Effect of Saccharomyces boulardii CNCM-I 3799 and Bacillus subtilis CU-1 on Acute Watery Diarrhea: A Randomized Double-Blind Placebo-Controlled Study in Indian Children

  • Purpose: To assess the effect of combination probiotic Saccharomyces boulardii CNCM-I 3799 and Bacillus subtilis CU-1 in outpatient management of acute watery diarrhea in children. Methods: A randomized double-blind placebo-controlled study was conducted in 180 participants aged six months to five years with acute mild to moderate diarrhea. All were enrolled from six centers across India and centrally randomized to receive S. boulardii CNCM-I 3799 and B. subtilis CU-1 or a placebo along with oral rehydration salts and zinc supplementation. Each participant was followed up for three months to assess recurrence of diarrhea. Results: The mean duration of diarrhea in the probiotic and placebo groups were 54.16 hours and 59.48 hours, respectively. The difference in the duration of diarrhea in those administered with probiotic or placebo within 24 hours of diarrhea onset was 25.21 hours. Furthermore, the difference in duration of diarrhea was 13.84 hours (p<0.05) for participants who were administered with probiotics within 48 hours. There were no significant differences in the stool frequencies between the two arms. After three months, 15% in the probiotic group and 18.5% in the placebo group reported episodes of diarrhea. The mean duration of diarrhea was considerably lower in the probiotic group, 31.02 hours versus 48 hours in placebo (p=0.017). Conclusion: S. boulardii CNCM-I 3799 and B. subtilis CU-1 combination was effective in reducing the duration of diarrhea when administered within 48 hours of diarrhea onset. Similarly, it reduced recurrence of diarrhea and its intensity in the subsequent three months.

Nutritional Characteristics of the Major Commercial Dried Fish in Korea (국내 시판 주요 건제품의 영양 특성)

  • This study was conducted to investigate nutrition characteristics of the following major commercially available dried fish (MCDF) in South Korea: plain-dried fish [nogari (PD-N), Alaska pollock (PD-AP), red tongue sole (PD-RTS), and young tidepool gunnel (PD-YTG)], salt-dried fish [(yellow corvina (SD-YC) and red tilefish (SD-RT)], four types of boiled-dried anchovy of different sizes (BD-As), and freeze-dried fish [Pacific saury (FD-PS), Alaska pollock (FD-AP), and Katsuobushi]. The energy content of the MCDF ranged from 103.0 to 420.5 kcal per 100 g. The MCDF in nutritional and functional properties of minerals were SD-RT and Katsuobushi in calcium; none in phosphorus, sodium, or zinc; Katsuobushi in potassium and magnesium; PD-AP, SD-YC, and SD-RT in iron, PD-AP, PD-RTS, SD-YC, and SD-RT in copper; and PD-N, PD-AP, PD-RTS, SD-YC, SD-RT, FD-PS, FD-AP and Katsuobushi in manganese. The total amino acid content of the MCDF ranged from 15.85 to 71.96 g per 100 g; the major amino acids were glutamic acid, aspartic acid, lysine, and leucine. The fatty acid content of the MCDF ranged from 0.81 to 2.93 g per 100 g. The MCFSP expected in nutritional and functional properties of vitamins were PD-N, PD-RTS, FD-PS, FD-AP, and Katsuobushi in riboflavin; PD-N, PD-AP, PD-YTG, BD-As, FD-PS, FD-AP, and Katsuobushi in niacin; PD-N, PD-RTS, SD-YC, and BD-As in vitamin A; and PD-AP, PD-YTG, SD-YC, and FD-AP in vitamin E.

Effects of Protein Intake on Sarcopenia Prevention and Physical Function of the Elderly in a Rural Community of South Korea During the COVID-19 Pandemic (COVID-19시대 한국 농촌 지역 노인의 단백질 섭취가 근감소증 예방 및 신체기능에 미치는 영향)

  • Purpose : We aimed to investigate the effects of nutritional foods on sarcopenia prevention and physical function among the elderly living in rural communities during the COVID-19 pandemic by providing customized nutrition. Methods : This study was conducted in the rural community of SCC. Participants (n=24, over age 65) were randomly assigned into a Protein group (n=12) and a Vitamin group (n=12). The protein group was given 23 g/d of protein (whey, soybean, BCAA) for 8 weeks and the Vitamin group 23 g/d of vitamin (B, C, D, E and mixed minerals such as calcium, magnesium, zinc) for 8 weeks. All participants had their body composition such as height, weight, skeletal muscle mass, body mass index, and body fat percentage, measured using bioelectrical impedance analysis (BIA) and physical function assessed using grip strength and the short physical performance battery (SPPB). Results : At the end of the intervention, there was a significant increase in skeletal muscle mass (p<.01) in the Protein group (p=.002, 4.92 %) compared to the baseline: it increased by 2.33 %. The Vitamin group had a significant increase in body fat percentage after the intervention (p=.001, 15.35 %) compared to the baseline: body fat percentage decreased by 4.49 %. There were no significant differences in left and right Grip strength/Weight, SPPB, 4-m gait speed, chair stand test, and sense of balance in both groups. Conclusion : The findings from this study suggest that 8 weeks of protein intake have a significant effect on skeletal muscle mass and body fat percentage. Protein intake helped promoting the health of the elderly in rural community during the COVID-19 pandemic. It will assist creating a foundation for providing customized nutrition for the elderly in rural community in the future.

Supplementation of nano-zinc in lower doses as an alternative to pharmacological doses of ZnO in weanling pigs

  • A set of studies was performed to determine the influence of dietary ZnO concentration and source during two phases (days 0 to 14 and days 15 to 28). Experiment 1: 168 weaned piglets were allocated to four treatment groups in six replicates. The treatments included a basal diet without ZnO supplementation (control), 2,500 mg ZnO/kg (In2500), 500 mg nano-ZnO/kg (N500), and 150 mg nano-ZnO/kg (N150). Experiment 2: 168 weaned piglets were divided into three treatment groups with eight replicates. The treatments included control, In2500, N300, and 150 mg nano-ZnO/kg (N150). An in vitro trial showed that the growth of Listeria monocytogenes, Escherichia coli, and Salmonella typhimurium was inhibited when exposed to 300 and 500 ppm of ZnO after 24 h of incubation. In experiment 1, the average daily gain (ADG) by the pigs was improved in the N500 and IN2500 treatment groups. Colonization of coliforms and Clostridium spp. significantly decreased in the pigs fed the N500 and IN2500 diets in phase 1. The total plasma antioxidant capacity was greater in the IN2500 and N500 treatment groups than in the control. Superoxide dismutase (SOD) activity was greater in pigs fed the IN2500 (phase 1) or the IN2500 and N500 (phase 2) diets than in the control and N150 treatment group. In experiment 2, pigs in the N300 treatment group showed a higher ADG and lower fecal score colonization of coliforms and Clostridium spp. compared with those in the N150 treatment group. In conclusion, nano-ZnO at a dose of 300 ppm showed the same growth as the pharmacological dose of Zn. This provides an option to the pharmacological dose.

Studies of nutrient composition of transitional human milk and estimated intake of nutrients by breast-fed infants in Korean mothers (한국인 수유부의 수유초기 이행유의 모유성분 분석과 영아의 섭취량 추정 연구)

  • Purpose: This study was conducted to examine the concentration of nutrients in transitional breast milk from Korean lactating mothers and to evaluate daily intakes of their infants based on the Dietary Reference Intakes for Koreans 2010 (KDRIs 2010). Methods: Breast milk samples were collected at 5~15 days postpartum from 100 healthy lactating Korean mothers. Macro- and micro-nutrients, and immunoglobulin (Igs) concentrations in breast milk were analyzed. Results: The mean energy, protein, fat, and carbohydrate concentrations in breast milk were $59.99{\pm}8.01kcal/dL$, $1.47{\pm}0.27g/dL$, $2.88{\pm}0.89g/dL$, and $6.72{\pm}0.22g/dL$. The mean linoleic acid (LA), a-linolenic acid (ALA), arachidonic acid (AA), and docosahexaenoic acid (DHA) concentrations were $181.44{\pm}96.41mg/dL$, $28.15{\pm}8.89mg/dL$, $5.67{\pm}1.86mg/dL$, and $5.74{\pm}2.57mg/dL$. The mean vitamin A, vitamin D, vitamin E, vitamin $B_1$, vitamin $B_2$, vitamin $B_{12}$, and folate concentrations were $2.75{\pm}1.75{\mu}g/dL$, $2.31{\pm}1.12ng/dL$, $0.74{\pm}1.54mg/dL$, $3.02{\pm}1.84mg/dL$, $7.51{\pm}20.96{\mu}g/dL$, $61.78{\pm}26.78{\mu}g/dL$, $63.71{\pm}27.19ng/dL$, and $0.52{\pm}0.26{\mu}g/dL$. The mean concentrations of calcium, iron, potassium, sodium, zinc, and copper were $20.71{\pm}3.34mg/dL$, $0.59{\pm}0.86mg/dL$, $66.71{\pm}10.35mg/dL$, $27.72{\pm}10.16mg/dL$, $0.44{\pm}0.41mg/dL$, and $70.48{\pm}30.41{\mu}g/dL$. The mean IgA and total IgE concentrations were $61.85{\pm}31.97mg/dL$ and $235.00{\pm}93.00IU/dL$. The estimated daily intakes of infants for protein, vitamin D, vitamin E, vitamin $B_2$, vitamin $B_{12}$, iron, potassium, sodium, zinc, and copper were sufficient compared to KDRIs 2010 adjusted by transitory milk intakes. The estimated infants' intakes of energy, fat, carbohydrate, vitamin A, vitamin C, vitamin $B_1$, folate, and calcium did not meet KDRIs 2010 adjusted by transitory milk intakes. Conclusion: In general most estimated nutrient intakes of Korean breast-fed infants in transitory breast milk were sufficient, however some nutrient intakes were not sufficient based on KDRIs 2010. These results warrant conduct of future studies for investigation of important dietary factors associated with nutrients in breast milk to improve the quality of breast milk, which may contribute to understanding nutrition in early life and promoting growth and development of breast-fed infants.

DISTRIBUTION OF SOME CHEMICAL POLLUTANTS IN SUYEONG BAY (수영만 인근해수의 오탁분포에 대하여)

  • In order to study the water pollution in Suyeong Bay, Busan, some chemical constituents were determined at 25 stations in the neap tides on 9 Aug. 1977 and spring tides on 30 Aug. 1977. Range and mean values of the constituents in the spring tides are as follows: $pH\;6.54\~8.06,\;7.54;$ electrical conductivity $0.413\~0.481\times10^5\;\mu\mho/cm,\;0.467\times10^5\;\mu\mho/cm;\;transparency\;0.2\~5.5m,\;2.2m;$ turbidity $1\~60ppm$, 14ppm, chlorosity $15.20\~18.11g/\ell,\;17.67g/\ell;$ fluoride ion $0.94\~1.03ppm$, 0.99ppm; dissolved oxygen $0.17\~7.60ppm$, 4.77ppm; sulfide $0\~0.46ppm$, 0.07ppm; chemical oxygen demand $1.20\~40.74ppm$, 6.11ppm; ammonia-nitrogen $0.060\~0.520ppm$, 0.180ppm; nitrite-nitrogen $0.001\~0.026ppm$, 0.009ppm; nitrate-nitrogen $0\~0.037ppm$, 0.014ppm; phosphate-phosphorus $0.002\~0.261ppm$, 0.050ppm; n-Hexane soluble $0.5\~5.4ppm$, 2.1ppm ; iron $1.0\~104.11\;ppb$, 24.15ppb ; copper $0\~27.45ppb$, 4.19ppb; lead $0\~2.50ppb$, 0.92ppb; zinc $0\~5.15ppb$, 1.47ppb ; cadmium $0\~0.26ppb$, 0.04ppb; and mercury $0.05\~0.37ppb$, 0.11ppb respectively. The variations of the contents of the chemical constituents in the spring tides were larger than in the neap tides. The contents of COD, sulfide, nutrient salts and heavy metals were the highest in the estuary of Suyeong River, and decreased in order of off Kwangan-Ri region, outer Bay and off Haeun-Dae region. The water quality in Suyeong Bay was particularly shown that the concentrations of COO, iron, copper and mercury were higher than those of other coastal aseas and deficiency in dissolved oxygen was observed in some parte of Suyeong Bay. In consideration of the relationship between the chlorosity and the concentrations of nutrient salts, COD and total heavy metals, water pollution of this area is considered due to the inflow of Suyeong River which was extremely polluted by sewage and industrial wastewaters.

Status of Mineral Resources and Mining Development in North Korea (북한 광물자원 부존 및 개발현황 개요)

  • The potential mineral resources in North Korea are magnesite, limestone, coal, graphite, iron, gold, silver, lead, and zinc. North Korea is mainly exporting coal and iron to China(70%) and EU countries. Gold ore reserves(or resources) in North Korea are about 2,000 tons and annual production is 2 tons based on metal. Major gold mines are Sooan, Holdong, and Daeyoodong mines and six smelters are operating. Fe ore reserves (or resources) are 4.3 billion tons and annual production is about 5 million tons based on 63.5% Fe. Major iron mines are Moosan, Leewon, Eunryul, Shinwon, and Jaeryong and 7 smelters are operating. Pb and Zn ore reserves(or resources) are Pb 470,000 tons and Zn 15 million tons, and annual productions are about Pb 26,000 tons and Zn 50,000 tons based on metal respectively. Major Pb-Zn mines are Gumdock and Seongcheon mines. Magnesite ore reserves(or resources) are 2.8 billion tons (95% MgO) and annual production is about 150,000 tons. Major magnesite mines are Ryongyang, Daeheung Youth and Ssangryong mines, and 5 magnesium refractory factories are operating. Apatite ore reserves(or resources) are 340 million tons(30% $P_2O_5$) and annual production is about 300,000 tons(crude ore). Major apatite mines are Daedaeri, Dongam and Poongnyen mines. Coal is established as an important strategic fuel mineral resources and is a major energy source in North Korea. Coal ore reserves(or resources) are 18.6 billion tons and annual production is about 20 million tons. The main coal fields is located in southern Pyongan and the Jigdong mine is the biggest in North Korea.

A Study on Health Condition and Nutritional Status of Female University Students in Masan Area (마산시 일부 여대생의 건강상태 및 영양섭취 실태 조사)

  • The purpose of this study was to evaluate the health condition and nutritional status in female university students in Masan. The 285 subjects aged 20.1 years (18~26 years) were assessed with a set of questionnaire composed of general information, food, smoking, drinking and exercise habits, anthropometric measurements, blood pressure measurements, 24-hour recall and food frequency questionnaire. The rates of smoking and alcohol drinking habits were 1.8% and 82.5%, respectively. All the subjects had the experience of passive smoking. The 11% of the students exercised regularly and 11.6% ate meal regularly. The average height and weight of subjects were 161.0 ㎝ and 53.9 ㎏, respectively and the BMI was calculated as 20.8${\pm}$2.6 ㎏/$m^2$:The 13.3% of subjects were underweight, while 6.7% of them were overweight. The mean value for body fat was 26.4% and subscapular and tricep skinfolds thickness were 14.2 ㎜ and 16.9 ㎜, and waist-hip ratio was 0.72. The systolic/diastolic blood pressure of the subjects was 115.9 ㎜Hg/70.9 ㎜Hg. Except protein, phosphorous, vitamin E, B_6 and C, the average intakes of energy and nutrients were below the Korea recom-mended dietary allowance (RDA). Especially, intakes of calcium, iron and zinc were the lowest, as <70% of RDA. The proportion of energy derived from carbohydrates : protein : fat was 58.0 : 15.8 : 26.2. The 10 frequently consumed food were ssalbap (47.2/mon), kimchi (35.6/mon), onion (16.8/mon), japgokbap (15.1/mon), sesame oil (14.1/mon), carbonated drink (13.3/mon), grapes (12.7/mon), ice cream (12.4/mon), milk (11.9/mon) and water-melon (10.6/mon). Results of this study could be useful for planning nutrition education programs for female university students in this area to improve their dietary habit and health status.

Chemical Composition of Perilla frutescens Britton var. Crispa Decaisne Cultivated in Different Areas of Korea -Part 1. Characteristics of Lipid and Fatty Acid Composition- (자소(紫蘇)의 산지별(産地別) 화학조성(化學組成) -제일보(弟一報) 지질(脂質)의 특성(特性) 및 지방산조성(脂肪酸組成)-)

  • Perilla (Perilla frutescens Britton var. Crispa Decasne) cultivated in three geographical areas of Korea, Gwangju, Taegu and Jeju, was analyzed for carbohydrate, lipid, protein, inorganic components and fatty acid composition. Carbohydrate, lipid and protein content of perilla seed ranged from 40 (Taegu) to 44% (Jelu), from 28 (Jeju) to 34% (Taegu) and from 15 (Gwangju) to 16% (Jeju), respectively. The overage contents of potassium, silicate, calcium, phosphate, iron, zinc, magnesium and mangane in the perilla seed varied between $426{\sim}446$, $197{\sim}229$. $124{\sim}136$, $46{\sim}56$, $30{\sim}49$, $42{\sim}45$, $40{\sim}45$, and $30{\sim}36mg%$, respectively and those variations different cultivation areas were not significant except iron. Saponification number, iodine value and acid value of the perilla oil were between $194{\sim}198$, $196{\sim}200$ and $4{\sim}5$, respectively. Those variations among the cultivation areas were not significant. The composition of the perilla oil was observed to be composed of $92{\sim}95%$ of triglyceride, $1.2{\sim}1.3%$ of phospholipid, $1.7{\sim}1.9%$ of unsaponifiables, $0.7{\sim}0.9%$ of free fatty acid, and $1.1{\sim}1.4$ linolenic, linoleic and oleic acid as $55{\sim}56$, $16{\sim}18$ and $16{\sim}20%$ of total fatty acids, but in phospholipid, the content of saturated fatty acids, $12{\sim}24$ of total fatty acid, was higher than that in triglyceride, $8{\sim}19%$ of total fatty acids. The content of saturated fatty acids in sterylester $(14{\sim}19%)$ was higher than that in sterylglycoside ($6{\sim}7%$ of total fatty acids). The variation in fatty acid composition was not significant in the composition of total fatty acid but a significant difference was observed in the composition of phospholipid, in which the content of palmitate ranged from 11.8%(Taegu) to 24%(Gwangju) of total fatty acids. No significant variation was found in the fatty acid composition among the cultivation areas, while a significant difference was observed in phospholipid.

Quality Analysis of Diverse Rice Species for Rice Products (쌀 가공제품을 위한 다양한 쌀의 품질분석)

  • The objective of this study was to analyze proximate composition and physicochemical properties according to different kinds of rice. In total, 20 varieties of rice were used (Domestic-19, Imported-1). The moisture contents ranged from $11.11{\pm}0.20$ to $3.28{\pm}0.03%$. The crude protein and crude lipid contents were ranged from $5.04{\pm}0.03$ to $7.02{\pm}0.10%$ and $0.18{\pm}0.01$ to $0.73{\pm}0.05%$, respectively. The mineral contents were Calcium, $3.56{\pm}0.11-6.69{\pm}0.08mg/100g$; Sodium, $3.39{\pm}0.01-17.43{\pm}0.04mg/100g$; Phosphorus, $64.12{\pm}0.88-102.0{\pm}0.36mg/100g$; Zinc, $0.95{\pm}0.01-1.75{\pm}0.0mg/100g$; Iron, $0.19{\pm}0.0-0.69{\pm}0.02g/100g$; Magnesium, $9.89{\pm}0.47-23.31{\pm}0.21mg/100g$; Potassium, $47.11{\pm}3.49-82.19{\pm}1.08mg/100g$;and Manganese, $0.47{\pm}0.0-1.14{\pm}0.01mg/100g$. Eighteen kinds of rice exhibited small kernels. Amylose contents ranged from $10.3{\pm}1.27$ to $19.4{\pm}0.15%$, while starch value ranged from $70.8{\pm}2.67$ to $80.1{\pm}5.09%$. Alkali digestion value was described as 5-6 grade and gel consistency was shown to be 'soft' regardless of the rice kinds.
