  • The objectives of this study were to develop a food-frequency questionnaire (FFQ) for Vietnamese female immigrants in Korea and to evaluate the validity of the FFQ. A total of 80 food items were selected in developing the FFQ according to consumption frequency, the contribution of energy and other nutrients, and the cooking methods based on one-day 24 hour recall (24HR) from 918 Vietnamese female immigrants between November 2006 and November 2007. The FFQ was validated by comparison with 24HR of 425 Vietnamese female immigrants between November 2008 and August 2009. The absolute nutrient intake calculated from the FFQ was higher than that estimated by 24HR for most nutrients. The correlation coefficients between 24HR and FFQ ranged from 0.10 (vitamin C) - 0.36 (energy) for crude intake, 0.05 (vitamin E) - 0.32 (calcium) for per 1000 kcal, and 0.08 (zinc) - 0.34 (calcium) for energy-adjusted, respectively. More than 70% of subjects were classified into the same or adjacent agreement groups for nutrients other than fiber, sodium, vitamin A, vitamin C, and vitamin E, while less than 10% of subjects were classified into complete disagreement groups. We conclude that the FFQ appears to be an acceptable tool for estimating nutrient intake and dietary patterns of Vietnamese female immigrants in Korea. Future studies to validate the FFQ using various biomarkers or other dietary assessment methods are needed.

  • Purpose: This study was conducted to survey female Vietnamese marriage immigrants' life stress and to analyze factors influencing their life stress and coping strategies. Methods: As descriptive correlation research, this study conducted a survey with 182 conveniently sampled subjects. Data were collected in June, 2015, and analyzed with descriptive statistics, t-test, ANOVA, Pearson's correlation coefficient, and stepwise multiple regression. Results: The subjects' life stress levels were above average, and significantly varied according to their health, and economic status. Stress coping strategies used by the subjects included assistance seeking, problem avoidance, wishful thinking, problem solving, and emotional alleviation in the order of frequency. As a result of the stepwise multiple regression, economic level, economic activity, and health status were found to be the most significant factors influencing the subjects' life stress, and these variables explained 45.1% of the variation in life stress. Conclusion: Female marriage immigrants were experiencing above-average life stress, and they were coping with it mainly in terms of assistance seeking or problem avoidance. In order to mitigate their stress, therefore, it is necessary to provide extended employment opportunities and economic activities for them so that they can cultivate their abilities in health management.

  • BACKGROUND/OBJECTIVES: This study was conducted to compare the overall changes in dietary intake and metabolic syndrome risk parameters in Vietnamese marriage-based female immigrants over time. SUBJECTS/METHODS: The subjects of this study were 581 Vietnamese marriage-based female immigrants, who were recruited from local clinical centers in Korea. Baseline data were collected from 2006-2011 and the follow-up data were collected from 2012-2014. Dietary food intake was assessed by a 1-day 24-hour recall method. RESULTS: Compared to the baseline, the mean body weight, body mass index, waist circumference, high density lipoprotein (HDL)-cholesterol, systolic blood pressure and diastolic blood pressure increased while the fasting blood sugar, triglycerides and low density lipoprotein-cholesterol decreased at follow-up. The total consumption of foods such as vegetables/fruits/seaweeds/mushrooms, oil and fat, and eggs decreased during the follow-up period, whereas the consumption of sugars, beverages and meats increased. Partial correlation between the rate of change [(Follow-up - Baseline) / Baseline ${\times}100$] in metabolic syndrome risk parameters and food intake after controlling for confounding factors showed that the waist circumference was positively correlated with either the total plant food intake (r = 0.1042, P = 0.0129) or the total food intake (r = 0.0880, P = 0.0359). The plasma levels of total cholesterol (r = -0.1918, P = 0.0289) and HDL-cholesterol (r = -0.1424, P = 0.0007) were negatively correlated with the percentage of total intake from plant food, and HDL-cholesterol levels were positively correlated with the intake of total animal food (r = 0.0980, P = 0.0217). The serum C-reactive protein levels were positively correlated with the total intake of animal food (r = 0.2374, P < 0.0001) or the percentage of total intake from animal food (r = 0.1346, P = 0.0016). CONCLUSIONS: These results suggest that the change rate of dietary intake such as total plant food or animal food is associated with the change rates of metabolic syndrome risk parameters.

  • Purpose: The purpose of this study was to develop a scale to evaluate parenting stress of international marriage immigrant women from Vietnam and the Philippines. Methods: The concept of parenting stress of international marriage immigrant women was analysed with a hybrid model. Data were collected from 273 international marriage immigrant women from Vietnam and the Philippines who were raising their children aged 1 to 6 years. These collected data were subjected to exploratory factor analysis, multitrait/multi-item matrix assessment, Pearson correlation coefficient analysis, and Cronbach's alpha internal consistency measurement. Results: The final instrument consisted of 28 items. The following six factors were extracted by exploratory factor analysis: 'insufficiency of parenting support system', 'role burden of mothers', 'maladjustment of children', 'confusion of parenting methods due to cultural differences', 'unskilled Korean communication', and 'ordinary difficulties'. Construct validity (factor analysis, convergent validity, and discriminant validity) and criterion-related validity were confirmed. Cronbach's ${\alpha}$ value of total items was .92(95% CI .91-.94). Cronbach's ${\alpha}$ of values for these factors ranged from .76 to .85. Conclusion: The parenting stress scale for international marriage immigrant women is a valid and reliable tool.

  • Purpose: This study aimed to investigate the experiential meaning of child-rearing for marriage immigrant women in Korea in the context of the coronavirus disease 2019 (COVID-19) pandemic. Methods: Using the hermeneutic descriptive phenomenology framework developed by Colaizzi, 10 marriage immigrant women rearing preschool and school-age children were invited through purposive and snowball sampling from two multicultural support centers in Korea. The participants were rearing one or two children, and their original nationalities were Vietnamese, Japanese, Cambodian, and Chinese. Individual in-depth, face-to-face, semi-structured interviews were conducted from September 1 to November 30, 2021. We extracted significant statements from the transcripts, transformed these into abstract formulations, and organized them into theme clusters and themes to authentically capture the essence of the participants' subjective experiences. Results: Four theme clusters with 14 themes were derived. The four theme clusters identified were "navigating child healthcare alone," "guilt for not providing a social experience," "worry about media-dependent parenting," and "feelings of incompleteness and exclusion." This study explored the perspectives of mothers raising children as marriage migrant women who experienced physical and emotional health crises due to the COVID-19 pandemic. Conclusion: The findings underscore that marriage immigrant women encountered heightened challenges in managing their children's health and well-being during the COVID-19 pandemic due to linguistic and cultural barriers limiting access to healthcare and information. Additionally, these women experienced considerable emotional stress from perceived inadequacies in providing a holistic social and developmental environment for their children under extensive social restrictions.

  • The Korean society has gone through a dramatic change in its population, with rapidly increasing number of multicultural families through international marriages since 1990s. This study investigated the differences between multicultural families and Korean families in three areas related to dietary behaviors: diet-related behaviors and perception, and food preferences. A cross-sectional analysis was performed in 500 Koreans from Korean families and 104 couples from the multicultural families with Vietnamese wives. More subjects from multicultural families grew up in the countryside, received less education and also had lower income than the subjects from Korean families. Multicultural families ate traditional Korean meals more often at home and dined out less often than Korean families. The multicultural families focused more attention on nutritional aspects of their diets than Korean families. The Vietnamese wives in multicultural families favored Vietnamese foods but they rarely ate those foods in Korea despite an easy accessibility to Vietnamese ingredients. In conclusion, the multicultural families had more traditional Korean dietary patterns than Korean families, which could have been influenced by their socioeconomic factors. Further research with a quantitative analysis is needed in future studies to understand the effect of dietary patterns on nutritional status and quality of life in multicultural and Korean families.

  • This study aimed to examine nutritional status and similarities of diets between Vietnamese female immigrants and Korean spouses and dietary changes of Vietnamese females after immigration. Subjects were 608 couples visiting 13 medical centers for the Cohort of Intermarried Women in Korea from November 2006 to November 2007. Anthropometric and biochemical measurements were obtained and dietary intakes were assessed using one-day 24-hour recall. Sixty-eight percent of wives answered there have been changes in their diets and consumptions of meats, fish, dairy products, vegetables, and fruits increased after immigration. Energy intakes of wives and spouses were 1491.7 kcal and 1788.8 kcal, respectively, showing most couples (80.1%) consumed less than the Korean estimated energy requirements. More than half of the couples were below the Korean estimated average requirements of zinc, vitamin $B_2$, and folate. The correlation coefficients between couples ranged 0.15-0.38 for unadjusted, 0.22-0.35 for per 1000 kcal, and 0.21-0.40 for energy-adjusted, respectively. The proportions of couples in the same quartiles of each nutrient intake and in the same answers of each question of Mini Dietary Assessment were about 30% across nutrients and around 50% across questions. The length of residence is related to similarities of nutrient intakes between couples: similarities decreased after 3 years of residence in Korea. In conclusion, nutritional intakes of inter-married couples were inadequate although wives reported that their dietary intakes increased after immigration. Inadequate nutrient intakes of wives were partly explained by similar diets between couples because these wives without enough adjustment to Korean culture were more likely to follow what their spouses ate. Findings from this study may be helpful to improve the nutritional status of inter-married couples and make policies and programs for them. A follow-up study should identify factors affecting inadequate nutritional status of intermarried couples and similarities of their diets.
