고사리 산업화를 위한 인공종자 개발 및 생산 (Synthetic Seed Development and Production for Industrialization of Eastern Bracken)

  • Ferns have been consumed as food in many countries for centuries. As rich sources of protein, fiber, minerals, vitamins, essential amino acids, and fatty acids, ferns provide important nutrients to humans. Eastern bracken (Pteridium aquilinum var. latiusculum (Desv.) Underw. ex A. Heller) is the most popular edible fern in South Korea where, additionally, it has long been used as an edible wild leaf vegetable. Recently, the production of eastern brackens in South Korea (2018) has reached 14,032 tons, for an annual revenue of 83.5 billion won, and even more eastern brackens are marketed if imports are taken into account as well. Most of the common ferns can be propagated using spores. However, fern farmers cultivate seedlings through traditional propagation methods, such as root pruning or rhizome division. These propagation methods exhibit limitations in forming roots and growing-points and are labor intensive. Quality seedlings of eastern bracken can be obtained through spore propagation, but the spores are fine and difficult to handle in the field. In addition, it would require appropriate environmental control. The production of synthetic seeds using encapsulation technology is easy to establish and it can be used to achieve high productivity at low cost. Synthetic seeds contain explants embedded into a seed foam, and they overcome the limitations of micropropagation and offer the possibility of using plug seedlings. Synthetic seed matrix, such as sodium alginate, has the advantages of low cost, low toxicity, and gel stability. The present study aimed to develop and produce synthetic seeds for the commercial exploitation of eastern bracken. Furthermore, we verified spore germination and the extent of gametophyte and sporophyte development achieved with our new synthetic seeds, whose production was intended to solve current problems with the handling, storage, and transportation of eastern bracken.

곰취의 양액재배 기술 개발 I. 배지종류 , 배지량 , 재식밀도에 따른 곰취의 생육 및 수량 (Studies on the Nutri-Culture of Major Wild Vegetable Ligularia fischeri Turcz I. Growth and Yield of Ligularia fischeri Turcz. by Media, Amount of Media and Planting Density in Nutri-Culture)

  • 본 연구는 최근 건강 및 저공해 식품으로 수요가 급증하고 있는 주요 산채류인 곰취의 품질 및 수량 제고와 연중 생산을 위한 양액재배 기술을 개발하고자 이에 알맞는 배지종류, 배지량, 재식밀도 둥을 구명 하는 일련의 시험을 수행하였다. 그 결과를 요약하면 다음과 같다. 1. 곰취의 양액재배시 펄라이트, 모래, 팽연화(膨軟化)왕겨 등 공시한 3종의 배지 중 팽연화(膨軟化) 왕겨가 가장 생육이 양호하고 수량도 높아 적정배지로 인정 되었는데 이에 대한 특성은 기존 배지인 펄라이트에 비해 진비중(眞比重), 공극율(孔隙率)의 차이가 없으면서 액상(液相) 비율(比率)이 44.3%로 높은 등 물리성이 양호하였으며 생왕겨에 비해서는 수분흡수율이 1.5배나 높아 왕겨를 배지로 사용할 경우 문제점이었던 수분 흡수 능력도 양호하였다. 곰취의 생육단계별 체내 질소함량은 생육초기인 정식후 20일경에는 1.42%로 공시 배지중 가장 낮았으나 생육후기로 갈수록 점차 높아져 정식후 60일경에는 생육초기에 비해 2.4배나 증가되었고 3종의 배지 중 가장 높았다. 곰취의 엽진(葉辰), 엽폭(葉幅), 엽수(葉數) 등 생육은 팽연화 왕겨 배지에서 가장 양호하였으며 다음으로 펄라이트, 모래 순이었다. 수량은 하계 및 동계재배 공히 팽연화(膨軟化) 왕겨에서 초기 수량은 다소 낮았으나 후기로 갈수록 높아져 기존배지인 펄라이트에 비해 각각 $15\sim29%$ 증수되는 경향이었다. 2. 배지량에 따른 생육 및 수량은 유의성이 인정되지 않아 경제성 및 재배의 안정성을 고려할 경우 105 $\iota/m^3$가 적정한 것으로 인정되었다. 3. 재식밀도별 수량은 밀식일수록 증수되는 경향으로 50주/$m^3$에서 가장 높아 적정재식 밀도로 판단되었는데 더 이상의 밀식은 정식작업이 불가능하였다.절편과 약에 있어서 생장조절물질(生長調節物質)에 대한 반응에 차이(差異)가 다소 있음을 알 수 있었다. 약유래 식물체의 염색체(染色體)조사결과 대부분이 2n=34이었으며, 소수(小數) (5.4%)가 4배체이었다.(畦幅) 50cm, 주간(株間) l0cm로 재배(栽培)하는 것이 효과적(效果的)이었다.糞肥料施用)은 15%, 유기질(有機質) 비료(肥料)는 26%, 3요소 시용(施用)은 17%가 각각(各各) 증수(增收)되었으나, 특히 퇴비시용(堆肥施用)에서 31% 증수(增收)되었고, 근피중(根皮重)은 무비구(無肥區) 151kg에 비(比)하여 퇴비(堆肥), 계분(鷄糞) 비료(肥料) 시용(施用)은 $42{\sim}49%$ 증수(增收)되어 모단(牡丹) 재배시(栽培時) 화학비료(化學肥料) 시용(施用)보다는 퇴비(堆肥) 등(等) 유기질(有機質) 비료(肥料) 시용(施用)이 효고적(效果的)이었다.DS-PAGE법(法)으로 단백질(蛋白質) 양상을 등숙시기별(等熟時期別)로 조사(調査)한 결과(結果) 두 계통간(系統間) 질적(質的)인 차이(差異)는 보이지 않았으나 시기별(時期別)로는 양적차이(量的差異)를 나타냈다.間)에는 부(負)(-)의 상관(相關)이 있다.($P{\leq}0.01%$). 5. NEL 및 starch value 환경온도(環境溫度)가 상승(上昇)됨에 따라 감소(減少)된다. 4 엽기(葉期) sorghum식물(植物)의 환경온도(環境溫度)를 달리 하였을 때 NEL가치(價値)는 각각(各各) 4.87MJ($30/25^{\circ}C$), 5.46MJ($25/20^{\circ}C$) 및 5.81MJ/kg($18/8^{\circ}C$)로 변(變)하여 고온(高溫)에서 net energy lactation 축적(蓄積)이 크게 감소(減少)되었다.다.

비비추 나물의 자생지 생태환경과 근권미생물상 (Ecological Environment and Rhizosphere Microflora in the Native Soil of Purple-Bracted Plantain Lily for Wild Vegetables)

  • 본 연구는 비비추 나물의 자생지 생태환경과 근권 미생물상을 조사하여 분석하였다. 비비추 나물 자생지 토양의 토성을 보면 사양토(SL)>양토(L)>식양토(CL)등의 물리성을 보였다. 또한, 토양의 pH를 보면 4.8 정도로 다소 산성이었으며, 전기전도도는 0.08mS/cm, 유기물 함량은 0.08g/kg 정도였다. 토양수분함량은 68.6% 정도였고, CEC는 $100.8cmol^{(+)}kg^{-1}$ 정도로 측정되었으며, 유효인산함량은 103.4mg/kg 정도였다. 치환성 양이온을 보면 칼륨은 $0.33cmol^{(+)}kg^{-1}$, 칼슘은 $2.26cmol^{(+)}kg^{-1}$, 그리고 마그네슘은 $0.87^{(+)}kg^{-1}$ 정도인 것으로 측정되었다. 자생지의 온도변화를 보면 $15{\sim}20^{\circ}C$ 정도로서 노지에 비해 온도가 다소 낮으면서도 최고온도와 최저온도의 변화가 적었으며, 습도는 $60{\sim}80%$ 정도로 노지에 비해 다소 다습조건이었다. 광도는 오전 10시에 노지가 $2,300{\mu}mol/m^2/sec.$ 정도였던 반면, 자생지의 광량은 $1,750{\mu}mol/m^2/sec.$ 정도로서 차광효과가 뚜렷하였다. 토양내 총 균수는 $8.4{\times}10^7\;c.f.u./g$ 정도의 밀도를 보였고, 근권의 균근균 포자 밀도를 보면 크기가 $500{\mu}m$ 이상은 0.8개 정도, $355{\sim}500{\mu}m$는 1.3개 정도, $251{\sim}354{\mu}m$는 2.1개 정도, $107{\sim}250{\mu}m$는 38.1개 정도, $45{\sim}106{\mu}m$는 110개 정도인 것으로 계수되었다. 뿌리에서 균근감염 양상을 보면 vesicle 17%, hyphae 6%등으로서 총 23%정도의 균근 감염율을 보였다. 그러나 arbuscule에 의한 감염은 발견되지 않았다.

인공소상가설(人工巢箱架設)에 의(依)한 야생조류(野生鳥類)의 서식생태(棲息生態)에 관(關)한 연구(硏究) -경남지역(慶南地域)을 중심(中心)으로- (Ecological Studies on the Inhavitation of Artificial Nests by Wild Birds -Especially in Gyeongnam Province-)

  • 경남(慶南)의 주요(主要) 14개지역(個地域)의 산림(山林)에 통나무 재소상(材巢箱)과 판재소상(板材巢箱), 혼합재소상(混合材巢箱)을 1984년(年) 4월(月) 1일(日)에 가설(架設)하여 1986년(年) 6월(月) 30일(日)까지 가설지역내(架設地域內)의 서식조류(棲息鳥類)의 종류(種類)와 소상별(巢箱別) 서식상황(棲息狀況), 지역별(地域別) 및 임상별(林相別) 서식상황(棲息狀況) 영소조류(營巢鳥類)의 생태(生態) 등(等)을 조사(調査)하여 보았던 바 그 결과(結果)는 다음과 같다. 1) 서식조류(棲息鳥類)는 모두 20과(科) 35종(種)이였으며 그 중(中)에서는 꿩과 멧비둘기, 멧새, 오목눈이, 박새, 찌르레기, 때까치 등(等)이 가장 많이 서식(棲息)하였다. 2) 인공소상내(人工巢箱內)에서 가장 많이 서식(棲息)한 조류(鳥類)는 진박새(17.2%)와 박새(16.7%), 쇠박새(12.2%) 등(等)이였으며 그 중(中)에서도 진박새가 제일 많이 서식(棲息)하였다. 3) 각(各) 지역별(地域別) 인공소상내(人工巢箱內)의 서식상황(棲息狀況)을 보면 고산지역(高山地域)과 저산지역(低山地域)에서는 진박새와 박새가 공원지역(公園地域)보다 더 많이 서식(棲息)하였고, 참새와 찌르레기 등(等)은 도시공원지역(都市公園地域)과 저산지역(低山地域)에서 더 많이 서식(棲息)하였다. 4) 서식(棲息)한 소상(巢箱)(전체(全體)의 61%)중(中)에서 번식산란(繁殖産卵) 장소(場所)로 이용(利用)된 것(45.5%)이 영소용(營巢用)으로 이용(利用)된 것(15.6%)보다 더 많았다. 5) 인공소상내(人工巢箱內)의 종류별(種類別) 서식상황(棲息狀況)을 보면 판재소상(板材巢箱)(A형(型))과 판재소상(板材巢箱)(B형(型))보다 혼합재소상(混合材巢箱)과 판재소상(板材巢箱)(C형(型))이 더 많이 서식(棲息)하였다. 6) 출입공(出入孔)의 크기별(別) 서식상황(棲息狀況)을 보면 3cm 출입공(出入孔)(81.1%)이 4cm 출입공(出入孔)(57.8%)과 5cm 출입공(出入孔)(24.4%)보다 더 많이 서식(棲息)하였다. 7) 임상별(林相別) 서식상황(棲息狀況)을 보면 혼효림(混淆林)(73.3%)이 침엽수림(針葉樹林)(68.3%)에서 보다 더 많이 서식(棲息)하였다. 8) 조류별(鳥類別) 산란시기(産卵時期)는 박새류(類)는 4월말(月末)~5월상순(月上旬)이였으며 밀화부리와 때까치, 알락할미새, 참새 등(等)은 5월중순(月中旬)이었다. 9) 산란수(産卵數)는 박새류(類)와 참새, 알락할미새류(類)는 매일(每日) 1개(個)씩 평균(平均) 7.2개(個)를 산란(産卵)하였으며, 밀화부리류(類)는 7일간(日間)에 4개(個), 때까치류(類)는 4일간(日間)에 5개(個)를 산란(産卵)하였다. 10) 포란기간(抱卵期間)은 박새류(類)는 16~18일간(日間)이였으며, 기지(基地)의 조류(鳥類)는 대부분(大部分)이 11~14일간(日間)이었다. 11) 부화(孵化) 13일간(日間)의 각종조류(各種鳥類)의 부위별(部位別) 성장상태(成長狀態)를 보면 박새류(類)의 평균체중(平均體重)은 13.89g, 날개의 길이는 72.00mm, 부척(跗蹠)의 길이는 20.86mm였으며, 참새류(類)의 평균체중(平均體重)은 20.30g, 날개의 길이는 66.17mm, 부척(跗蹠)의 길이는 20.15mm였다. 12) 식이물(食餌物)의 종류(種類)를 보면 참새는 유충(幼虫)을 55.2%, 성충(成虫)을 37.2%, 번데기를 2.8%, 거미류(類)를 2.8%, 식물질(植物質)을 2.0%를 먹이로 하였는데, 이들 중(中) 98%가 동물질(動物質)이였으며, 또한 이 동물질중(動物質中) 95.2%는 삼림해충(森林害虫)이였다.

소설 "토지"에 나타난 경상남도 향토 음식문화 (A Study on the Kyungsangnamdo Native Local Food Culture in the Novel "Toji")

  • This study was intended to outline the characteristics of the food culture in the area of Kyungsangnamdo and its modernization by interpretation and analysis of the novel Toji, which was set in Hadong, Jinjoo in the area of Kyungsangnamdo in the early 20th century. The characteristics of the Kyungsangnamdo area's native dish during the Japanese ruling era in the latter half of the Choson dynasty are as follows. In the first part of the novel, which spans from 1897 to 1908, vegetable and grain food development can be seen in the area of Hadong, the interior plains of Kyungsangnamdo, where there is a typical farming village in the mountains. The second part of the novel, which spans from 1911 through 1917, includes some mentions of the properties of Kyungsangnamdo area's native dishes through the lens of emigrated Koreans living on Gando island. Gando island is in China, and is where Seohee, the heroine, escapes from her homeland and remains for a period of years. There is a unique type of seafood in the Gando area using fresh marine products, exactly the same as in the Kyungsangnamdo area. The third part of the novel spans 1919 through 1929, after Seohee returns to her own country and regains her house. There is a noticeable description of food culture in the area of Jinjoo in Kyungsangnamdo through the description of Seohee focusing on the education of her children. The well-described features of Jinjoo are boiled rice with soup of beef leg bones and Jinjoo bibimbob, with vegetables and a variety of foods using cod. Cod are caught in large quantities in Kyunjgsangnamdo, and cities in the area grow to medium size as the area became traffic-based. The fourth part of the novel spans from 1929 through 1938, and includes very detailed descriptions of characters and background locations. Salted fish combined with the wild ingredients of Mt. Jiri feature prominently in the Kyungsangnamdo's area descriptions. The fifth part spans from 1940 through 1945, and as the Japanese colonization era ends, the foods described in Kyungsangnamdo seem to develop the usage of soybean paste. With abundant fish and shellfish Kyungsangnamdo, the dishes that evolve to use soybean paste include mussel soybean paste soup, picked bean leaves in soybean paste, chaitgook - cold soup from soybean paste, and seolchigook used with seaweed and sea laver.

유아 교육기관의 급식 운영실태와 유아의 식사 섭취량 조사 (A Study on Kindergarten's Meal Service Program and Children's Food Intake)

  • Today, the role of kindergarten is more important as nutrition provider through snack and meal services. Desirable kinds and amounts of food items at school lunch menu were important factors of nutrients intakes in children. This study was performed to assess the kindergarten's meal service program (snack and lunch) and the consumption amount of lunch according to each dishes. Twenty four institutions that cared over one hundred children were observed at Seoul and Kyunggido area. Well-trained observers checked meal and snack serving activity and foodservice facilities by formal checklist. And using the weighing method assessed the consumption levels of food items at lunch. During 3 days, 30 children in each kindergarten were selected randomly according to age, observers measured serving and residual weight of each food. The data was compiles by performing ANOVA-test using SPSS WIN 10.0. The result were as follows: 1) Foodservice facilities in kindergarten was limited to provide qualified foodservice. $91.7\%$ of institution had kitchen, $41.7\%$ had dinning. The kitchen equipment possession rate was $12.5\%$ (oven), $30.8\%$ (heating cabinet), $58.3\%$ (refrigerator). The rate of using document about foodservice was used $83.3\%$ (menu list), $41.7\%$ (daily foodservice record), $25\%$ (standard recipe). $41.7\%$ of institution employed licensed dietitian. Only $41.7\%$ of subjects preserved meal after daily meal service. 2) Meal serving size was decided by teacher, $54.5\%$ at snack and $43\%$ at lunch and pre-divided individual portion type was $36.4\%$ at snack and $28.6\%$ at lunch. The rate of cleaning activity before meal was $72.2\%$ at snack, $90.5\%$ at lunch. And nutrition or sanitation education activity was more performed at lunch time, for examples brushing teeth activity was $12.5\%$ at snack $85.7\%$ at lunch. 3) The consumption amounts of plain cooked rice was $112.7{\pm}26.1{\cal}g$, cooked rice and cereal was $93.06{\pm}27.97{\cal}g$, curry rice was $208.35{\pm}64.84{\cal}g$ and the consumption amounts of these main dishes was significantly different by age (p < 0.001). The consumption amounts of soup was very different according to children's preference. The consumption amounts of seaweed soup was $120.18{\pm}82.13{\cal}g$, wild sesame and bean-paste soup was $40.64{\pm}23.16{\cal}g$. The consumption range of kimchis was from $6{\cal}g\;to\;13{\cal}g$, jorim (braised food) was from $3{\cal}g\;to\;25{\cal}g$, fried food (include stir fried, deep fat fried, pan fried) was from $14.5{\cal}g\;to\;22{\cal}g$, vegetable dish was from $3{\cal}g\;to\;16{\cal}g$. These consumption amount of each dishes was not reached recommended portion size of nutritionally planning menu by nutritionist.

한국 근로자의 식품섭취 기호도에 관한 연구 (A Study on the Preferences for Food Intake of Korean Industrial Workers)

  • This study was carried on the preferences for food intake pattern of Korean industrial workers. The survey was conducted from Feb 17, to March 31, 1992 by questionnaires which was composed of 21 items. The subjects of this study were composed of 426 clerical workers, and 439 physical workers. The results were obtained as follows. 1. In the educational background, clerical workers was almost of highschool or collage graduates, and physical workers was almost of highschool graduates. Marginal food cost of per person for lunch a day was from 500 Won to 1,000 Won. They replied that amount of staple food and side dishes were appropriate, and the type of preferable foods was Korean style cooked rice. Also it was known that physical workers thought their nutritive condition more badly than that of clerical workers. So the physical workers considered their health very much when they had meal. It was represented that unbalanced diet, without diet and drinking alcohol effected badly to food intake and taste of food was the most important point in food intake. 2. Preferences for staple foods; Cooked rice was preferred the most by the subjects. Cooked rice with redbean was preferred by clerical workers and cooked rice with soybean was preferred by physical workers and cooked rice with soybean was preferred by physical workers. Also clerical and physical workers liked Kalkooksoo (hot noodle), Nangmyun (cold noodle), bread, vegetable bread and disliked Sphagetti, Ramyun (Instant noodle) in same rate. In the next, cooked rice covered with raw fish pieces (Sushi) was preferred by clerical workers and Mandu-kook was preferred by physical workers. Also they disliked Curriedrice and Hashrice in same pattern. 3. Preference for side-dishes; The Acceptances for side-dishes were high soybean paste soup (clerical workers:43.7%, physical workers:34.4%), Kim chi stew, fried potatoes, crab steaming (37.8%, 36.9%), broiled fish (34.6%, 33.9%), fried green pepper, Ham, Chinese cabbage Kim chi, and pickled garlic by clerical and physical workers all together. But in clerical workers, Wooghugi beef-rib tang, Deodeok muchim, spinach namul, beef jangjeorim, fried shrimp were shown to have high preference in physical workers, beef-rib tang, wild onion and shepherd's purses muchim, soybean sprout, fish jeorim, fried sweet potatoes were high preference. 4. Preference of Snacks; The preferences for snacks were high in strawberry (clerical:36.3%, physical:34.3%), milk (49.9%, 44.4%), waxy rice Doek (30.7%, 30.2%), coffee (40.1%, 38.9%) by two groups in same order.

Sclerotium rolfsii에 의한 곰취 흰비단병 (Stem Rot on Ligularia fischeri Caused by Sclerotium rolfsii in Korea)

  • 2012년과 2013년 6월 하순 강원도 횡성과 평창의 곰취(Ligularia fischeri) 재배포장에서 포기가 서서히 시들어 말라 죽는 이상 증상이 발생하였다. 발병정도는 30-80%로 병든 식물체를 조사한 결과, 줄기가 수침상으로 물러지고 썩으면서 흰색의 곰팡이와 갈색의 작고 둥근 균핵이 관찰되었다. 병원균을 순수 분리하여 병원균의 균학적 특징을 조사한 결과, 감자한천배지에서 균총은 흰색으로 잘 자라며 갈색의 작고 둥근 균핵을 많이 형성하였다. 균핵의 크기는 1-3 mm이며, 균사의 폭은 $4-10{\mu}m$였다. 균사생육과 균핵 형성 적온은 $25-30^{\circ}C$이었으며, 균사특유의 clamp connection이 관찰되었다. 또한, 병원균의 염기서열 분석결과 695 bp로 Sclerotium rolfsii와 같은 계통군으로 확인되었으며, 99% 이상의 상동성을 보였다. 이와 같이 곰취에 발생한 병징, 병원균의 균학적 특징 및 염기서열 분석 등을 종합한 결과 S. rolfsii Saccardo로 동정되어 곰취 흰비단병으로 명명하고자 한다.

시토신 탈메틸화 관련 NtROS2a 유전자 발현을 제어한 RNAi 식물의 DNA microarray 분석 (DNA microarray analysis of RNAi plant regulated expression of NtROS2a gene encoding cytosine DNA demethylation)

  • 담배에서 후성유전관련 유전자의 발현연구를 위해 담배유래 시토신 DNA 탈메틸화 관련 NtROS2a 유전자를 과발현 및 RNAi 식물체를 육성하였다. 이들 형질전환체들은 고염 및 산화 스트레스하에서 내성이 증진되었으며, 다양한 표현형변이를 보였다(Lee et al. 2015). 본연구에서는 선발된 과발현 (OX1), RNAi 식물체(RNAi 13) 및 대조식물체(WT)를 이용하여 Agilent Tobacco 4 X 44K Oligo chip으로 microarray분석을 수행하였다. OX1과 RNAi13 계통을 이용하여 WT과 함께 비교 분석한 결과, 대부분 세포 내 이온 수송, 영양 공급 등과 같은 물질대사와 생물적 비생물적 스트레스 및 methylation과 관련되어 영향을 주는 유전자들에서 up-regulation 되었고, 물질대사관련 유전자와 세포 내 기능유전자의 역할을 담당하는 조효소, 그리고 다양한 스트레스 및 메틸레이션 관련 유전자군에서 또한 down-regulation되었다. 각각의 up-, down-regulation된 유전자들을 WT과 비교하여 qRT-PCR을 수행한 결과, KH domain-containing protein, MADS-box protein 및 Zinc phosphodiesterase ELAC protein 유전자들에서 발현이 높게 나타났으며, 반면에 pentatricopeptide (PPR) repeat-containing protein, histone deacetylase HDAC3 protein 및 protein kinase는 0.4 ~ 1.0-fold 발현양이 감소되었다. 따라서 DNA glycosylase를 암호화하는 NtROS2a 유전자는 demethylation과 관련되어 담배 식물체에서 다양한 전사레벨을 조절하는 것으로 판단된다.

초등학교 저학년과 고학년 학생의 식습관 및 기호도 조사 - 대전지역을 중심으로 - (Survey on the Eating Habit and Food Preference of Lower and Higher Grade Elementary School Students - Based on Daejeon Area -)

  • The purpose of this study is to analyze the differences of food habits and food preferences between lower and higher grade students through the survey of elementary school students in Daejeon four elementary schools located in Jung-Gu and Seo-Gu in Daejeon are selected for this survey randomly and the completion of the questionnaires are according to grade. 1. Practical Analysis of Food Habits: For regular meals, the highest number of subjects skipped breakfast. It is being found that the girl students (81.61%) consumed more cooked rice than the boys (78.85%) and more boys (13.10%) ate bread or milk more than the girls (9.20%). The most important thing for the lower grades students (34.20%) when consuming is the nutritious foods, while the higher grades students (49.67%) consumed the set meals. During consumption, the highest number of the subjects watched TV or read books from time to time. More higher grades students (38.98%) preferred spicy and salty foods than the lower grades (22.09%). 2. Food Preferences: Between rice and noodles, most subjects preferred cooked rice (81.38%), Jajangmyeon (80.80%), Ramyeon (79.43%), and disliked bean-mixed rice (28.39%). For soups, Most students enjoy the Deokkguk. Majority of the subjects prefer meat and fried or steamed foods, and also grilled and pan-fried dishes. For the pan-roasted and fried dishes, most subjects did not enjoy the rhizome fry and sweet-pumpkin fry methods, and for vegetables, they did not like wild vegetable and seasoned cucumber (40.57%) The higher grades students enjoy the vegetables and salads more than the lower grades students. For Kimchi varieties, it is found that subjects like the cabbage Kimchi (69.66%) the most. There is little difference in food preference between the lower and higher grade students, but the rankings of food preferences are different according to various grades.
