Study on the Vitamin Contents of Commercial Powdered Infant Formula (국내 시판 유아용 고형 조제분유의 비타민 함량에 관한 조사)

  • This study was conducted to investigate both fat-soluble and water-soluble vitamin contents of commercial powdered infant formula for obtaining basic data on infant nutrition. Ten commercial infant formula based on cow's milk were collected and the contents of fat-soluble vitamins (vitamin A, D, E, K) and water-soluble vitamins (vitamin C, thiamin, riboflavin, niacin, $B_6$, folate, $B_{12}$, pantothenic acid, biotin) were compared with Dietary Reference Intakes for Koreans (KDRIs). The overall vitamin contents in 100 g and in 100 kcal of infant formula satisfied the recommended formula regulation (KDRIs) and Codex. In infant formula during 0-5 monthly age, fat-soluble vitamin A, D, E, K could supply 178.6%, 205.3%, 208.4%, 976.3% of adequate daily vitamin intakes, respectively. Water soluble vitamins, vitamin C, thiamin, riboflavin, niacin, $B_6$, folate, $B_{12}$, pantothenic acid, biotin could supply 173.2%, 237.2%, 269.8%, 295.9%, 431.6%, 165.8%, 1186.3%, 203.8%, 408.3% of adequate daily vitamin intakes, respectively. In infant formula during 6-11 monthly age, all vitamins satisfied their adequate daily intakes as well. Vitamin A, D, E, K supplied 199.2%, 262.3%, 220.5%, 626.46% of adequate daily vitamin intakes. Vitamin C, thiamin, riboflavin, niacin, $B_6$, folate, $B_{12}$, pantothenic acid, biotin could supply 179.5%, 210.2%, 264.7%, 241.5%, 206.0%, 166.9%, 699.5%, 247.0%, 475.0% of adequate intake of KDRIs. From this study, evaluation of vitamin contents of commercial infant formula was established, which could strengthen the basic information on infant nutrition.

Effects of Temperature and Relative Humidity on Fat Soluble Vitamin Contents in Commercial Vitamin Tablet (저장 온도 및 상대습도가 비타민 정제 중 지용성 비타민 함량의 변화에 미치는 영향)

  • Effects of temperature and relative humidity on fat soluble vitamin contents in two commercial vitamin tablets ('Multivitamin Dandelion' and 'vitamin E Yarrow') were investigated. When they stored at different temperature (25, 35, and $45^{\circ}C$) with cap and stored at low relative humidity (11% RH) without cap, all fat soluble vitamins (vitamin A acetate, vitamin E acetate and vitamin E) were stable during 24 weeks of storage period. However, when they stored at high relative humidity (75% RH and 100% RH) without cap, vitamin A acetate and vitamin E acetate dramatically disintegrated at the early stage of storage. On the other hand, vitamin E gradually decreased during storage. Therefore, stability of some fat soluble vitamins, which exist as acetate form, was highly dependent on relative humidity rather than storage temperature. Water may act as a plasticizer and increased the mobility of molecules in vitamin tablet resulting in relatively fast disintegration of some fat soluble vitamins.

The influence of various medicines and nutritional supplements against bacteria with gastrointestinal relevance (다양한 약물과 영양제가 장내세균에 미치는 영향)

  • Recently, change of Western pattern diet and lifestyle is caused by various metabolic disorders and chronic diseases. These diseases need to take medicine regularly. Also, many people take health functional food, various vitamins and nutritional supplements in order to maintain a healthy life. But, there was no study about affects taking medicines against bacteria with gastrointestinal relevance. This study was performed by antibacterial activity test to evaluate the influence of a long time or commonly used medication. As a result, medicines of Vitamins & Minerals or Central nervous system show antibacterial activity against beneficial enteric bacteria and harmful enteric bacteria. Dexibuprofen of the Anti-inflammatory Drugs that acts on the central nervous system has shown high antibacterial activity at beneficial enteric bacteria strains (Lactobacillus casei, Lactobacillus rhamnosus) and harmful enteric bacteria (Staphylococcus aureus). Also, fenofibric acid of the antilipemic agents that acts on the Cardiovascular & Hematopoietic system has shown high antibacterial activity at beneficial enteric bacteria strains (Lactobacillus casei). Vitamins & Minerals appeared antibacterial activity against most intestinal bacteria. Vitamin B-Complex/with C and vitamin C were especially high with beneficial enteric bacteria strains (Bifidobacterium infantis) and harmful enteric bacteria (E. coli, E. aerogenes, S. flexneri, S. Typhimurium, S. aureus). Therefore, these results indicate that variously taking medicines have generally antibacterial activity against harmful enteric bacteria strains and beneficial enteric bacteria strains.

Dietary maximum exposure assessment of vitamins and minerals from various sources in Korean adolescents (한국 청소년의 다양한 급원을 통한 비타민과 무기질 최대섭취량 평가)

  • Dietary supplement use is prevalent and represents an important source of nutrition. This study was conducted in order to assess the dietary maximum exposure of vitamins and minerals from various sources including regular diet, vitamin mineral supplements for non-prescription drug (VMS-NPD), vitamin mineral supplements for health functional foods (VMS-HFF), and fortified foods (FF). A total of 1,407 adolescent boys and girls attending middle or high schools were chosen from various cities and rural communities in Korea. Users of vitamin and mineral supplements (n = 60, 15-18 years of age) were chosen from the above 1,407 students. Intake of vitamins and minerals from a regular diet and FF was assessed by both food record method and direct interview for three days of two weekdays and one weekend, and those from VMS-NPD and VMS-HFF were assessed by both questionnaire and direct interview, and compared with the recommended nutrient intake (RNI) and the tolerable upper intake level (UL) for Korean adolescents. Daily average exposure range of vitamins and minerals from a regular diet was 0.3 to 4.4 times of the RNI. Some subjects had an excessive exposure to the UL in the following areas: from regular diets, vitamin A (1.7%) and niacin (5.0%); from only VMS-NPD, vitamin C (9.1%) and iron (5.6%); and from only VMS-HFF, niacin (8.6%) > vitamin $B_6$ (7.5%) > folic acid (2.9%) > vitamin C (2.3%). Nutrients of daily total intake from regular diet, VMS-NPD, VMS-HFF, and FF higher than the UL included nicotinic acid for 33.3% of subjects, and, then, in order, vitamin C (26.6%) > vitamin A (13.3%), iron (13.3%) > zinc (11.7%) > calcium (5.0%) > vitamin E (1.7%), vitamin $B_6$ (1.7%). Thus, findings of this study showed that subjects may potentially be at risk due to overuse of supplements, even though most of them took enough vitamins and minerals from their regular diet. Therefore, we should encourage adolescents to have sound health care habits through systematic and educational aspects.

Intake of antioxidants and B vitamins is inversely associated with ischemic stroke and cerebral atherosclerosis

  • BACKGROUND/OBJECTIVES: This study was conducted to examine relationships between dietary habits and intakes of antioxidants and B vitamins and the risk of ischemic stroke, and to compare dietary factors according to the presence of cerebral artery atherosclerosis and stroke subtypes. SUBJECTS/METHODS: A total of 147 patients and 144 control subjects were recruited consecutively in the metropolitan area of Seoul, Korea. Sixty participants each in the case and control groups were included in analyses after 1:1 frequency matching. In addition, 117 acute ischemic stroke patients were classified into subtypes according to the Trial of Org 10172 in Acute Stroke Treatment (TOAST) guidelines. Dietary intake was measured using a semi-quantitative food frequency questionnaire composed of 111 food items and plasma lipid and homocysteine levels were analyzed. RESULTS: When compared with control subjects, stroke patients had unfavorable dietary behaviors and lower intakes of fruits ($73.1{\pm}83.2g$ vs. $230.9{\pm}202.1g$, P < 0.001), vegetables ($221.1{\pm}209.0g$ vs. $561.7{\pm}306.6g$, P < 0.001), and antioxidants, including vitamins C, E, $B_6$, ${\beta}$-carotene, and folate. The intakes of fruits, vegetables, vitamin C, and folate were inversely associated with the risk of ischemic stroke after adjusting for confounding factors. Intakes of vegetables, vitamins C, $B_6$, $B_{12}$, and folate per 1,000 kcal were lower in ischemic stroke with cerebral atherosclerosis than in those without. Overall vitamin $B_{12}$ intake per 1,000 kcal differed according to the TOAST classification (P = 0.004), but no differences among groups existed based on the post-hoc test. CONCLUSIONS: When compared with control subjects, ischemic stroke patients, particularly those with cerebral atherosclerosis, had unfavorable dietary intake, which may have contributed to the development of ischemic stroke. These results indicate that proper dietary recommendations are important for the prevention of ischemic stroke.

Determination of Antioxidant Vitamins in Horticultural foods (한국 원예식품의 항산화 비타민 함량 분석)

  • This study examines the effects of the Korean horticultural foods which are, by traditional wisdom, supposed to contain anti-aging substance. All twenty three kinds of plants are chosen as a sample for the experiment in which the content of three main anti-aging nutrients, -carotene, Vitamin C, and Vitamin E are respectively measured by Nilis, Colorimetric, and AOAC method. The result shows: among the samples, top six plants that contain the most -carotene content are high quality tea(Camellia sinensis), thistle(Cirsium japonicum Var.), Angelica keiskei, mulberry leaves(Morus alba l.), field horsetail(Equisetum arvensa), and carrot(Daucus carota), in order; top four for a Vitamin C contents are low quality tea, mulberry leaves, pine leaves(Pinus densiflora), and high quality tea, in order; top four for a Vitamin E contents are persimmon leaves(Diospyros mongolicum) tea, high quality tea, low quality tea, and pine leaves, in order. Drying or boiling process increases the content of -carotene and Vitamin E in high quality tea, dropwort(Oenanthe javanica), field horsetail, and wild aster(Ligularia stenocephala Marsumum et Koldzumi), while, in case of mulberry leaves, drying process lowers them. Vitamin C content strikingly decreases in heating and drying process.

Effects of Antioxidant Supplementation on Antioxidant Status and PHA-Stimulated Interleukin-2 Production by Peripheral Blood Mononuclear Cells in the Elderly Women

  • This study was done to investigate effects of antioxidant supplementation on phytohemagglutinin (PHA) -stimulated interleukin-2 (IL-2) production by peripheral blood mononuclear cells (PBMCs) in elderly women. This study was designed as a placebo-controlled, single-blinded, randomized intervention trial. Twenty four elderly women aged over 60 years, visitings social welfare center in Seoul were divided into 3 groups, placebo (n = 8), vitamin C supplemented (n = 8) , and vitamin E supplemented (n = 8) groups. Experimental groups were given either 1000mg of L-ascorbic acid or 400 ill of d- $\alpha$-tocopherol for 4 weeks. There was no significant difference in antioxidant vitamins intakes and their plasma levels among pre-intervention groups. Plasma vitamin C or E levels was significantly increased after vitamin C or E sup-plementations. The increases of plasma thiobarbituric acid-reactive substance (TBARS) levels in the placebo group were significantly higher than those of the supplemented 2 groups. There were no significant differences in the changes of plasma IL-2 level between pre- and post-intervention among the 3 groups. However there was a significant increase in PHA­stimulated IL-2 production by PBMCs after 4-week vitamin E or vitamin C supplementation. Particularly, vitamin E supplemented group showed a higher PHA-stimulated IL-2 production than vitamin C supplemented group. These results indicate that vitamin E or vitamin C supplementation might enhance mitogen-stimulated cytokine production by immune cells, which could be one of the factors to improve health status in the elderly.

Effect of Adding Fermented Organic Matter on the Performance of Benthic Microbial Fuel Cell (BMFC) (저생 미생물 연료전지(BMFC)의 성능에 미치는 발효 유기물 첨가 효과)

  • A benthic microbial fuel cell (BMFC) is an eco-friendly energy conversion device that uses electricity generated by benthic microorganisms decomposing organic matter in the mud of the sea or lake. In this study, in order to understand how domestic wastewater flowing into tidal flats affects the performance of BMFC. BMFC performance was compared and reviewed by fermenting organic substances in food and mixing them with tidal flats. Performance of the BMFC was improved by 49% by adding fermented food rich in vitamins (B2, B6, B12, C, D, E) and soft flour. The maximum power density increased as the amount of fermented organic matter increased, and it was shown that the fermented organic matter fermented during 25~29 days was optimal for BMFC.

Comparison of Nutritional and Functional Constituents in Pulses (두류의 영양 및 기능성 성분 함량 비교)

  • Pulses are an annual leguminous crop yielding from one to twelve grains or seeds. This study was used eight pulses except for green beans. We evaluated the chemical characteristics of these raw pulses produced in Korea. The nutritional and functional contents such as moisture, carbohydrate, crude protein, crude lipid, ash, dietary fiber, minerals(Ca, P, Fe, Na, and K), vitamins (A, E, C, B groups, folic acid, and niacin), total polyphenol, carotenoid, and flavonoid containing isoflavone were investigated. As a results, all raw samples were shown the high levels of almost nutritional contents (especially, protein, fats, and fat-soluble vitamins). In addition, yellow soybeans, red bean, and kidney bean were high the contents of total polyphenol. Of the functional contents, three lands of the yellow soybeans were shown the high flavonoid. This study represent much to provide the fundamental nutrition and function data in pulses because they have significant nutritional and health advantages for humans.

  • Cereals or cereal grains, are grasses cultivated for the edible components of their fruit seeds. In this study we evaluated the chemical characteristics of 12 raw cereals produced in Korea. The nutritional and functional contents such as moisture, carbohydrate, crude protein, crude lipid, ash, dietary fiber, minerals(Ca, P, Fe, Na, and K), vitamins (A, E, C, B groups, folic acid, and niacin), total polyphenol, carotenoid, and flavonoid containing isoflavone were investigated. Especially, the dietary fiber were determined and divided into three contents such as total, soluble, and insoluble fibers. As a results, the black rice was shown the high total polyphenol and flavonoid contents. They were included the rich vitamins, minerals, carbohydrates, fats and protein. The other chemical compositions were not shown the remarkable differences among cereal cultivar. This result can be used as basic data for specific cooking or functional study.
