Educational attainment and differences in fruit and vegetable consumption among middle-aged adults in the Korean National Health and Nutrition Examination Survey IV

  • We investigated whether socioeconomic differences affect fruit and vegetable (FV) consumption with respect to total intake and intake of various FV subgroups. Our study included 6667 adults aged 40-64 years who completed a dietary survey in the fourth Korean NHANES (2007-2009). FV intake was estimated from 24-hour recalls and food frequency questionnaires. Differences in FV consumption related to educational attainment were analyzed according to different nutritional categories of FV. Both men and women in the low-education group had the lowest intake of total FV and total fruits, and women also had the lowest intake of total vegetables. Also lowest in this group was consumption of mushrooms and vegetables (excluding kimchi) among men, and cruciferous and allium vegetables (excluding Chinese cabbage and radish) among women, while kimchi consumption was the highest in this group. Additionally, an association between educational level and intake of citrus fruits was evident among men. Adults in the low-education group consumed less carotene-rich FV, red fruit and/or vegetables, and dark-green leafy vegetables, fewer total vegetable dishes, and fewer types of fruit than in other groups. Men in this group had the lowest intake of yellow/orange fruit and/or vegetables, and women consumed the least folate-rich FV. There is a clear association between educational attainment and FV intake with regard to total intake, and to specific nutrients, bioactive compounds, colors, and variety.

국내 즉석섭취 신선채소류 중 Listerial monocytogene위해수준 평가 (The Risk Estimation of Listeria monocytogenes for Ready-to-eats Fresh Cut-Vegetables)

  • 본 연구에서는 위해 수준이 상대적으로 클 것으로 추정되는 가열하지 않고 그대로 섭취하는 신선 채소류를 대상으로 이들 식품군에서 많은 발생하는 Listeria monocytogenes에 대한 국내 오염수준 모니터링 자료와 신선 채소류의 섭취량, L. monocytogenes의 양-반응 모델(dose-response models)을 바탕으로 위해 수준을 추정할 수 있는 모델을 개발하였고, 이를 바탕으로 위해 수준을 평가하였다. 개발된 모델을 @RISK를 이용하여 시뮬레이션 한 결과 신선 채소류의 섭취를 통한 L. monocytogenes에 의한 1인1일당 리스테리아증 발생가능성은 평균 $8.76{\times}10^{-16}$로, 연간 천만명당 발생환자수는 $3.23{\times}10^{-6}$로 추종되었다. 또한 본 연구에서 개발된 모델을 바탕으로 추후 더욱 발전된 미생물위해평가(MRA) 연구와 결과를 도출하기 위한 제언을 추가하였다.

국내에서 시판 중인 몇몇 채소류의 중금속에 관한 조사 연구 (Studies on the Heavy Metal Content in Some Vegetables Sales on Market in Korea)

  • This study was conducted to estimate the contents of heavy metals 'Hg, Cd, Pb, As, Zn, Cu, Cr, Mn' in some vegetables which were produced in Korea. The levels of heavy metals were determined using a mercury analyzer, an ICP(inductively coupled plasma spectrometer) and an AAS(atomic absorption spectrophotometer) after wet digestion. The values of heavy metals "mean(mini.~maxi.)" ppm(mg/kg) in some vegetables(raw of perilla leaf, chard, small water dropwort, water dropwort, kale, bud of aralia, pumpkin(round type) and pumpkin(long type) were as follows : Hg : 0.0021(0.0006~0.0054)mg/kg, Cd : 0.0035(ND*~0.0377)mg/kg, Pb : 0.0191(0.0023~0.0928)mg/kg, As : 0.0757(ND~0.5294)mg/kg, Zn : 2.6299(0.4478~6.8567)mg/kg, Cu : 1.0261(0.2046~8.9417)mg/kg, Cr : 0.1535 (0.0240~0.4982)mg/kg, Mn : 3.2476(0.3283~9.8280)mg/kg. This results showed that Mn was generally simillar to previous reports and Cd, Hg, Pb were lower than other reseaches, but As was little higher or Zn, Cu, Cr were higher than the levels of those reported contents in some vegetables on domestic supermarkets in Korea, Although tolerable limit of Hg and Cd is not in a regulation of WHO/FAO, these mean levels(Pb, As, Zn, Cu) are lower than recommended levels of WHO/FAO, Pb "0.1~2.0" mg/kg, As "1.0" mg/kg, Zn "5.0" mg/kg and Cu "0.1~50"mg/kg from vegetables in 'the tolerable contents of food' by the FAO/WHO, therefor some vegetables has set to evaluate their safeties.

"상한론(傷寒論)" 계지탕 복용법을 통한 복약원리 및 오신금기(五辛禁忌) 연구 (Studies on Principles of Taking Concoction and Contraindication against 5 Pungent Vegetables from Guizhi-tang in "Shanghanlun")

  • In order to analyze principles of taking concoction and make clear the origin of contraindication against five pungent vegetables, the regulations of Guizhitang prescription in "Shanghanlun" the twelfth article and "Wushierbingfang", "Wuweihandaiyijian", "Jinguiyaolue" were researched. Four principles of taking concoction were put in order; strengthening the effect of concoction by eating hot rice gruel and wearing bedclothes, preventing decline of drug effect by food regulations, optimization of elution and effect of material herbs by crushing, low heating, determination of administration time based on manifestations of drug effect by sweating and its aspect. These principles and methods of taking concoctions were developed from boiling to simple processing of material herbs, contraindication in the middle of taking concoction and perspiration by wearing bedclothes and eating hot rice gruel in order from the analysis of medical literatures. The contraindication against pungent vegetables were generalized in early Dong-Han dynasty already, and the five pungent vegetables were inferred as Allium tuberosum, Allium bakeri regel, spring onion, wild rocambole and garlic in medical context to the exclusion of religious idea. The reason of prohibition against five pungent vegetables could be interpreted as optimization of therapeutic effects by pharmacological control of pungent ingredients because the healthy qi damage and evil qi retention were resulted from destroying of harmonious ying and wei by overeating pungent vegetables during disease state. Conclusively the regulations of Guizhitang prescription referred to taking concoction in "Shanghanlun" fulfilled their functions to maximize pharmacological effects through various ways inside and outside and these reasonal principles of taking concoction has been influenced over the traditional medical practice deeply.

국내에서 시판 중인 근채류의 중금속에 관한 조사 연구 (A Study on the Heavy Metal Contents of Root Vegetables on the Retail Markets in Korea)

  • This study was conducted to estimate the contents of heavy metals 'mercury(Hg), cadmium(Cd), lead(Pb), arsenic(As), zinc(Zn), copper(Cu), chrome(Cr) and manganese(Mn)' in root vegetables which were produced in Korea. The levels of heavy metals were determined using a mercury analyzer, an ICP(inductively coupled plasma spectrometer) and an AAS(atomic absorption spectrophotometer) after wet digestion. The values of heavy metals 'mean(minimum-maximum)' mg/kg(ppm) in root vegetables (radish, turnip, carrot, ginger, edible burdock, taro, Chinese yam, east indian lotus) were as follows ; Hg : 0.0019(0.0002${\~}$0.0062), Cd : 0.0088(ND${\~}$0.0402), Pb : 0.021(ND${\~}$0.1070), As : 0.0401(ND${\~}$0.1732), Zn : 1.865(0.4186${\~}$6.9319), Cu : 0.648 (0.1826${\~}$4.0172), Cr : 0.121(0.0132${\~}$1.2030), and Mn : 2.730(0.0477${\~}$10.0468) mg/kg. These results showed that Hg were generally similar to and Cd was lower but Ph, As, Zn, Co, Mn were little higher than the levels of those reported contents in root vegetables on retail markets in Korea. Although the tolerable limit of Cd and Hg is not set in a regulation of WHO/FAO, the tested mean levels(Pb, As, Zn, Cu) were lower than the regulated ones of WHO/FAO, Pb '0.1-2.0', As '1.0', Zn '5.0', and Cu 0.1${\~}$50 mg/kg from vegetables. Therefore, root vegetables sold in the retail markets were evaluated as safe in terns of the heavy metal contents.

유기농 엽경채류의 품질 특성 및 항산화 활성 (Quality Characteristics and Antioxidant Activities of the Organic Leaf and Stem Vegetables)

  • 유기 및 관행재배에 따른 엽경채류의 이화학적 품질 및 항산화 활성을 비교하고자 깻잎, 상추, 브로콜리 및 양배추 등을 이용하여 무게, 길이, 수분, 표면색, DPPH 및 ABTS radical 소거능을 분석하였다. 무게, 길이의 경우, 전반적으로 관행재배한 엽경채류의 값이 높았으며, 수분함량의 경우 유기 및 관행재배 간 비슷한 값을 나타내었고, 재배조건에 따른 유의적 차이는 없었다. 표면색에 있어서 깻잎과 상추의 a 값을 제외한 모든 시료에서 유기 및 관행재배 간 L, a, b 값의 유의적인 차이를 보였다. 항산화 활성의 경우, 전반적으로 유기재배한 시료의 DPPH 및 ABTS radical 소거능이 관행재배한 시료보다 우수하였으며, 양배추의 경우 두 가지 항산화 활성에서 유의적 차이를 보이지 않았다. 본 연구에서는 무게, 길이 등의 외적 품질에 대해서 관행재배한 엽경채류의 값이 높았고, 항산화 활성에 대해서는 유기재배한 엽경채류의 값이 높았으나, 유기 및 관행재배에 따른 내외적 품질비교를 위해서 더 많은 분석이 추가로 진행되어야 할 필요가 있다고 사료된다.

우리나라 유기농 채소내 질산염 함량의 경시적 추이 (Nitrate Contents in Vegetables Cultivated by Organic Farming in Korea)

  • After the release of facts that the high nitrate contents in vegetables by Korean organic farming, organic farmers were recommended by Korean Organic Farmer Association to apply 20t/ha compost while they applied before as much as they could, sometimes even more than 100t/ha. This study was aimed to check the safety of Korean organic product in terms of nitrate content. Current nitrate content in leaf and root vegetables by 3 different farming systems(organic farming, conventional farming, greenhouse farming) were monitored and furthermore it was compared with previously published another data in Korea to find out any changes among the monitored years(1993-1999). Current nitrate content in chinese cabbage, lettuce and kale became less compare to those of the beginning of monitoring, and especially those cultivated organic farming got the lowest value while previous organic vegetables at beginning of 90's showed the higher value than those cultivated in greenhouse. This decrease in organic vegetables was affected by less application rate of organic fertilizer than before at 20t/ha. But the nitrate level by organic farming was still higher compare to those cultivated by conventional farming in open field, since currently monitored organic vegetables were cultivated basically in greenhouse condition. It shows the organic farmer the necessity of transfer their farming site and condition from greenhouse to open field in order to decrease of its high level of nitrate caused long-term application and slow release characteristics of organic fertilizer. It was concluded the adoption of soil nitrate test to recommend a organic farmer the exact application rate for need of crop growth. Additionally the mechanism of lower nitrate accumulation in rice and fruit vegetables were also discussed in the paper.

새싹채소 및 쌈채소의 선호도 및 소비실태 (The Consumption Status and Preference for Sprouts and Leafy Vegetables)

  • 본 연구는 새싹 및 쌈채소의 소비증진 및 발전방향을 확립하기 위한 기초자료를 제공하고자 하는 목적으로 새싹 및 쌈채소의 선호도와 소비실태에 대해 서울 및 경기도를 중심으로 20세 이상 성인 남녀 823명을 대상으로 조사되었다. 새싹채소의 선호도는 남성($3.75{\pm}0.96$)이 여성($3.64{\pm}0.84$)보다 높은 반면 쌈채소는 여성($4.06{\pm}0.74$)이 남성($3.88{\pm}0.90$)보다 선호도가 높았다. 연령별로는 건강과 연령을 중시하는 40대 이상이 높게 나타났다(p<0.01). 구입하는 주된 목적은 영양적 가치를 높이기 위함이 가장 많았다. 쌈채소(82.7%)의 월 1회 이상 구입비율이 새싹채소(57.1%) 보다 높았다. 주요 구입장소는 대형할인마트가 가장 많았으며, 연령별로는 20대가 동네채소가게에서의 구입비율이 높은 반면 연령이 높을수록 재래시장에서의 구입비율이 높게 나타났다. 구입장소를 이용하는 이유로는 이용의 편리성이 가장 높게 나타났다. 새싹 및 쌈채소 모두 구입시 신선도와 가격을 가장 고려하는 것으로 나타났다. 새싹채소는 혼합소포장 형태, 쌈채소의 경우 소포장보다는 계근의 형태를 더 선호하는 것으로 나타났다. 새싹 및 쌈채소의 구입빈도는 선호도, 개선필요성 및 구입의향와 상관관계가 있음을 보여주었다. 향후 고품질의 새싹 및 쌈채소를 위한 개선사항으로는 영양 및 기능성이 가장 높았다. 따라서 새싹 및 쌈채소의 소비확대를 위해서는 품목 다양화와 품질향상, 식품안전성이 요구된다.

유기농 야채의 무기물 및 비타민 함량 (Contents of Minerals and Vitamins in Organic Vegetables)

  • 강원도 홍천 유기농 재배단지 내에서 재배한 5종의 유기농 야채 즉, 케일, 신선초, 셀러리, 상추 및 파와 가락동 시장에서 구입한 일반재배 야채를 시료로 하여 일반성분 함량, 무기물, 비타민 및 chlorophyll 함량을 각각 측정하여 유기농 야채 판별을 위한 기초자료로 활용하였다. 일반성분 함량은 전체적으로 유기농 야채의 조단백, 조지방 함량이 일반야채 보다 높아 이는 야채의 외관에도 직접적인 영향을 미치는 것으로 판단되며, 상대적으로 녹색색상과 함께 반짝이는 윤기가 강한 특성을 보였다. 그러나 수분함량의 차이에 따른 현상의 하나로 일반재배 야채에 비하여유기농 야채는 약간 건조된 듯한 외관을 나타내어 상대적으로 연약한 것 같이 관찰되기도 하였다. 나트륨, 칼륨, 칼슘, 인 및 철의 5종 무기물과 함께 일부 비타민 성분을 을 측정해 본 결과 개별 성분은 물론 무기물 및 비타민 총량에서도 유기농 야채에서의 함량이 상대적으로 일반재배 야채 보다 높았으며, 무기물의 경우 케일은 유기농 재배품은 811.8 mg/100g으로 일반 재배품의 688.1mg/100g에 비하여 약 17.98$\%$ 높은 함량을 나타내었다. 신선초, 셀러리에서는 각각 447.9, 486.5 mg/100g 및 399.7, 405.3 mg/100g로 측정되어 12.06, 8.62$\%$ 높게 측정되었고, 상추, 파는 각각 368.6, 320.9 mg/100g 및 320.9, 333.1 mg/100g로 14.86, 19.93$\%$ 높게 측정되었다. 이러한 현상은 녹색 채소에서 주요 색소성분인chlorophyll 함량을 측정한 결과에서도 거의 동일한 경향을 나타내었다.

Prevalence and Quantification of Vibrio parahaemolyticus in Raw Salad Vegetables at Retail Level

  • The purpose of this study was to investigate the biosafety of Vibrio parahaemolyticus in raw salad vegetables at wet markets and supermarkets in Malaysia. A combination of the most probable number-polymerase chain reaction (MPN-PCR) method was applied to detect the presence of V. parahaemolyticus and to enumerate their density in the food samples. The study analyzed 276 samples of common vegetables eaten raw in Malaysia (Wild cosmos=8; Japanese parsley=21; Cabbage=30; Lettuce=16; Indian pennywort=17; Carrot=31; Sweet potato=29; Tomato=38; Cucumber=28; Four-winged bean=26; Long bean=32). The samples were purchased from two supermarkets (A and B) and two wet markets (C and D). The occurrence of V. parahaemolyticus detected was 20.65%, with a higher frequency of V. parahaemolyticus in vegetables obtained from wet markets (Wet market C=27.27%; Wet Market D=32.05%) compared with supermarkets (Supermarket A=1.64%; Supermarket B=16.67%). V. parahaemolyticus was most prevalent in Indian pennywort (41.18%). The density of V. parahaemolyticus in all the samples ranged from <3 up to >2,400 MPN/g, mostly <3 MPN/g concentration. Raw vegetables from wet markets contained higher levels of V. parahaemolyticus compared with supermarkets. Although V. parahaemolyticus was present in raw vegetables, its numbers were low. The results suggest that raw vegetables act as a transmission route for V. parahaemolyticus. This study will be the first biosafety assessment of V. parahaemolyticus in raw vegetables in Malaysia.
