전통음식에 대한 의식과 식생활행동에 관한 조사연구 - 서울 및 경기도 일부지역 주부들을 중심으로 - (The Study for Consciousness, Dietary Life Behaviors on Korean Traditional Food)

  • Generally, the culture of dietary life in a country is closely related to the heritage of racial culture, and it is very important to inherit and develop the culture of the traditional dietary life. This research is to investigate consciousness and behaviors of dietary life using a questionnaire survey for 521 housewives living in Seoul and Kyonggido. The data was analyzed with frequency, percentage, T-test, $X^2$ (Chi-square)-test, dispersion analysis, Pearson's correlation and hierarchical multiple-regression analysis. The results of the survey are summarized as follows; 1. Consciousness of Traditional Foods. They thought that traditional foods were Sinsollo, sorts of beverage, Dduk (Korean cake), Kim-chi, Hankwa (Korean cookies), and Kujolpan, and that traditional foods were proud for its various tastes. But they thought the cuisine of the traditional food is very complicated, accordingly the frequency of traditional food was decreased. Therefore they thought that its tastes was important to develop and spread traditional foods. 2. Dietary Life Behaviors for Traditional Food. They take traditional foods on big holidays and religious service days. It is their mother who taught them the traditional cooking method. Most ftequently used cooking method is boiling. They gave their children a traditional snack such as 'Dduk (Korean cake), noodles, and fried food. Frequency of taking beverage, Hankwa (Korean cookies), Juk (guel) and Dduk (Korean cake) have been decreased. 3. The Correlation of General Environment and Consciousness, Knowledge, Dietary Life Behaviors of Traditional food. The older they are, the more eager to teach traditional food cooking, to preserve the traditional table setting, to give their children traditional snack and the more traditional dietary life behaviors are.

재래식 조선간장과 시판양조간장의 소비실태조사 및 관능적 특성 연구 (Consumption Pattern and Sensory Evaluation of Korean Traditional Soy Sauce and Commercial Soy sauce)

  • The suwey on the consumption pattern of Korean traditional soy sauce and commercial soy sauce was performed. 55.8 percentage of surveyed house makes Korean traditional soy sauce domestically, But its frequency in actual use is lower than commercial soy sauce. The use of Korean traditional soy sauce and commercial soy sauce was different depending on the kinds of food. Korean traditional soy sauce is mainly used for kinds of soup, and commercial soy sauce is predominantly used for hard-boiled foods and Chapchae. Korean traditional soy sauce is known as our typical fermented food and has special flavor. But its main factors of special flavor were not well established yet. So the authors have investigated the main components of Korean traditional soy sauce for its typical taste. Five samples o$.$ere selected from'Kyung-ln'area. The sensory charac teristics of Korean traditional soy sauce itself were very different with that of cooked food added with Korean traditional soy sauce. The hard-boiled mackerel cooked with commercial soy sauce was prefered than Korean traditional soy sauce. And soups and seasoned vegetables cooked with Korean traditional soy sauce were profered. By stepwiEe regression analysis and correlation analysis, sensory overall acceptability mainly depends on specific gravity, salt content and amino nitrogen content (R'=0.94). And total nitrogen content was highly coirelated with overall acceptability (r=0.91).

웰빙 트랜드가 한과류 선택 속성에 미치는 영향에 관한 연구 (A Study on Effects of the Well-being Trend on Korean Traditional Confectionary Selection)

  • Korean Traditional Confectionary is a part of our traditional culture taking a great part in our food culture for a while. However, it is now barely maintaining its name. In this research, a new consumption trend 'Well-being' is adopted to suggest the ways to develop the Korean Traditional Confectionary industry. This research intends to find out what effects the 'Well-being' trend, which originated from interest in health, have on Korean Traditional Confectionary selection. A survey includes the questions about the Well-being trend, selection and uses of Korean Traditional Confectionary, and demographic data. This research conducted analysis on 249 people who have used Korean Traditional Confectionary in Busan and Kyeongnam Province to find out effects of the Well-being trend on Korean Traditional Confectionary selection. This empirical study showed that the Well-being trend has some effects on Korean Traditional Confectionary selection while it has the greatest effects on healthy properties and commercial values of Korean Traditional Confectionary.

서울.경기 지역 대학생들의 세시음식에 대한 인지도와 이용에 관한 연구 (A Survey on the Perception and Preparation of Traditional Korean Festival Foods in Seoul and the Kyonggi Area)

  • This study was conducted to analyze the perception and observance of traditional Korean holidays and preparation of traditional Korean holiday foods among university students in Seoul and the Gyeonggi area in order to further develop modernize and globalize the foods. The analysis revealed that the traditional Korean holidays with the highest perception and observance was Seollal, followed by Chuseok, Jeongwaldaeboreum, Dongji, Dano and Sambok. Traditional Korean festival foods such as Ddukgook, Mandoogook, Sikhye, Injeolmi, Yookgeijang, Kalgooksoo, Songpyon, Galbizzim, Soondubu and Samgyetang also scored high in perception and preparation. Schools were the most frequent route of introduction to Korean traditional festival foods at a rate of 41.6%. Special educational institutions and schools were also high at introduction rates of 38.3% and 19.5% respectively. The results of this study show that traditional Korean festival foods need to be further developed, as the succession of traditional food culture was the highest among 61.4% and 41.3% of the respondents who answered that the 'standardization of flavor, nutrition and cookery' is the most necessary action to popularize seasonal specialty foods.

충남지역 고학년 초등학생 학부모의 전통음식에 대한 인식과 선호도 - 떡, 한과, 전통음료를 중심으로 - (The Upper Grade Elementary Student's Parents' Awareness and Preference of Korean Traditional Foods in ChungNam Area - Focusing on Tteok, Hankwa, Korean traditional drink -)

  • In terms of awareness of Korean traditional food, elementary students are most affected by their parents. The objective of this study was to analyze upper grade elementary students' parental awareness and preference of Korean traditional foods in the Chungnam Area. In a survey of 126 parents, 58% of subjects were interested in Korean traditional foods, but there was no significant difference according to age. About 87% of parents thought that inheritance of knowledge on Korean traditional foods was needed. The reasons for inheritance of knowledge on Korean traditional foods were 'To stick to style of Korean traditional foods' (68.2%), 'Palatable' (21.8%), 'Education for children' (6.4%), and 'Beautiful and fine custom' (3.6%). The awareness point of 'Korean traditional foods are easy for cooking' increased with increasing age (p<0.01). In all age groups, subjects highly recognized that Korean traditional foods are good for health. There were significant correlations between overall preferences for Tteok and Hankwa (r=0.351, p=0.001), Hankwa and Korean traditional drink (r=0.374, p=0.001), and Korean traditional drink and Tteok (r=0.406, p=0.001). As a result, preferences for other items also increased when preference for one of the three traditional foods increased. Therefore, education on Korean traditional foods is necessary in order to satisfy parental preferences.

의류와 패션잡화에 사용되는 한국 전통 소재 속성에 대한 중요도와 선호도 연구 (A study on the importance and preference of the attributes of Korean traditional textile used in clothing and fashion accessories)

  • This study researched consumers' awareness regarding the commercialization of Korean traditional culture through various channels or products. A survey was administered to consumers in the Gyeonggi region(n=322) from June to August 2012. Differences in the importance placed on, and preferences for, attributes of Korean traditional fashion textile and Korean traditional patterns were analyzed according to consumer characteristics. Research results showed that the factors allowing recognition of Korean traditional textile in clothing and fashion accessories were color, pattern, and textile type, in the respective order. Overall, consumers generally perceived higher importance in using the factors of Korean traditional textile in clothing than in fashion accessories. Preferences for Korean traditional patterns differed according to the type of fashion item, i.e., clothing or fashion accessories, and also according to the age and gender of the consumer. Women generally showed a tendency to place higher value on Korean traditional patterns than men. The degree of preference was higher, as well. However, only a minor difference was seen according to pattern type. Women showed a higher preference for plant patterns, literal patterns, and geometric patterns compared with men. The preferred type of traditional pattern was also different according to age. Consumers in their 20s and 40s presented a higher preference for Korean traditional colors when compared with the 30s group. On the other hand, the preference for Korean traditional patterns was higher among consumers in their 40s than those in their 20s or 30s. The results of this study show that the awareness of consumers regarding Korean traditional textile reflected in clothing and fashion accessories differs according to gender or age. Thus, this implies the need to consider the differences in perceived importance and preferences among target consumer groups to develop various fashion products that use Korean traditional fashion textile.

  • Traditional Knowledge[TK] is a concept which summings up all the knowledge of traditionally inherited, includes traditional medicine, therapy, food and environments. Such traditional knowledge has been perished and neglected through industrial development. We, Korean Institute of Oriental Medicine, promotes digitalization of this traditional knowledge to support and maximize its application, principally in Traditional korean medicine. We can get opportunity of reorganize the traditional knowledge to more practical and available form by this project. And also we introduce briefly its meaning and worth, and seek for application to the study of medical history.

서울지역 주부들의 세시음식에 대한 인지도 조사 (A Survey on the Perception of Housewives in Seoul Area toward Korean Traditional Holiday Foods)

  • This study was to investigate the perception of Korean traditional festival/holiday foods among the housewives in their 20's, 30's, 40's, and 50's residing in Seoul. Out of 350 questionnaires, 282 respondents were results The results were summarized as fellows: The most familial traditional holiday was Seollal on the New Year's Day(100%), and the most favored foods for respective traditional holidays are as fellows: tteokguk, rice paste soup, (98.23%) for Seollal on the New Year's Day; ogokbap, cooked rice mixed with five cereals (98.23%) for Daeboreum on the New Moon's Day of January 15; neuttitteok, zelkova ricecake, (20.64%) for Chopail on Buddha's Birthday; charyunbyeong cake (20.21%) for Dano on May 5; gyesamttang, chicken broth with ginseng, (89.72%) for Sambok, the hottest period of summer; songpyeon, pine cake, (96.45%) for Chuseok on August Moon Festival; patjuk, redbean stew, (98.94%) for Dongji on the winter solstice; and mandu, bun, (16.37%) for Seotdalgeumeum on the year-end day. Most of the respondents said that they ate traditional festival foods in compliance with the traditional manners and customs and that they made such traditional foods at home. They added that they wanted to team more about various recipes of the traditional foods and pointed out that traditional holiday foods had to be modernized in some way.

서울지역 주부들의 한과에 대한 인지도 조사 (A Survey on the Korea Traditional Cookies of Housewives in Seoul Area)

  • A self completed survey of 250 housewivies living in the Seoul. The aim of this study was to investigate the perceptions and preferences of 20's, 50s housewives to Korean traditional cookies. The result is as follows. As to the preference of Korean traditional cookies, 86.0% answered they liked it. The frequency rate or eating Korean traditional cookies showed that 2 times a year reached the highest 45.6%. They usually purchase Korean cookies on the market rather than making them by themselves. The study showed that 50s housewives preferred Korean cookies are yakwa(74.3%), maejackwa(35.7%) and kangjung(34.3%) otherwise 20s housewives preferred Korean traditional cookies are yakwa(79.4%), hanging(60.0%) and yeat gangiung(39.4%) This survey study may contribute to the improvement of Korean traditional cookies.

한국전통음식의 계승·발전을 위한 초등학생의 인지도, 기호도와 개선 요구도 (Recognition, Preference and Improvement Requirement of Traditional Korean Food of Elementary School Students in Seoul)

  • This study focused the recognition and preference of Korean traditional food of elementary school students, in order to make effective educational materials about Korean traditional foods for the elementary school students. According to the responses of 356 elementary school students participating in this research, they understood the concept of traditional Korean food and recognized positively, but did not have much interest. However, the more they liked Korean food, the higher their interest in Korean traditional foods and the higher utilization rates of Korean traditional foods. Most elementary school students enjoyed Korean traditional food occasionally, especially soup, jjigae, tang and jeongol. Elementary school students suggested that complicated recipes should be improved for the succession of Korean traditional foods and that the class for cooking traditional foods in schools should be expanded.
