  • This study was performed to compare the activities of sulfate esters and sulfonate salts. (comparison of activities such as detergency, forming, permeation and patient of hard water). The one of the method is the combined use of nonionics and the other is the use of anionics alone. The results obtained are as follows: 1. The sulfonate salts are better soluble than the sulfate esters. 2. The lauryl system is better soluble than the sulfate esters. 3. The alkylol sulfate(CONH-OSO3H)that is induced amide radical to the fatty acid shows the excellent foaming power and detergency.

Purification and Characterization of Crystalins by Aqueous Two-Phase Extraction

  • Crystallins are a family of water-soluble proteins that constitute up to 90% of the wa-ter-soluble proteins in mammalian eye lenses, We present in this paper an alternative purification method for these proteins using polyethylene glycol/dextran aqueous two-phase extraction. Un-der the appropriate conditions, we were able to recover the γ-crystallin fraction essentially free of the remaining proteins. High concentrations of salt at a neutral pH maximize the recovery of γ-crystallins in the top phase and minimize the contamination by the other proteins present in the lenses. The proposed protocol decreases the separation time by about 50%. The complex partition behavior observed for these proteins reflects a delicate balance between protein/phase-forming species(various polymers and salts) and protein interactions. This is evidenced, in part, by the role played by the largest proteins in this group as a "pseudo"phase-forming species.

  • Effects of irradiation on physical and chemical properties of chicken were investigated. Chicken was irradiated at dose levels of 0, 0.5, 1, 3 and 5 kGy using Co60 source. Irradiation increased drip loss and TBA value. Irradiation decreased L value, and increased a value and b value, indicating that irradiation made chicken darker, more reddish and more yellowish. Irradiation induced the degradation in salt-soluble protein, not water-soluble protein. Any differences in color, odor and tenderness between irradiated and non-irradiated chicken were not perceived by sensory panels.

  • In order to obtain the basical data for utilization of protein in hazel nut, protein was extracted from defatted hazel nut meal with salt solutions and alkaline solutions, and precipitated by adjusting pH of extract to 5.5 or addition of organic solvents. Amino acid composition of the isolated protein and defatted hazel nut meal were analyzed, protein isolates were identified by polyacrylamide gel electrophoresis. The results summarized were as follows. 1. Defatted hazel nut showed highly nutritional value as the content of 'protein was 53.6%. 2. Extractabilities of salt-soluble protein treated with 2.5M $MgCl_2$, and 1M NaCl(pH 11.0) were 53.0%, 31.5%, respectively 3. Protein in hazel nut were contained 53% of salt-soluble globulin, 14% of water-soluble albumin, 29.5% of glutelin based on solubility. 4. At pH 5.5, 85% of the extracted protein was precipitated, and about 90% of the extracted protein was separated by addition of organic solvents such as acetone and ethanol at 60-70% concentration. 5. Proteins extracted from defatted hazel nut with water and 0.027N NaOH showed 3 and 6 hands by polyacrylamide gel electrophoresis, respectively. 6. Amino acids of defatted hazel nut and protein isolate were chiefly composed of glutamic acid, arginine and aspartic acid.

  • Water-soluble terpolymer of acrylamide, diacetone acrylamide, and acrylic acid was prepared by redox initiators in aqueous medium. One component photoresist was synthesized by reaction of terpolymer with 4-azidoaniline. By blending the aqueous acrylamide/diacetone acrylamide copolymer solution with bisazide, 4,4'-diazidostilbene -2,2'-disulfuric acid sodium salt, two component photoresist was prepared. The photosensitivity per azido group unit mole of one component photoresist was 4 times higher than that of two component photoresist. The dot-type pattern was successfully achieved with one component photoresist at low exposure energy, which is prospective to be used as black matrix negative photoresist.

Changes in Pectic Substance of Lower Salted Chinese Cabbage Kirnchi with pH Adjuster during Fermentation (pH조정제를 이용한 저염 배추점치의 숙성중 Pectin질의 변화)

  • For the purpose of fermentation control and edible period extension of lower salted Kimchi, the contents and compositions of pectic substances in Kimchi, by adding 2 percent salt and 0.4 percent sodium malate buffer(SMB), fermented at $20^{\circ}C$ were investigated. Edible period of SMB added chinese cabbage Kimchi was extended 40 hrs compared to that of control (added 2.5% salt) with good flavor, texture and freshness. The contents of alcohol insoluble solid(AIS) and protopectin(PP) of control were more decrensed during fermentation than those of SMB added Kimchi. But, the contents of pectic adid(PA) and water soluble pectin(WSP) of control were more increased during fermentation than those of SMB added Kimchi. Hexose and pentose from hemicellulose in control, PP and PA respectively, were more decreased during fermentation than those in SMB added Kimchi. Lower polarity and higher molecular weight PP was eluted and higher polarity and lower molecular weight PP was decreased considerably in control compared to those in SMB added Kimchi during fermentation.

Desalinization Effect of Off-season Crop Cultivation in Long-term Oriental Melon Cultivated Plastic Film House Soils (휴경기 후작물 재배에 의한 참외 장기연작 비닐하우스 토양의 제염 효과)

  • BACKGROUND: During the off-season, the cultivation of Chinese cabbage and water dropwort is often used to desalinize plastic film house soils. The objective of this study was to verify the effect of double-cropping systems on the salt removal in oriental melon cultivated plastic film house soils.METHODS AND RESULTS: Electrical conductivity (EC) and soluble salt contents were measured in soils collected from plastic film houses of oriental melon cultivation before and after the off-season crop cultivation. Also the same measurements were performed in the next oriental melon season to estimate the desalinization effect of double-cropping systems. During the cultivation of Chinese cabbage under open-field condition, ECeof surface soil was reduced from 6.0 to 0.8 dS/m. Double-cropping of water dropwort in flooded soil was also efficient in removing the salts accumulated during oriental melon cultivation. In the house soils where salts were removed during the off-season crop cultivation, soil ECewas maintained below 3 dS/m during the next oriental melon cultivation season.CONCLUSION: The off-season cropping under open-field or flooded condition was effective in desalinization of plastic film house soils. Since the salt removal effect is not expected to last for several years, the double-cropping system should be introduced every season to maintain soil EC below the critical level.

Rheological Properties of the Mixture and Heat-induced Gel Prepared from Pork Salt Soluble Protein in Combined with Water Soluble Chitooligosaccharide and Chitosan (돈육에서 추출한 염용성 단백질에 수용성 키토올리고당 및 키토산을 첨가한 혼합액과 가열 겔의 물성특성)

  • Effects of various levels and molecular weights (MWs) of chitooligosaccharides and chitosan with pork salt-soluble protein (SSP) on pH, moisture (%), viscosity, and hardness of protein-chitosan mixtures were determined in a model study. Mixtures of 0.15, 0.3, and 0.45% chitosan at various MWs (Low, 1.5 kDa; Medium, 30-50 kDa; High, 200 kDa) were dissolved in 3% SSP solution for measurement of pH and viscosity at $20^{\circ}C$. pH value increased with addition of 0.45% low MW of chitooligosacchearides into SSP (p<0.05), whereas decreased with addition of 0.45% medium MW and 0.3% or higher level of high MW chitosan. Viscosity increased with addition of more than 0.3% either medium or high MW chitosan (p<0.05), as compared to mixture with low MW chitolligosaccharide and control (p<0.05). No differences in gel pH, moisture, and hardness values were observed among treatments (p>0.05). Further study will be performed to evaluate rheological properties actual meat products with various levels and MWs of chitosan.

Principles of Physiology of Lipid Digestion

  • The processing of dietary lipids can be distinguished in several sequential steps, including their emulsification, hydrolysis and micellization, before they are absorbed by the enterocytes. Emulsification of lipids starts in the stomach and is mediated by physical forces and favoured by the partial lipolysis of the dietary lipids due to the activity of gastric lipase. The process of lipid digestion continues in the duodenum where pancreatic triacylglycerol lipase (PTL) releases 50 to 70% of dietary fatty acids. Bile salts at low concentrations stimulate PTL activity, but higher concentrations inhibit PTL activity. Pancreatic triacylglycerol lipase activity is regulated by colipase, that interacts with bile salts and PTL and can release bile salt mediated PTL inhibition. Without colipase, PTL is unable to hydrolyse fatty acids from dietary triacylglycerols, resulting in fat malabsorption with severe consequences on bioavailability of dietary lipids and fat-soluble vitamins. Furthermore, carboxyl ester lipase, a pancreatic enzyme that is bile salt-stimulated and displays wide substrate reactivities, is involved in lipid digestion. The products of lipolysis are removed from the water-oil interface by incorporation into mixed micelles that are formed spontaneously by the interaction of bile salts. Monoacylglycerols and phospholipids enhance the ability of bile salts to form mixed micelles. Formation of mixed micelles is necessary to move the non-polar lipids across the unstirred water layer adjacent to the mucosal cells, thereby facilitating absorption.

A Study on the Characteristics of Particulate Matter in the Coastal Regions (해안지역에서 입자상물질의 특성에 관한 연구)

  • Particulate matters(less than 10 $\mu$m, PM10) at Kanghwa and Yangyang, which are located in the western and the eastern coastal regions in Korea, were measured in using low volume air sampler from December 1995 to November 1996, and their characteristics were investigated from the view point of background level.(and in order to characterize the particulate matters.) The particulate matters were analyzed for major water soluble ionic components(SO$_{4}^{2-}$, NO$_{3}^{-}$, Cl$^{-}$, Na$^{+}$, NH$_{4}^{+}$, K$^{+}$, Mg$^{2+}$ and Ca$^{2+}$) by ion chromatography. Mass concentrations of particulate matters were $48.77 \pm 22.45 \mug/m^{3}$ at Kanghwa and $54.04 \pm 32.98 \mug/m^{3}$ at Yangyang and SO$_{4}^{2-}$, NO$_{3}^{-}$ and NH$_{4}^{+}$ contributed largely to water soluble ionic components. nss(non sea salt)-SO$_{4}^{2-}$, contributed more than 95 percentage to SO$_{4}^{2-}$ and nss-K$^{+}$ and nss-Ca$^{2+}$ also contributed high percentages to K$^{+}$ and Ca$^{2+}$. It was supposed that most SO$_{4}^{2-}$, was originated from anthropogenic sources, and K$^{+}$ and Ca$^{+}$ were mainty originated from soil. The results of factor analysis suggested possibility of interpreting the correlation between air pollutants and regional characteristics.
