Sensory and Quality Evaluation of Aseptic-Packaged Cooked Rice by Cultivar (벼 품종에 따른 무균포장밥의 식미특성 및 품질 변이)

  • We carried out this experiment on the purpose to investigate the quality properties of aseptic-packaged cooked rice by cultivars in 2006. Brown rice was milled for white rice to 89.6% weight of it. Based on cluster analysis of acceptance of sensory evaluation, eleven rice cultivars of 29 cultivars had superior palatability. Whiteness(r=0.42, p<5%), lightness(r=0.39, p<5%), Toyo value(r=0.35, p<10%), and moisture content(r=0.33, p<10%) of milled rice were correlated positively with acceptability. Protein content(r=-0.40, p<5%), expansion rate(r=-0.68, p<1%) and water absorption rate(r=-0.42, p<5%) of milled rice, and yellowness(r=-0.45, p<5%) of aseptic-packaged cooked rice were negatively correlated. In sensory evaluation, correlation coefficients of taste and texture with acceptability were higher than those of appearance and flavor. During storage, hardness and cohesiveness of aseptic-packaged cooked rice before reheating were increased and decreased, but those after reheating had no difference based on storage period and cultivar. On the contrary, whiteness of reheated aseptic-packaged cooked rice with no distinct differences before reheating was decreased during storage. There were no significant differences of texture property, color characteristics and moisture contents by cultivar during storage.

Activation Mechanism of Protease in the Germination of Mulberry Seeds (뽕나무 종자 발아시의 Protease 발현기구)

  • The activity change of mulberry seeds protease was compared during germination for 5 days at 28$^{\circ}C$ in the dark place after daily hormone injection of different concentration. The protease from germinated mulberry seeds for 4 days was partially purified and the enzyme characteristics was investigated. The protease activity of mulberry seeds treated by hormone was highest with 10 $\mu$m GA3 followed by 10 $\mu$M zeatin and 10 $\mu$M kinetin. The protease activity of mulberry seeds was increased by 14% with 10ml agar culture that control at 4th day of germination. The protease from mulberry seeds was purified 313 fold by DEAE-Toyo-pearl 650M, Butyl-Toyopearl, Hydrozylapatite and Toyopearl HW 55M. After purification, the specific activity of the enzyme was 175 units/mg. Optimum pH and temperature of protease from mulberry seeds was 5.0 and 37$^{\circ}C$, respectively. The protease was stable below 37$^{\circ}C$ and the enzyme activity was decreased by 50%, when incubated at 52$^{\circ}C$ for 10minutes. The protease activity of mulberry seeds was inhibited by metal ions such as mercury, iron, zinc, copper, but activited by magnesium, choromium, aluminium ions. The Km value of the protease was 0.89mM with azocasein as a subscribe.

Application of Italian Ryegrass-Rice Double Cropping Systems to Evaluate the Physicochemical Properties of Soil and Yield and Quality of Rice in Paddy Field in Southern Parts of Korea (남부지역 논에서 토양의 이화학적 특성 및 벼의 생산성과 미질 향상을 위한 이탈리안 라이그라스-벼 이모작 작부체계의 적용)

  • The physicochemical properties of soil and the yield and quality of rice (Oryza sativa L. cv. Sailmi) were assessed using Italian ryegrass (Lolium multiflorum Lam. cv. Kowinearly)-rice double cropping systems in the paddy fields at Goseong and Miryang in southern Korea. The average temperatures during the ripening period were approximately 1 ℃ higher than the optimal temperature for rice ripening and the sunshine duration was reduced by frequent rainfall. Consequently, it was slightly below the optimal conditions required for rice ripening. In the soil at Goseong, winter Italian ryegrass cropping increased the pH, electrical conductivity, and the contents of organic matter, total nitrogen (T-N), available P2O5, K, Ca, and Mg than winter fallowing. Particularly, the contents of T-N and available P2O5increased significantly. In the soil at Miryang, Italian ryegrass slightly increased the electrical conductivity and the T-N, Mg, and Na contents. Therefore, winter Italian ryegrass cropping improved the physicochemical properties of paddy soils; however, Italian ryegrass-rice double cropping slightly reduced the culm length at both Goseong and Miryang, without markedly changing the panicle length or number compared to fallow-rice cropping. Furthermore, at Goseong, Italian ryegrass-rice double cropping slightly decreased the spikelet number and milled rice yield, and increased the ripened grain rate; however, at Miryang, contrasting results were observed. In addition, fallow-rice cropping revealed no differences in the head rice or opaque rice rates. The protein content was slightly increased in Italian ryegrass-rice double cropping, without significant changes in the amylose content or Toyo value, compared to that in fallow-rice cropping. The peak and breakdown viscosities were slightly decreased. These results indicate that winter Italian ryegrass cropping might alter rice taste but may not exhibit remarkable negative effects on rice cultivation. Therefore, Italian ryegrass-rice double cropping system is recommended for paddy fields in southern Korea. Nevertheless, to increase the rice yield and quality, fertilization standards for rice cropping that consider the changes in the T-N and organic matter contents in paddy fields caused by winter Italian ryegrass cropping need to be established.

Days to Heading and Glossiness Variation of RILs derived from Hwayeong and Wandoaengmi 6

  • Improving the taste of rice in the breeding process is one of the important goals. However, it takes a lot of time and effort to select lines with good grain quality. MAS related to rice quality can help quickly and accurately select the elite lines in breeding programs. QTL qTV9, derived from Wandoaengmi 6, has been reported as a marker associated with improved glossiness of rice (Park et al., 2019). To confirm the function of QTL qTV9, 186 RILs derived from Hwayeong/Wandoaengmi6 were cultivated on ordinary planting cultivation for five years. The average DTH of Hwayeong and Wandoaengmi 6 was not significant at 99 and 97 days, respectively, but the averages of TV (toyo value) were 72.6 and 86.0, respectively. The DTH and TV of RIL vary from year to year. In 2017-2018, the average DTH was 98 days, which was significantly higher than the other three years. In 2018 and 2021, the average TV was 79.5 and 86.5, respectively, which were significantly higher than in other years. As a result of correlation analysis, DTH in the different years showed highly significant positive correlations (r = 0.71-0.92) from 0.71 to 0.92, whereas TV showed positive but weaker correlations (r = 0.42-0.71). The correlation between DTH and TV in each year was significant but weak (r = 0.25-0.64) and there was no correlation in 2017. The TV (77.6-88.7) of RILs with QTL qTV9 was significantly higher than that of RILs without qTV9 (72.6-84.9) for all five years. As a result of analyzing TV by DTH group, the TV of the lines with qTV9 in DTH groups (93-97) and (98-103) showed a significantly higher trend for all 5 years. And TV was not significant in DTH groups A, B, E, and F. This may have been influenced by factors such as insufficient populations between groups or differences in harvest timing. This study is expected to be used as data for improving the glossiness of cooked rice in breeding programs, and further study of the QTL qTV9 marker is required.

Palatability and Physicochemical Properties in 2001 Yield Increased by 10% than Normal Level in 2000 (쌀 수량이 평년수준인 2000년 대비 10% 증가한 2001년의 식미 및 이화학특성 비교)

  • In this study, we examine the palatability and physicochemical properties of rice in the year, when there was 10% increase in yield compared to normal year due to daily temperature range and sunshine hours. The results of the analysis of rice yield over the last 20 years (1993-2012) showed 10% difference between the yield in 2000, which was normal, and that in 2001. With regard to the crop weather condition during the ripening period in 2001 compared to 2000, the daily range and sunshine hours were higher, but the mean temperature was similar. The rice yield in 2001 was 9.8% higher than that in 2000 due to the increased number of spikelets per panicles and ratio of ripened grain. In terms of chemical traits, protein, Mg, and K contents decreased in 2001 compared to 2000, but amylose content increased. Trough and final viscosity assessed with a Rapid Visco Analyser were significantly higher in 2001 than 2000. The quality of cooked rice was measured through the Toyo Mido Meter Glossiness Value (TGV) instead of a palatability score because a sensory test produces relative comparison values rather than absolute values. The correlation coefficients between the sensory evaluation parameters and the TGV in several rice materials harvested in two years showed a highly significant positive correlation ($r=0.81^{**}-0.89^{**}$, n=27-47). TGV was also significantly higher in 2001 than in 2000. The results suggested that the palatability of cooked rice was good in 2001 with about 10% increase in rice yield compared to normal year in 2000 due to daily temperature range and sunshine hours.

Comparison of Yield and Grain Quality of Ten High Quality Rice Cultivars Grown in Three Different Agricultural Regions of Gyeongsangbuk-do Province (경상북도 지역별 최고품질 벼 품종의 수량 및 품질 특성)

  • Rice quality should be considered as a primary consumer requirement. Regarding marketing, characteristics such as appearance, physicochemical properties, and palatability of brand rice are of high economic importance. Therefore, this study was conducted to select the optimal rice cultivars representing the commercial rice brands of Gyeongsangbuk-do province in Korea. Various rice grain quality components, grain appearance, several physicochemical properties of rice grain, and texture or palatability of cooked rice grains of ten cultivars (namely 'top quality rice') cultivated at three different locations, such as inland mountainous and southern plain areas of Gyeongsangbuk-do province in 2013~2014, were evaluated, and the obtained data was analyzed. 'Hiami' showed slightly higher protein contents and lower palatability of cooked rice than the other rice cultivars. Rice production and head rice yield produced at Gumi were the highest. The protein content of milled rice produced at Andong, an inland mountainous region, was approximately 0.3% point lower than that from other locations, whereas the amylose content of milled rice was approximately 1% point higher than those from the other plain regions, Daegu and Gumi. We evaluated the texture, Glossiness value determined using a Toyo teste meter and palatability of cooked rice of ten cultivars. The hardness of cooked rice produced in Andong was slightly lower than that produced in Daegu and Gumi, and additionally, the palatability of cooked rice produced in Andong was the best, followed by that producted in Gumi and Daegu. Considering rice yield and grain quality in the major rice cultivation areas of Gyeongsangbuk-do province, the rice cultivars that may be suitable for each region could be recommended mid-late maturation: 'Younghojinmi' and 'Mipum' in Daegu, 'Daebo', 'Samgwang', Chilbo' and 'Younghojinmi' in Gumi, 'Samgwang', 'Jinsumi' and 'Sukwang' in Andong. These results obtained in this study imply that the selected cultivars with high yield and quality could be recommended with high priority to rice farmers in the regions.

Screening of High-Palatability Rice Resources and Assessment of Eating Quality Traits of Korean Landraces and Weedy Rice Germplasms (우리나라 재래벼와 잡초벼의 식미 특성 평가 및 고식미 우수자원 탐색)

  • The eating quality of rice is one of the main concerns of rice breeding programs in many countries, especially in japonica rice cultivation areas. To select new resources with high eating quality from Korean native japonica rice, we evaluated a total of 76 varieties, including 47 native rice resources (26 landraces + 21 weedy rice) of Korea. In this study, all eating quality traits varied widely among the native resources, and some of the native resources revealed a high evaluation score in the palatability, expected eating quality, and physicochemical traits among the tested whole-plant materials. From the results, we selected two landraces (Sangdo and Waebyeo) and three weedy rice varieties (Hoengseongaengmi3, Namjejuaengmi6, and Wandoaengmi6) as promising resources for improvement of rice eating quality. Specifically, Wandoaengmi6 presented potential as a key breeding material for improving the eating quality of Korean rice cultivars, having the best evaluation results in palatability score (PS 0.83) from the sensory test and glossiness value (GV 81.8) from the Toyo taste meter of cooked rice. Given the urgent need to overcome the constraint of the narrow genetic background of Korean japonica rice, the results could be a practical solution for exploring new opportunities for improving rice eating quality through the expansion of genetic resources.

Effects of Application Rates of Liquid Pig Manure on Rice Growth, Quality and Soil Properties (돈분액비의 시용수준이 벼 생육과 품질 및 토양에 미치는 영향)

  • The effects of liquid pig manure (LM) on the yield and quality of rice as well as soil chemical properties were determined in the field of sandy loam soil under the different fertilizer management. Treatments consisted of 100%, 130% and 160% N application rates of liquid manure as calculated on the basis of the recommended rate of nitrogen (9 kg N/10a) for rice cultivation. Chemical fertilizer (CF) was used as control. Concentrations of T-N and T-P in paddy water were measured by 5-day intervals up to 20days after application. LM treatments significantly increased T-N concentrations in paddy water proportionally with increasing rates of LM (13.2 to 25.7 mg/L). Similarly Total-P content in paddy water was increased right after LM applications but was well below the quality standard of wastewater and manure. Plant height and tillers in 100% and 130% N LM treatments were lower than those in CF control. In the 160% LM treatment, however, plant height and numbers of tillers were higher than those in the CF control. Yields in 100% LM and 160% LM plots were decreased by 3 and 5%, respectively, as compared with 422 kg per 10a in the CF plot. Rice protein contents were similar between 100% LM and CF control (about 6.8%) but it was increased to 7.2% and 7.7% in 130% LM and 160% LM treatments, respectively. Toyo-taste value in the 100% LM treatment was higher than in CF control plot. The proportions of perfect grain of the brown rice were lower in 130% LM and 160% LM treatments than that in CF control. Soil organic matter content, heavy metal and exchangeable cations were highest in the 160% LM plot. Thus considering yield and quality of rice and heavy metals contents in soil, 130% N basal application of liquid manure can be recommended for rice cultivation in this experiment.

The Yield and Quality of Rice for Early Transplanting Cultivation by Cultural Practices in Gyeongnam Plain Area (경남 평야지 벼 조기재배를 위한 재배방법에 따른 쌀 수량 및 품질특성)

  • This study was conducted to investigate the optimum transplanting method for increasing the rice yield and quality by early transplanting cultivation in Gyeongnam plain area. This examination used of the transplanting method of planting distance($30{\times}14$ and $30{\times}18cm$) with number of seedlings(3, 5 and 7 plants). In high planting density($30{\times}14cm$), the number of tillers was increased while plant height was decreased as the planting number increases. On the other hand, the plant height and number of tillers were increased as planting number increases in low planting density($30{\times}18cm$). However, the number of grain per panicle was increased while the number of panicle was decreased as the planting number decreases. The number of panicle and the number of grain per panicle was increased as the planting distance increase. The yield of rice, when transplanted in the distance of $30{\times}14cm$ with 3 plants, was higher than the other treatment. Head rice ratio and head rice yield was the highest when transplanted in the distance of $30{\times}18cm$ with 3 plants(403 kg/10 a). The protein content was decreased and Toyo taste value was improved when transplanted in the distance of $30{\times}18cm$. Taken together, the best transplanting method for early transplanting cultivation was low planting density($30{\times}18cm$) with 3 plants in Gyeongnam plain area.

Selection of Rice Varieties for Production of High Quality Rice in Southern Area of Korea (남부 주요 지역별 고품질 쌀 생산을 위한 적정 품종 선발)

  • This study was carried out to select the rice variety for high quality rice according to reducing N application level (7 kg/10 a) in medium altitude and plain of southern Korea. It was cultivated to seven varieties and ten varieties in medium altitude and plain region respectively in this study. In medium altitude region, the yield of head rice was higher in most varieties except for Borami (526 kg/10 a) than the control variety, Chucheongbyeo (533 kg/10 a). On the other hand, Borami, Gopumbyeo, and onnuri were lower in head rice rate than the other varieties. In addition, Borami and Chucheongbyeo shown a lodging risk but the other varieties were safe against lodging. The milled rice protein content of Chucheongbyeo was 6.1% and the other varieties protein content was similar or lower than that of control except for Borami(6.3%). In plain region, the head rice yield of Nampyeongbyeo (527 kg/10 a) was higher than that of control variety, Ilmibyeo (503 kg/10 a). Head rice rate was lower in Hopumbyoe, Sindongjin, and Chilbobyeo than the other varieties. The varieties contained lower protein content compared Ilmibyeo (6.1%) were Hopumbyeo (5.9%), Jinsumi (6.0%), Sindongjin (5.9%), Chilbobyeo (6.0%), Hwangeumnodeul (5.8%), Hopyeongbyeo (6.0%). Amylose content, whiteness, and palatability (Toyo value) were no significant difference among varieties in two different regions. In conclusion, considering head rice rate, yield of head rice, protein content, lodging resistance, ripening rate and palatability, Pungmi1ho, Saenuri, Chilbobyeo in medium altitude region and Jinsumi, Hwanggumnodul in plain region were selected as proper rice varieties for high quality rice production in southern Korea.
