Comparison of Volatile Aroma Components and Non-volatile Organic Acids in Tobacco Lamina and Stems. (잎담배 엽육과 주맥의 휘발성 정유성분 및 비휘발성 유기산의 비교)

  • Volatile aroma components, non-volatile organic acids in lamina and stems of flue-cured(NC 2326) and burley ( Burley 21) were analyzed by gas chromatography and mass spectrometry, respectively. Then compositional differences of these components between lamina and stems were discussed. The contents of volatile components were higher in flue-cured than in burley tobacco, and it was also higher in lamina then in stem. The major aroma components in lamina were neophytadiene , nicotine, solanone and benzyl alcohol but those in stems were palmitic acid, neophytadiene, nicotine, solanone and phenyl ethyl acetate. On the other hand, the contents of non-volatile organic acids were higher in burley than in flue-cured tobacco, and these values of burley tobacco were higher in lamina than in stem but flue-cured tobacco were higher in stem than in lamina. The major acids in all the above four tabacco samples were malic, citric, oxalic and linolenic acid.

Antioxidant Activities of Agrimonia pilosa Ledeb: In Vitro Comparative Activities of Its Different Fractions

  • The antioxidant potentials of the methanol extract and its various fractions from Agrimonia pilosa Ledeb were measured as 1,1-diphenyl-2-picrylhydrazyl (DPPH), and 2,2'-azinobis-(3-ethylbenzothiazoline-6-sulphonic acid) (ABTS) radical scavenging abilities as well as the reducing power decreasing NO in vitro. The methanol extract of Agrimonia pilosa Ledeb showed significantly strong scavenging effects on free radicals of DPPH, ABTS, and NO. Hexane fraction (HF), ethyl acetate fraction (EF) and n-butyl alcohol fraction (BF) were prepared by solvent fractionation. By comparison of polyphenol contents among BF and HF, EF with high polyphenol contents showed the highest DPPH, ABTS, and NO scavenging effects with the value of 50.2%, 80.4%, and 65.7%, respectively, at the highest tested dose. HPLC analysis revealed the presence of various phenolic compounds in EF of Agrimonia pilosa Ledeb. These results suggest that EF could be considered as natural antioxidant sources and dietary nutritional supplements to prevent oxidation-related diseases.

The Factors Affecting Bicycle Riding Under the Influence in Korean Adults: The Korea National Health and Nutrition Examination Survey

  • This study was conducted to identify the impact factors of bicycle driving under the influence (DUI) among Korean adults. The participants were 1,297 Korean adults. The prevalence of bicycle DUI was 11.7% of Korea adults. The factors affecting bicycle DUI were gender, education level, frequency of drinking, one-time drinking, vehicle DUI. To prevent bicycle DUI, we would need to facilitate appropriate drinking habits, provide treatments for disorders related to alcohol use, and change the social perception of bicycle DUI. Also, we should promote the establishment of the culture of bicycle helmet use, the establishment of a system that imposes fine to non-helmet-using riders, and education and publicity on the national level to recognize that bicycle DUI and DUI are mutually related.

The Effect of Garlic and Medicinal Plants Extracts on the Liver Function and Lipid Metabolism of Rats Administered with Alcohol (마늘과 한약재 추출물의 혼합급이가 알코올 투여에 의한 간기능 및 지질대사에 미치는 영향)

  • To investigate the effects of garlic and medicinal plants extracts (GP) on liver function and lipid metabolism of rat administered with ethanol chronically, Sprague-Dawly male rats were fed with a basial diet (Normal), a basial diet plus ethanol (Control, 10 mL of 20% ethanol/kg b.w/day), a control diet plus 0.5% garlic and 1.0% medicinal plants extracts (GP-I), and a control diet plus 1.0% garlic and medicinal plants extracts (GP-II) for 4 weeks. Blood glucose in GP group was significantly decreased, but not significantly different between GP-I and GP-II group. Albumin content of serum was significantly increased in GP groups, while total lipid, cholesterol and triglyceride of serum were significantly decreased in GP group. Total cholesterol and triglyceride were not significantly different between GP-I and GP-II group. LDL-cholesterol in blood was decreased to 58% in GP-I group and 73% in GP-II group compared to the control group, it's contents were the lowest amounts among the normal, control and experimented groups. Lipid levels in liver of rat administered with alcohol were decreased in GP group and significantly different in GP-II group. GOT and r-GTP activities were significantly higher in control than normal group, while GPT and ALP activities were not significant in groups administered with alcohol. Activities of GOT, GPT and r-GTP were significantly lower in GP group than control group, while ALP activity was not significant in all groups. TBARS contents were not significant in serum, but it's contents in liver were significantly decreased in GP groups than control group. DPPH radical scavenging ability in serum and liver was significantly increased in GP groups. These results indicate that garlic and medicinal plants extracts were effective in improving and protecting liver disorder induced from long-term alcohol consumption.

The analysis of compatibility between the leading indicators and health promotion programs of community health centers in Seoul (핵심 건강지표와 서울시 보건소 건강증진사업 내용의 일치성 분석)

  • Objectives: This study examines that the compatibilities between the health promotion programs in community health center and the leading health indicators in National Health Plan. Methods: We analyzed health promotion programs associated with three health indicators; smoking(smoking rate in male), alcohol use(alcohol use rate in adults), obesity(obesity rate) in twenty five community health centers in Seoul. First, we classified three groups(excellent, fair and poor groups) using average scores of Seoul, that of Korea and National Health Plan2010 goals in three health indicators. Afterwards, we examined the compatibility between contents of health promotion programs regarding leading health indicators and the specific program activities. Results: The compatibility levels between health indicators and contents of health promotion programs was 80 % for smoking among fair and poor groups while fair and poor for smoking reported 60% and 70%, respectively. For obesity, excellent group reported 80% and fair group had 91%. Conclusion: In conclusion, although all districts were able to access available data for health indicators and health statistics every year, it seems that they did not only utilize these data enough in conjunction with health promotion programs but also did not integrate specific activities according to National Health Plan systematically.

Comparison of the Aroma Components in the Korean Traditional Yakjus. (전통(傳統) 약주(藥酒)의 향기성분(香氣成分) 비교(比較))

  • Baikhaju, Nockpaju, Dongdongju and Chungmyungju of the traditional Yakjus - the native alcoholic beverage of Korea - with the different fermentation methods were brewed and the volatile odor components were analized by gas chromatography methods of headspace gas. The general constituent content in them was different a little, and formaldehyde, acetone, acetaldehyde, ethylacetate, ethylalcohol, n-propanol, iso-butanol, iso-amylalcohol, diacetyl and dimethyl sulfide were separated and quantified into the volatile aroma components. The contents of acetaldehyde, ethylacetate and n-propanol were $17{\sim}73ppm$, and iso-amylalcohol were $418{\sim}925ppm$. The contents of formaldehyde and acetone were $0{\sim}2.15ppm$, and that of diacetyl and dimethyl sulfide were $0.032{\sim}1.012ppm$, and $5{\sim}65ppb$.

Physicochemical Properties of Korean Non-sterilized Commercial Makgeolli (국내 시판 생막걸리의 이화학적 특성)

  • This study was examined the quality characteristics of 20 types of non-sterilized commercial Makgeolli. These samples are classified according to firm size, enterprise Makgeolli(4 samples), prize-winning Makgeolli(6) and local Makgeolli(10). The alcohol contents of Makgeolli was determinded as follows: enterprise Makgeolli(6.18%), local Makgeolli(7.11%), and award-winning( 7.87%). Enterprise Makgeolli(0.24%) showed higher total acidity than award-winning and local Makgeolli(0.21%). In addition, pH levels were as follows: local Makgeolli(3.75), award-winning Makgeolli(3.77), and enterprise Makgeolli(4.09). Enterprise Makgeolli had the lowest sugar content. According to the sensory evaluation, three grades were identified based on balance and taste(5 points). The upper grade(more than 3 points) showed a higher pH, reducing sugar, higher aminoacidity, more soluble solids, and larger color differences than other grades. There were no significant differences in the level of acidity across the grades. The alcohol and volatile acid contents of the upper grade were lower than the middle(2.0-2.9 points) and lower(under 2.0 points) grades. Further research should provide a quality analysis of leavening agents and fermentation conditions, and a sensory evaluation.

Quality Comparison of Potato Vinegars Produced by Various Acetobacter Bacteria (초산균에 따른 감자식초의 품질 비교)

  • To investigate the effect of Acetobacter on qualities of potato vinegars, potato vinegars were produced through acetic acid fermentation using 3 Acetobacters such as Acetobacter sp. PA97, Acetobacter sp. PA96 and Acetobacter pasterianus JK 99. There were little difference in pH(2.90∼3.09) and total acidities(5.30∼5.60%) of 3 potato vinegars. However potato vinegar(II) fermented by Acetobacter sp. PA96 showed a little difference in color values with other potato vinegars. Except acetic acid in each potato vinegars, the contents of citric acid, oxalic acid, succinic acid were high in potato vinegar(I), malic acid in potato vinegar(II) and lactic acid in potato vinegar(III). The contents of glutamic acid alanine, histidine and proline were high in all potato vinegars. The major volatile components in 3 potato vinegars were acetic acid, isoamyl acetate, isobutyl acetate, 3-methyl-1-butanol, 3-methyl-butanoic acid and phenethyl alcohol. Also composition ratio of volatile components was a little difference among 3 potato vinegars.

Antioxidant Activity and Component Change of Steaming-Drying and Fermented Gastrodiae Rhizoma (증포 천마 발효물의 항산화 활성 및 성분변화)

  • Objectives : The objective of this study is to evaluate antioxidant activity and the main component content change of steaming-drying fermented Gastrodiae rhizoma extract. Methods : The antioxidant activities were determined for total polyphenol, flavonoid contents, SOD-like activity, electron donating activity, nitrite scavenging ability and major functional components(gastrodin and 4-hydroxybenzyl alcohol content) were also measured. Results : The polyphenol content of fermented Gastrodiae rhizoma by S. cerevisiae were higher than those of fermented Gastrodiae rhizoma by A. oryzae, and when the fermentation period is extended. SOD like activity of fermented Gastrodiae rhizoma showed to be increased by fermentation with S. cerevisiae than fermentation by A. oryzae. Electron donating activity of fermented Gastrodiae rhizoma were increased at almost parallel level as vitamin C, by fermentation. Notably, fermentation by A. oryzae was moderately better than fermentation by S. cerevisiae. Flavonoid content of Gastrodiae rhizoma showed to increasing by fermentation, particularly fermentation by S. cerevisiae was proven to be more effective than by A. oryzae. The more steaming-drying or increased period of fermentation would be resulted in more gastrodin contents but under the same conditions, 4-hydroxybenzyl alcohol content of fermentation by A. oryzae in case of steaming and drying 1 time and 3 time was higher than control. Conclusions : These results has strongly hint the possible applicability of fermentation might be effective to improve the diverse biological activities of Gastrodiae rhizoma and may further supports to develop a functional food materials.

Effects of Depression, Anxiety, and Alcohol Abstinence Self-efficacy on Drinking Problem among College Students : Health and Welfare Department Students (대학생의 우울, 불안, 금주 자기효능감이 음주문제에 미치는 영향 : 보건복지계열 학생을 중심으로)

  • The purpose of this study was to identify the significant predictors of drinking problem among college students attending health and welfare department. A total of 538 college students attending health and welfare department were selected through convenient sampling. Data were collected using self-reporting questionnaires, which were constructed to include depression, anxiety, abstinence self-efficacy, and drinking behavior. SPSS 18.0 was used for data analysis and descriptive statistics, t-test, ANOVA, Scheffe's test, Pearson Correlation coefficients, and multiple regression were done. Drinking problem was positively correlated to the depression and anger while negatively correlated to the abstinence self-efficacy. The significant predictors of drinking behavior were sex, grade, anxiety, and abstinence self-efficacy. The result of this study suggest that drinking problem prevention program should consider improving self management skills by effective management of negative emotions along with enhancing self-efficacy as a cognitive strategy.
