Quality Characteristics of Sulgidduck prepared by Addition of Astringent Persimmon Powder (떫은감 분말을 첨가한 설기떡의 품질특성)

  • This study investigated the quality characteristics of sulgidduck prepared by the addition of astringent persimmon powder. For Sulg : dduck, the amounts of added astringent persimmon powder were 0, 5, 10, 15, 20%. With the addition of astringent persimmon powder content the moisture content of persimmon sulgidduck (sulgidduck prepared by adding astringent persimmon powder) decreased. With increasing addition of those, Reducing sugar, free sugar and mineral (Ca, K and Mg) of persimmon sulgidduck were increased significantly. L-value in color decreased whereas a- and b-values were increased. Adhesiveness, cohesiveness, gumminess and chewiness in textural profile analysis were decreased. However, there is no respective comparison hole. These result suggest that persimmon sulgidduck can be used as rice cakes commercially desired.

Change of Antioxidative Activity at Different Harvest Time and Improvement of Atopic Dermatitis Effects for Persimmon Leaf Extract (감잎(柿葉) 추출물의 채취시기에 따른 항산화 활성 변화 및 아토피성 피부염 개선효과)

  • Objectives : The purpose of this study was to investigate the anti-oxidative and anti-atopic dermatitis effects of persimmon leaf extract obtained from Cheongdo-gun, where more than 60% of Korean persimmon is produced. Methods : Anti-oxidative effects of the crude persimmon leaf extract harvested monthly between May and November were determined by in vitro assay using 1,1-diphenyl-2-picrylhydrazyl (DPPH) and superoxide dismutase (SOD)-like reaction. Anti-atopic dermatitis effects of the crude persimmon leaf extract were determined by using collagenase type I inhibition assay and by quantitative assays including serum histamine, prostaglandin E metabolite and leukotriene $B_4$ levels in animal model of atopic dermatitis using Balb/c mice. Results : Persimmon leaf extract harvested in May had higher levels of total phenolic compounds (182.24 mg/g) and flavonoids (23.05 mg/g) than the ones of different month extract. Also, persimmon leaf extract harvested in May showed the most effective extract scavenging activities of DPPH free radical ($13.39{\pm}0.21\;{\mu}g/ml$) and superoxide anion radical ($40.52{\pm}2.32\;{\mu}g/ml$), leading to use the persimmon leaf extract harvested in May for the experiments hereafter. Persimmon leaf extract showed $326.71{\pm}4.6\;{\mu}g/ml$ of 50% inhibitory concentration ($IC_{50}$) for collagenase type I which is responsible for the degradation of extracellular matrix. In addition, persimmon leaf extract application group could decrease serum levels of histamine, prostaglandin E metabolite and leukotriene $B_4$ compared to the negative control in animal model of atopic dermatitis. Especially, persimmon leaf extract showed a significantly decreased serum leukotriene $B_4$ level relative to the levels of histamine and prostaglandin E metabolite. Conclusions : Persimmon leaf extract showed anti-oxidative and anti-atopic dermatitis effects in vitro and in vivo. These results suggest that persimmon leaf extract may have immunoregulatory function for alleviating atopic dermatitis by decreasing collagenase activity and mast cell activation.

The Application of Single Nucleotide Polymorphism Markers for Discrimination of Sweet Persimmon Cultivars (단감 품종 판별을 위한 single nucleotide polymorphism 마커 적용 검정)

  • The recent development of next-generation sequencing technology has enabled increased genomic analysis, but very few single nucleotide polymorphism (SNP) markers applicable to sweet persimmon (Diospyros kaki Thunb.) cultivars have been identified. In this study, SNP primers developed from five pollination-constant astringent (PCA) persimmons native to Korea were applied to discriminate between cultivars and verify their usability. The polymerase chain reactions of 19 SNP primers developed by Jung et al. were checked, with 11 primers finally selected. The other eight were very difficult to analyze in the agarose gel electrophoresis and QIAxcel Advanced System used in this experiment and were therefore excluded. The 11 SNP primers were applied through first and second verification to 76 cultivars and collection lines including 20 pollination-variant non-astringent (PVNA), 30 pollination-constant non-astringent (PCNA), 20 PCA, and six pollination-variant astringent (PVA). Of these, 38 were indistinguishable (eight PVNA, 18 PCNA, nine PCA, and three PVA). However, the results of applying the 11 SNP primers to new sweet persimmon cultivars, namely Gamnuri, Dannuri, Hongchoo, Jamisi, and Migamjosaeng, showed that they have the potential to be used as a unique marker for simultaneously determining between them.

Effects of persimmon peel supplementation on pork quality, palatability, fatty acid composition, and cholesterol level

  • Background: The objectives of this study were to investigate the effects of persimmon peel (PPM) supplementation on carcass performance, pork quality, eating quality, fatty acid composition, and cholesterol concentration of the porcine longissimus dorsi muscle. Results: No adverse effects of PPM supplementation were observed on carcass and meat quality characteristics among the treatment groups (P > 0.05), whereas pork loins from pigs fed a diet supplemented with 0.9 % persimmon peel (T3) showed more tender meat than did pork loins from pigs fed a control diet (P < 0.01), even though no significant difference was observed between the control and T1 group. The T3 group had higher ratio of polyunsaturated fatty acids relative to saturated fatty acids (0.33 vs. 0.28, P < 0.05) and lower total cholesterol concentration (94.4 vs. 99.1 mg/g, P < 0.05) compared to the control group. Persimmon peel appeared to have beneficial effects on fatty acid composition and cholesterol concentration, probably leading to a hypocholesterolemic effect. Conclusions: Animal diets fortified with persimmon peel represents an efficient and useful method for improving the nutritional quality of pork without impairing growth performance and eating quality properties.

Effect of Selected Persimmon Leaf Components against Sarcoma 180 Induced Tumor in Mice (생쥐 육종에 대한 감잎 성분의 암 성장 억제효과)

  • Antitumor activities of tannin extract and chloroform fraction extract from the persimmon leaves, and 2, 4-decadienal identified as an antimutagenic compound in persimmon leaves were examined in sarcoma 180 implanted tumor in mice by using both light and transmission electron microscopes. Among them, tannin extracted from the persimmon leaves delayed the progression of malignant tumor but the other two did not show any noticeable effect. The antitumorigenic activity of tannin extract might not come from the selective cytotoxicity against tumor cells, but might be, in an anaerobic environment, from the inhibitory action against oncogenic protein synthesis or from the proteolysis of the preformed oncogenic proteins by autophagocytic granules. therefore, the tannin from persimmon leaves might protect cells from fast progression of malignant tumorigensis.

A Study on the Revitalization Plan of Changwon Persimmon Theme Park by Analyzing the Actual Condition of Rural Theme Park (농촌테마공원 실태분석을 통한 창원단감테마공원 활성화 방안)

  • The purpose of this study is to analyze the actual condition of the already established rural theme park, draw the weak and strong points, and come up with an efficient performance plan for Changwon Persimmon Theme Park through the benchmarking of the best overseas case. According to the analysis, it is necessary to introduce a facility and a program for family customers as a plan for promoting Changwon Persimmon Theme Park. It is required to secure safety through public operation and management, improve scalability of the facility through the establishment of multi-functional complex facility, and come up with a plan for operating a special program associated with local resources. Therefore, this study drew three activation factors: the establishment of operation and management system, the development of operation contents by facility, and the establishment of operation in each area. First, to establish the operation and management system, it is necessary to classify the organization of the theme park into the operation business area and into operation & management area by job function. Secondly, it is necessary to establish a special program in consideration of space and facility, suggest a differentiated plan for operation contents, and create a facility operation plan and program for Changwon Persimmon Theme Park. Lastly, to operate and manage Changwon Persimmon Theme Park smoothly, it is necessary to set the theme park space as open collaboration space which the local residents can share and participate in by avoiding the conventional administration-based business performance and operation. This study suggested the plan for establishing an operation and management system for Changwon Persimmon Theme Park and its operation, the establishment of a special program, a business performance strategy, and the use of internal and external spaces of the theme park.

Effect of Food-Garbage Compost on the Characteristics and Storage of Persimmon Fruits (음식물 쓰레기를 이용한 퇴비가 감과육의 특성 및 저장성에 미치는 영향)

  • Reducing sugar content of persimmon fruits was increased by applying food-garbage compost Dungsi was brighter with yellow color than that of control. The Gabjubaekmok was darker than that of control with red color. It was suggested that taste of astringent was reduced because total phenol and soluble tannin contents were reduced by applying food-garbage compost. The vitamin C content of persimmon fruits during storage was higher than that of control. Stability of persimmon fruits by applying food-garbage compost and non-food garbage compost was about the same at room temperature. At low temperature, hardness of persimmon fruits was maintained for 20 days. Hardness and reducing sugar contents of persimmon fruits were increased by applying food-garbage compost. The result was shown that there was no effect on composition of persimmon fruits by applying food-garbage compost and maintaining hardness at room temperature, but at low temperature, the composition of persimmon fruits was changed.

Research for Reduction of Body Fat and Development of High Functionality in Young Persimmon Fruit (체지방 감소 고기능성 발현 떫은 감 소재 개발 연구)

  • Objectives : This study was conducted to evaluate the antioxidant activity and inhibitory activity of pancreatic lipase in vitro using natural products sangju dungsi, chungdo bansi, kabju baekmok three kind of young persimmon fruit extracts and to develop a high - functional anti - obesity substance with reduced body fat. Methods : The antioxidative effect of the three kind of young persimmon fruit extracts was determined by hot water extraction, 30% EtOH extraction and 70% EtOH extraction. The antioxidant activities were evaluated through radical scavenging assays using 1,1-diphenyl-2-picrylhydrazyl (DPPH) and 2,2'-azino-bis (3-ethylbenzothiazoline-6-sulphonic acid) (ABTS) radicals. Furthermore, we examined total phenol and flavonoids contents. And the pancreatic lipase inhibition was measured by selecting the sangju dungsi extract with antioxidant effect. Results : The yield of water, 30% and 70% EtOH extract from young persimmon fruit was sangju dungsi (water 8.3%, 30% EtOH 18.1%, 70% EtOH 16.9%), chungdo bansi (water 16.2%, 30% EtOH 16.1%, 70% EtOH 11.6%), kabju baekmok (water 16%, 30% EtOH 16.8%, 70% EtOH 11.5%). The sangju dungsi 30% EtOH extract eminent DPPH ($IC_{50}$, $19.25{\pm}2.94{\mu}g/m{\ell}$) and ABTS ($IC_{50}$, $19.94{\pm}4.07{\mu}g/m{\ell}$) radical scavenging activity, and total phenol $52.37{\pm}0.78mg/g$ and flavonoid $7.97{\pm}0.13mg/g$ contents were also excellent. It also showed excellent pancreatic lipase inhibition efficacy. Conclusion : The extracts from the three kind of young persimmon fruit extracts showed excellent antioxidant activity. sangju dungsi 30% EtOH extract may be a new anti-obesity material by reducing fat absorption through the inhibition of pancreatic lipase.

A Sweet Persimmon Grading Algorithm using Object Detection Techniques and Machine Learning Libraries (객체 탐지 기법과 기계학습 라이브러리를 활용한 단감 등급 선별 알고리즘)

  • A study on agricultural automation became more important. In Korea, sweet persimmon farmers spend a lot of time and effort on classifying profitable persimmons. In this paper, we propose and implement an efficient grading algorithm for persimmons before shipment. We gathered more than 1,750 images of persimmons, and the images were graded and labeled for classifications purpose. Our main algorithm is based on EfficientDet object detection model but we implemented more exquisite method for better classification performance. In order to improve the precision of classification, we adopted a machine learning algorithm, which was proposed by PyCaret machine learning workflow generation library. Finally we acquired an improved classification model with the accuracy score of 81%.

Quality Characteristics of Gochujang Containing Various Amounts of Persimmon Syrup (감 시럽 첨가 고추장의 품질 특성)

  • This study aims to determine the sensory acceptability of Gochujang added with persimmon syrup concentrate. To achieve this, Gochujang was blended with different concentrations of persimmon syrup concentrate (0%, 10%, 20%, 30%, 40%). Moisture contents and salinity decreased, whereas L, a, b values, pH level, and sugar contents and viscosity increased as the concentrations increased. As a result of an attribute difference test, glossiness and sweetness significantly increased with more concentrations. The acceptance test showed that 30% concentrate was the most preferable for taste, texture, and overall quality. In conclusion, the results indicate that addition of 30% persimmon syrup concentrate to Gochujang is optimal, providing good properties as well as reasonably high overall acceptability.
