Quality Characteristics of the Bread added Persimmon Leaves Powder (감잎분말을 첨가한 식빵의 품질특성)

  • Quality characteristics of the bread added four different concnetrations(0.5%, 1%, 1.5%, 2%) of persimmon leaves were measured. The moisture content and water activity of the bread with the persimmon leaves powder of 0.5%, 1%, 1.5%, 2% were 45% and 0.97 respectively, and had no difference according to the content of the powder. This study also showed that the bread made by the wheat flour added the persimmon leaves powder of 1% was better in specific volume, color, sensory evalution, mechanical propertis(hardness, fracturability, adhesiveness, springiness. cohesiveness. gumminess, chewiness, elasticity) than the bread added the powder differently.

Development of Lemon Pyun by the addition of various gelling agents (겔화제의 종류에 따른 레몬과편의 개발)

  • This study was performed to determine the quality characteristics of lemon pyun with various kinds of getting agents: agar, gelatin, sweet Potato starch, corn starch and Potato starch. Lemon Pyun was made with lemon juice(21.4%), gelling agent(6.7%), water(53.3%), sugar(13.3%) and honey(5.3%). The quality characteristics of the sample were estimated in terms of pH, color difference, texture profile analysis and sensory evaluation. (Ed- as this is an abstract this introductional clause is unnecessary) The PH of lemon pyun showed no significant difference among the different gelling agents. Lightness was significantly(p<0.05) lowered in the agar and gelatin groups, a value was significantly(p<0.05) lowered in the sweet potato starch and potato starch groups, and b value was significantly(p<0.05) lowered in the sweet potato starch group. In texture profile analysis, chewiness, gumminess and hardness were significantly(p<0.05) increased in the sweet potato starch group. According to sensory evaluation, elasticity and hardness of the sweet potato starch and cornstarch groups were stronger(p<0.05) than of other gelling agent groups. Lemon pyun containing sweet potato starch was most preferable in terms of Vitamin C provision.

Optimization of Manufacturing Wet Noodle Added with Aloe vera Powder (알로에 분말을 첨가한 생면의 제조조건 최적화)

  • Purpose: This study was conducted to optimize the conditions of manufacturing the wet noodle added with Aloe powder. Methods: The I-optimal design of response surface methodology (RSM) was used for the optimization of added amount of Aloe powder, water content, and kneading time as the independent variables. The quality characteristics (color, texture, water absorption ratio, volume, turbidity) and sensory characteristics (color, flavor, taste, mouth feel, overall acceptance) were analyzed as dependent variables. Results: The lightness, redness, and yellowness of the Aloe noodle were all lowered with the addition of Aloe powder. All texture characteristics such as hardness, elasticity and chewiness of Aloe noodle showed the tendency to increase with increasing amount of Aloe added and kneading time. The water uptake and the volume expansion tended to increase with increasing aloe addition and water addition. As the kneading time increased, the dissolution of solids decreased and the turbidity tended to decrease. Aloe powder content influenced the color, flavor and taste of the noodles most among independent variables, and the mouthfeel of the noodle influenced by the water addition and the kneading time. Conclusion: Aloe noodle showed the best desirability with 3.03% of Aloe powder, 43.56% of water content and 13.06 min of kneading time by RSM analysis. Aloe noodles prepared under these optimized conditions are expected to be able to manufacture and utilize functional Aloe noodles by meeting the content of isobarbaloin, which helps the intestinal functional activity.

A Study on the Quality of Ramyon Made from Korean Wheat and Arrowroot(Pueraria thunbergiana B) Starch (칡전분과 한국산밀로 만든 라면의 품질연구)

  • This study examines the cooking quality, rheology, and sensory characteristics of ramyon noodles made from Korean wheat and arrowroot starch. The control was made from Australian standard wheat(ASW) and the sample was made from Korean wheat. The ratios of arrowwood starch in the sample group were 0%, 5%, 10%, 15%, 20%, 25%, and 30% respectively, and the result was as follows: the yield of the arrowwood starch was 18.8% and moisture level was 14.2%. The lightness(L), redness(a), and yellowness(b) of ASW were 92.07, 1.44, 10.22 respectively, whereas those of Korean wheat were 92.05, 1.55, 11.01, which means the two kinds of wheat showed very little difference in lightness, but Korean wheat had higher degrees of a and b than ASW. The color value of arrowroot starch is L 72.65, a 3.44, b 12.92, so it has a lower degree of lightness and higher degrees of a and b than two kinds of wheat. Dried ramyon displayed a lower degree of lightness and higher degrees of a and b than cooked ramyon, but the first decreased and a increased as we increased the ratio of arrowroot starch in it. The weight of dried ramyon did not show a significant difference among the groups. On the other hand, the weight, volume, water absorption, and the turbidity of cooked ramyon increased as we increased the amount of arrowroot starch in it. The maximum weight, solidity, and elasticity of the control group were greater than those of ramyon made from Korean wheat, but its brittleness was lower. The two groups showed the same degrees of hardness, adhesiveness, and cohesiveness. The maximum weight, solidity, and adhesiveness of the control group increased as we increased the amount of arrowroot starch in it, and the hardness and brittleness were great when the ratio of arrowroot starch was 20%; elasticity was greatest when the ratio of arrowroot starch was 15, 20, and 25%; its adhesiveness and cohesiveness did not depend on the amount of arrowroot starch in it. In the sensory characteristics evaluation, the items that showed significant differences include: appearance (p<0.01), color(p<0.01), smell(p<0.001), transparency(p<0.05), and overall acceptability(p<0.05). The ramyon earned the highest score in appearance when the ratios of arrowroot starch were 5%, 15%, and 20%. As for color and smell, it earned the highest score when it contained 20 and 25% of arrowroot starch. The transparency decreased as we increased the amount of arrowroot starch, and overall acceptability was highest when the ratio of arrowroot starch was 15%. There was a significant difference in overall acceptability between the control and the sample group. As for the loosing speed and chewiness, there was no significant difference between the two groups. When we look at the result of various tests to evaluate the cooking quality, rheology, and sensory characteristics of ramyon noodles, ramyons that contained 15 to 25% of arrowroot starch earned the high scores, and of these the one with 20% of arrowroot starch earned the highest score on all accounts.

Comparison of Void Content between Cyldrical Concrete Specimen and Concrete Core Specimen Using ASTM C 642 Test Procedure (ASTM C 642 시험방법을 이용한 구조체 코어공시체와 원주형 공시체의 공극률 비교 평가)

  • Recently, construction accidents have occurred due to illegal water addition and insufficient quality control at domestic construction sites. In this study, the void content test method proposed in ASTM C 642 was used to provide a reference guideline for evaluation on the quality control status of cast-in-place structural concrete. For this purpose, simulated structural concrete for coring purpose was prepared in addition to the concrete cylindrical specimens with the same formulation, and the changes in compressive strength, elastic modulus, and void content related to coring were evaluated. According to experimental results, the compressive strength and modulus of elasticity were reduced by coring, which was associated with the generation of microcracks during coring. With respect to void content, the difference in void content between the cylindrical specimen and the cored specimen was up to 1.69%. If this value is used as a correction factor, it is possible to estimate the real void content of the cast-in-place structural concrete. By comparing this with the void content obtained from cylindrical concrete specimens, it is possible to evaluate the quality control status and amount of illegal water addition on the structural concrete.

Preparation and Quality Characteristics of Korean Wheat Noddles Made of Brown Glutinous Rice Flour With and Without Aroma (현미찹쌀가루와 향현미찹쌀가루를 첨가한 우리밀국수의 제조 및 품질특성)

  • In order to manufacture the high-quality products as well as to promote their consumption, dry noodles were prepared with Korean wheat flour and brown glutinous rice flour with and without aroma and quality characteristics of dry noodles were investigated. The average particle size distributions of aromatic brown glutinous rice flour and brown glutinous rice flour ranged from 12.38 to $15.59\;{\mu}m$, which was different from that of control. As a result of farinograph study, water absorption of dough increased and decreased with increasing amounts of brown glutinous rice flour with and without aroma, respectively. Stability, developing time and elasticity of dough showed a decreasing tendency. When compared with the control, aromatic brown glutinous rice samples produced noodles with a greater degree of lightness and a less intensity of yellowing. Replacement of up to 20% of Korean wheat flour by aromatic brown glutinous rice flour and brown glutinous rice flour in noodle had similar cooked properties such as weight gain, volume and water absorption as compared with the control. From the result of sensory evaluation, composite flours(addition up to 30% aromatic brown glutinous rice flour and up to 20% brown glutinous rice flour) and control were rated with a relatively high quality score for appearance, taste and overall eating quality.

  • The primary purpose of this study is to investigate reusal techniques of fly ash of combined heat power plant in the construction field, which may contribute to the saving of construction materials and conservating environment. Firstly chemical and physical characteristics of fly ash is analysed. And then, the usability of the concrete is tested by investigating the flowablility and stength development through parameters of various replacement ratios with respect to different mixing conditions. Finally, the durability and mechanical properties(elastic modulus) of the concrete is tested. As the result of the study, the following conclusions are derived : (1) the quantity of the CaO in the fly ash is relatively high based on the chemical analysis, (2)the compressive strength ratio of the mortar is satisfied with the specification, but the unit water ratio increased, (3)high strength concrete of more than 400kg/$\textrm{cm}^2$ can be developed in the ranges of FA 30%, W/B 40%, (5)the slump loss with the elapsed time due to the delivery is decreased as the replacement ratio of the fly ash is increased, (6)the modulus of the elasticity is matched withn the specification of the Architectural Institute of Korea.

Dyeing Properties of Sulfur Dye Using Nylon High Density Knitting Fabrics (황화염료를 이용한 고밀도 나일론 편성물의 염색성)

  • This paper examined dyeing using sulfur dye with nylon and the characteristics of high gauge knitting for generating high functionality including light weight, wind resistance and elasticity using fine nylon threads. Yarn tension, stitch field and knitting speed of high and fine gauge knitting were measured. The influence of reducing agents on sulfur dye, optimum dyeing conditions and fastness features in nylon dyeing were analyzed. The analysis results are presented below. When nylon (Hyoseong, 40d/34f) and spandex (Hyoseong, 20d) for use as hosiery yarn were used to knit high gauge and flat weave, 44 gauge, the effective knitting conditions were a stitch field over 8.2cm in 1 course length, yarn tension of less than 5g and knitting speed below 18rpm. Nylon dyeing using sulfur dye showed effective results when a rongalite reducing agent was used at more than 10% o.w.f. and dyeing was maintained at $98^{\circ}C$ for 30 minutes. For dyeing nylon and spandex composite using sulfur dye, color fastness in washing, water, daylight and friction were higher than Class 4 or 5, which indicated a superior property. The analysis results verified that the existing problems in nylon dyeing could be solved by using sulfur dyes that don't use heavy metals due to superior fastness and therefore quality, high gauge nylon knit products could be produced.

Tofu Qualities as Influenced by Soybeans Storage Temperatures (콩의 저장온도가 두부 품질에 미치는 영향)

  • Hwangkeum Kong was stored at 5$^{\circ}C$, $25^{\circ}C$ and 35$^{\circ}C$ for 8 months to investigate the changes of the suitability for Tofu processing. The properties of Tofu prepared with the soybeans stored at 5$^{\circ}C$ for 8 months showed no significant differences from the non-stored control soybeans. However, soybeans stored under high temperatures showed low yield, water holding capacity and Sag value of Tofu Compared with the soybeans stored at 5$^{\circ}C$ for 8 months, fracturability in the texture of Tofu significantly increased when the soybeans had been stored at $25^{\circ}C$ and 35$^{\circ}C$ for 8 months, while hardness, cohesiveness, adhesiveness, elasticity, gumminess and chewiness decreased. The color of Tofu changed from pale yellow to brown depending on high temperature and long-term of storage. The Tofu prepared with the soybeans stored under high temperatures was significantly different in sensory evaluations from the non-stored soybeans as well as from the soybeans stored at 5$^{\circ}C$ for 8 months in color(p<0.01), texture(p<0.05) and taste(p<0.05).

  • The fish meat paste products are rapidly growing in its production. However, the recent prohibition of AF-2 gives a lot of difficulties in the marketing of fish meat paste products manufactured ty the conventional procedures. The present study aims to obtain the optimal conditions for retaining tile quality of the fish meat paste products with long shelf-life on the market. The fried fish meat paste was sealed in the retort pouches and sterilized under the conditions which the Fo value designated to 6. The effects of the sterilization temperature and the diameter of the products on the quality factors such as jelly strength, water holding capacity, texture and in vitro protein digestibility were investigated. The jelly strength and hardness increased as the sterilization temperature increased. On the other hand, there were no differences found in water holding capacity and elasticity. Of the samples, product with diameter of 12mm showed the highest values of jelly strength, hardness, L values and in vitro protein digestibility which sterilized at $124^{\circ}C$. However. tile results of the organoleptic tests showed rather score in the products with diameter of 16 mm than 12 mm which were sterilized at $124^{\circ}C $. From the results described above, it was concluded that the fried fish meat paste products with 16 mm or less in a diameter which were sterilized at higher temperature could keep high quality.
