밀 품종 혼파와 밀가루 혼합에 따른 품질 및 가공적성 분석 (Analysis of Quality and Processing Suitability of Mixed Seeding and Flour Blending between Wheat Varieties)

  • 본 연구는 국산밀의 생산량 증대와 밀가루 품질 균일성 증진을 위해 용도가 다른 금강밀과 백중밀 두 가지 밀 품종의 혼합파종 재배와 밀가루 혼합에 따른 품질과 가공특성을 분석하였고 결과를 요약하면 다음과 같다. 밀 혼파 재배에 따른 수량은 품종이 나타내는 고유 수량에 따라서만 종실 수량이 결정 되었는데, 이는 금강밀과 백중밀의 간장과 수장의 차이가 거의 없어 입지 공간의 증대에 따른 수량 증가는 없고 단순히 단위면적당 수수의 차이로만 수량이 결정된 것으로 보인다. 품질특성은 단백질 함량, 침전가, 손상전분 함량은 혼파 및 밀가루 혼합 둘 다 비율에 따라 품질의 변이의 경향이 같게 나타났고, 특히 밀가루 혼합이 더욱 예측 가능하고 비례적인 품질 변이 결과를 보였다. 밀가루 용매 보유 능력(SRC) 분석 결과 금강밀이 백중밀에 비해 물 흡수도와 손상전분이 적고 글루텐 강도와 arabinoxylan 기여도는 큰 것으로 관찰되었고, 밀가루 혼합의 시료는 비율에 따라 유의성 있게 차이가 났지만 혼파에서 얻은 밀가루는 유의적인 차이를 나타내지 못하였다. Mixograph 반죽 패턴은 금강밀이 피크 높이가 크고 밴드 넓이가 커서 단백질, 침전가, 젖산SRC 값과 같은 경향을 나타내었고, 혼파에 비해 밀가루 혼합에서 더욱 비례적으로 밴드가 변화되는 것을 관찰 할 수 있었다. 이러한 결과를 보아 생산성을 제외하고 품질 균일성을 위해서는 혼파보다는 밀가루 혼합이 더욱 유리하였고, 생산된 밀가루의 여러 가지 품질 특성을 고려 한 후 밀가루 혼합 비율을 조절한다면 원하는 가공적성을 지닌 균일한 품질의 밀가루를 안정적으로 생산 할 수 있을 것으로 판단된다.

한국산과 미국산 소맥의 가공적성 비교 (Comparison of End-product Potentialities of Korean and American Wheats)

  • 국산 소맥의 제분성(製粉性), 이화학적(理化學的) 특성(特性), 리올로지 성질, 제품적성(製品適性)을 미국산 소맥과 비교 검토하였다. 공시품종(品種)의 제분률(製粉率)은 한국산이 71.1%, 미국산이 71.6%로서 비슷하였으며, 한국산 3개 품종(品種)의 AWRC는 평균 61.8%로서 경연질(硬軟質) 소맥의 분류기준인 60%를 상회하는 선에 있었다. 한국산 소맥의 쿠키직경(直徑)은 $8.5{\sim}8.9cm$로서 비교적 좋은 cookie spread를 보였으며 top grain score도 우수하였다. Sponge cake의 부피는 $975{\sim}1,175cc$로서 표준분(標準粉)에 비하여 약 $4{\sim}20%$의 차이가 있었으나 제품(製品)의 평점은 도리어 미국산 소맥보다 높았다. 특히 원광은 쿠키 및 스폰지케익의 적성(適性)이 우수한 품종(品種)으로 선발되었다. 빵의 부피는 $924{\sim}l,055cc$의 범위로서 영광이 1,020cc로 제(製)빵용 표준분을 제외한 공시 품종(品種) 중 제(製)빵적성(適性)이 가장 우수하였으며, 제(製)빵을 위한 제(製)빵용 표준분(標準粉)에 대한 국산 소맥분의 적정혼합비율(適正混合比率)은 30%이었다.

탕수육 배터의 물리적 특성 및 최적화 (Physical Properties and Optimization of Tangsuyuk Batter Ingredients)

  • Physical properties were investigated in tangsuyuk batter containing different amounts of ingredients, such as wheat flour, corn starch, sodium bicarbonate, alum and water. For the response surface methodology (RSM) central composite design was used to determine the optimal ingredient ratios for viscosity, color properties(lightness, redness, yellowness, color differences) and cutting forces. There were significant differences(p<0.05) between the different batter mixtures. The lightness(L) of batter was in proportion to the increased amount of wheat flour and corn starch. Higher redness was recorded with increasing corn starch. Higher yellowness was observed with increasing wheat flour and sodium bicarbonate. Color differences were higher with increasing wheat flour, corn starch, and/or alum and decreasing water. Cutting forces were linearly increased with increasing sodium bicarbonate. From these results, it is possible to monitor the effects of ingredients on physical properties of tangsuyuk batter, and to predict their optimal ratios.

탄수화물급원의 차이가 흰쥐 체내 지질함량에 미치는 영향 (Effect of Several Carbohydrate Sources on Lipid Metabolism in Cholesterol Fed Rats)

  • The effects of several carbohydrate sources on plasma, liver and fecal lipid contents of rats fed diet containing sucrose, corn starch, brown rice, milled rice or wheat flour with 0.3% cholesterol for four weeks were investigated. Plasma triglyceride and total cholestrol increased significntly in sucrose group, and decreased significantly in milled rice group compared to other three groups. There were no significant differences in plasma lipid contents among corn starch, brown rice and wheat flour groups. The contents of liver triglyceride and cholesterol in brown rice group decreased significantly compared to there four groups. Fecal excretion of total cholesterol in rice and wheat flour groups was significantly higher than in sucrose and corn starch groups. The contents of fecal bile acid increased significantly in milled rice and brown rice groups compared to other three groups. Fecal bile acid content of wheat flour group was similar to those of sucrose and corn starch group. From these results, it is suggested that rice has a possibility of hypolipidemic effect in cholesterol fed rat.

Genotypic and Environmental Effects on Cookie Quality of Korean Winter Wheat

  • Cookie baking properties and relationships between cookie baking properties and flour characteristics were evaluated for two years, 1997 and 1998, and at two locations, Suwon and Deokso, with Korean winter wheat cultivars and lines. Cookie baking parameters, except for cookie diameter and top grain score, were influenced by locations and years. Chokwang, Suwon 274, Suwon 275, Suwon 277 and Urimil showed larger cookie diameter and excellent top grain score compared to the other Korean winter wheat cultivars and lines. Among the flour characteristics, protein content, damaged starch content, alkaline water retention capacity and flour swelling volume showed high positive correlation coefficients with cookie baking parameters. Friabilin-present lines showed larger cookie diameter, suitable surface structure of cookie and softer snapping force than the friabilin-absent lines.

페놀산 첨가 밀가루 압출성형물의 물리적 특성 (The Physical Properties of Wheat Flour Extrudates with Added Phenolic Acids)

  • The effects of phenolic acids on the physical properties of wheat flour extrudate were investigated. Ferulic acid, fumaric acid, and p-coumaric acid were mixed with hard wheat flour, respectively, and extruded under a twin screw extruder. We found that by adding the phenolic acids, longitudinal expansion at the die increased, textural hardness decreased, and the water absorption capacity of the extrudate decreased. The results showed that the addition of phenolic acids produced a softer textured, more longitudinally puffed and hydrophobic extrudate compared to the control extrudate. Moreover, the addition of phenolic acids did not significantly affect the color of the extrudate: oxidative browning of the phenolic acids was not observed, due to inactivation of the browning enzymes under the hot temperature and reduced oxygen conditions of the extrusion process.

참취 즙액 첨가가 메밀국수의 조리 특성에 미치는 영향 (Cooking Properties of Buckwheat Noodles Added Aster scaber $T{HUNB}$ Juice)

  • This study was aimed to determine the cooking properties of noodles when dfferent concentrations of Aster scaber THUNB(AST) juice were added to the buckwhenat and wheat flours. Also, physicochemical effects of the noodles and compositions of the noodles and compositions of the noodle soup after cooking were determined. Buckwheat flour and AST contained greater amounts of minerals and essential amino acids than wheat flour. The contents of chlorophyll and carotenoids in the buckwheat noodle added AST juice increased as the concentrations of AST juice increased. Hydration capacity of buckwheat flour was higher than that of wheat flour when AST juice was added to flours. The added amounts of AST juice did not affect the volume and the weight of the noodles, but those were increased as cooking time proceeded. The release of proteins and minerals from the buckwheat noodle added AST juice increased as cooking time progressed and also at the added concentrations of AST juice increased. Texture indices showed lower values as the amount of added juice increased. In sensory evaluation, the scores of color, flavor and overall acceptability of the buckwheat noodle added AST juice were higher than those of the control.

Effect of Partial Replacement of Wheat Flour with High Quality Cassava Flour on the Chemical Composition, Antioxidant Activity, Sensory Quality, and Microbial Quality of Bread

  • In the current study, wheat flour was mixed with high quality cassava flour (HQCF) in several ratios: 90:10, 80:20, 70:30, and 60:40, and used to prepare 10%, 20%, 30%, and 40% National Root Crops Research Institute (NRCRI) cassava bread, respectively. 100% wheat bread was prepared as a control (100% wheat bread). Five bread samples were prepared per group. Antioxidant assays [i.e., 2,2-diphenyl-1-picrylhydrazyl radical (DPPH) scavenging assay, reducing power assay] revealed that the bread samples had considerable antioxidant capacities. Substitution of wheat flour with HQCF at various concentrations resulted in dose dependent decreases in the mineral and protein contents of the resulting bread samples. The crude fiber content of the bread samples was minimal, while the carbohydrate content of the bread samples ranged from 43.86% to 48.64%. A 20% substitution of wheat flour with HQCF yielded bread samples with a general acceptability that was comparable to that of 100% wheat bread. The mean bacteria counts of the bread samples ranged from $2.0{\times}10^3CFU/mL$ to $1.4{\times}10^4CFU/mL$, while the fungal counts ranged from 0 CFU/mL to $3{\times}10^3CFU/mL$. There was a positive correlation between the DPPH antioxidant activities and the reducing powers of the bread samples ($R^2=0.871$) and a positive correlation between the DPPH antioxidant activities and the flavonoid contents of the bread samples ($R^2=0.487$). The higher microbial load of the NRCRI cassava bread samples indicates that these bread samples may have a shorter shelf life than the 100% wheat bread. The significant positive correlation between total flavonoid content and reducing power ($R^2=0.750$) suggests that the flavonoids present in the lipophilic fractions of the bread samples could be responsible for the reductive capacities of the bread samples.

여러 수분활성도에서 저장된 밀가루의 지질 조성 및 산화 (Lipid Composition and Oxidation of Wheat Flour Stored at Various Water Activities)

  • In this study, we examined the effects of different water activities (Aw: 0.3, 0.5, and 0.8) on the lipid composition and oxidation of wheat flour after 28 days of storage in the dark at $60^{\circ}$C. The lipid content of the flour was 2.7%, and had decreased significantly (p<0.05) at the end of the storage period. Decrease in monoacylglycerol and increase in free fatty acids were observed, however, phosphatidic acid, phosphatidylglycerol, and phosphatidylinositiol were not detected after storage. Phosphatidylehtanolamine was more stable than phosphatidylcholine during the dark storage of flour. The flour lipids consisted of palmitic (18%), stearic (1%), oleic (14%), linoleic (63%), and linolenic (4%) acids, and the relative content of linolenic acid decreased after 28 days of storage. The conjugated dienoic acid content of the flour lipid had increased due to lipid oxidation during dark storage. Hydrolysis of neutral lipids and glycolipids, and lipid oxidation, were higher in the flour stored at Aw 0.8 than in the flour stored at Aw 0.3 or 0.5.

들께가루를 혼합한 밀가루 복합분의 제면특성 (Characteristics of Noodle Made with Composite Flours of Perilla and Wheat)

  • The rheological properties and sensory evaluation were investigated in the noodle from composite flours added with 0%, 10%, 20%, 30%, 40% of perilla flour. The maximum viscosity measured by amy lograph decreased gradually with the adding amount of perilla flour, while the gelatinization temperature increased with perilla flour. The weight and volume of the cooked noodle decreased with increasing perilla flour content. In the color of the noodle, lightness and yellowness decreased, but redness increased with increasing perilla flour content. Hardness and cohesiveness of the cooked noodle reduced, but adhesiveness increased with increasing perilla flour content. In sensory evaluation, the noodle with 20% perilla flour was evaluated the best in taste, texture and overall acceptability. Based on the cooking and sensory evaluation test, addition of 20% perilla flour to wheat flour is considered suitable for the noodle of perilla flour.
