  • High dietary phytate is a known factor in reducing the bioavailability of minerals such as zinc and calcium which are already chronically low in the Korean diet. This study was conducted to develop methods for reducing dietary phytate through the addition of phytate and/or the substitution of high phytate foods with low phytate foods. Ten units of phytase per 100g of uncooked brown rice were added to brown rice gruel resulted in a 16.2% phytate reduction after a 3-hour incubation period; an 18.2% reduction was produced after a 6-hour incubation period. The addition of ten units of phytase per 100g of soybean curd residue at 45$^{\circ}C$, followed by refrigeration for 3 hours, resulted in a 19.1% phytate reduction. The addition of 20 units of phytase under the same conditions reduced phytate content by 24.6%. In this study, two typical Korean meals consisting of legumes and unrefined cereals were prepared as high phytate meals; these were then compared to low phytate meals that had been prepared by treating the foods with phytase and substituting unrefined with refined cereals (i.e., brown rice with white rice, whole wheat bread with white bread). The phytate content of the two high phytate meals was 1878.2mg and 1811.8mg. After the addition of phytase and the food substitution, the phytate content of the low phytate meals was reduced to 788.9mg and 606.0mg. The phytate to zinc molar ratio of high phytate diets was 22.4 and 21.3 and 9.4 and 7.9 for the low phytate meals. These results indicate that the nutritional status of Koreans in terms zinc and other minerals can be improved by phytate reduction. This can be accomplished through the change of milling process for some cereals and/or the enzyme treatment of some high phytate food items.

  • In the soil treated with irrigation control and gypsum, different species of rice plants, Jin-heung, Aggibare, Tong-il, Mil-yang 23, Noindo, Yugnong-chat, were grown. The content of cadmium, copper and zinc in the brown rice was investigated. Results obtained are as follows : 1) Cadmium Content of brown rice was remarkably reduced under the condition to maintain the reduction than oxidation after ear forming stage, and also the application of gypsum was additional effects to reduce cadmium uptake under reduction condition. Zinc and copper contents in the brown rice was similar to calcium reducing, but their effects of reduction were appeared less than cadmium. 2) The reduced tendency of cadmium uptake under the reduction condition was in the order of Tong-il>Mil-yang23>Aggibare>Yugnong-chal>Noindo>Jin-heung. 3) In the oxidzing condition, Jin-heung uptaked cadmium, copper and zinc more than any other species.

  • We synthesized nano-sized $La_{1-x}Sr_xCoO_3$ ($x=0.1{\sim}0.4$) cathode catalyst for the zinc air secondary batteries by citrate method, And we measured the cathode's electrochemical characteristics according to content of strontium compose the cathode catalyst. We controlled the pH of precursor solution by 10 in the process of manufacturing the precursor, We heat treated the prepared precursor at various calcination temperature ($500{\sim}900^{\circ}C$), and examined the optimum calcinations temperature by XRD analysis and electrochemical evaluation. We examined the ORR (oxygen reduction reaction) and OER (oxygen evolution reaction) performance of the prepared $La_{1-x}Sr_xCoO_3$ catalyst powder. When we consider ORR and OER performance simultaneously, $La_{0.7}Sr_{0.3}CoO_3$ catalyst has shown the best performance because of its lowest voltage deference between charge and discharge.

  • O,O-Dimethyl-S-(phthalimido)methylphosphorodithioate (PMP) is changed into phosphine, phosphate, and phosphorothioate, when it is treated with metallic zinc in acidic medium after alkaline hydrolysis. The amount of phosphine evolved is about five times as much in sulfuric acid medium as it is in hydrochloric acid. When one micro mole of hydrolyzed PMP is treated with 8 grams of metallic zinc and 30 ml of 10 N-sulfuric acid, it is changed into 0.42 micro moles of phosphine, 0.14 micro moles of phosphorothioate, and 0.44 micro moles of phosphate.

  • Objective: The aim of the present study was to investigate the effect of dietary zinc supplementation of Friesian cows on chemical-nutritional and aromatic properties of Caciocavallo cheese after 7 days (C7) and 120 days (C120) of ripening. Methods: Twenty eight Friesian cows, balanced for parity, milk production and days in milk, were randomly assigned to 2 groups. The control group (CG) was fed with a conventional complete diet, while the experimental group (zinc group, ZG) received a daily zinc supplementation of 60 mg for kg of dry complete feed. During the experimental period, the milk yield was monitored and samples of milk and caciocavallo cheese were collected and analyzed for chemical-nutritional composition and aromatic profile. Results: The enrichment of dairy cows diet with zinc, did not influence milk yield and composition, however a marked reduction of somatic cell count was evidenced. Both in milk and cheese the ZG samples were characterized by a lower concentration of satured fatty acids and an increase in oleic, vaccenic and rumenic acids. The aromatic profile of dairy products was also positively affected by dietary zinc intake, with an increase in concentration of carboxylic acids, esters and lactones. Conclusion: The present results suggest a positive role of dietary zinc intake in improving the quality of bovine milk and related cheese, in particular for the increase in concentration of bioactive fatty acids such as rumenic acid. The changes evidenced in cheese through the analysis of the volatile profile, would be consistent with the development of interesting organoleptic properties, although further evaluations should be performed to confirm the consumer acceptability of these changes.

  • Selective reduction of carbonyl group with zinc borohydride in the presence of ester functional group was demonstrated with seven representative keto esters. Either hydroxy esters or lactones were obtained in good yields; ethyl 6-hydroxyheptanoate ($83.0{\%}$), ethyl 2,6-dimethyl-4-hydroxy-2-cyclohexenecarboxylate ($82.3{\%}$), ethyl p-(${\alpha}$-hydroxyethyl)-phenylacetate ($78.9 {\%}$), 4-phenylbutyrolactone ($70.2{\%}$), and 3-phenylphthalide ($92.4{\%}$) were obtained from the corresponding keto esters.

  • Reduction of epoxy ketones with zinc borohydride proceeds selectively to the corresponding epoxy alcohols in good yields. Thus we obtained 3,4-epoxy-4-methyl-2-pentanol($79.8{\%}$), trans-isophorol oxide ($89.5{\%}$), trans-2-benzal-cyclohexanol oxide ($84.1{\%}$) and trans-chalcol oxide ($97.9{\%}$, crude) from the corresponding epoxy ketones.

  • This is a study on the removal of nitrate nitrogen from wastewater by oxidation and reduction reaction of zinc in an acidic atmosphere. The optimum removal rate of nitrate nitrogen and the optimum pH were studied by controlling the amount of zinc and sulfamic acid. The oxidation efficiency was higher at pH 2.0 in the range of pH 2.0 ~ 4.0 because the reaction occurred more strongly in strong acidic atmosphere. It is advantageous to reduce the nitrate ion to the final nitrogen gas by adding the sulfamic acid to the sulfurous acid because it consumes less $H^+$ ion than when the sulfamic acid is not present. According to the same amount of zinc, nitrate nitrogen was removed by 46.0% while sulfamic acid was not added, whereas nitrite nitrogen was removed by 93.0% by adding sulfamic acid. In addition, In this experiment, zinc was prepared in powder form and its reactivity was larger than that of other common zinc metal, so the removal efficiency was very high, about 80.0%, within one minute after the reaction.
