식초 산업의 발전사와 최근 현황 (History and current status of vinegar industry development)

  • With the discovery of metabolic mechanisms of alcohol fermentation and acetic acid fermentation in the 1800s and 1900s, the history of traditional vinegar became a turning point for changing to the history of science and technology. Since then, innovation in vinegar production has occurred, and the era of full-scale mass industrialization has opened. The most modern method, submerged fermentation, has improved the vinegar production process to produce much higher quality vinegar and provide vinegar with high productivity and quality uniformity. Innovative research for vinegar production is underway as various approaches have been developed to increase fermentation efficiency, reduce costs, and shorten fermentation time due to the trend of combining existing technologies and advanced technologies. Now that the development of the vinegar industry is currently focused on vinegar engineering, multidisciplinary approaches in various fields such as microbiology, chemistry, food technology, process engineering, and molecular biology are needed.

무화과를 이용한 식초 제조에 관한 연구 (Studies on the Production of Vinegar from Fig)

  • Possibility of utilization of fig as a source of vinegar was tested. Alcohol fermentation was conducted by inoculation of Saccharomyces bayanus into fig juice. After 5 days of fermentation at 27oC, fig wine with alcohol content of 13.6%. Then fig vinegar was produced by cultivation of Acetobacter sp. E which was isolated from fig vinegar. Optimum concentration of alcohol, starter content and fermentation temperature for the acid production were 8~9%, 5% and 27~30oC, respectively. More acetic acid was produced by adding 0.5% of yeast extract and 0.01% of Ca pantothenate. Adjustment pH of culture broth with acetic acid and shaking cultivation method were not effective in higher yield of acid production. Addition of sulfite up to 50 ppm did not inhibit for acetic acid fermentation. Addition of 1% bentonite or 1% kakishibu was more effective for the clarification of fig vinegar than any other clarifying agents tested. During aging and racking, acidity, absorbance and tannin content of fig vinegar decreased, while redness and yellowness increased. Aged and racked fig vinegar showed higher sensory score than non aged one in the aspects of color and overall acceptability.

19종 시판 탄화초액의 항산화활성의 평가 및 비교 (Evaluation and Comparison of Antioxidant Activities of Nineteen Commercial Carbonated Vinegar Liquors)

  • 목초액, 죽초액 및 왕겨초액을 포함한 시판 중인 19종의 탄화초액이 가지는 기능성을 DPPH 라디칼에 대한 전자공여활성과 $Fe^{3+}$인 ferricyanide에 대한 환원력, linoleic acid의 자동산화를 억제하는 지질과산화 억제활성, LPS 자극에 의한 생쥐 대식세포주 RAW264.7세포의 NO생산에 대한 억제활성 및 탄화초액 처리에 의한 RAW264.7세포의 세포독성을 중심으로 평가하였다. 실험 결과, 탄화원료에 관계없이 정제도가 떨어지는 탄화초액의 경우, 전자공여활성, 환원력, 지질과산화 억제활성 및 NO 생성 억제활성을 포함한 항산화활성과 세포독성은 모두가 높게 나타났다. 반면, 피부이상 치료용이나 목욕용 정제 탄화액의 경우, 세포독성은 낮지만 전반적인 항산화활성도 낮았고, 특히 염증 유발에 중요한 분자인 NO의 생성을 억제하는 활성도 낮게 나타났다. 19종의 탄화초액 중에서는 왕겨초액이 NO 생성 억제활성을 포함한 항산화활성이 높을 뿐 아니라 세포독성이 낮은 기능성이 뛰어난 탄화초액임이 관찰되었다.

죽초액의 첨가가 육용오리의 생산성 및 육질에 미치는 영향 (Effect of Supplemental Bamboo Vinegar on Production and Meat Quality of Meat-type Ducks)

  • This experiment was conducted to investigate the effect of the supplemental Bamboo vinegar on production and meat quality of broiler ducks for 35 days. One hundred broiler ducks were divided into 4 groups of 25 ducks. Dietary levels of bamboo vinegar 0%, 1%, 2% and 4% were added to experimental diets ot each of the groups. The wei핌t gain and feed intake of ducks f3d with supplemental bamboo vinegar significantly high compared to those of the control. The carcass rate of the ducks fed with supplemental Bamboo vinegar 1% and 2% were increased compared to that of control, but the ducks fed with 4% treatment was decreased in carcass rate. The lipid and cholesterol content of breast meat of the ducks f3d bamboo vinegar 2% and 4% were significantly decreased (P<0.05). The color values in redness and yellowness were increased by supplemental Bamboo vinegar. Palmitic acid of fatty acid composition in breast meat was decreased by supplemental bamboo vinegar groups, whereas linoleic acid was increased, this difference was especially observed in supplemental Bamboo vinegar 2% (P<0.05). The odor, appearance and taste of sensory evaluation were improved by supplemental bamboo vinegar, especially in supplemental bamboo vinegar 1% and 2% (P<0.05). The results of this study indicate that the supplemental bamboo vinegar 1% and 2% may improve the production and meat quality of broiler ducks.

복분자 발사믹식초 제조를 위한 식초증류공정 도입 가능성 분석 (Analysis of distillation process adoptability for Rubus coreanus balsamic vinegar production)

  • 본 연구에서는 보다 간단하고 신속한 공정으로 생산량 증가 및 비용절감을 도모할 수 있는 한국형 복분자 발사믹 식초 생산공정 개발을 위한 증류과정 도입가능성을 알아보았다. 증류과정을 통해 생산된 농축식초분획의 발사믹식초로서의 활용가능성과 증류식초분획의 증류식초로서의 활용가능성을 파악하기 위해 증류과정에서 얻어진 식초 분획을 대상으로 총산도, 산도pH 및 비중을 측정하였다. 총산도가 서로 다른 4종류의 식초(총산도; 4.42, 4.84, 5.61, 및 6.35)를 60%까지 증류했을 때 농축식초분획의 총산도는 증류 전 식초보다 평균 38.1% 증가하였다. 특히 최종 농축식초분획의 총산도 및 산도pH는 발사믹식초와 유사한 것으로 나타났다. 한편 증류식초분획 역시 총산도가 증가하여 최종 분획의 총산도는 각각 4.41%, 4.95%, 5.88%, 및 6.72% 이었으며 증류식초로 활용이 가능할 것으로 판단되었다. 본 연구에서는 증류공정을 통해 식초를 효과적으로 농축시킬 수 있을 뿐 만 아니라 동시에 증류식초를 생산할 수 있음을 확인하였다. 그러나 식초분획별로 유기산 함량 및 항산화활성 측정 등 추가적인 생화학적 특성 분석이 이루어져야 증류공정 도입여부를 결정할 수 있을 것으로 사료된다.

  • The production of vinegar containing high acetic acid concentration was carried in a single stage fed-batch culture. The initial and residual ethanol concentration were 50.0g/l and 5.0g/l, respectively, and the ethanol concentration was maintained from 5.0g/l to 10.0g/l during fedbatch culture. The fermentation temperature was decreased by 1C for every increase of 2.0% in acidity. The maximum productivity was 2.53g/l-hr and the acidity was 16.08% after 40 hours of acetic acid fermentation.

동결농축법을 이용한 고산도 복분자 농축식초 제조에 관한 연구 (A Study on High-acidity Rubus coreanus Concentrated Vinegar Production Using Freeze Concentration Method)

  • 최근까지 고산도 식초 제조를 위한 다양한 연구가 진행되어 왔으나 식초의 농축공정에 대한 연구는 거의 없었다. 본 연구에서는 고품질의 고산도 식초 제조를 위해 동결농축법의 도입 가능성을 알아보았다. 총산도가 서로 다른 3종류(7.53, 5.43, 및 3.72)의 복분자 발효식초를 동결 및 융해시켜 얻은 동결농축식초분획을 대상으로 총산도, 산도pH, 비중 및 포도당 농도를 측정하였다. 총산도, 비중 및 포도당 농도 모두 최초식초의 15%가 융해되었을 때 가장 높은 것으로 나타났다. 산도pH는 최초식초의 15%가 융해되었을 때 가장 낮은 것으로 나타났다. 누적산도 측정결과 최초식초의 20%가 융해되었을 때 9.32로 가장 높았는데 이는 최초식초보다 3.89높은 수치였다. 본 연구에서는 동결농축법을 이용하여 식초를 효과적으로 농축할 수 있을 뿐 만 아니라 융해비율 조정으로 원하는 총산도의 식초를 효과적으로 얻을 수 있음을 확인하였다. 그러나 고산도 농축식초 제조공정에 동결농축법의 도입여부를 판단하기 위해서는 유기산 및 아미노산 분석 등의 연구가 필요할 것으로 사료된다.

양파식초의 발효제조 및 제품의 생리활성 (Fermented Production of Onion Vinegar and Its Biological Activities)

  • Commercialized production of onion vinegar, which has biological activities formed through alcohol and acetic acid fermentation, requires standardization. The objective of this study was to determine optimal conditions of sugar contents ($11{\sim}15^{\circ}Brix$) and agitation rate (100~300 rpm) of fermenter in the alcohol-acetic fermentation for producing onion vinegar. The alcohol and total acidity contents increased, whereas contents of total sugars decreased during alcohol fermentation. Contents of alcohol of 13 and $15^{\circ}Brix$ reactants were about 8% in 36 hr and total acidities of all samples were below 0.2% in 60 hr. During acetic fermentation, total acidity increased with highest value at 9 days (3.2% in 100 rpm), 10 days (4.1% in 200 rpm) and 8 days (4.3% in 300 rpm), respectively. From these results, sugar contents ($13^{\circ}Brix$) were measured for alcohol fermentation and agitation rate (300 rpm) for fast fermentation method of vinegar. The contents of total phenols, flavonoids and quercetin in onion vinegar were 33.3 mg/100 g, 3.0 mg/100 g and 2.0 mg/100 g, respectively. Onion vinegar showed an antimicrobial activity against Bacillus cereus, Staphylococcus aureus, Listeria monocytogenes, Salmonella typhimurium, Escherichia coli and Enterobacter aerogenes. Antioxidant effect of onion vinegar was 26.23% in DPPH radical inhibition and 58.58% in superoxide dismutase like activity, respectively. Fibrinolytic activity was 1.51 plasmin unit/mL in onion vinegar. In conclusion, onion vinegar processed by alcohol and acetic fermentation had nutritional values and potential biological activities.

"증보산림경제"의 식초(食醴) 조리 가공에 관한 연구 (A Study on the Manufacture of Vinegar as Described in 'Jeungbosallimgyeongjae')

  • The text of 'Jeungbosallimgyeongjae' was reviewed to study the manufacture of vinegar and to investigate the changes made to the manufacturing process over time, other works such as 'Eumsigdimibang(1670s)', 'Sallimgyeongjae(1715)', 'Gyuhapchongseo(1815)', 'Juchan(1800년대경)' and 'Chosun-mussangsinsikyorijaebeop(1930)', 'Chosun-eumsikmandeneubeop(1946)' were compared. In both 'Eumsigdimibang', and 'Sallimgyeongjae' there are only three statements on vinegar manufacturing theory. For 'Sallimgyeongjae' these statesments are recorded specifically in the 'Chison' section. This book contains the following topics: the proper number of days for vinegar fermentation vinegar storage theory, how to maintain the vinegar in the pot, and nine vinegar manufacturing theories. 'Gyuhapchongseo' discusses the proper or improper number of days to ferment vinegar, and offers four general theories on vinegar manufacture. 'Ju-Chan' is a book of recipes from the latter era of the Chosun Dynasty. There are three statesments on 'yangchobang' recorded in this book. 'Chosun-mussangsinsikyorijaebeop' contains a general summary on vinegar that includes the theory of vinegar production, the right number of days for fermenting vinegar, clues for maintaining the vinegar in the pot, the method for making vinegar from spoiled alcohol, and finally, how to keep vinegar from molding The book also includes 11 statesments on the theory of vinegar manufacture. In 'Chosun-eumsikmandeneubeop', there are two statesments on vinegar manufacturing theory recorded. To study the use of vinegar in cooking as well as the change in manufacturing theories over time, we selected 'Eumsigdimibang', 'Sallimgyeongjae', 'Gyuhapchongseo', 'Chosun-mussangsinsikyorijaebeop' for a comparative analysis with the book 'Jeungbosallimgyeongje'. From this comparison of the texts we were able to learn the scientific nature of traditional foods. In addition, current vinegar manufacturing practices are changing the originally enjoyed flavors ghat are found with traditional vinegars. By the investigation of historic recipe book 'Ju-Chan,' and given the regular use of vinegar on cooking, we have found the means to reproduce the relished tastes of the past.

목초액을 이용한 산란노계의 육질 개선 연구 (Effects of Wood Vinegar Addition for Meat Quality Improvement of Old Layer)

  • 산란노계를 닭고기로서 자원화하여 농가의 수익과 단백질 공급원으로 활용하기 위한 목적으로, 생산성이 낮고 경제적 가치가 적은 산란노계 사료에 목초액을 첨가${\cdot}$급여하여 육질 개선 효과를 조사하기 위하여 계획하였다. 이사브라운 갈색종 240수를 배치하여 대조구에는 육계용 배합사료, 시험 1구에는 국산 목초액 $0.8\%$, 시험 2구에는 외국산 목초액 $0.4\%$를 첨가하여 급여하였다. 사료 섭취량은 대조구가 시험구보다 3g 정도 적었는데 목초액의 유기산이 사료의 소화에 영향을 준 것으로 사려된다. 사육성적의 차이는 국산과 외국산 목초액의 구성성분의 차이에 기인하며, 외국산 목초액의 첨가는 성페르몬과 성분이 유사한 목초액이 내분비 물질의 분비를 촉진한 결과 산란율이 증가하였고, 목초액의 첨가에 따라 조지방 함유량은 다리 고기가 가슴고기보다 많았으며 육색의 개선 효과도 있었다. 다리고기의 육질과 관능검사는 근섬유의 조직을 가늘게 하고 보습력을 증가시키는 외국산 목초액 첨가구에서 좋은 평가를 받았다.
