Fermentation Characteristics of Moru Wine Fermented with Rose rugoga Thun (해당화와 머루를 함께 발효한 해당화 머루주의 발효특성)

  • Four different mixing ratios of Rose rugosa Thun and Vitis amurensis (Moru) were prepared. These included Rose rugosa Thun two vs. Moru one (Moru 33), Rose rugosa Thun one vs. Moru two (Moru 67), Rose rugosa Thun one vs. Moru five (Moru 83), and Moru (Moru 100). Their physiochemical changes were investigated during 28 days of fermentation followed by aging. The final brix, pH, and total titratable acidity values of the four experiments were in the following ranges: 6.0-8.2$^{\circ}$Bx, 3.87-4.03, and 0.94-1.18%, respectively. Final ethanol contents were 6.5% in Moru 33, 11.8% in Moru 67, 11.1% in Moru 83, and 11.4% in Moru 100. As the amount of Rose rugosa Thun increased, anthocyanin content, color intensity, organic acid, and free amino acid concentrations were reduced. These findings demonstrate that the supplementation of Rose rugosa Thun to Moru prior to alcohol fermentation may help change the acidity, colour, and taste in the final product.

Development of Rice Wines Using Cornus officinalis and Scutellaria baicalensis by Antioxidant Activity Tests (고항산화능 소재 선발을 바탕으로 한 산수유와 황금을 이용한 약주 개발)

  • In this study, the antioxidant activities of 27 medicinal herbs and plants were measured. The dried medicinal herbs and plants were pulverized and extracted by water, 15% ethanol, and 45% ethanol, respectively at above $80^{circ}C$ for 90 minutes. The original and diluted extracts were tested for their antioxidant activities by 1,1-diphenyl-2-picrylhydrazyl (DPPH) free radical-scavenging activity assay. Cornus officinalis (C) and Scutellaria baicalensis (S) were selected to develop rice wines with higher antioxidant activities, based on the result of the 45% ethanol extraction. The rice wine developed using sample showed the highest antioxidant activity as comparing to those of other commercial rice wines. The rice wine samples were analyzed for titratable acidity, pH, $^{\circ}Brix$, reducing sugar content, color (L, a, b), amino-acidity, and ultraviolet absorption. The preferences for color, aroma, and overall acceptability were determined using a 9-point hedonic scale by 150 consumers. The sweetness, sourness, fruitiness, color, and medicinal herb-taste levels of the developed rice wines were also evaluated, using a 9-point just-about-right scale. The mean overall acceptability score of c (5.54) was higher than that of sample S. Based on the results, the sourness and medicinal herb-taste levels of sample s should be modified to higher levels, and the fruitiness of sample S also needs to be adjusted. For a future study, the final compositions of the developed rice wines will be adjusted for product launching based on the preference test data acquired in this study.

Changes of Microorganisms, Enzyme Activity and Physiological Functionality in the Korean Soybean Paste with Various Concentrations of Ginseng Extract during Fermentation (인삼 농축액 첨가에 따른 재래식 된장 발효 과정중의 미생물, 효소 활성 및 기능성의 변화)

  • In order to improve the functionality of Korean soybean paste the changes of microorganisms, enzyme activity and physiological functionality of five types of Korean soybean paste prepared with various concentrations of Ginseng extracts. The pH of Korean soybean paste was decreased during fermentation but total acidity was increased. NaCl concentrations was increased up to 15.67~16.90% until 30~45days of fermentation and amino acidity was increase of the mixture ratio of Ginseng extract. Reducing sugar content was increased up to 45days of fermentation and total sugar content was increased up to 16.92~20.01% until 30days of fermentation, but decreased after that. The number of bacteria was highest in all sample after 45days fermentation, while that of mold was decreased during fermentation. Amylase and protease showed the highest activity at 30days of fermentation. Tyrosinase activity was increased during fermentation. Antimutagenic activities of Korean soybean paste (10% Ginseng extract) were 80.90%, 62.46% against MNNG, NPD on S. typhimutium TA100 and 51.96%, 58.88% against NQO, NPD on S. typhimutium TA98.

Comparison of Physicochemical Properties between Organic and Conventional Soybean by Steaming Treatment (증자 처리한 일반콩과 유기콩의 이화학적 특성 분석)

  • The differences between organic and conventional soybean were studied based on their physicochemical properties by steaming treatment. There was no difference between the two kinds of soybean regarding crude protein, crude fat and crude ash contents. Reduction in sugar content was higher in raw organic soybean than raw conventional soybean. However, there was no difference between the two soybeans after steaming. Amino nitrogen content was higher in organic than conventional soybean. Further, there was no difference between the two soybeans after steaming. Regarding pH, acidity and salinity, there was no differences between the two soybean after steaming. Organic soybean was more bright than conventional soybean after steaming. The yeafercontent and number of bacteria in raw soybean were not different between the two soybean types. The number of fungi was higher in organic than conventional soybean. Upon steaming, the yeast number was different between two kinds of soybean. Further, the number of bacteria was higher in organic than conventional soybean. The number of fungi was not different between the two soybeans.

Quality Characteristics of Doenjang Added with Red Pepper (Capsicum annuum L.) Seed (고추씨 첨가 된장의 품질 특성)

  • This study investigated the physico-chemical and sensory quality of Doenjang added with red pepper (Capsicum annuum L.) seed. The initial moisture content and salt content of Doenjang were 52.03-53.79% and 13.28-14.05%, respectively. The moisture and salt contents of Doenjang slightly decreased and increased, respectively, as fermentation periods increased. According to increasing fermentation periods, pH of Doenjang showed a little decreasing value although there were no difference between samples with various red pepper seed contents. On the other hand, titratable acidity of Doenjang increased as fermentation periods increased. Also, Doenjang added with red pepper seed had higher titratable acidity value than control Doenjang without red pepper seed. In the color of Doenjang, ‘L’ of lightness, ‘b’ of yellowness, and ‘a’ of redness were decreased as fermentation periods increased. Also, generally, increase of red pepper seed concentration resulted in higher values of redness (a), yellowness (b) and lightness (L) of Doenjang. Also, amino-type nitrogen content, which was 497-623 mg% in initial fermentation period samples, increased to 1,000 mg% for control and to 756~896 for red pepper added at the fermentation 120 days. In the total microbes, total cell count in the Doenjang samples was in the range of $10^7{\sim}10^8$ CFU/g regardless of fermentation periods. In contrast, yeast and mold number of Doenjang samples showed the range of $10^5$ CFU/g at the initial fermentation periods and decreased thereafter. In the sensory evaluation of Doenjang, unique Doenjang flavor increased regardless added red pepper seed as fermentation periods increased.

Changes in the Physicochemical Property, Angiotensin Converting Enzyme Inhibitory Effect and Antimutagenicity During the Fermentation of Korean Traditional Soy Paste (Doenjang) (재래식 된장의 발효과정 중 이화학적 특성과 Angiotensin 전환효소 저해능 및 항돌연변이원성의 변화)

  • Korean traditional soy paste (Doenjang) was fermented using Meju prepared by the culture of wild microorganisms in steamed soy beans. During the fermentation, changes in the physicochemical and several functional properties were monitored. Total acidity and amino acidity increased from 0.09 to 0.96, and 2.24% to 3.28% respectively, Amylase and protease activities increased and showed the maximal level after 60 days of fermentation, which were 4.03 and 7.29 units/ml, respectively. However, both enzyme activities decreased after then. The inhibitory activities against tyrosinase and angiotensin converting enzyme increased and reached 20.57 and 38.18% respectively. Antimutagenic activities against N-methyl-N'-nitro-N-nitiosoguanidine and 4-nitro-O-phenylenediamine (NPD) increased for 90 days and roached 70.21 and 60.01% in S. enterica serovar Typhimurium TA100, respectively. Against NPD and 4-nitroquinoline-1-oxide, the antimutagenic activities also increased and reached 50.91 and 46.35% in the strain TA98, respectively.

Evaluation of quality characteristics of beer by addition of rice rate (쌀 첨가비율에 따른 맥주의 품질 특성 평가)

  • In this study the effect of rice addition on the quality of beer was investigated. Pilot-scale brews were performed with addition ratios of 10, 20, 30, and 40% of brown rice (Oryza sativa L. cv. Hangaru) which were compared with 100% malt beer and commercial beers in terms of quality. Alcohol content of beer was between 3.93 to 4.40%. The total sugar content increased when the rice percent was increased. The pH range of beer were 4.32 and 4.60, which were no significant differences found among by the rate of rice added. Total acidity and amino-acidity decreased corresponding to increasing percent of rice, on the other hand, lightness of beer was increased the increase in percent of rice, while redness and yellowness of beer were decreased. The study demonstrated that the increases of rice addition in beer provided some positive effects on beer quality by decreasing bitterness where as improving beer color.

The Changes of Quality and Microflora during the Preservation of Korean Takju (탁주(濁酒) 보존중(保存中) 품질변화(品質變化)와 미생물군(微生物群) 소장(消長))

  • The changes of the qualities and the components of 5 different Takju (Korean wine) in various stroage temperatures were evaluated. Commercial Takju didn't change in acidity and alcoholic degree at $5{\sim}10^{\circ}C$ for 36 hours. But at $30{\sim}35^{\circ}C$ the alcohollic degree has inversed to $5.0{\sim}7.0$. As time went by, pH nearly went down to pH 3.7 and went up back over 4.0. Amino acidity was risen continuously during the stroage terms and the change of reducing sugar was irregular. The number of vegetable cell of yeast in commercial Takju at $30{\sim}35^{\circ}C$ after 18 hours was $2.4{\times}10^8$, at $5{\sim}10^{\circ}C$ after 36 hours $2.4{\times}10^8$, and each of them was reduced below $1{\times}10^8$ after exceeding the limit of shelf-life. Number of general bacteria was increased suddenly in a high temperature at the first and it was decreased afterwards, but the tendency of increase and decrease was slow in a low temperature. It was possible to keep the quality for 5 days at $5{\sim}10^{\circ}C$ in case of commercial Takju and the shelf-life of pasteurized Takju was extended over 7 days.

Fermentation Characteristics of Makgeolli Containing Aronia (Aronia melanocarpa, Black chokeberry) (아로니아를 첨가한 막걸리의 발효특성)

  • This study was conducted to investigate the quality characteristics of makgeolli containing aronia, (Aronia melanocarpa (0-1.9%)). After an initial decrease in the range of pH from 4.93-5.04 to 3.43-3.61 over a period of 6 days, it gradually increased until 14 days. As the fermentation proceeded, sugar contents and reducing sugar contents initially increased in majority of the samples, and subsequently decreased after 2 days. Total acidity contents increased until 6 days and then became higher as the content of aronia increased. Total acidity levels were within the range of 0.50-0.62%. After 14 days of fermentation, the alcohol contents ranged between 11.97 and 14.13%. Over the same time span, the amino acid content increased from a range of 1.57-2.22 to 5.86-6.92%. The microbial cell count and yeast colony count increased over the initial 4 days and then gradually decreased. Total polyphenol content and total flavonoid of aronia makgeolli were significantly higher than those of the control group. Based on the sensory evaluation, makgeolli with 1.3% aronia demonstrated the highest overall acceptance.

Keeping Quality and Taste Compounds in the Extracts from Rapid Fermented Anchovy Sauce (속성 멸치간장 엑기스분의 저장 안정성 및 정미성분)

  • As a part of investigation for utilizing anchovy more effectively as a food source, this work was undertaken the changes in keeping quality and taste compounds in the extracts from rapid fermented anchovy sauce during storage at room temperature. Rapid fermented products was made of chopped anchovy, water, koji and soybean protein isolate (20:10:2:1, w/w) thorough hydroxazine for 6 hours at $50^{\circ}C$. The liquified anchovy sauce extracts, contained 15% salt(w/w), were stored for 60 days at room temperature. The changes in pH, acidity, amino nitrogen and contents of taste compounds of the products were negligible during storage. The viable cell counts and histamines of the products were less than 30(colony/e extracts), 7.2-21.8(mg/100g extracts) during storage predominant free amino acids showed in the extracts from products were alanine, glutamic acid, histidine, lysine, leucine, valine and the total contents of those free amino acids were 60.4-64.3% of total free amino acids at final stage of storage. The major nucleotides and their related compounds of the products were revealed hypoxanthine, which were 69% over the total nucleotides and their related compounds. Using the omission test, the major taste compounds in the products were revealed free amino acids, nucleotides and their related compounds. The non-volatile organic acids, total creatinine, betaine, and TMAO were seemed to act an auxiliary role in taste of the extracts from rapid fermented anchovy sauce.
