Although traditional Korean diet consists of Very little fats and oils, the increase of their consumption, especially vegetable oil, has been truly remarkable in recent years and this increase is attributed to the improvement of their dietary habit and the development of Korean food industry. On the other hand, domestic production of the edible vegetable oil did not increase at all. Naturally, foreign exchange (over a several hundred million U.S. dollars) is annually used in importing oil seed and/or oil per se. Under these circumstances, it is of utmost importance to maximize the domestic production of edible vegetable oil, although its complete self-sufficiency cannot be achieved. In this seminar, intake of fats and oils by Korean people, status and outlook of the domestic production and consumption of fats and oils will be discussed, with. emphasis on the utilization of agricultural by products and waste as a source of fats and oil.
Intensive works have been carried out to develop more efficient solid catalysts for biodiesel production from various feedstocks including refined oils and waste fats. Among many catalysts, metal oxides and ion exchange resins are the most intensively studied ones. With regard to metal oxide catalysts, major research activities have focused on the identification of the active compounds and their immobilizing methods on the supports. As metal oxide catalysts have strong thermal stability, they may be used in simultaneous transesterification and esterification of waste fats. However, ion exchange resin catalysts were mainly applied in the esterification of the free fatty acids in waste fats because of their lower thermal stability. For both solid catalysts, further works are needed to make them to be used in commercial process. Especially fast deactivation of the solid catalyst would be the most challenging problem.

Each kinds of the leather process wastes which is occurred in the leather making process is almost more than 50% on the basis of the raw hide. The emitted process wastes are important oil and fats and protein resources because they are composed of animal oil and fats and fibrous protein. But most of them are incinerate or filled up simply as the industrial wastes without applying to recycling into the other use. Thus the problems of environmental pollution are becoming more critical and the processing cost of the leather process wastes (40,000~60,000 won) is a heavy burden on the production cost. Because the organic wastes such as fleshing scrap, pelt scrap are high fetid, its unlawful abandonment without being processed properly causes the occurrence of secondary pollution by an offensive odor and leakage of waste water. Thus we made the re-resource experiments in order to resolve this problems. The principal contents of this study are to process the collected leather waste scrape through separate the oil and fat ingredients with various propert by processing various chemicals and enzymes on the next effector. The re-resource application of separated oil and fat ingredients produced chemical for leather applicable to manufacturing process of leather through chemical transformation process(sulphation reaction, sulphitation reaction etc.) of oil and fats.

The esterification efficiency of several ionic liquids has been investigated to determine the feasibility for the conversion of free fatty acids to alkylester. Five ionic liquid catalysts having strong acidity, BPC[$AlCl_3$], BMIM[$Bf_4$], BMIM[$Pf_6$], EMIM[$Ntf_2$], BMIM[Otf], have been employed in this work. BPC[$AlCl_3$] has the highest esterification efficiency among the ionic liquid catalysts. Over 90% conversion efficiency has been achieved in the esterification of the simulated used cooking oil by BPC[$AlCl_3$] with two hours reaction time. Since BPC[$AlCl_3$] has several advantages such as high esterification activity, ease of separation from reaction mixture and reusability after treatment procedure, it will be a promising catalyst for the conversion of free fatty acids to esters in waste fats.

We have gathered a fatty acid to recycle the waste oil of food manufacturing process, and then made a soap from the waste oil by alkali saponification. Effects of the washing elements such as the concentration of the soap, temperature and time were evaluated to find out the optimum washing conditions, and results are as follows. 1. We could find soaps made from the soybean oil (A), corn oil (B), rape seed salad oil (C), cotton seed oil (D) and a soap consisting of the each oil 25% respectively (I) had the lowest surface tension at the concentration of 0.225% -0.25%. Compared with the single fatty-acid soap, the multi-component soap I showed the lower surface tension at the cmc. 2. All the samples of A-I showed the lowest contact angle for the solid material at the concentration of 0.25%. The multi-component soap of I showed higher contact angle than the single.component soaps of A, B, C and D. 3. The soap G, made from the waste oil, show lower surface tension than 5, made from the complex raw fats of the eatable fatty oil acid and H, commercial soap. 4. The washing efficiency depends on the washing time. Especially the 25-minute was found to be the optimum washing time. 5. The highest washing efficiency was found at the 0.25% cont. reagardless of the washing temperature. At 0.15% concentration level the washing efficiency reduces as washing tem- perature increases. At 0.3% concentration level the highest washing efficiency was found between $50^{\circ}$-$60^{\circ}$. 6. The soap made from the waste oil showed the highest washing efficiency in terms of concentration, temperature, and time. 7. The soap made from the waste oil showed the similiar concentration of hydrogen ion to the synthetic detergent. 8. The hand value of the fabric washed by the soap made from the waste oil was a little lower value than those washed by the synthetic detergent.
In order to design industrial scale reactors and proceises for multi-phase biocatalytic reactions, it is essential to understand the mechanisms by which such systems operate. To il-lustrate how such mechanisms can be modeled, the hydrolysis of the primary ester groups of triglycerides to produce fatty acids and monoglycerides by lipased (glycerol-ester hydrolase) catalysis has been selected as an example of multiphase biocatalysis. Lipase is specific in its behavior such that it can act only on the hydrolyzed (or emulsified) part of the substrate. This follows because the active center of the enzyme is catalytically active only when the substrate contacts it in its hydrolyzed form. In other words, lipase acts only when it can shuttleback and forth between the emulsion phase and the water phase, presumably within an interphase or boundary layer between these two phases. In industrial applications lipase is employed as a fat splitting enzyme to remove fat stains from fabrics, in making cheese, to flavor milk products, and to degrade fats in waste products. Effective use of lipase in these processes requires a fundamental understanding of its kinetic behavior and interactions with substrates under various environmental conditions. Therefore, this study focuses on modeling and simulating the enzymatic activity of the lipase as a step towards the basic understanding of multi-phase biocatalysis processes.

In recent years there has been an increasing focus on global warming and the exhaustion of resources caused by the heavy consumption of fossil fuels. In order to resolve these issues, biomass has gained much attention as a source of renewable energy. One area of particular interest has been the production of biodiesel. The biodiesel produced by the transesterification of vegetable oils, animal fats and waste cooking oils is expected to be one of the eco-friendly biomass-based alternatives to fossil fuels. This paper reviews some of the recent findings for the effective biodiesel production system, together with several factors affecting the biodiesel yield.

This study was executed for utilizing it as basic data in appropriate recycling way and design by examining and analyzing various characteristics of food waste which is being discharged from various restaurant and apartment house. In general, there were differences in restaurants classification and Japanese restaurant showed big differences as compared to other restaurants. Vegetable had the highest composition and its contents had big difference according to seasons. In alien substances, oyster shells were the highest and restaurants showed high rate of alien substances than apartments, therefore it was required to divide them in advance. Salinity was the highest in Japanese restaurants and most restaurants had rate of up to 1%, so it was not appropriate for recycling. However, it was considered that if there is cleaning operation in the whole process, there might not be a problem. Feed Ingredient had 28% of fiber, 25% of protein, and 11% of fats. We analyzed noxious germs and heavy metal too. However microorganisms of etiological cause were not detected and each harmful material showed less values of control concentration. In the result of analysis of each characteristic, it is required to consider collection rate from restaurants and apartments and seasonal cause into design regarding recycling. And apartments are compatible to compost than feed and food waste from Chinese, flour restaurant and collective feeding facilities are compatible for feed, as it is evaluated.

Biodiesel is an alternative diesel fuel which can be obtained from the transesterification of vegetable oils, animal fats and waste cooking oil. The objective of this study is to evaluate the properties of biodiesel obtained from different feedstocks (soybean, waste cooking, rapeseed, cottonseed and palm oils). The biodiesel derived from different feedstocks was analyzed for FAME (fatty acid methyl esther) content, kinematic viscosity, flash point, CFPP (cold filter plugging point) and glycerin content. The quality of biodiesel was tested according to the Korean and European standard (EN14214, requirements and test method for biodiesel fuel). The biodiesels derived from soybean, waste cooking, rapeseed and cottonseed oils contain high amount of unsaturated fatty acid, while palm biodiesel is dominated by saturated fatty acid. The fuel properties of biodiesel, such as low temperature performance, kinematic viscosity and oxidation stability are correlated with the FAME composition components in biodiesel.
This study was undertaken to investigate the dietary factors related to the incidence of stomach and colon cancers in Korean. The subjects were 139 stomach and 52 colon cancer patients recruited from 3 general hospitals in Seoul. Food intake, anthropometric measurement, and blood compositions were studied through personal interview and using medical records. Body weight, body mass index, triceps skinfold thickness, body muscle mass of the subjects were lower than reference values. The body weight was reduced after the onset of the illness, which suggests body waste due to the cancers. The patients showed the lower valuies of hemoglobin and hematocrit. Serum protein and calcium were at lower limit of the normal range. Therefore the untritional status assessed by anthropometry and blood composition should be said to be marginal. The average intake of most of the nutrients except Ca of the subjects met the RDA, but the range was wide and the nutrient intake of large proportion of the subjects feel below 75% of RDA. The food intake of egg, milk, legumes, and fruts were lower than national average, on the other hand the subjects had higher intake of meat, vegetables, and fats. The subjects drank and smoked heavily, stomach cancers being more severs. From this results, dietary risk factors for the stomach and colon cancers in Korean did not agree with the reports of western societies. Even though the intakes of meat and animal food of colon cancer patients can not be classified as high, it was higher than stomach cancer and national average. Therefore it could be concluded that with increasing consumption of animal food, the incidence of colon cancer would be increased in Korea.
