Analysis of the Response of School Food Service Operations to the COVID-19 Pandemic in 2020-2021 (2020~2021년 코로나바이러스감염증-19 대응을 위한 학교급식 운영 현황)

  • This study aimed to examine the operations of school food services to prevent the spread of coronavirus disease 2019 (COVID-19) in schools nationwide. The survey data on school food service operations targeting nutrition teachers and nutritionists at 1,023 schools in 2020 and 1,177 schools in 2021 were used. The year 2021 saw an increase compared to 2020 in the following: 'average days to be served with meals for a year (144.5 vs. 184.7)', 'provided meals to all students (92.3% vs. 96.6%)', 'utilization of additional staff for foodservice assistance (33.4% vs. 38.8%)', 'installation of partitions (61.2% vs. 83.8%)', 'provision of general diet (96.1% vs. 99.1%)', and 'use of kitchen utensils (91.3% vs. 95.1%)', 'use of cafeteria water cup (9.9% vs. 31.0%)' and 'use of drinking water in school (46.8% vs. 52.1%)'. Compared to 2020, in 2021, it was confirmed that the school food service operations stabilized due to the increase in the normal school attendance rate and that systems were in place for operations during the COVID-19 pandemic. In the future, it will be necessary to develop manuals and special recipes necessary for responding to infectious diseases, and to operate a manpower pool that can quickly find replacement personnel if required.

Integration of Express·Intercity Bus Terminal and Highway Service Area: A Study of the Estimated Tangible Value Addition (고속·시외버스 터미널 및 고속도로 휴게소의 통폐합 운영에 따른 편익가치 산정에 대한 연구)

  • PURPOSES : This study intends to estimate the tangible benefits derived from the integration of operations of an Express Intercity Bus Terminal and a Highway Service Area. METHODS: For the study, a highway service area was chosen to function as a bus terminal, integrating its services with that of a nearby bus terminal plagued by operating losses. The exercise also helped improve mobility owing to the introduction of local buses between the terminals and utilization of the existing infrastructure such as rest areas. Thus, a terminal that was not being utilized for its intended functionality was integrated with an existing facility to improve the utilization of both and subsequently aid local development. The impact of the exercise was then measured by evaluating the variation in utilization efficiency, operating costs, travel time between two regions (Seoul-Jeomchon and Seoul-Geumsan), and the social costs before and after the integration of the two facilities. RESULTS :The impact of the integration was an increase in utilization efficiency, a decrease in operating cost, a decrease in travel time, and a decrease in social cost in both the regions. The benefits of improved utilization and cost saving can be passed on to the citizens in the form of discounts. A local power generation facility will eventually replace the bus terminal, which can revitalize the local economy. CONCLUSIONS :The integration of the highway service area with the bus terminal is expected to have a win-win effect on the passengers as well as the operators. The study also proposes a sustainable strategic plan for existing terminals and rest areas to implement a method to compete with KTX transportation.

The office productivity increasing strategy through the Accounting Information System (회계정보시스템을 이용한 사무생산성 제고방안)

  • Based upon previous research, factors affecting office productivity with the Accounting Information Systems(AIS) were suggested, and the relationships between the factors and the office productivity with the AIS were hypothesized. The empirical results suggested that there are significant positive relationships between the factors such as the user participation, level of AIS utilization, internal AIS development and AIS technical sophistication and the office productivity with the AIS. According to the results, the office productivity increasing strategy with the AIS were proposed.

Development of Bevel Gear by Powder Forging Process (분말단조에 의한 베벨기어의 성형 기술 연구)

  • The powder forging process is an attractive manufacturing route for bevel gears. It offers beneficial material utilization and the minimization of finishing operations over that of conventional hot forging. The paper describes the process conditions for the powder forging of bevel gear, for example, powder alloy design, preform design, deformation of sintered preform, forging processes. The characteristics of prototype gear are investigated with microstructure, the density distribution, surface roughness of tooth, bending strength test of tooth, etc. The results of the bending strength test may prove the mechanical properties of powder forged gear.

  • This paper constitutes the simulator of the serial production line using Extended Petri Nets. We analyze each operations and effect of machine down, calculating the performance measures for improving the capability of manufacturing system. The performance measures are system efficiency, average utilization of machines, average buffer level, and so on. We intend to present the information of the operation states and various problem occurring in the systems.

  • Over the past 20 years, Korea's overall import and export cargo volume has increased at an average annual rate of approximately 5.3%. About 99% of the cargo is still being transported by sea. Due to recent increases in maritime cargo volume, congestion in maritime logistics has become challenging due to factors such as the COVID-19 pandemic and conflicts. Continuous monitoring of ports has become crucial. Various ground observation systems and Automatic Identification System (AIS) data have been utilized for monitoring ports and conducting numerous preliminary studies for the efficient operation of container terminals and cargo volume prediction. However, small and developing countries' ports face difficulties in monitoring due to environmental issues and aging infrastructure compared to large ports. Recently, with the increasing utility of artificial satellites, preliminary studies have been conducted using satellite imagery for continuous maritime cargo data collection and establishing ocean monitoring systems in vast and hard-to-reach areas. This study aims to visually detect ships docked at berths in the Busan New Port using high-resolution satellite imagery and quantitatively evaluate berth utilization rates. By utilizing high-resolution satellite imagery from Compact Advanced Satellite 500-1 (CAS500-1), Korea Multi-Purpose satellite-3 (KOMPSAT-3), PlanetScope, and Sentinel-2A, ships docked within the port berths were visually detected. The berth utilization rate was calculated using the total number of ships that could be docked at the berths. The results showed variations in berth utilization rates on June 2, 2022, with values of 0.67, 0.7, and 0.59, indicating fluctuations based on the time of satellite image capture. On June 3, 2022, the value remained at 0.7, signifying a consistent berth utilization rate despite changes in ship types. A higher berth utilization rate indicates active operations at the berth. This information can assist in basic planning for new ship operation schedules, as congested berths can lead to longer waiting times for ships in anchorages, potentially resulting in increased freight rates. The duration of operations at berths can vary from several hours to several days. The results of calculating changes in ships at berths based on differences in satellite image capture times, even with a time difference of 4 minutes and 49 seconds, demonstrated variations in ship presence. With short observation intervals and the utilization of high-resolution satellite imagery, continuous monitoring within ports can be achieved. Additionally, utilizing satellite imagery to monitor changes in ships at berths in minute increments could prove useful for small and developing country ports where harbor management is not well-established, offering valuable insights and solutions.

  • To enhance the effectiveness of the FMS (flexible manufacturing system), it is necessary for the manufacturing control system to be upgraded by integrating the cyber and the physical manufacturing systems. Using the CPPS (Cyber-Physical Production System) concept, this study proposes a 4-stage vertical integration and control framework for an aircraft parts manufacturing plant. In the proposed framework, the process controller prepares the operations schedule for processing work orders generated from the APS (advanced planning & scheduling) system. The scheduled operations and the related control commands are assigned to equipments by the dispatcher of the line controller. The line monitor is responsible for monitoring the overall status of the FMS including work orders and equipments. Finally the process monitor uses the simulation model to check the performance of the production plan using real time plant status data. The W-FMCS (Wing rib-Flexible Manufacturing Control & Simulation) are developed to implement the proposed 4-stage CPPS based FMS control architecture. The effectiveness of the proposed control architecture is examined by the real plant's operational data such as utilization and throughput. The performance improvement examined shows the usefulness of the framework in managing the smart factory's operation by providing a practical approach to integrate cyber and physical production systems.

  • As the core technology of the 4th Industrial Revolution is applied to drone, the potential for growth in the field of unmanned aerial vehicles is very large, and the utilization of civilian & military fields in the domestic & foreign is increasing rapidly. Because application areas of drone in the civilian field is various, it is excellent in terms of cost effectiveness and high value in utilization when it is used for military operation support mission. Especially, in the case of the Air Force, it is expected that military usage effectiveness will be high if drone replaces various air operations support missions such as aircraft inspection, supply of military supplies, base security. We find out the missions that can utilize drones for military operations support and propose the recommendation and data management plan accordingly. We recommend the most suitable drones and equipment that perform similar missions in the private sector and propose the data modeling of relational database.

Developments and Trends in Fisheries Processing: Value-Added Product Development and Total Resource Utilization

  • Changing concepts in fishery science increasingly are recognizing depletion of traditional stocks, utilization of alternate(non-traditional) species, demand for high quality products, and a total resource utilization approach. Innovative practices are occurring in fisheries processing wherein solid and liquid discharges are no longer treated as 'waste,' but rather as valuable feedstocks for recovery of a variety of value-added ('value enhanced') by-products. Among these are protein hydrolysates, soluble proteins and amino acids, proteolytic enzymes, flavor and flavor extracts, pigments, and biopolymers such as chitosan. Properties and applications of this deacetylated derivative of chitin are noted. Crustacean processing by-products are discussed in terms of their serving as materials for generation of natural flavors and flavor extracts, and products such as fish sauces using contemporary enzymatic techniques. Various food and feed applications of fisheries processing by-products are illustrated with increased usage seen in formulated diets for an expanding aquaculture market. Examples are given of aquaculture becoming increasingly significant in global fisheries resource projections. Critical issues in the international seafood industry Include those of seafood quality, processing quality assurance (HACCP), and recognition of the nutritional and health-related properties of fisheries products. A variety of current seafood processing research is discussed, including that of alternate fish species for surimi manufacture and formulation of value-added seafood products from crawfish and blue crab processing operations. Increasing emphasis is being placed on international aspects of global fisheries and the role of aquaculture in such considerations. Coupled with the need for the aquatic food industry to develop innovative seafood products for the 21st century is that of total resource utilization. Contemporary approaches in seafood processing recognize the need to discard the traditional concept of processing 'waste' and adapt a more realistic, and economically sound, approach of usable by-products for food and feed application. For example, in a period of declining natural fishery resources it is no longer feasible to discard fish frames following fillet removal when a significant amount of residual valuable flesh is present that can be readily recovered and properly utilized in a variety of mince-based formulated seafood products.
