  • The purpose of this study was to identify and compare the dimensions and patterns of the perception of traditional food for Koreans living in Yanbian, Mongolia and Uzbekistan. Items representing the perception of traditional food were combined into a dimension and a pattern based on underlying perception of the Koreans living in the area. Any difference in the perception of the Koreans living in these areas likely reflects their different dimensions and patterns. Thus, it is important to determine if Koreans living in Yanbian, Mongolia and Uzbekistan should be treated as a homogeneous group when defining their perceptional structure of traditional food. Factor and cluster analysis of the data generated in this study revealed two different dimensions and patterns for each group of Koreans living in Yanbian, Mongolia and Uzbekistan. However, the structure of the dimensions and patterns of the perception of traditional food differed, indicating that Koreans within and between the countries are not a homogeneous group. Similarities and differences in perceptional dimensions and patterns among Yanbian, Mongolian and Uzbekistan-Koreans are also discussed. Moreover, future implications for food and nutrition specialists, especially for those who have an interest in Korean traditional food in Asia and those who have an interest in globalization of Korean traditional food are provided.

  • To find the association of perception of health status with lifestyle of different ethnic groups living in north-eastern part of China, a cross-sectional questionnaire survey was done by 10 local health workers for 375 Korean immigrants and 217 Chinese whose age was 30 years old or more. Because Korean immigrants showed higher mortality than Chinese, we expected to find significant lifestyle related with perception of health status which was known to be a predictor of mortality by different ethnic groups. The results were as follows : 1. We found that 59.7% of Yanbian Koreans and 42.9% of Yanbian Chinese felt unhealthy (p=0.000). 2. For Yanbian Koreans, significant variables associated with perception of health status were selected through logistic regression analysis and they were sex; female to male with an OR=2.45 (95% confidence interval[CI] 1.06, 5.64), prevalence of chronic illness with an OR=5.48 (95% CI: 4.62, 15.56), mont of meal; small or moderate to full with an OR=2.67 (95% CI : 1.40, 5.09), preference of spicy food with an OR=1.78 (95% CI : 1.04, 3.04), and less amount intake of vitamin $B_2$, with an OR=2.29 (95% CI : 1.33, 3.93). 3. For Yanbian Chinese, significant variables associated with perception of health status were prevalence of chronic illness with an OR=4.97 (95% CI : 2.11, 11.68), history of taking ginseng with an OR=3.72 (95% CI : 1.33, 10.43), and less intake of vitamin C with an OR=0.18 (95% CI : 0.07, 0.46). In conclusion, sex, presence of chronic illness, dietary habit, and amount of $vitamin-B_1$ intake were associated with perception of health status in Yanbian Koreans. Presence of chronic illness, experience of ginseng intake, and amount of vitamin C intake were associated with perception of health status in Yanbian Chinese. To prove cause-effect relation between perception of health status and lifestyle, further study is needed for these different ethnic groups.

  • This study was conduced to identify the preference and intake frequencies of traditional Korean foods by Chinese-Koreans in the Yanbian region of China based on the hometown of the female head of household. Data were collected from 261 Korean housewives living in Yanbian. Twenty-six kinds of daily food items were surveyed. Analysis of variance was used to compare the similarities and differences among the three groups, which were divided according to hometowns in North Korea, South Korea, and China. The results for the traditional Korean daily food preferences showed that housewives born in South Korea are more likely to prefer cereal soup, vegetables soup, and fermented rice punch than housewives from North Korea and China. Considering the intake frequencies of traditional Korean foods, Korean housewives born in China are more likely to eat boiled rice and a bun stuffed with seasoned meat and vegetables, as well as beef and vegetables cooked in a casserole than housewives with hometowns in South Korea and North Korean. In this article, similarities and differences in the preferences and intake frequencies of traditional Korean foods are discussed, and implications for nutritionists as well as food marketers are provided.
