냉장한 제주흑우육, 한우육 및 호주산 수입우육의 품질 특성 비교 (Comparison of Quality Characteristics among Chilled Loins Obtained from Jeju Black Cattle, Hanwoo and Imported Australian Beef)

  • 냉장한 제주흑우육, 한우육 및 호주산 수입우육의 품질 특성을 비교하였다. 영양적 특성에서, 제주흑우육의 수분은 65.91%, 조단백질은 17.39%로 가장 낮고 조지방은 15.89%, 조회분은 0.79%로 가장 높게 나타났으며, 조회분은 유의적 차이를 보이고 나머지는 모두 시료 간에 유의적 차이가 없었다. 제주흑우육은 철과 아연 함량이 각각 29.85 및 48.13 ppm으로 한우육보다 낮았으나 유의적 차이가 아니고 호주산 우육보다 많게 나타났으며(p<0.05), 칼슘, 인, 나트륨 및 구리의 함량은 시료 간 유의적 차이가 없는 것으로 분석되었다. 제주흑우육은 아미노산 총량과 필수 아미노산 함량이 각각 16.81 및 9.08%로 다른 시료에 비해 가장 낮았으나 시료 간에 유의적 차이가 나타나지 않았으며, 총아미노산에 대한 필수아미노산의 비율은 54.01%로 가장 높게 나타났다. 제주흑우육은 포화지방산 총량(43.25%), stearic acid(13.51%), linoleic acid(2.39%) 및 필수지방산(2.47%) 함량이 가장 낮은 반면 불포화지방산 총량(56.69%), 단가불포화지방산인 oleic acid 함량(47.80%) 및 MUFA/SFA 비율이 높게 나타나서 호주산 우육에 비해 유의적 차이가 있었다. PUFA/SFA 비율은 시료 간에 유의적 차이가 없었다. 물리화학적 특성에서, 제주흑우육은 적색도($a^*$)가 높고 융점이 가장 낮게 나타났으며(p<0.05), 명도($L^*$)와 황색도($b^*$), pH, 보수력, 가열 감량 및 전단력은 시료 간에 유의적 차이가 없었다. 관능평가 결과에서, 제주흑우육은 생육의 향, 가열육 향 및 기호도가 가장 우수하여 호주산 우육에 비교하면 유의성이 인정되었다(p<0.05). 그러나 가열육의 맛, 다즙성 및 연도는 시료 간에 유의적 차이가 나타나지 않았다.

검정콩 섭취여부에 따른 일부 대학생의 영양소 섭취상태 (Nutrient Intake Status of College Students Based on Their Consumption of Black Beans)

  • This study analyzed the intake of calories and nutrients based on the consumption of black beans. The survey was conducted on 124 college students (male: 42, female: 82), of whom 63.7% (79 students) were consumers of black beans. The calorie intake of the black bean intake group (1599.81±555.48 kcal) was significantly higher than that of the non-black bean intake group (1259.99±507.58 kcal) (P<0.01). The black bean intake group also showed a significantly higher intake of crude protein (P<0.05), plant protein (P<0.01), animal protein (P<0.05), crude fiber (P<0.001), plant calcium (P<0.001), plant iron (P<0.001), zinc (P<0.01), vitamin B2 (P<0.01), vitamin C (P<0.01), vitamin E (P<0.01) and folic acid (P<0.001) compared to the non-black bean intake group. There was a positive correlation between the frequency of black bean intake and crude fiber (P<0.05), plant calcium (P<0.05), plant iron (P<0.05), and folic acid (P<0.05). Overall, the black bean intake group was more likely to eat black sesame 13.82 times (95% CI=5.37, 35.55), white beans 10.79 times (95% CI=3.53, 33.02), mung beans 7.22 times (95% CI=2.58, 20.23), and brown rice 4.72 times (95% CI=1.88, 11.84), than the non-black bean intake group. In conclusion, we believe that black beans constitute a vital food ingredient that is necessary to provide Korean college students with a well-balanced diet.

오죽 잎 용매분획물의 항산화 및 항균 활성 (Antioxidant and antimicrobial activity of solvent fractions from black bamboo leaves)

  • 오죽 잎의 메탄올 조추출물을 극성에 따라 용매분획하고 분획물의 항산화 활성과 항산화 활성, S. aureus 균주에 대한 항균활성을 조사하고 활성성분을 HPLC를 이용하여 정량하였다. 용매분획물 중에서 ethyl acetate 분획물의 DPPH radical 소거 활성, FRAP활성이 모두 가장 강하였으며, 총페놀성 화합물의 함량도 가장 높았다. S. aureus 균주에 대한 항균활성 역시 ethyl acetate 분획물이 모든 시험 농도에서 가장 높은 활성을 보였다. Ethyl acetate 분획물 중에서 caffeic acid, ferulic acid, quercetin, kaempferol 성분을 분리하여 정량하였으며 이 중 kaempferol의 함량이 가장 높았다. 오죽 잎의 ethyl acetate 분획물은 천연 식품보존료로서 활용이 가능할 것으로 보인다.

  • Results of meat quality, physicochemical characteristics, fatty acid and amino acid composition of the Korean Native Black Pig(70 and 90 kg of slaughter weight; KNBP) versus Landrace(110kg of slaughter) are as below. Compared with Landrace, the KNBP exhibited a greater lean meat yield, with no difference in backfat thickness between Landrace and KNBP. There were no difference in chemical composition between Landrace and KNBP, but pH, and cooking loss in the KNBP were superior value than those of the Landrace. These results, KNBP were affected in sensory property and cooking yield. Amino acid content of KNBP and Landrace were significant differences between Landrace and KNBP. Except for the methionine, essential amino acid contents of KNBP had significantly higher than those of Landrace. In the change of fatty acid composition, the Landrace had significantly higher percentages of palmitic(l6: 0), stearic(18: 0) and linolenic(18: 3) acids than that of KNBP, but linoleic acid(l8: 2) was decreased.

Nicotinic acid changes rumen fermentation and apparent nutrient digestibility by regulating rumen microbiota in Xiangzhong black cattle

  • Objective: The aim of this study was to investigate the impact of dietary nicotinic acid (NA) on apparent nutrient digestibility, rumen fermentation, and rumen microbiota in uncastrated Xiangzhong black cattle. Methods: Twenty-one uncastrated Xiangzhong black cattle (385.08±15.20 kg) aged 1.5 years were randomly assigned to the control group (CL, 0 mg/kg NA in concentrate diet), NA1 group (800 mg/kg NA in concentrate diet) and NA2 group (1,200 mg/kg NA in concentrate diet). All animals were fed a 60% concentrate diet and 40% dried rice straw for a 120-day feeding experiment. Results: Supplemental NA not only enhanced the apparent nutrient digestibility of acid detergent fiber (p<0.01), but also elevated the rumen acetate and total volatile fatty acid concentrations (p<0.05). 16S rRNA gene sequencing analysis of rumen microbiota revealed that dietary NA changed the diversity of rumen microbiota (p<0.05) and the abundance of bacterial taxa in the rumen. The relative abundances of eight Erysipelotrichales taxa, five Ruminococcaceae taxa, and five Sphaerochaetales taxa were decreased by dietary NA (p<0.05). However, the relative abundances of two taxa belonging to Roseburia faecis were increased by supplemental 800 mg/kg NA, and the abundances of seven Prevotella taxa, three Paraprevotellaceae taxa, three Bifidobacteriaceae taxa, and two operational taxonomic units annotated to Fibrobacter succinogenes were increased by 1,200 mg/kg NA in diets. Furthermore, the correlation analysis found significant correlations between the concentrations of volatile fatty acids in the rumen and the abundances of bacterial taxa, especially Prevotella. Conclusion: The results from this study suggest that dietary NA plays an important role in regulating apparent digestibility of acid detergent fiber, acetate, total volatile fatty acid concentrations, and the composition of rumen microbiota.

흑마늘의 첨가량을 달리한 식초의 품질특성 (Quality Characteristics of Vinegar Added with Different Levels of Black Garlic)

  • In this study, we aimed to develop functional vinegar with different levels of black garlic through two stages of fermentation. Black garlic vinegars were prepared from black garlic and water (w/w) mixed with 1:2 (BG3), 1:5 (BG6), 1:9 (BG9) and 1:11 (BG12), and adding the sugar by adjusting the soluble solids content to $14^{\circ}Brix$. The alcohol content of black garlic vinegar was 5.2-5.5% after 7 days of alcohol fermentation at $25^{\circ}C$. Acetic acid fermented was at $30^{\circ}C$ for 25 days and samples were taken at 3, 6, 9, 12, 15, 20 and 25 days. The pH of black garlic vinegar was not significantly different among the samples, but acidity was increased during fermentation. Total polyphenol contents showed irregular changes with the fermentation periods and were higher by black garlic content. At 25 days fermentation, total polyphenol contents were 18.96-56.56 mg/100 mL. Acetic acid content of black garlic vinegars was higher than other organic acids. S-allyl cysteine (SAC) contents of BG3 and BG6 were 13.03-14.54 and 1.69-2.20 mg/L, respectively. However SAC was not detected in BG9 and BG12. In 25 days fermented black garlic vinegar, the major mineral was K with a content ratio of 61-68% of total minerals. The DPPH and ABTS radical scavenging activity of 25 days fermented black garlic vinegar were stronger at higher black garlic content.

Contents of Phytic Acid of Various Cereal Crops Produced in Korea

  • The main objective of the study was to investigate the phytic acid contents of various cereals and legumes produced in Korea. The results showed that the phytic acid contents of buckwheat, foxtail millets, sorghum, millet, barley, jobs' tears, yellow corn and wheat flour (Urimil) were in a range of 0.13 to 2.27%. The contents of the phytic acid ranged from 1.03 to 1.16% for legumes including red Indian bean, black Indian bean, mung bean, and black soybean. The phytic acid content of brown rice was five times higher than those of 100% polished rice. The polishing process of the rice decreased significantly the content of the phytic acid. We estimate that the daily phytic acid intake from rice was changed from 653 mg/day in 1995 to 430 mg/day in 2005 based on the results of a national nutrition survey.

유색 농산물 중 안토시아닌과 폴리페놀 함량 비교 연구 (A Comparative Study on Anthocyanin and Polyphenol Contents in Colored Agricultural Products)

  • 본 연구에서는 인터넷 쇼핑몰에서 유통되는 컬러푸드 중 블랙푸드 76건을 대상으로 폴리페놀 17종 및 안토시아닌 5종을 동일한 전처리 방법으로 HPLC, HPLC-MS/MS 분석하여 정량 및 정성시험을 실시하였다. 분석대상 폴리페놀은 gallic acid, protocatechuic acid, chlorogenic acid, vanillic acid, caffeic acid, syringic acid, p-coumaric acid, t-ferulic acid, t-cinnamic acid 등 9종의 phenolic acid와 (+)catechin, syringic aldehyde, rutin, epicatechin gallate, naringin, luteolin, naringenin, kaempferol 등 8종의 flavonoid로 총 17종의 폴리페놀을 동시분석 하였고, 안토시아닌은 delphinidin-3-glucoside, delphinidin-3-rutinoside, cyanidin-3-galactoside, cyanidin-3-glucoside, cyanidin-3-arabinoside 등 5종을 동시분석 하였다. 폴리페놀 17종의 총 함량은 서리태 $255.1{\pm}7.5{\mu}g/g$, 서목태 $275.8{\pm}5.3{\mu}g/g$, 흑미 $78.5{\pm}4.6{\mu}g/g$, 흑임자 $75.8{\pm}3.2{\mu}g/g$, 블루베리 $143.3{\pm}5.5{\mu}g/g$, 아로니아 $195.2{\pm}4.9{\mu}g/g$, 블랙커런트 $131.6{\pm}3.2{\mu}g/g$로 나타나 서목태 > 서리태 > 아로니아 > 블루베리 > 블랙커런트 > 흑미 > 흑임자 순으로 높은 함량을 나타냈다. 안토시아닌 5종의 총 함량은 서리태 $82.4{\pm}17.2{\mu}g/g$, 서목태 $95.2{\pm}6.1{\mu}g/g$, 흑미 $74.1{\pm}9.7{\mu}g/g$, 흑임자 불검출, 블루베리 $110.8{\pm}1.9{\mu}g/g$, 아로니아 $218.9{\pm}6.1{\mu}g/g$, 블랙커런트 $209.7{\pm}4.0{\mu}g/g$로 나타나 아로니아 > 블랙커런트 > 블루베리 > 서목태 > 서리태 > 흑미 순으로 높은 함량을 나타났다. 본 실험결과 폴리페놀은 서목태, 안토시아닌은 아로니아가 가장 높은 함량을 나타내었으며 향후 유색 농산물을 활용한 기능식품 개발이 필요한 것으로 판단된다.

한국 재래흑우 및 한우의 지방산 조성 및 영양성분 비교 (Comparison of Fatty Acid and Nutritional Composition of Korean Native Black Cattle and Hanwoo)

  • The nutritional composition of Korean native black cattle (KNBC) and Hanwoo beef were compared. According to the results, there were no significant differences in moisture, protein, ash, calorie and collagen content, but the fat content of KNBC was significantly higher than that of Hanwoo (p<0.05). The P, Na and Cu content of KNBC were significantly higher than that of Hanwoo (p<0.05). The KNBC and Hanwoo had total mineral amounts of 4,052.34 and 3,214.44 ppm, respectively, with the KNBC being significantly higher than Hanwoo (p<0.05). The vitamin B1 content of KNBC was significantly higher than that of Hanwoo (p<0.05), but there was no significant difference in B2 content between the samples. The total structural amino acid contents was not significantly different between KNBC (12.35%) and Hanwoo (12.58%). The KNBC and Hanwoo had total free amino acid amounts of 752.698 and 661.795 ppm, respectively, with the KNBC being significantly higher than Hanwoo (p<0.05). The stearic acid (10.631%), linoleic acid (2.271%), linolenic acid (0.065%) and tricosanoic acid (0.038%) contents of KNBC were lower than those of Hanwoo (p<0.05). However, their palmitoleic acid (5.292%), oleic acid (48.815%), ${\gamma}-linolenic$ acid (0.094%), eicosenoic acid (0.042%) and docosadienoic acid (0.099%) contents were higher than those of Hanwoo (p<0.05). There was no significant difference between the KNBC and Hanwoo in the saturated fatty acid : unsaturated fatty acid ratio.

복분자(Rubus coreanus Miquel) 와인의 에틸아세테이트층으로부터 저분자 페놀성 항산화 화합물의 단리·동정 (Isolation and Identification of Low Molecular Phenolic Antioxidants from Ethylacetate Layer of Korean Black Raspberry (Rubus coreanus Miquel) Wine)

  • 복분자 와인은 복분자 열매를 발효ㆍ숙성시켜 제조하기 때문에 그들 양자 간의 성분에는 차이가 있을 것으로 추측되었다. 그러나 복분자 와인의 음용률이 높음에도 불구하고 복분자 와인 중에 함유된 성분들에 관한 체계적인 연구는 거의 전무한 실정이다. 그래서 먼저 복분자 와인 중에 함유되어 있는 성분들의 chemical profile의 검토를 위해 항산화 활성에 초점을 맞추어 화합물의 단리ㆍ구조해석에 착수하였다. 복분자 와인 11 L(신선 복분자 열매 15.7 kg 상당량)의 농축액(928.3 g)을 용매분획한 후 얻어진 EtOAc층(20 g/56.2 g)을 대상으로 각종 column chromatography 및 HPLC를 행하여 5종의 항산화 활성 화합물을 단리하였다. 그들을 대상으로 $^1H$-NMR 분석 및 TMS 유도체화 후 GCMS 분석을 행한 결과, 4-hydroxybenzoic acid(1, 0.1 mg), 3,4-dihydroxybenzoic acid(2, 0.3 mg), 4-(2-hydroxyethyl)-phenol(3, 0.6 mg), pyrocatechol(4, 0.3 mg), 3,4,5-trihydroxybenzoic acid ethyl ester(5, 0.6 mg)로 동정하였다. 화합물 1과 2는 복분자 열매중에 존재함이 보고되어 있으나 화합물 3-5는 복분자 열매로부터 그 존재가 보고되어진 바 없으며, 이들 5종의 화합물 모두가 복분자 와인으로부터 동정되어진 것 또한 처음이다.
