Changes in the Chemical Compositions of Chopi(Zanthoxylum piperitum DC.) (초피(Zanthoxylum piperitum DC.) 품종과 수확시기에 따른 화학성분의 변화)

  • Chopi, Zanthaxylum piperitum DC., has been used as natural spice traditionally in the Far East countries including Korea. This study was performed with the object of providing basic data, firstly for the decision of the appropriate harvesting time for traditional use of chopi and secondly for developing a new spice satisfying the national dietary custom from chopi as raw material. Concerning the conte수 and its change of the proximate composition, the content of moisture and crude protein decreased in all sample, while the content of fiber and ash tended to increased with the lapse of harvest time. The content of mineral elements tended to increase in every sample with the lapse of harvest time, and contents of K and P were higher than that of Ca, Na and Mg. Every sample showed the highest content of 15~16 components of total amino acids at the first period and the content decreased gradually with the lapse of harvest time. On the basis of the first period, every sample showed the highest content of aspartic acid, the lowest content of methionine and the trace of cysteine. Free amino acids increased considerably with the lapse of harvest time for peels of chopi and minchopi broth, while the amount for leaves increased on the contrary.

Evaluation of Sensory on Gochujang with Zanthoxylum piperitum and Chrysanthemum indicum Essential Oils

  • Gochujang samples with essential oils were evaluated for sensory including taste and, smell during various storage periods with the aim of developing improved high value-added products. The sensory testing was performed on Gochujang with 0.005% Zanthoxylum piperitum and Chrysanthemum indicum essential oils, extracted through steam distillation. During storage at 4 and $20^{\circ}C$ for 8 weeks, sensory testing was performed at 0, 1, 2, 4 and 8 weeks by trained panelists. Overall quality decreased in Gochujang samples containing Z.piperitum essential oil and increased in samples containing C.indicum essential oil, at 4 and $20^{\circ}C$. Samples stored at $4^{\circ}C$ were quality more then those stored at $20^{\circ}C$. Sensory evaluation was highest for Gochujang with C.indicum essential oil stored at $4^{\circ}C$. It is concluded that functional Gochujang can be developed by adding small quantities of essential oils. Increasing the amount of essential oil added is likely to affect the innate taste and flavor of Gochujang.

  • The essential oil fractions from six plant parts including leaf of Zanthoxylum piperitum and flower of Lindera obtusiloba have revealed to possess resistance inhibitory activity on antibiotic resistant Staphylococcus aureus SA2 when combined with ohloramphenicol (Cm). The combination of Cm and essential oil mixtures showed potent resistance inhibition in the level of 10∼20 $\mu\textrm{g}$/ml.

  • In this study, we have investigated the combustibility of five shrubs growing in Youngdong area such as Lindera obtusiloba, Lespedeza maximowiczii, Zanthoxylum piperitum, Zanthoxylum schinifolium, and Corylus heterophylla var. thunbergii using the ignition temperature tester, the cone calorimeter and the smoke density chamber in order to estimate the danger of a forest fire. The results showed that Lespedeza maximowiczii has the lowest ignition temperature, the fastest ignition time and the highest average release concentrations of CO and $CO_2$. Zanthoxylum piperitum and Zanthoxylum schinifolium showed the highest level in heat release and smoke release, respectively. Therefore, we have concluded that Lespedeza maximowiczii has the highest ignitibility, Zanthoxylum piperitum the most intensive fire spread and fire intensity, and Zanthoxylum schinifolium and Lespedeza maximowiczii most difficult to escape from a forest fire.

  • This study was conducted to investigate the effect of growth regulators and medium composition on the growth of each stage in apical meristem culture for mass propagation of Zanthoxylum piperitum var. inerme Makino. The source material, shoot tip segments were taken from three-years old graft trees. Apical meristems were cultured in vitro on basal MS, GD, WS, half strength MS(1/2MS) and half strength GD(1/2GD) media supplemented with various concentrations for growth regulators(BA, IBA) and inorganic nutrients. The results summarized are as follows: 1. In culture establishment stage, ratio of culture establishment was 96.7% and the best resuit was obtained using MS medium supplemented with 1.0mg/l BA and 0.2mg/l IBA. 2. In shoot multitication stage, both shoot multiplication and growth were achieved in average 5.6cm. These results were obtained on in MS medium supplemented with 1.0mg/l BA and 0.2mg/l IBA. 3. In roothing stage, phloroglucinol(PG) acted as IBA synergist in root initiation. The most faverable combinations for root development was half-strength MS medium supplemented with 162mg/l PG and 0.2mg/l IBA, and ratio of rooting was 58.0%. 4. In Vitro formed plantlets were transplanted to paper pots in greenhouse with 85% of relative humidity. 96% of survival rate was obtained from artificial soil mix having same volume of sand, vermiculite, peat, and soil.

  • This study was carried out to select proper SPME fiber for volatile component analysis in Zanthoxylum schinifolium and Z. piperitum. PDMS, PDMS/DVB and CAR/PDMS were better for single standard absorption analysis. PDMS and PDMS/DVB showed similar results in comparison between direct injection and the mixture of 24 single standards as well as the mixture of 10 single standards. PDMS and PDMS/DVB were not different each other in absorption patterns between direct injection and headspace SPME regardless of split ratio of GC injection port. However PDMS/DVB rather than PDMS was effective in absorbing the sesquiterpenes within 30-40 minutes as using the SDE extracts from Z. schinifolium and Z. piperitum.

A Study on The Raw Materials Standardization for Industrialization of Zanthoxylum piperitum Using Lava Seawater

  • Zanthoxylum piperitum has been used as a spice or various folk remedies since ancient times, and studies on antibacterial, anti-inflammatory and analgesic effects have been reported. In this study, a raw material standardization study was conducted for the industrialization of Z. piperitum. First, optimal conditions for drying methods were established for the standardization of raw materials for Z. piperitum, and optimal conditions were established through content analysis using quercitrin, an marker compound, by obtaining samples every month. As for the drying method of Z. piperitum, it was confirmed that cold air drying was the best. It was analyzed that the marker compound content was highest in July. Next, for functional and toxicity evaluation of Z. piperitum, anti-oxidant, anti-inflammatory and immune enhancing efficacy and cytotoxicity were evaluated. Cytotoxicity of Z. piperitum was not observed, and it was confirmed that although it had an antioxidant and anti-inflammatory effect, it had no immuneenhancing effects. In addition, a study was conducted on the change in the efficacy of Z. piperitum using lava seawater, and as a result of the study, it was confirmed that the efficacy was superior when lava seawater was simultaneously treated. In conclusion, this study suggested the standardization of raw materials through the analysis of the marker compounds and the functional evaluation of Z. piperitum, and it can be used as basic data for future industrialization.

Study on Original Plants of and Foreign Materials Compliance Guidelines for Zanthoxyli Pericarpium (산초(山椒)의 기원(基原)식물과 이물 규격에 관한 연구)

  • Objectives : This study aims to examine validity of the following guideline for Zanthoxyli Pericarpium in the Korean Pharmacopoeia regarding foreign materials: "the seeds of Zanthoxyli Pericarpium that are mixed should not exceed 20%." Methods : Varied compliance guidelines for and original plants of Zanthoxyli Pericarpium across countries were compared and contrasted. In order to do this, pharmacopoeias from a number of different countries including Korea were used as references. Results : The weights including seed parts were Z. piperitum 3.48g, Z. schinifolium 2.94g, and Z. bungeanum 2.16g; while the weights of peel parts were Z. piperitum 1.45g, Z. schinifolium 1.69g, and Z. bungeanum 0.98g. In terms of weight, Z. piperitum was the heaviest with its entire part including the seed, whereas Z. schinifolium was the heaviest with its peel part. The proportions of each seed in the whole part were Z. piperitum 58.33%, Z. schinifolium 42.52%, and Z. bungeanum 54.63%. Considering these figures, including seed parts in the guideline up to 20% is inappropriate; however, this guideline is inevitable in order to use seed parts for medicinal purpose. Conclusion : In this article, the author argues if any changes were to made on the guideline for Zanthoxyli Pericarpium with respect to foreign materials - "the seeds of Zanthoxyli Pericarpium that are mixed should not exceed 20%" - its seed part should firsthand be separated from its peel part and be designated as one kind of medicine. Then, revisions on the foreign materials compliance guidelines for Zanthoxyli Pericarpium should also be made.
