Changes in Selected Components and Antioxidant and Antiproliferative Activity of Peppers Depending on Cultivation (재배 방식에 따른 고추의 항산화 및 암세포 증식억제 활성변화)

  • The purpose of this study was to evaluate selected functional compounds and biological activities of 11 different pepper cultivars grown in rain-shelter and field. The selected compounds were capsaicinoids, polyphenolic and vitamin C. Antioxidant activities were measured by ABTS radical scavenging activity, reducing power and metal chelating effect. Antiproliferative activity was assessed by the measurement of the inhibition of HCT116, MCF 7 and NCI-H460 cancer cell proliferation. The contents of capsaicin, dihydrocapsaicin, polyphenolics and vitamin C from 11 cultivars grown in field were 0.0~268.3 mg/100 g, 0~55.1 mg/100 g, 635~878 mg/100 g and 4.1~8.2 mg/g, respectively. There were significant differences in the content of selected compounds among the cultivars, although no significant difference in rain-shelter and field was detected. Similar to the results from the selected compounds, there was no difference in antioxidant and antiproliferative activities between rain-shelter and field. This research provides basic information on functional compounds and biological activity of cultivation methods and pepper cultivars.

Effects of Supplemental Green LEDs to Red and Blue Light on the Growth, Yield and Quality of Hydroponic Cultivated Spinach (Spinacia oleracea L.) in Plant Factory (수경재배 식물공장에서 다양한 보광 LED가 시금치의 생육과 수량에 미치는 영향)

  • The effect of three different light qualities on growth, photosynthesis, quality and safe parameters of hydroponic cultivated spinach (Spinacia oleracea L.) were investigated indoor. Three different light qualities were created of red (660 nm), blue (450 nm) and green (550 nm) LEDs corresponding at ratio R660/B450 = 4/1 (RBL); R660/B450/G550= 5/2/3 (WWL); R660/B450/G550 = 1/1/1 (WL), which were tested at the same intensity (PPFD =190 μmol m-2 s-1). The results showed that the plant height and leaf number were the lowest in WL treatment. The SPAD, Net photosynthesis rate Pn, Fv/Fm, Leaf area index LAI values and all parameters of root characteristics were the highest in RBL treatment and were significantly different from two others. Fresh weight of stem, leaf and root, dry weight of root in the three light qualities were significantly different. In contrast, the highest K+ content in WL was different from WWL and RBL treatments, while Ca2+ and Fe2+ content were the highest in the RBL treatment. Vitamin C content was significantly different between the three treatments. nitrate and oxalic acid contents were the highest in WL treatment, whereas soluble-solids contents and vitamin C contents were the highest in RBL treatment. Oxalic acid, nitrate contents were observed tending reduced under WWL although oxalic acid content in RBL treatment was not different from WL and WWL treatments. In all three different light treatments were not detected Salmonella, E.coli. Our results suggest that RBL may be appropriate light for growth of spinach, but supplementary green light to a combination of red and blue LEDs at the reasonable rate can change the quality of spinach in a positive direction. Hydroponic cultivated spinach was safe for users.

Fermentation Properties of Dongchimi added Maesil(Prunus mume) (매실 첨가물에 따른 동치미의 발효 특성)

  • The purpose of this study was to investigate the effect of maesil(Prunus mume) on Dongchimi fermentation. Dongchimi with 0, 2, 4 and 6%(w/v) maesil was fermented at 10℃ for 45 days. The pH of Dongchimi decreased slowly in all samples during fermentation. Total acidity of Dongchimi increased gradually during fermentation and total acidity of Dongchimi with maesil was higher than that of control. Redox potentials decreased until 30 days of fermentation but increased thereafter. Reducing sugar content increased in the initial stage of the fermentation periods, and then it decreased gradually, the reducing sugar content of Dongchimi with maesil was higher than that of control. The content of total vitamin C was much higher in Dongchimi with maesil. In color measurement, lightness value decreased gradually, redness and yellowness values increased gradually during fermentation but decreased thereafter. The content of hot water soluble pectin(HWSP) decreased as the fermentation proceeded but the content of hydrochloric acid soluble pectin(HCISP) and sodium hexametaphosphate soluble pectin(NaSP) increased.

Quality Analysis According to Nutritional Content and Storage Period of Pickled Cabbage by Cultivation Region (재배지역별 절임배추의 영양성분 및 저장기간에 따른 품질 분석)

  • This study analyzed the changes in the nutritional components, properties, physicochemical properties, general bacteria, and lactic acid bacteria of pickled cabbage depending on the cultivation area. An analysis of the nutritional composition on the first day of storage showed no significant difference in the calories, carbohydrates, protein, fat, and dietary fiber contents regardless of the cultivation region, but regional differences were observed in the vitamin C content in the order of Andong > Pyeongchang > Haenam. The total free amino acid content appeared in the order Andong > Pyeongchang > Haenam, and the GABA (γ-amino-n-butyric acid) content appeared in the order Haenam > Andong > Pyeongchang. In addition, pickled cabbage was observed on the 1st, 5th, and 10th days of storage at 4℃. No significant change in appearance was observed on the 1st and 5th days, but changes were observed on the 10th day. Regardless of the cultivation area, the salinity (p<0.05) and pH (p<0.05) decreased significantly as the storage period increased, while the sugar content (p<0.05) and acidity (p<0.05) increased significantly. The general bacteria (p<0.05) and lactic acid bacteria (p<0.05) counts increased significantly as the storage period increased, irrespective of the cultivation region.

Mild Heat Treatments for Quality Improvement of Fresh-cut Potatoes (열처리가 신선편이 감자 가공품의 품질에 미치는 영향)

  • Effect of pre- and post-mild heat treatment on quality of fresh-cut potatoes was investigated with the focus on surface color, firmness, phenolics, vitamin C and sensory characteristics. As the pre-heat treatment before cutting of potatoes, dried hot air (DH) and hot water (WH) treatment were conducted at $45^{\circ}C$ for 60 min, respectively. As a post-heat (CH) treatments, potato cubes were dipped into water of $55^{\circ}C$ for 45 seconds after cutting. The potato cubes were packed in 15 cm x 20 cm LDPE pouches $30^{\mu}m$ thick and then stored at $5{\pm}1^{\circ}C$. The respiration rate of fresh-cut potatoes was decreased by mild heat treatment Especially, the rate of cubes treated with DH was decreased by $20\%$ compared to that of the non-heat treated. L value of cubes treated with DH showed higher value than that of others. Firmness and free phenolics had no significant difference between the treatments. The fresh-cut potatoes prepared with non-heat treatment showed higher vitamin C content than that of the heat treated. In sensory visual color, CH treated cubes marked the best quality. Conclusively, mild heat treatment, especially CH treatment, showed positive effect on browning inhibition and quality enhancement of fresh-cut potatoes.

Nutrient Components and Physicochemical Properties of New Domestic Potato Cultivars (국내산 신품종 감자의 영양성분 및 이화학적 특성)

  • This study examined the nutrient components and physicochemical properties of three new potato cultivars: Gui Valley, Bora Valley, and Gogu Valley, which were acquired from PotatoValley Ltd., and compared them to the Superior cultivar that is widely distributed in food markets. Amino acid, fatty acid, and mineral compositions, as well as total starch, reducing sugar, dietary fiber, vitamin C, and phenolic acid contents were measured. The gelatinization and pasting properties of the potatoes were evaluated using differential scanning calorimetry (DSC) and a rapid visco analyzer (RVA). The three new potato cultivars showed differences for various characteristics compared to the existing Superior cultivar. The Gui valley cultivar has a high potential for processing into items such as French fries or chips, due to its high starch content and low reducing sugar content. Bora valley showed an incredibly high phenolic acid contents, and Gogu valley contained high levels of dietary fiber, minerals, vitamin C, and essential amino acids. Overall, these cultivars are expected to be highly valuable items for develpment and applications of functional food.

Quality Characteristics by Various Drying Methods in Ear Mushroom (Auricularia auricula-judae Quel.) (다양한 건조방법에 따른 목이버섯의 품질 특성)

  • In order to produce the high quality of dried-ear mushroom, various drying methods such as hot-air drying at $40{\sim}80^{\circ}C$, freeze drying and drying in vinyl house were carried out. Drying hours of hot-air drying, freeze drying and drying in vinyl house were 12.5~21.5, 36.0 and 72.0 hrs, respectively. Vitamin $D_2$ content of sample was the highest as $6.77{\mu}g/g$ DW in drying in vinyl house and then followed by freeze drying as $5.90{\mu}g/g$ DW and hot-air drying as $1.89{\sim}5.01{\mu}g/g$ DW. After dry, external appearance and color of mushrooms applied hot-air drying and drying in vinyl house were better than freeze-dried one. After rehydration, water uptake of sample in drying in vinyl house and hot-air drying at $50{\sim}60^{\circ}C$ were 17.8 and 19.3~21.0 times, respectively. The methods of drying in vinyl house and hot-air drying at $50{\sim}60^{\circ}C$ also led to high hardness, good shape and resilience. As the results of production of dried-ear mushroom with high quality, we suggest that the best method for drying is the drying in vinyl house due to not only high vitamin $D_2$ content, good external appearance and color after drying but also high hardness and good shape after rehydration.

Chemical Composition and Antioxidant Activity of Korean Buckwheat (Fagopyrum esculentum) Pollen Grain Collected by Honey Bee, Apis mellifera (메밀화분의 성분 특성 및 항산화 활성)

  • We evaluated the nutritional composition including proximate, amino acid, vitamin, minerals, and the antioxidant activity of buckwheat (Fagopyrum esculentum) pollen grains collected by Apis mellifera bees, to be used as a species of forage plant with Quercus acutissima (acorn) and Actinidia arguta pollen grains. The content of crude protein and fat were found 14.43% and 5.67%, respectively. Eighteen amino acids from buckwheat pollen were found, including 8 essential amino acids. The predominant amino acids were glutamic acid, aspartic acid and lysine, accounting for about 42.7% of total free amino acids. The concentration of vitamin C was the highest value of 13.7 mg/100g, followed by $B_3$ (niacin) and $B_1$ among the detected vitamins. The predominant minerals were potassium (1197.95mg/100g), followed by phosphorus (962.77mg/100g) and magnesium (535.42mg/100g), whereas copper, zinc and manganese were detected as minor elements. Antioxidant activity and total phenolic content accounted for 8.1% at $500{\mu}g/ml$ extract and $2.25{\mu}g/mg$, respectively.

Nutritional Characteristics of Ice Cream Added with Citron(Citrus junos Sieb ex Tanaka) Juice (유자 착즙액 첨가 아이스크림의 영양학적 특성)

  • In this study, we compared that sensory characteristics and nutritional components of ice cream supplements with various levels(1, 2, 3%) raw and frozen citron juice. Vitamin C was not detected in frozen citron juice 1% added group. The content of vitamin C was 4.7 mg/100g in raw citron juice 3% added group. But it detected 1.0 mg/100g in 3% frozen citron juice added group. Free sugars were detected sucrose, lactose and maltose. Those amounts of all samples were lower than control group and were lower goes to citron juice added ratio higher. Organic acids in ice creams were detected oxalic acid, malonic acid, malic acid and citric acid. The citric acid content was higher than other organic acid. Especially, citric acid content was the highest in raw citron juice 3% added group (6.3 mg/100g). But it's content was low in all frozen citron juice added groups (0.5-0.6 mg/100g). Mineral contents of ice creams were highest in raw citron juice 3% added group (3399.96 mg/100g). The results of sensory test, citron aroma and citron taste were the highest in raw citron juice 3% added group. Overall acceptability was the highest in frozen citron juice 2% added group.

Food nutritional characteristics of fruit of Cudrania tricuspidata in its various maturation stages (꾸지뽕나무 열매의 숙기별 식품학적 특성)

  • This study was conducted to investigate the food value of Cudrania tricuspidata at its various maturation stages. The pH, total acid and reducing sugar contents of its fruit juice were determined to have been 4.2~5.1, 1.4~2.0% and 5.4~8.6%, respectively. The general chemical components of its fruit were observed as 76~80% moisture, 2.2~3.5% crude protein, 1.7~2.9% crude fat, 0.8~1.2% ash and 14.5~16.4% carbohydrate. Its free sugar, glucose and fructose contents were determined. The fructose contents of both its ripened and over-ripened fruits were higher than their glucose contents. Organic acids such as oxalic acid, citric acid, tartaric acid, malic acid and succinic acid were detected, and the concentration of the malic acid and the succinic acid were found to have been most abundant. The K content was higher than the amounts of other minerals, such as Ca, Fe, K, Mg, Na and P. Its vitamin C and the total amount of its dietary fiber were 127.5~149.2 mg% and 22.7~38.7%, respectively. Its insoluble dietary fiber content was higher than its soluble dietary fiber content. Its total polyphenol and flavonoid content were 18.9~19.6 mg% and 40.9~48.2 mg%, respectively.
