chemistry part) developed under the 7th national curriculum and to compare with those under the 6th national curriculum. The lesson hour, the number of pages, contents at each grade, deleted or newly introduced contents were analyzed. Some features of the 'Separation of mixtures' chapter were also analyzed. Educational implications were discussed in the aspect of whether the intention of revised curriculum was reflected, especially whether the amount of teaming was decreased.

Social Determinants of Smoking Behavior: The Healthy Twin Study, Korea

  • Objectives: The purpose of this study was to identify any influence of socioeconomic status on smoking and smoking cessation in a situation where genetic factors are controlled. Methods: The sample for this study was 2502 members of the twins and families cohort who participated in the Korean Healthy Twins Study from 2005 to 2009. Groups of brothers or sisters, including twins and fraternal twins, were compared in terms of smoking and smoking cessation behaviors according to differences in socioeconomic status and gender. Results: In a situation with complete control of genetic factors, results showed that the daily smoking amount, cumulative smoking amount, and dependence on nicotine decreased with higher-status occupations, and the rate of smoking and amount of cumulative smoking decreased with higher levels of education. Regarding smoking cessation behavior, a higher level of education was associated with a lower smoking cessation rate, and no significant gender differences were found. Conclusions: Environmental factors had a stronger influence on smoking behavior than did genetic factors. Genetic factors had greater influence on smoking cessation than did environmental factors; however, this requires verification in further studies.
