소립검정콩 청국장의 화학성분 변화 (Changes in Chemical Components of Chungkugiang Prepared with Small Black Bean)

  • Changes in chemical components of small black bean chungkugjang(SBBC) added with kiwi and radish as foodstuffs to repress off-odor and enhance the quality of SBBC suring fermentation were investigated. Optimal pretreatment conditions of small black bean suitable to the fermentation of chungkugjang were 3 hrs of soaking time 1.5 times of ratio of water to black bean. 1.0 atm of high pressure, 20 min of heating time, cutting and crushing of heat-treated black bean. Moisture content of SBBC was remarkably lower than that of soybean chungkugjang(SBC) as control. Crude protein of SBBC was in the range 23.37∼25.71% and higher than that of SBC, Crude lipid of SBBC was lower than that of SBC. Crude lipid of SBBC added with kiwi and radish paste was decreased than that of SBBC without two foodstuffs. pH of SBBC were rapidly increased to 24 hrs of fermentation and gradually increased thereafter. Total acidity was shown to be reversely decreased as compared to pH tendency. Reducing sugar was increased to 24 hrs of fermentation and then decreased. In SBBC and SBC, potassium was the most abundant followed by phosphorus, magnesium and calcium.

폐지섬유를 이용한 완효성 요소비료가 배추의 생육 및 수량과 토양의 화학성에 미치는 영향 (Effects of Slow-Released Nitrogen Fertilizer Using Waste Paper Slurry on the Growth and Yield of Chinese Cabbage and Chemical Properties of Soil)

  • Pot당 풍건토양 15㎏에 질소비료를 제외한 인산과 가리비료만 시용한 무질소구(None-N), 질소비료로 요소를 시용한 요소구(urea, control)와 질소비료로 폐지섬유를 이용한 시제품을 사용한 시제품구(SRF)에 배추(평강하보배추)를 공시하여 작물의 생육, 수량 및 수량구성요소, 작물의 양분이용율 및 토양의 화학적 특정변화 등을 조사하여 실용화 가능성을 검토한 결과는 다음과 같다. 시제품의 질소수중용출량은 12시간까지는 60.4%로 급격하게 용출량이 많았으나, 그 후 서서히 용출되어 72시간에 75%까지 용출되었다. 최엽장은 시제품구와 요소구간에 전생육기에 비슷한 경향을 보였다. 정식 후 40일의 엽록소 함량과 광합성능력은 시제품구에서 요소구보다 다소 높았다. 구고, 구폭, 엽수 및 개체당 생체중은 시제품구와 요소구간에 통계적인 유의성은 없었다. 수확기에 식물체중 전질소함량과 질소이용율은 시제품구가 요소구보다 높았으며, 질소흡수량은 시제품구가 요소구보다 11% 높았다. 시험 후 토양중 전질소함량은 시제품구와 요소구간에 비슷한 경향이었다.

한국 자생차의 몇가지 화학성분 비교분석 (Chemical Components of Korean Native Tea Plants)

  • 한국 자생 차나무의 채취 다엽에서 차의 품질관련 주요 화학성분을 분석한 결과는 다음과 같다. 1. 전질소 함량은 $3.59{\sim}4.89%$% 사이로 보성 대원사, 화순 쌍봉사, 순천 창천리, 하동 쌍계사, 강진 장원산업 다엽에서 함량이 많았다. 2. 다엽의 유기성분 함량중 tannin은 $12.5%{\sim}18.3%$ 범위였으며, 영광 천마리, 함평 용암리, 여수 우두리 다엽이 12.5%, 12.7%, 12.8%로 함량이 적고, 구례 천은사, 강진 백련사, 나무 불회사 다엽이 18.3%, 16.7%, 16.4%로 함량이 많았다. 3. Caffeine은 $2.21{\sim}3.11%$ 범위로 담양 양각리, 여수 우두리, 구례 화엄사 다엽이 2.21%, 2.23%, 2.23%로 적고, 광주삼애다원, 강진 장원산업, 순천 창천리다엽이 3.11%, 2.94%, 2.87%로 함량이 많았다. 4. Vit. C는 $167.9g{\sim}223.5mg/100g$ 범위로 장성 오산리, 순천 송광사, 영광 천마리 다엽이 167.9mg/100g, 185.6mg/100g, 185.8mg/100g로 적고 광주 삼애다원, 강진 장원산업, 순천 창천리 다엽이 291.5mg/100g, 271.8mg/100g, 269.5mg/100g으로 함량이 많았다. 5. 엽록소는 $187.4{\sim}332.7mg/100g$ 범위로, 평균 함량은 242.0mg/100g 이었다. 6. 아미노산은 $1,888{\sim}2,500mg/100g$으로 강진 장원산업이 2,500mg/100g으로 함량이 가장 높고, 순천 송광사가 1,888mg/100g으로 가장 낮았다. 7. 보성 대원사, 화순 쌍봉사, 순천 창천리, 하동 쌍계사, 강진 장원산업 채취 다엽이 전질소와 아미노산 함량이 많고, 탄닌 함량이 적어 품질이 양호하리라 생각된다.

Assessment of Water Quality using Multivariate Statistical Techniques: A Case Study of the Nakdong River Basin, Korea

  • This study estimated spatial and seasonal variation of water quality to understand characteristics of Nakdong river basin, Korea. All together 11 parameters (discharge, water temperature, dissolved oxygen, 5-day biochemical oxygen demand, chemical oxygen demand, pH, suspended solids, electrical conductivity, total nitrogen, total phosphorus, and total organic carbon) at 22 different sites for the period of 2003-2011 were analyzed using multivariate statistical techniques (cluster analysis, principal component analysis and factor analysis). Hierarchical cluster analysis grouped whole river basin into three zones, i.e., relatively less polluted (LP), medium polluted (MP) and highly polluted (HP) based on similarity of water quality characteristics. The results of factor analysis/principal component analysis explained up to 83.0%, 81.7% and 82.7% of total variance in water quality data of LP, MP, and HP zones, respectively. The rotated components of PCA obtained from factor analysis indicate that the parameters responsible for water quality variations were mainly related to discharge and total pollution loads (non-point pollution source) in LP, MP and HP areas; organic and nutrient pollution in LP and HP zones; and temperature, DO and TN in LP zone. This study demonstrates the usefulness of multivariate statistical techniques for analysis and interpretation of multi-parameter, multi-location and multi-year data sets.

Caffeine 투여시 Rat의 혈액내 혈액화학성분의 변화 (Changes of the blood chemistry components in serum of the rat after oral administration of caffeine)

  • This study was conducted to identify the effects of caffeine on the change of blood chemistry components in the serum of the rat(Sprague-Dawley, female). The experimental groups were divided into 7 groups according to the time lapsed after a single oral administration of 100mg/kg caffeine(that is control, 2, 4, 8, 24, 48 and 72 hrs lapsed group) to the rats. The concentrations of glucose, urea nitrogen, uric acid, creatinine, total protein, albumin, A/G ratio, triglyceride, total cholesterol, HDL-cholesterol, free fatty acid and phospholipid as well as the activities of alanine aminotransferase(ALT), aspartate aminotransferase (AST) and alkaline phosphatase(ALP) were measured in the serum of each experimental groups. The results obtained from this study were summarized as follows ; 1. The concentrations of serum glucose were significantly higher($\rho$<0.01) between 4 (143.0 mg/dl) and 8 hrs(138.0mg/dl) in comparison to the control(101.1mg/dl) after a single oral administration of caffeine(100mg/kg). Whereas there were no significant differences in the concentrations of urea nitrogen, uric acid, creatinine, total protein, albumin and albumin/globulin(A/G) ratio in comparison to the control. 2. The concentrations of total cholesterol and HDL-cholesterol in serum were significantly higher ($\rho$<0.01) between 4(77.4mg/dl, total cholesterol) and 8 hrs(64.7mg/dl, HDL-cholesterol) in comparis to the control(62.8, 46.7mg/dl) after a single oral administration of caffeine (100 mg/kg). On the other hand, the concentrations of triglyceride in serum were significantly lower($\rho$<0.01) after 8 hrs(38.8mg/dl) in comparison to the control(66.5mg/dl). 3. The activities of AST in serum was significantly higher($\rho$<0.05) from 2 hrs(149 U/L) to 8 hrs(178 U/L) in comparison to the control(112 U/L) after a single oral administration of caffeine (100mg/kg). The activities of ALT in serum were significantly higher($\rho$<0.01) at 4(45.5 U/L), 24(49.3 U/L), 48(46.8 U/L) and 72 hrs(42.3 U/L) in comparison to the control (39.7 U/L) after a single oral administration of caffeine (100mg/kg) On the other hand, there were no significant differences in the activities of ALP in comparison to the control.

김해평야 관개수 오염도가 벼 영양생리에 미치는 영향;질소양분 공급과 수량을 중심으로 (Effect of Irrigation Water Pollution on the Nutrition Physiology of Rice Plant in the Kimhae Plain;Especially on the Nitrogen Supply and Yield)

  • 김해평야의 6개 관개 수계별 및 시기별로 농업용수오염 및 벼의 무기성분 함량을 조사하고, 관개수에 의한 질소 공급량을 산출한 결과를 요약하면 다음과 같다. 1) 각 지점의 농업용수의 시기별 평균치는 pH 6.5-7.0, DO 0.6-7.7ppm, BOD4.4-63.5ppm, COD 7.3-73.9ppm, $NH_4$-N 1.84-16.22ppm, $NO_3$-N 1.22-15.4ppm, $PO_4$-P0.07-1.35ppm으로서 양수장 수계별로 큰 차이가 있었다. 농업 용수중 중금속 함량은 지역별 및 시기별로 별 차이가 없었다. 2) 지점별로 오염도가 높은곳은 식만, 봉림 및 녹산이었으며, 오염도가 낮은 곳은 대저, 명지 및 장유 양수장 부근이었다. 3) 년간 관개수에 의한 질소공급량은 대저 6.82Kg/10a, 식만 5.98Kg/10a, 봉림 6.64Kg/10a, 명지 2.31Kg/10a, 녹산 6.22Kg/10a, 그리고 장유가 2.54Kg/10a로서 각 양수장 수계별로 관개수에 의한 질소공급량이 큰 차이가 있었다. 4) 관개수중 암모니아태 질소와 수도잎중 질소함량 간에는 고도의 유의적인 정의 상관이 있었으며, 수도잎중 전 질소 함량은 전반적으로 식만, 봉림 및 녹산 부근이 타 지역에 비해 약간 증가 하는 경향이었다. 5) 각 지역별 수도의 수량은 통계적인 유의성은 없었다.

  • 본 연구는 건답직파재배에서 완효성질소비료인 Latex coated urea(LCU)와 Meister10(MS10)의 효과를 구명하기 위해 포장시험으로 조생종인 중화벼를 공시품종으로하여 무질소구, 요소구, LCU구, MS구로 처리하여 벼의 생육, 수량 및 수량구성요소, 질소흡수량 및 이용율, 시험전후 토양의 화학적특성을 조사한 결과는 다음과 같다. 초장과 분얼수는 요소구보다 LCU구와 MS10구가 높았고, MS10구는 LCU구보다 초장과 분얼수가 높았다. 입모수는 요소구, LCU구, MS10구간에 통계적 유의성이 없었다. 간장은 요소구 보다 LCU구와 MS10구가 높았으나, 수장은 요소구, LCU구, MS10구간에 통계적 유의성이 없었다. $m^2$당 수수는 MS10구>LCU구>요소구 순이었다. 수량은 MS10구>LCU구>요소구 순이었다. 수확기의 질소흡수량과 질소이용율은 MS10구>LCU구>요소구 순이었다. 시험후 토양에서는 시험전 토양의 화학성은 질소함량에는 변화가 없었으나, pH, 인산 및 규산 함량이 다소 낮아졌다.

  • Chemical components of Panax (P) species were compared. p. species used were Korean white ginseng, Korean, Chinese and Japanese red ginseng (P ginseng), American and Canadian ginseng (P. quinquefolium) , and sanchl ginseng (P. notoginseng). No significant difference in the proximate contents was observed among P. species. Ash, crude lipld and total sugar contents in root of P. notoginseng were found to be relatively lower than those of P. ginseng and P. quinquefolium, but the contents of crude protein and crude fiber were similar among those ginsengs. Mineral nutrient con tents showed a little difference among ginseng species. Total nitrogen contents were slightly higher in P. ginseng than P. quinquefolium and P. notoginseng and Fe and Cu were lower in Chinese and Japanese red ginsengs. Kinds and compositions of amino acids were similar but contents of amino acids were different among ginseng species. Total amino acid contents were 76.3∼83.9 mg/g in P. ginseng 53.8∼60.4 mg/g in p. quinquefolium and 54.9 mg/g in P notoginseng. Free sugar contents were lower in P. notoginseng than P. ginseng or P. quinquefolium. Sucrose accounted for 90∼92% of total free sugar contents with relatively high content in white ginsengs, while sucrose and maltose were 32-36% and 55∼60%, respectively, in red ginseng.

Long-Term Study of Weather Effects on Soybean Seed Composition

  • A long-term study initiated in 1989 at San-born Field, Columbia, Missouri, was designed to evaluate the affect of environmental factors, nitrogen application, and crop rotation on soybean (Glycine max [L.] Merr.) seed composition. Soybeans were grown as part of a four- year rotation which included corn (Zea maize L.), wheat (Triticum aestivum L.), and red clover (Trifolium pratense L.). Results from soil tests made prior to initiation of the study and subsequently every five years, were used to calculate application rates of nitrogen, phosphorus, and potassium necessary for target yield of pursuant crops. In the experimental design, nitrogen was applied to one-half of the plot on which the non-leguminous crop, either corn or wheat was grown. Analysis of soybean seed by near infrared reflectance spectroscopy collected over an 11-year period revealed a linear increase in protein and decrease in oil content. Application of nitrogen fertilizer to non-leguminous crops did not have an apparent effect on total protein or oil content of subsequent soybean crop. Analysis of soybean seed proteins by sodium dodecyl sulfate polyacrylamide gel electrophoresis in conjunction with computer­assisted densitometry revealed subtle changes in the accumulation of seed proteins. Immunoblot analysis using antibodies raised against the $\beta-subunit$ of $\beta-conglycinin$ showed a gradual increase in the accumulation of the 7S components during successive years of the experiment. A linear increase in temperature and decrease in rainfall was observed from the onset of data· collection. Higher temperatures during the growing season have been linked to increased protein and diminished oil content of soybean, thus changes observed in this study are possibly related to climatic conditions. However, crop rotation and subsequent changes in soil ecology may contribute to these observed changes in the seed composition.

불량 단감을 이용한 속성 감식초의 제조와 품질 평가 (Preparation and Quality Evaluation of the Quick Fermented Persimmon Vinegar Using Deteriorated Sweet Persimmon)

  • 경제성이 없는 불량한 단감을 효율적으로 활용하기 위하여 속성으로 감식초를 제조하여 국내 시판식초 및 재래식 감식초의 일반성분, 유기산, 알코올 및 무기성분을 비교.분석하여 품질평가하였다. 모든 식초의 pH는 2.02-3.02였으며 양조식초가 2.02로 가장 낮았고, 감식초 (A)가 3.02로 가장 높았다. 총 산은 4.62-9.78%이었고 감식초 (B)가 가장 낮았고 양조식초가 가장 높게 나타났다. 식초중의 유기산으로 acetic, citric, tartaric, malic, succinic, formic, oxalic acid가 검출되었으며 특히 acetic acid가 3.96-8.36%로서 높았다. 총당의 함량은 0.45-6.43%이었고 양조식초가 0.45%로 가장 낮았고 감식초 (B)가 가장 높았다. 총 질소의 함량은 0.025-0.046%이었고, 아미노태질소는 0.015-0.029%이었다. Fe, Zn, Mn, Cu의 함량은 낮았고, 유해 중금속은 검출되지 않았다
