몇가지 전분으로 만든 당면과 동결건조 당면의 특성 (Properties of Dangmyuns Using Different Starches and Freeze Dried Dangmyuns)

  • 고구마, 옥수수, 감자, 타피오카 당면 제조 공정별 호화도의 변화와 동결 건조한 당면의 특성을 조사하였다. 제조공정중 호화도는 압출 성형 후가 가장 높았으며, 이때 고구마 당면인 경우 63.4%, 감자 당면은 80.0%, 옥수수 당면은 82.3%, 타피오카 전분은 86.5%로 나타났다. 호화도는 당면의 제조공정중 압출성형 공정에서 가장 높게 나타난 후, $4^{\circ}C$에서 숙성 후 동결하는 공정부터 호화도가 낮아지며, 건조공정에서는 더욱더 감소하는 경향을 보였다. 전분 종류별 당면의 색도에서 명도를 나타내는 L값은 옥수수 당면>타피오카 당면>감자 당면>고구마 당면 순으로 낮아졌다. 조리중 손실되는 고형분의 양은 타피오카>옥수수 당면>감자 당면>고구마 당면 순으로 적었다. 무게 증가율의 정도는 고구마 당면이 가장 높았고, 옥수수>감자>타피오카 순으로 낮아졌다. 무게 증가 속도 상수 값은 고구마 당면이 가장 빨랐으며, 타피오카 당면이 가장 늦었다. 복원력은 동결건조한 고구마 당면이 감자, 옥수수, 타피오카 당면보다 우수하였다. 원료 배합 공정에서 전분대비 60%에서 70%로 물 첨가량을 높였을 때 물 첨가량이 많을수록 당면의 호화도가 높았다. 직경 1.0 mm의 굵기로 제조한 당면보다 직경 0.8 mm의 굵기로 제조한 동결 건조 당면의 복원력은 30%정도 높았으며, 수분을 많이 첨가하여 제조한 동결건조 당면의 복원력도 30% 좋았다. 따라서 당면의 두께와 수분 첨가량으로도 동결건조 당면의 복원력을 일부 개선시키는 효과는 있으나, 삶은 당면처럼 완전하게 복원되지는 않았다.

천년초 선인장 분말을 첨가한 우리밀 식빵의 품질특성 (Quality Characteristics of Bread Made from Domestic Korean Wheat Flour Containing Cactus Chounnyuncho (Opuntia humifusa) Powder)

  • 우리밀에 천년초 선인장 분말을 첨가한 천년초 식빵의 품질 특성을 연구하기 위해 예비실험을 통해 0%, 1%, 3%, 5% 천년초 분말 첨가 함량을 설정하였고, 첨가량에 따른 수분흡수율, 물성변화 및 호화도를 측정하였다. 또한 반죽의 발효시간, 완제품의 부피측정, 굽기 손실률과 관능검사를 실시하여 기능성 천년초 식빵의 가능성을 보고자 하였다. Farinograph 상에서는 천년초 분말 첨가량에 따라 다소 높아지는 경향을 보였다. 흡수율 증가는 가스 보유력 및 완제품의 부피가 증가함으로서 동시에 안정도, 탄력도는 높아지고, 약화도는 떨어져야하지만 천년초 분말 첨가는 상반된 결과를 나타냈다. RVA로 측정한 반죽의 호화 개시온도는 대조구가 $52.63{\pm}2.0^{\circ}C$이었고 천년초 분말 첨가 비율의 변화에 따라 각 첨가군은 유의적인 차이가 보이지 않았다. 최고점도와 최고점도에 도달하는 시간은 대조구가 $2673{\pm}14.8$ RVA, $6.53{\pm}0.0$분이었다. 천년초 분말 첨가한 경우 호화 개시온도와는 달리 첨가 비율에 따라 유의적인 차이를 보였다. 최저 점도의 유지 강도는 대조구가 $2012{\pm}16.3$ RVA이었고 천년초 분말 첨가구에 따라서 전반적으로 감소하는 경향을 나타내었다 . 최종 점도, breakdown, setback 값에서 대조구는 각각 $3180{\pm}9.9RVA$, $661{\pm}31.1RVA$, $1169{\pm}6.4\;RVA$이었다. 천년초 분말 첨가한 경우 최종점도는 대조구와 비교하여 천년초 첨가량에 따라 감소하였으며, breakdown, setback 값은 대조구보다 증가하였고, 천년초 분말 첨가 비율에 따라 유의적인 차이를 보였다. 노화를 예측할 수 있는 setback 값은 천년초 첨가에 따라 노화억제를 효과가 있음을 예측할 수 있었다. 반죽의 발효 시간은 천년초 분말 증가에 따라 발효시간이 길어짐을 볼 수 있었다. 식빵 부피 변화는 대조구가 $1371.4{\pm}35.6$ mL로 가장 켰고, 천년초 분말 첨가량이 증가함에 따라 감소해 유의적 차이를 나타냈다. 굽기 손실률은 천년초 분말 첨가량이 증가할 수 록 손실률이 감소하는 경향을 나타냈다. 일반성분 검사 수분함량은 천년초를 첨가한 시료보다는 무첨가 시료가 높았지만 천년초 분말첨가량의 증가에 따라서는 큰 차이가 없는 것으로 나타났다. 탄수화물 함량은 무첨가 시료가 비교적 낮았는데 천년초 함량이 증가할수록 감소하였다. 지방과 회분함량은 천년초 함량의 증가에 따라 증가하였다. 관능평가에서는 색과 전체적인 품질은 유의적인 차이를 보였으며 향, 맛, 질감 등에서는 0%, 1%, 3%, 5% 천년초 첨가에도 유의적인 차이를 보이지 않았다. 그러나 전체적인 품질 평가에서는 천년초 분말 3%첨가가 $3.9{\pm}0.994$로 평가를 받았다. 이상의 실험결과로 보아 우리밀에 천년초 분말을 첨가해 제조한 식빵은 기능성 식품으로의 이용 가능성을 엿볼 수 있었다.

CCA (Chromated Copper Arsenate) 처리 목재의 저온 열분해와 CCA 유효 성분분리 특성 (Characterization of Low-Temperature Pyrolysis and Separation of Cr, Cu and As Compounds of CCA-treated Wood)

  • 생태건축에서 토대나 데크 또는 조경용으로 사용되는 CCA처리 목재를 맹독성의 비소(As)를 목탄에 잔류시켜 질산으로 용출시칸 다음, 얻어진 목탄을 에너지 자원으로 재활용하기 위하여 CCA처리된 Hemlock 판재를 $280{\sim}340^{\circ}C$ 사이에서 1시간동안 저온 열 분해처리하여 발생한 휘발성분을 1차 세척수와 2차 $1%HNO_3$ 흡수액으로 처리하여 휘발하는 중금속 성분을 포집하여 전체를 증발농축하여 CCA함량을 ICP-AES로 분석하고, 목탄중의 CCA를 분석한 결과 다음과 같은 결과를 얻었다. 1. 목탄의 수율은 $340^{\circ}C$에서 50%에 이르고, 일반 저온 열분해의 경우와유사한 경향을 보였다. 2. 체계적이고, 반복적인 모니터링이 필요하지만, 온도가 증가할수록 CCA 성분 중 비소성분은 휘발량이 증가하는 경향이었다. 3. $300^{\circ}C$의 저온 열분해에서는 85% 이상의 CCA성분이 목탄 중에 잔류하였다. 4. 보다 정밀하고, 반복된 데이터가 필요하지만, 비소화합물은 $320{\sim}340^{\circ}C$ 이상에서 갑자기 열분해되어 휘발하고, 1차 세척수에 흡수된 것으로 생각된다. 5. 세척수의 흡수량이 손실량보다 적은 것은 세척시스템의 용량이 부족하기 때문에 특수 설계가 필요한 것으로 판단된다. 6. 따라서 저온열분해 방법으로 CCA처리목재 중의 CCA를 보단 완전히 회수 분리하기 위하여서는 $320^{\circ}C$ 이하의 온도에서 보다 작은 목재 입자를 균일하게 가열하는 시스템개발이 필요하고, 보다 완벽한 세척시스템 개발이 필요하였다.

당근 종모 형질 관련 cDNA Library 작성 및 EST 분석 (Construction of cDNA Library and EST Analysis Related to Seed-hair Characteristics in Carrot)

  • 당근(Daucus carota L. var. sativa)은 세계적으로 널리 이용되는 작물 중 이며, 영양학적으로도 중요한 작물이다. 하지만, 종자 표피세포에서 생성되는 종자모는 발아를 억제하고 흡수를 저해하여 육묘에 어려움을 야기한다. 이러한 어려움을 타파하기 위해 당근 종자는 기계적인 제모작업을 거쳐 상품화 되고 있다. 이 과정에서 생산상의 여러 가지 단점들이 발생하며, 이를 보완하기 위해 단모종자 당근 품종의 육종이 필요하다. 따라서 본 연구는 단모종자 표현형 CT-ATR 615 OP 666-13개체와 장모종자 표현형 CT-ATR 615 OP 671-9개체 및 단모종자 표현형 CT-SMR 616 OP 659-1 개체와 장모종자 표현형 CT-SMR 616 OP 677-14개체 등 두 조합의 종자 cDNA library를 작성 후 EST 염기서열의 비교분석을 통해 당근 종자모 형질관련 연구에 이용하고자 하였다. 첫째로 EST 염기서열의 BlastX 결과를 바탕으로 각각의 EST를 FunCat 기능별 category로 분류하였다. 그 결과 Metabolism category와 protein folding 및 stabilization, protein binding, C-compound binding category에서 2조합 모두 동일한 유의적인 차이를 확인하였다. 두 번째로 EST 염기서열의 GO data를 바탕으로 seed trichome differentiation 및 cellulose biosynthetic process에 관련된 EST를 선발하였다. 이러한 FunCat category에서의 차이점과 GO data 분석을 통해 확인된 후보 EST 들이 당근 종자모 형성에 많은 영향을 미치는 것으로 생각된다. 마지막으로 분석된 개체 별 EST 염기서열을 바탕으로 33개의 SNP site, 741개의 SSR site를 확인하였다. 확인된 SNP 및 SSR site는 당근 종자모 형성에 관련된 분자마커 개발에 이용할 수 있음은 물론 당근의 여러 형질에 대한 연구에 활용 가능할 것으로 기대된다.

우리밀 Semolina 부분 대체에 의한 생면 파스타의 조리특성 (Cooking Quality of Fresh Pasta with Concentrated Korean Wheat Semolina)

  • Durum wheat semolina와 가장 유사한 특성을 가지는 우리밀 semolina(FS: fine semolina)를 0, 10, 20, 30, 40 및 50% 대체한 파스타 반죽의 물리적 특성 및 조리특성을 살펴봄으로써 최적의 우리밀 semolina 대체 파스타를 제조하고자 하였다. 우리밀 semolina 첨가 반죽의 파리노그래프 특성은 우리밀 semolina 대체 30%까지 수분흡수율은 증가하였으며, 반죽형성시간은 30% 대체 이상에서 높게 나타나 생산량 증가 및 생면파스타 제조에 긍정적인 영향을 미쳤다. 또한 우리밀 semolina 대체 30% 이상에서 안정도는 낮아지고 연화도는 증가하여 부드러운 질감의 생면파스타의 제조가 가능하며, 아밀로그래프 호화특성은 durum wheat에 비해 호화개시온도는 상승하고, 최고점도는 감소하였다. 반죽의 작업적성평가는 모든 실험군에서 4점 이상의 높은 점수를 나타내었다. 또한 우리밀 semolina의 대체량이 높아질수록 중량 및 부피는 감소하고 탁도 및 조리손실율은 증가하는 것으로 나타났으나, 우리밀 semolina 30% 대체 수준까지는 대조구와 유사한 부피 및 조리손실을 나타내는 것으로 나타났다. 색도는 우리밀 semolina의 대체량이 증가할수록 L값과 a값은 증가하였고, b값은 감소하였다. 물성측정 결과 조리면의 경도는 우리밀 semolina 30% 이상에서 낮은 값을 나타내었으며, 탄력성, 검성, 씹힘성은 높은 값을 나타내었다. 전반적인 기호도에서는 대조구와 우리밀 semolina 30% 이상 대체에서 7점 이상의 높은 점수를 나타내었고, 파스타색은 durum wheat에 가까운 황색을 또는 우리나라 전통 국수와 같은 흰색을 선호해 그 특성이 완전히 양분됨을 알 수 있었으며, 향과 맛은 우리밀 semolina의 대체에 따른 영향을 받지 않는 것으로 나타났다. 또한 파스타의 경도는 낮고, 씹힘성은 높은 것을 선호하는 것으로 나타나 향후 우리밀의 첨가에 따른 품질 및 기호성 향상을 위해서는 우리밀 semolina 30% 대체가 적합하리라 사료된다.

결핵성 흉막염에서 스테로이드의 치료 효과 - 전향적, 임의추출법에 의한 비교 - (Evaluation of Steroid Therapy in Tuberculous Pleurisy - A prospective, randomized study -)

  • 목 적 : 결핵성 흉막염치료에 부신피질호르몬제재 - 화학요법이 보편화되었고, 이러한 복합요법에서 스테로이드가 임상증상의 호전, 삼출액의 조기 흡수 및 흉막유착의 진행에 대해 일부 저자들은 효과적이라고 보고하였으나, 일부에서는 특별한 차이가 없는 것으로 보고하는 등 논란이 되어왔다. 이에 저 자등은 결핵성 흉막염환자의 스테로이드치료가 임상증상의 호전, 삼출액의 흡수 촉진, 흉막 유착의 방지에 영향을 미치는지 여부 및 이의 통상적 적용에 대해 알아보고자 하였다. 방 법 : 1991년 6월부터 1994년 9월까지 인하대학교 부속병원에 입원하였던 84명의 결핵성 흉막염환자를 대상으로 전향적 임의추출방법에의하여 스테로이드군과 비스테로이드군으로 나눠 임상양상을 분석하였다. 결 과 : 1) 발열감, 흉통, 호흡곤란 등의 임상증상은 스테로이드군에서 평균 3.8 일, 비스테로이드군에서 7.4 일에 증상 호전이 있었으며, 통계적으로 유의한 차이가 있었다(p<0.05). 특히 발열감, 흉통, 가래, 체중감소 등에는 스테로이드 투여군에서 효과적이었지만, 허약감, 취침시 발한, 호흡곤란 등은 효과적이지 못하였다. 2) 흉막저류액의 완전 흡수는 스테로이드군에서 평균 88일, 비스테로이드군에서 101일로 스테로이드군에서 기간이 더 단축된 것을 볼 수 있으나 통계적인 차이는 없었다(p>0.05). 3) 흉막유착은 스테로이드군에서 51.5%(17/33), 비스테로이드군에서 64 %(32/50)으로 스테로이드군에서 감소되어 있으나, 통계적인 차이는 없었다(p>0.05). 4) 스테로이드군 중 한명의 환자에서 상복부동통을 호소하는 것 이외에는 주목할만한 부작용은 없었다. 결 론 : 결핵성 흉막염에서 스테로이드투여는 임상증상의 기간을 단축시키지만, 저류액의 흡수촉진, 흉막유착에는 뚜렷한 효과가 없어서 이의 통상적 적용은 재고되어야 할 것으로 사료된다.

Sensory Information Processing

  • The wall shear stress in the vicinity of end-to end anastomoses under steady flow conditions was measured using a flush-mounted hot-film anemometer(FMHFA) probe. The experimental measurements were in good agreement with numerical results except in flow with low Reynolds numbers. The wall shear stress increased proximal to the anastomosis in flow from the Penrose tubing (simulating an artery) to the PTFE: graft. In flow from the PTFE graft to the Penrose tubing, low wall shear stress was observed distal to the anastomosis. Abnormal distributions of wall shear stress in the vicinity of the anastomosis, resulting from the compliance mismatch between the graft and the host artery, might be an important factor of ANFH formation and the graft failure. The present study suggests a correlation between regions of the low wall shear stress and the development of anastomotic neointimal fibrous hyperplasia(ANPH) in end-to-end anastomoses. 30523 T00401030523 ^x Air pressure decay(APD) rate and ultrafiltration rate(UFR) tests were performed on new and saline rinsed dialyzers as well as those roused in patients several times. C-DAK 4000 (Cordis Dow) and CF IS-11 (Baxter Travenol) reused dialyzers obtained from the dialysis clinic were used in the present study. The new dialyzers exhibited a relatively flat APD, whereas saline rinsed and reused dialyzers showed considerable amount of decay. C-DAH dialyzers had a larger APD(11.70$\pm$1.32mmHg/min)compared to CF dialyzers(4.32$\pm$0.55mmHg/min)(p<0.05). However, there was no observable difference in the UFR between the two dialyzers. Neither APD nor UFR showed any significant increase with an increasing number of reuses for up to more than 20reuses. A substantial number of failures observed in APD(larger than 20mmHe/min)on the reused dialyzers(2 out of 40 CP and S out 26 C-DAK) were attributed to the Possible damage on the fibers. The CF 15-11 HFDs which failed APD test did not show changes in the UFR compared to normal dialyzers indicating that APD is a more sensitive test than UFR test to evaluate the integrity of the fibers. 30527 T00401030527 ^x For quantitative measurement of reflected light from a clinical diagnostic strip, a prototype old reflectance photometer was designed. The strip loader and cassette were made to obtain more accurate reflectance parameters. The strip was illuminated at 45˚c through optical fiber and the intensity of reflected light was determined at rectanguLat angle using a photodiode. The kubelka-munk coefficient and reflection optical density were determined ar four different wavelengths(500, 550, 570 and 610nm) for blood glucose strip. For higher concentration than 300mg/41 about glucose, a saturation state of abforbance was observed at 500, 550 and 570nm. The mice were divided into two groups. One group was injected with Photofrin II, intravenously (2.5mg/kg body weight). The other group received no Photofrin II. Mice from both groups were irradialed for approximately 15 minutes at 100, 300, or 500 mW/cm2 with the argon (488nm/514.5 nm), dye(628nm) and gold vapor (pulsed 628 nm) laser light. A photosensitizer behaved as an added absorber. Under our experimental conditions, the presence of Photolfrin II increased surface temperature by at least 40% and the temperature rise due to 300 mW/cm2 irradiation exceeded values for hyperthermia. Light and temperature distributions with depth were estimated by a computer model. The model demonstrated the influence of wavelength on the thermal process and proved to be a valuable tool to investigate internal temperature rise. 30536 T00401030536 ^x We investigated the structural geometry of thirty-eight Korean femurs. The purpose of this study is to identify major geometrical differences between Korean femurs 3nd others that we believe belong to Caucasians so that we would be able to get insights into the femoral component design that fits Asians including Koreans. We utilized computerized tomography (CT) images of femurs extracted from cadavers. The CT images were transformed into bitmap data by using a film scanner, and then analyzed by using a commercially available software called Image v.1.0 and a Macintosh IIci computer.The resulting data were compared with already published data. The major results show that the geometry of the Korean femurs is significantly different from that of Caucasians: (1) the anteversion angle and the canal flare index are greater by the amount of approximately 8˚ and 0.5, respectively, (2) the shape of the isthmus cross section is more round, and (3) the distance between the teaser trochanter and the proximal border of the isthmus is shelter by about 15 mm. The results suggested that the femoral component suitable for Asians should be different from the currently-used components designed and manufactured mostly by European or American companies. 30537 T00401030537 ^x It is well known that nonlinear propagation characteristics of the wave in the tissue may give very useful information for the medical diagnoisis. In this paper, a new method to detect nonlinear propagation characteristics of the internal vibration in the tissue for the low frequency mechanical vibration by using bispectral analysis is proposed. In the method, low frequency vibration of f0( = 100Hz) is applied on the surface of the object, and the waveform of the internal vibration x (t) is measured from Doppler frequency modulation of silmultaneously transmitted probing ultrasonic waves. Then, the bispectra of the signal x (t) at the frequencies (f0, f0) and (f0, 2f0) are calculated to estimate the nonlinear propagation characteristics as their magnitude ratio, w here since bispectrum is free from the gaussian additive noise we can get the value with high S/N. Basic experimental system is constructed by using 3.0 MHz probing ultrasonic waves and the several experiments are carried out for some phantoms.   • The wall shear stress in the vicinity of end-to end anastomoses under steady flow conditions was measured using a flush-mounted hot-film anemometer(FMHFA) probe. The experimental measurements were in good agreement with numerical results except in flow with low Reynolds numbers. The wall shear stress increased proximal to the anastomosis in flow from the Penrose tubing (simulating an artery) to the PTFE: graft. In flow from the PTFE graft to the Penrose tubing, low wall shear stress was observed distal to the anastomosis. Abnormal distributions of wall shear stress in the vicinity of the anastomosis, resulting from the compliance mismatch between the graft and the host artery, might be an important factor of ANFH formation and the graft failure. The present study suggests a correlation between regions of the low wall shear stress and the development of anastomotic neointimal fibrous hyperplasia(ANPH) in end-to-end anastomoses. 30523 T00401030523 ^x Air pressure decay(APD) rate and ultrafiltration rate(UFR) tests were performed on new and saline rinsed dialyzers as well as those roused in patients several times. C-DAK 4000 (Cordis Dow) and CF IS-11 (Baxter Travenol) reused dialyzers obtained from the dialysis clinic were used in the present study. The new dialyzers exhibited a relatively flat APD, whereas saline rinsed and reused dialyzers showed considerable amount of decay. C-DAH dialyzers had a larger APD(11.70${\pm}$1.32mmHg/min)compared to CF dialyzers(4.32${\pm}$0.55mmHg/min)(p<0.05). However, there was no observable difference in the UFR between the two dialyzers. Neither APD nor UFR showed any significant increase with an increasing number of reuses for up to more than 20reuses. A substantial number of failures observed in APD(larger than 20mmHe/min)on the reused dialyzers(2 out of 40 CP and S out 26 C-DAK) were attributed to the Possible damage on the fibers. The purpose of this study is to identify major geometrical differences between Korean femurs 3nd others that we believe belong to Caucasians so that we would be able to get insights into the femoral component design that fits Asians including Koreans. We utilized computerized tomography (CT) images of femurs extracted from cadavers. The CT images were transformed into bitmap data by using a film scanner, and then analyzed by using a commercially available software called Image v.1.0 and a Macintosh IIci computer.The resulting data were compared with already published data. The major results show that the geometry of the Korean femurs is significantly different from that of Caucasians: (1) the anteversion angle and the canal flare index are greater by the amount of approximately 8˚ and 0.5, respectively, (2) the shape of the isthmus cross section is more round, and (3) the distance between the teaser trochanter and the proximal border of the isthmus is shelter by about 15 mm. Then, the bispectra of the signal x (t) at the frequencies (f0, f0) and (f0, 2f0) are calculated to estimate the nonlinear propagation characteristics as their magnitude ratio, w here since bispectrum is free from the gaussian additive noise we can get the value with high S/N. Basic experimental system is constructed by using 3.0 MHz probing ultrasonic waves and the several experiments are carried out for some phantoms. Optimal parameters of electrical stimulation for slow muscles were 20 Hz, 0.2 ms square pulse. For fast muscle, 40 Hz, 0.3 ms square pulse was optimal to produce repeated contraction.
