Emissions of Volatile Organic Compounds from a Swine Shed

  • The concentrations and chemical compositions of volatile organic compounds (VOCs), including volatile fatty acids, phenols, indoles, aldehydes, and ketones, which are the main organic compounds generated by swine, were investigated in July and October 2016 and January 2017. In addition, the emission rates and annual emissions of these components from the swine shed were estimated. The concentrations of VOCs in the swine shed averaged $511.3{\mu}g\;m^{-3}$ in summer, $315.5{\mu}g\;m^{-3}$ in fall and $218.6{\mu}g\;m^{-3}$ in winter. Acetone, acetic acid, propionic acid, and butyric acid were the predominant components of the VOCs, accounting for 80-88% of the total VOCs. The hourly variations of VOC concentrations in the swine shed in fall and winter suggest that the VOC concentrations were related to the ventilation rate of the swine shed, the activity of the swine, and the temperature in the swine shed. Accordingly, the emission rates of VOCs from the swine shed were $1-2{\times}10^3{\mu}g(h\;kg-swine)^{-1}$.

Effect of the Addition of Schisandra chinensis Powder on the Physico-chemical Characteristics of Sausage

  • The individual and interactive effects of Schisandra chinensis powder (SCP) and sodium nitrite additions on color, pH, water holding capacity, residual nitrite, 2-thiobarbituric acid reactive substances (TBARS), volatile basic nitrogen, texture properties, fatty acids, amino acids and sensory evaluation of cooked pork sausages were investigated after 20 d of storage at $4^{\circ}C$. The powders (0, 0.5 and 1.0%) were added to sausages either alone or in combination with nitrite (0 and 100 ppm). SCP added-sausages showed lower $L^*$ (lightness) and W (whiteness) values, and higher $b^*$ (yellowness) values than sausage containing no nitrite, and exhibited the highest $a^*$ values at a 0.5% addition (p<0.05). Residual nitrite and TBARS values were found to be significantly reduced as the addition levels of SCP increased (p<0.05). As the addition of SCP increased, the sausage showed gradually decreased brittleness, cohesiveness, springiness, gumminess and chewiness, while adhesiveness increased. Polyunsaturated fatty acid, n-6 and n-6/n-3 fatty acid ratio concentrations were significantly higher in sausages containing SCP (p<0.05). The addition of SCP to sausage significantly (p<0.05) increased the ammonia content (by 0.5% SCP) and aromatic amino acid concentrations (by 1.0% SCP) (p<0.05). Inclusion of SCP in sausage meat resulted in a significant deterioration in quality characteristics of flavor, springiness, juiciness and overall acceptability (p<0.05). As expected, the observed changes in $a^*$, W, pH, shear force, texture property, TBARS, fatty acid, amino acid and sensory score of sausages, depended on the rate of addition of nitrite (p<0.05). These results suggest that SCP addition is not an effective way of improving the sensory evaluation of sausages, but may beneficially affect TBARS, nitrite scavenging activity, fatty acid and amino acid content in pork sausages.

Effects of lactic acid bacteria inoculation in pre-harvesting period on fermentation and feed quality properties of alfalfa silage

  • Objective: To develop the fermentation quality and chemical composition of alfalfa (Medicago sativa Lam.) silage, plants were inoculated with different lactic acid bacteria (LAB) strains at field 24 hours before harvest. Methods: The treatment groups were as follow: silage without additive as a control and inoculated with each strains of Lactobacillus brevis (LS-55-2-2), Leuconostoc citerum (L. citerum; L-70-6-1), Lactobacillus bifermentans (L. bifermentans; LS-65-2-1), Lactobacillus plantarum (L. plantarum; LS-3-3) and L. plantarum (LS-72-2). All the silages were stored at 25℃. Parameters such as pH, microorganism and volatile fatty acid contents, crude protein, neutral detergent fiber, acid detergent fiber, net gas, metabolizable energy, organic matter digestibility, dry matter intake and relative feed value were measured to determine fermentation quality, chemical compositions and relative feed value of alfalfa silages. Results: Significant differences were found among the control and treated groups in terms of pH and microorganism contents at all opening times and crude protein, net gas, metabolizable energy and organic matter digestibility of final silage. The pH values ranged from 4.70 to 5.52 for all treatments and control silage had the highest value of overall treatments at T75d silages. Volatile fatty acid of silages was not influenced significantly by inoculations. However, lactic acid content of L. bifermentans (LS-65-2-1) was higher than the other treatments. The highest metabolizable energy and organic matter digestibility were recorded from L. citerum (L-70-6-1) inoculation. In addition, no significant differences were found among treatments in terms of neutral detergent fiber, acid detergent fiber, dry matter intake and relative feed value. Conclusion: Among the treated LAB isolates, L. bifermentans came into prominence especially in terms of organic acid composition and quality characters of silages.

점성물질 제거가 다시마 추출액의 휘발성 향미성분에 미치는 영향 (Effect of Viscous Materials Removal from Sea Tangle Extracts on Volatile Flavor Constituents)

  • 다시마 추출액의 향미성분을 분석하기 위하여 steam distillation방법으로 추출한 뒤 GC/MS를 이용하여 분석하였다. 다시마 분말과 100에서 2시간 추출한 대조구 그리고 효소분해와 NaCl용액에서 추출한 뒤 ultrafiltration으로 점성 물질을 제거한 추출액을 비교하였다. 그 결과 다시마 분말의 주요 향미성분은 2-nonen-1-ol, myristic acid, palmitic acid와 oleic acid이었고 $100^{\circ}C$에서 열수추출한 대조구에서는 pentadecane, 1,4-cyclooctadiene과 myristic acid로 나타났으며, 점성물질을 제거한 시료에서는 cyclohexanone, (E,Z)-octa-1,5-dien-3-ol, acetic acid, ethanone, benzaldehyde, 2,6-nonadienal 등으로 나타났다. 또한, 점성물질제거 과정중 분자량이 비교적 큰 지방산들과 3,5-nonadien-2-ol, 1-penton-3-ol 등이 현저히 감소하였다.

Headspace solid-phase microextraction(HS-SPME)를 이용한 간의 비린내불쾌취에 기인하는 불포화지방산 산화생성물의 휘발성성분 (Volatile Compounds in the Oxidation of Unsaturated Fatty Acids Caused in Off-flavor of Porcine Liver by HS-SPME)

  • 간 및 간에 함유된 불포화지방산인 arachidonic, linolenic, linoleic 및 oleic acid의 철 이온 존재하에서의 headspace 산화 반응생성물을 SPME법을 이용하여 포집, 분석하는 것에 의해 간에 함유된 불포화지방산의 산화생성물과 간의 비린내 불쾌취 형성과의 관련성을 검토하였다. SPME fiber중 불포화지방산의 headspace 산화생성물인 휘발성 알데히드류, 알코올류 및 지방산 등 대다수의 화합물을 검출에는 PDMS/DVB fiber가 적합하였다. 간의 headspace 산화생성물은 arachdonic acid을 비롯한 간에 함유된 각 불포화지방산의 head-space 산화생성물과 일치하였으며, 간의 불쾌취 형성은 간에 함유된 불포화지방산의 산화로 생성되는 산화 반응생성물에 의한 것이 시사되었다. 간의 불쾌취를 형성하는 주요성분으로는, arachidonic acid에서 생성되어 간의 금속취를 형성하는 화합물로 생각되어지는 1-octen-3-one 및 hexanol과 linolenic acid에서 형성되어 간의 비린내를 형성하는 (E,E)-2,4-heptadienal이 그 원인물질인 것으로 사료된다. 산화에 의해 생성된 각 불포화지방산의 산화 반응생성물은 간의 불쾌취인 비린내, 금속취 등을 생성하며, 주로 arachidonic acid 및 linolenic acid의 산화에 의해 생성된 산화 반응생성물에 의한 것으로 밝혀졌다.

효소저항저분이 인체내 담즙산 대사에 미치는 영향 (Effects of Resistant Starch on Metabolism of Beile Acids in College Women)

  • The purpose of this study was to examine the effect of resistant starch(RS) in hyperchlesterolemia and colon cancer. The subjects of this study was eight college women participating in the general starch diet(GSD) period for 5 days and resistant starch diet(RSD) period for 7 days. RSD contains 30g or the RS. On the last day of each program blood were collected. And for the last 3 days of each diet period, the amount of all the food consumed by the subjects and feces were collected. Food was measured to determine and compared the energy, protein and fat intakes. The amount of total cholesterol, HDL-cholesterol, LDL-cholesterol and volatile fatty acids in plasma and the amounts of bile acids in feces were measured by gas chromatography. The results obtained were as follows, Daily energy intake was higher in the RSD compared with the GSD, Protein and fat intakes were lower in the RSD compared with the compared with the GSD. Volatile fatty acid contents in plasma, the amounts of acetic acid, propionic acid and valeric acid were higher in the RSD compared with the GSD. The amounts of bile acids in feces, cholic acid, chenodeoxycholic acid and lithocholic acid were higher in the RSD compared with the GSD, But the amount of deoxycholic acid n the RSD period was significantly low. Secondary/primary ratios of bile acids was lower in the RSD compared with GSD, respectively. We speculate that , RS consumption decreases colonic mucosal proliferation as a result of the decreased formation of cytotoxic secondary bile acids. Thus, RS intakes may contribute the prevention of heart disease and colon cancer in humans. (Korean J Nutrition 33(8) : 802-812, 2000)

Influence of Sunflower Whole Seeds or Oil on Ruminal Fermentation, Milk Production, Composition, and Fatty Acid Profile in Lactating Goats

  • This study aimed to investigate the effect of sunflower seeds, either as whole or as oil, on rumen fermentation, milk production, milk composition and fatty acids profile in dairy goats. Fifteen lactating Damascus goats were divided randomly into three groups (n = 5) fed a basal diet of concentrate feed mixture and fresh Trifolium alexandrinum at 50:50 on dry matter basis (Control) in addition to 50 g/head/d sunflower seeds whole (SS) or 20 mL/head/d sunflower seeds oil (SO) in a complete randomized design. Milk was sampled every two weeks during 90 days of experimental period for chemical analysis and rumen was sampled at 30, 60, and 90 days of the experiment for ruminal pH, volatile fatty acids (tVFA), and ammonia-N determination. Addition of SO decreased (p = 0.017) ruminal pH, whereas SO and SS increased tVFA (p<0.001) and acetate (p = 0.034) concentrations. Serum glucose increased (p = 0.013) in SO and SS goats vs Control. The SO and SS treated goats had improved milk yield (p = 0.007) and milk fat content (p = 0.002). Moreover, SO increased milk lactose content (p = 0.048) and feed efficiency (p = 0.046) compared to Control. Both of SS and SO increased (p<0.05) milk unsaturated fatty acids content specially conjugated linolenic acid (CLA) vs Control. Addition of SS and SO increased (p = 0. 021) C18:3N3 fatty acid compared to Control diet. Data suggested that addition of either SS or SO to lactating goats ration had beneficial effects on milk yield and milk composition with enhancing milk content of healthy fatty acids (CLA and omega 3), without detrimental effects on animal performance.

Simulation on Long-term Operation of an Anaerobic Bioreactor for Korean Food Wastes

  • A mathematical model was formulated to simulate the long-term performance of an anaerobic bioreactor designed to digest Korean food wastes. The system variables of various decomposition steps were built into the model, which predicts the temporal characters of Solid waste, and volatile fatty acid (VFA) in the reactor, and gas production in response to various input loadings and temperatures. The predicted values of VFA and gas production were found to be in good agreement with experimental observations in batch and repeated-input systems. Finally, long-term reactor performance was simulated with respect to the seasonal temperature changes from 5C in winter to 25C in Summer at different food waste input loadings. The simulation results provided us with information concerning the success or failure of a process during long-term operation .

저식염 수산발효식품의 가공에 관한 연구 9. 저식염 새우젓의 제조 및 풍미성분 (Studies on the Processing of Low Salt Fermented Sea Foods 9. Processing Conditions of Low Salt Fermented Small Shrimp and Its Flavor Components)

  • 저식염수산발효식품의 가공에 관한 일련의 연구로서 식염의 일부를 염화칼륨으로 대체하고, 젖산, 솔비톨, 에틸알콜을 첨가하여 저식염새우젓을 담그어 식염 $20\%$인 재래식 새우젓과 숙성중 지방산조성의 변화, 정미성분 및 냄새성분등을 분석 비교하였다. 재래식 새우젓 $S_1$과 저식염새우젓 $S_2,\;S_3$ 모두 최적숙성기는 60일이었으며 최적숙성기 때의 관능검사결과로 보아 식염 $4\%$, KCl $4\%$, lactic acid $0.5\%$, sorbitol $6\%$ 및 고추가루추출물 $4\%$를 첨가하여 담근 저식염새우젓 $S_3$는 재래식 새우젓 $S_1$에 비해 손색이 없는 좋은 제품이었다. 생균수는 전 제품 모두 최적숙성기인 60일째에 가장 많았다. 숙성중 전 제품 모두 주된 구성지방산은 16:0, 20:5, 22:6, 16:1 및 18:1 등이었으며 숙성증 폴리엔산의 조성비는 약간씩 감소한 반면, 포화산은 다소 증가하였다. 폴리엔산의 감소정도는 저식염새우젓 $S_3$가 가장 적었으며 고추가루 추출물의 항산화성도 확인되었다. 최적숙성기인 60일째의 재래식 새우젓 $S_1$과 저식염새우젓 $S_3$의 정미성분의 주체는 유리아미노산이었고 betaine과 핵산 관련물질이 보조적 역할을 할 것으로 생긱되었다. 그리고 완숙기 때의 주된 유리아미노산은 제품 $S_1,\;S_3$ 모두 glutamic acid, leucine, prolinc, glycine, lysine 및 aspartic acid등이었다. 완숙기 때의 냄새성분중 휘발성지방산은 $S_1$에서는butyric acid가 $64.0\%$로써 특히 많은 비율을 차지하였고 다음으로 acetic acid의 순이었지만 저식염새우젓 $S_3$에서는 butyric acid, propionic acid 및 acetic acid의 순으로 많은 비율을 차지하고 있었다. 6종이 동정된 휘발성카르보닐화합물중 제품 $S_1,\;S_3$ 모두2-methylpropanal이 약 $60\%$정도로써 특히 많았고 다음으로 S-methylbutanal과 pentanal의 순으로 많은 비율을 차지하였다. 한편, 휘발성아민은 제품 $S_1,\;S_3$ 모두 trimethylamine이 주체를 이루고 있었다.

반연속식 음식물쓰레기 산발효조에서 COD 분율 (COD Fraction in Semi-Continuous Food Waste Acid Fermenter)

  • In this study, degradation of carbohydrates and composition of fermentative products were investigated in semi-continuous acid fermenter varying hydraulic retention time (HRT). Rice soup was used as a sole substrate for the acid fermentation. Solubilization efficiency of the substrate was higher than 70% for all HRT, however the gas conversion was ignorable implying that most of organic contents in the influent remained in the form of volatile fatty acids (VFAs) and ethanol after acid fermentation. The VFAs were the predominant product and the VFAs conversion increased as the HRT decreased. The VFAs conversion reached the maximum value at 12 hr HRT accounting for 70% of the influent COD. Similar to VFAs, ethanol conversion was increased with the decrease of HRT and the maximum ethanol conversion efficiency was 8% at the HRT of 12 hr. Composition of VFAs was markedly dependent on HRT. As HRT increased, the composition of acetic acid was increased as a product of acetogenesis from butyrate, valerate and ethanol. This study demonstrated that HRT affected acid fermentation of a carbohydrate containing organic wastes producing VFAs and ethanol which could be effectively used to compensate the lack of carbon in wastewater for biological nutrient removal.
