Chemical and Sensory Characterization of Korean Commercial Rice Wines (Yakju)

  • Chemical and sensory profiles of 5 Korean commercial rice wines (yakju) were developed using descriptive, physicochemical, and volatile analyses. Color, 6 aroma, and 5 taste attributes of these rice wines were evaluated by a panel of 13 judges. Sample wines were analyzed for titratable acidity, ethanol content, pH, Hunter colorimeter value, organic acids, and free sugars. Volatile analysis of the samples revealed the presence of 2 acids, 7 alcohols, 19 esters, and 5 miscellaneous compounds. Based on principal component analysis of the descriptive data, rice wines were primarily separated along the first principal component, which accounted for 57% of the total variance between the rice wines with high intensities of 'color' and 'sweet aroma' versus 'ginseng' aroma.

  • In order to identify of volatile flavor compounds and polycyclic aromatic hydrocarbons (PAHs) in commercial liquid smokes, this study was conducted to analyze volatile flavor compounds by solvent extraction and/or Purge & Trap method/GC/MSD. A total of 156 volatile flavor compounds were detected in 6 commercial liquid smokes, and these compounds were composed mainly of 12 aldehydes, 60 ketones, 7 alcohols, 14 acids, 20 esters, 24 aromatic compounds, 7 furans and 12 miscellaneous compounds. Ketones $(806.6-7,573.9\mu g/mL)$ and aromatic compounds $(282.6-7,896.3 \mu g/mL)$ were more abundant than others. The PAHs known as carcinogen have not been detected in this study. The acids $(422.9-4,903.1\mu g/mL)$ was identified in relatively high concentration compared to other groups. Phenol and its derivatives among aromatic compounds were in relatively high concentration. Especially, the phenol and its derivatives including o-cresol, guaiacol, 4-ethylguaiacol and syringol were in higher concentration.

  • As a series of studies on improving quality of seasoned-dried Pacific saury, fatty acid compositions and taste compounds of the seasoned-dried saury treated with liquid smoke (T2 product) were examined during storage, comparing with control (C, seasoning only). In the both samples, the major fatty acids were 22:6n-3, 16:0, 22: In-11I, 20: In-11, 18: In-9, 14:0, 20:5 n-3 and 16:1n-7. The contents of saturated fatty acids in C and T2 increased with increasing storage period, while those of polyunsaturated fatty acids decreased. After drying, the contents of 7 non-volatile organic acids contents detected in this study decreased, and the others of non-volatile organic acids, except for malic and citric acids, in both C and T2 decreased with storage period. The contents of nucleotides and their related compounds in both C and T2 decreased with increasing storage period. The content of total free amino acids in raw sample was 556.96 mg/100g and increased up to 895.77 mg/l00 g and 958.40 mg/100g in C and T2, respectively, after drying, and total contents of free amino acids in both C and T2 somewhat decreased after 60 days of storage.

Al과 Ca을 함유한 화학제재의 첨가가 깔짚내 휘발성 지방산과 질소 함량에 미치는 영향 (Effects of Chemical Additives Containing Al and Ca on Volatile Fatty Acids and Nitrogen Contents of Litter)

  • The objectives of this study were conducted to determine the effects of two chemical amendments on volatile fatty acids (VFA) and nitrogen contents in poultry litter after broiler chicks were raised in poultry houses for 6 weeks. Two different additives were applied as a top dressing to the litter at a rate of $AlCl_3{\cdot}6H_2O$ (200 g)+$CaCO_3$ (50 g) or Alum (200 g)+$CaCO_3$ (50 g)/kg of rice bran; untreated litter served as controls. Application of $AlCl_3+CaCO_3$ and Alum+$CaCO_3$ reduced total VFA contents by 67% and 51% at 6 weeks, respectively, compard to the control groups. The decrease in litter pH with two chemical treatments results in decreased proportion of VFA and increased nitrogen contents of the litter. These results indicate that treating $AlCl_3+CaCO_3$ and Alum+$CaCO_3$ to poultry litter offers the potential for reducing an environmental impact.

  • Milk yield and its composition is governed by level of nutrition and the composition of diet. Higher concentrate input improves milk yield, whereas its input at moderate levels improves yield of milk fat. High level of dietary protein improves dry matter intake and milk production, however, CP content above 14% has less advantage. Milk yield is enhanced by the feeding of cottonseed and soyabean meal, whereas milk fat increases by the supplementation of cottonseed. Dietary fat increases energy intake, production of milk and milk fat. Quality and quantity of feeds consumed affect fermentation patterns in rumen. Among the rumen metabolites, volatile fatty acids (VFA) content and propionate proportion have been related positively with milk yield, whereas proportion of acetate and butyrate have been related positively with milk fat content. Dietary carbohydrates through the source of sugar, starch, roughage and fibre affect VFA concentration in rumen. Therefore, concentration of volatile fatty acids could be altered to the advantage of consumer through judicious manipulation of diet.

저식염 수산발효식품의 가공에 관한 연구 7. 저식염 멸치젓 숙성중의 휘발성성분 및 지방산조성의 변화 (Studies on the Processing of Low Salt Fermented Sea Foods 7. Changes in Volatile Compounds and Fatty Acid Composition during the Fermentation of Anchovy Prepared with Low Sodium Contents)

  • 냄새성분은 식품의 품질을 특정짓는 관능적요소의 하나로서, 특히 우리나라에서 즐겨 이용하는 젓갈에서는 그 기여도가 크다고 볼 수 있다. 따라서 젓갈의 품질개선을 목적으로 식염의 일부를 KCl로 대체하여 담근 저식염멸치젓 숙성중의 휘발성성분을 재래식젓($20\%$ 식염함량)과 함께 비교분석하였으며, 또한 지방산조성의 변화도 실험하였다. 원료멸치의 구성지방산은 중성지질이 $77.6\%$로 가장 많았으며 다음으로 인지질이 $22.1\%$, 당지질은 $0.35\%$였다. 그리고 총지질의 조성은 polyene산이 $39.8\%$로 가장 높았으며 polyene 산중에서도 $C_{22:6},\;C_{20:5}$가 대부분이었다. 숙성중에는 polyene 산($C_{22:6},\;C_{20:5}$)의 비율이 감소하는 반면에 포화산($C_{16:0},\;C_{18:0},\;C_{l4:0}$)의 비율이 증가하였고 monoene산중에서는 $C_{16:1}$ 및 $C_{18:1}$의 증가를 제외하고는 큰 변동이 없었다. 그리고 산가와 카르보닐가 등도 숙성중 증가하였으며 알콜을 첨가한 저식염멸치젓의 경우는 재래식 젓보다 그 함량이 낮았다. 멸치젓(숙성 90일경)의 전휘발성성분에서 38종의 성분을 동정할 수 있었는데 그 주체는 알콜류, 알데히드와 케톤류, 탄화수소류와 지방산류 등으로 구성되어 있었다. 그리고 숙성기간중 저급휘발성산(8종), 아민(5종), 카르보닐화합물(9종)을 검출동정하였는데 완숙기(숙성 60일경)의 저식염멸치젓에서는 acetic acid, isovaleric acid, propionic acid, n-butyric acid가 휘발성산의 주류이었으며, 카르보닐에서는 ethanal, 3-methyl butanal, hexanal, 2-methyl propanal 등이고 아민에서는 TMA가 대부분이었다. 그리고 재래식젓과 비교하여 볼 때 각휘발성성분조성에는 차이가 없고 함량비가 약간의 차이가 있었으며 멸치젓의 냄새성분은 어느 특정성분에 의한 것이라기 보다 여러 휘발성성분들의 상호조화에 의하여 젓갈 특유의 풍미를 나타내는 것으로 볼수 있었다.

  • 2단계 발효로 제조한 감식초를 static headspace-GC법과 SPME-GC법으로 휘발성 성분을 각각 포집 분석하여 상호간의 특성에 대해 조사하였다. 감식초의 휘발성 성분 포집조건은 $80^{\circ}C$에서 20분간으로 설정하였으며, 감식초 휘발성 성분의 total FID response는 CW/DVB fiber를 이용한 SPME법에서 total peak area $18.18{\times}10^6$로, static headspace-GC법의 total peak area $1.35{\times}10^6$보다 현저하게 높았다. 감식초의 주된 휘발성 성분으로 acetic acid, ethyl acetate, 3-hydroxy-2-butanone, ethanol, phenethyl alcohol 등이 확인되었으며, static headspace-GC법에서는 acid류 3종, aldehyde류 3종, alcohol류 5종, ester류 8종 및 ketone류 1종이 확인되었다. SPME-GC법에서는 acid류 6종, aldehyde류 7종, alcohol류 6종, ester류 9종, hydrocarbone류 2종, ketone류 1종, 기타 3종으로, 총 34종의 휘발성 성분이 확인되었으며, benzaldehyde, phenethylacetate, phenethylalcohol 등의 비율이 headspace-GC법에 비해 높았다.

시판 과실식초의 이화학적 품질 및 향기성분 비교 (Physicochemical Properties of and Volatile Components in Commercial Fruit Vinegars)

  • 국내에서 소비가 활발한 시판 과실식초(사과, 포도, 감)에 대하여 이화학적 품질특성 및 향기성분 패턴을 비교 분석하였다. 식초시료의 총산도는 포도 식초에서 가장 높게 나타났으며, 당도 및 환원당 함량은 시료마다 큰 차이를 나타내었다. 갈색도, 탁도 및 전반적 색차(${\Delta}E$)는 감식초에서 높게 나타났다. 시판 과실식초의 유리당은 fructose, glucose, sucrose, maltose의 순으로 높게 검출되었으며, 유기산은 acetic acid 외 oxalic, citric, malic, succinic acid가 검출되었으나 함량은 시료마다 차이를 나타내었다. 시판과실식초의 유리아미노산 검출결과 필수아미노산은 포도와 감식초에서 총 9종, 사과식초에서 6종의 필수아미노산이 검출되었다. 시판 과실식초의 주된 향기성분은 acetic acid, ethyl acetate, isoamyl acetate, iso valeric acid, isoamyl alcohol, propanoic acid, phenethyl acetate 등으로 이외에 사과식초 17종, 포도식초 12종, 감식초 33종의 휘발성 성분이 확인되었다. 또한 SAW 센서 전자코는 과실식초의 향기패턴을 비교 분석하는데 효과적인 것으로 나타났다.

밴댕이 및 주둥치젓의 휘발성성분 (Volatile Constituents of Fermented Big Eyed Herring and Slimy)

  • 우리나라 전통적인 수산발효식품의 풍미성분을 밝힐 목적으로 밴댕이젓 및 주둥치젓이 냄새성분을 분석하고 각 성분들이 냄새에 미치는 기여도를 검토하였다. 휘발성 지방산과 휘발성 아민은 수증기증류법으로 포집하여 분석하고, 휘발성 카르보닐은 $90^{\circ}C$에서 4시간 처리하여 포집하여 GLC로 분석동정하였다. 휘발성 지방산은 밴댕이젓 및 주둥치젓 모두 n-부티르산이 $90.4{\sim}90.5%$로 대부분을 차지하였고, 휘발성아민은 트리메틸아민이 대부분을 차지하였다. 휘발성카르보닐은 밴댕이젓은 2-메틸프로판알 36.2%, 메탄알 28.5%, 프로판알 16.2%로 이 세 성분이 80.9%를 차지하였고, 주둥치젓은 에탄올 44.7%, 2-메틸프로판알 24.1%, 프로판알 14.4%로 82.2%를 차지하였다. 관능검사결과 밴댕이젓. 주둥치젓 모두 휘발성지방산, 휘발성카르보닐, 휘발성아민 순으로 중요한 구실을 하는 성분이라는 것을 알았다.

Profiling of Volatile Components Using Gas Chromatography-Mass Spectrometry in Commercial Pine Needle (Pinus densiflora S. and Z.) Powder

  • Volatile components in commercial pine needle (Pinus densiflora S. and Z.) powder were extracted using simultaneous steam distillation and a solvent extraction (SDE) apparatus, and were analyzed by gas chromatography-mass spectrometry (GC-MS). A total of 230 compounds divided into 13 groups were identified, which included alcohols (42), ketones (39), aldehydes (32), terpenes (30), alkenes (17), esters (14), furans (14), benzenes (10), alkanes (8), napthalenes (7), acids (6), miscellaneous compounds (6), and phenols (5). Among the 230 compounds identified, 96 compounds were positively confirmed and quantified, and the rest of the compounds were tentatively identified. The major volatile components identified at relatively high levels were dodecanoic acid, hexadecanoic acid, hexanal, benzaldehyde, (Z)-3-hexen-1-ol, 1-penten-3-one, limonene, and $\beta$-caryophyllene oxide. Among the groups, terpenes accounted for 60.18% of the total concentration of all the volatile components. Some volatile components might account for the unique aroma and the biological activity of the sample.
